Abstract

“Kolang kaling” is the endosperm of Arenga pinnata seed that contains galactomannan so it can be made into jam. This research was aimed to study the effect of “Pucuk merah” fruit juice as a natural colorant and antioxidant sources on antioxidant activity of the jam. This research used an experimental design with different levels of the juice of “Pucuk merah” fruit (6%, 8%, 10%, and 12%). Observations were anthocyanin level (pH differential method), total phenol (by Follin-Ciocalteu method) and antioxidant activity (by DPPH method) of the jam. It was found that the addition of the concentration level of “Pucuk merah” fruit juice had a statistically significant effect on the anthocyanin and total phenol level of the jam. The more the juice was added, the higher the anthocyanin level (2.82 ± 0.13 ppm; 3.76 ± 0.29 ppm; 3.88 ± 0.11 ppm; and 4.20 ± 0.52 ppm, respectively) and the higher the total phenol level (382 ± 1.53 mg GAE/100g; 431 ± 3.06 mg GAE/100g; 540 ± 1.53 mg GAE/100g and 547 ± 6.43 mg GAE/100g, respectively). By using sensory evaluation, the best product was the addition of 12% of the juice; the antioxidant activity was 628 ppm.

Abstract

In 2016 amounted to 34,599 tons while the safety stock according to the min-max stock method was 5,853 tons. In 2017 the final inventory of clay raw materials was 45,694 tons while the safety stock according to the min-max stock method was 3,438 tons. In these two years, it shows that the amount of inventory of final inventory of clay raw materials is very large when compared to inventory according to the method of min- max stock. End supplies of woven paper raw materials. the final inventory of raw material for woven paper is greater than the inventory according to the min-max stock method of 2,441,774 meters while the safety stock according to the min-max stock method is 982,732 meters The final inventory of BCO raw materials in 2016 was 180,140 liters while the safety stock according to the min-max stock method was 20,534 liters. In 2017 the final inventory of BCO raw materials at PT. Semen Tonasa is 202,367 liters while the safety stock according to the min-max stock method is 10,432 liters. In these two years, it shows that the amount of inventory of final inventory of BCO raw materials is very large when compared to inventories according to the Min-max stock method

Abstract

The Ethno-STEM approach has been recognised as an innovative strategy for enhancing the relevance and meaningfulness of STEM learning by integrating local wisdom and culture. Despite its great potential, its implementation faces various contextual challenges. This study aims to map current trends and analyse challenges in the development and implementation of Ethno-STEM learning models globally, with a specific focus on the Indonesian context for the period 2020-2025. The method used is a systematic literature review of empirical and conceptual articles from indexed databases. The results of the study identify three main trends: (1) the systematic integration of traditional knowledge with modern STEM frameworks, (2) synergy with Project-Based Learning (PjBL) models, and (3) the use of digital technology as a catalyst. The findings also reveal a number of critical challenges, particularly at the level of teacher readiness, such as a deficit of epistemic competence in transforming local wisdom into STEM curricula, as well as limitations in contextual teaching materials, time, and supporting infrastructure. Based on this synthesis, this study recommends multi-level strategies to overcome these obstacles, namely strengthening teacher capacity through continuous professional development programmes focused on cultural mapping, developing open access resource repositories, and advocating for affirmative policies to support budget allocation and tripartite collaboration (school-government-community). Thus, this study provides an evidence-based roadmap for realising more inclusive, culturally responsive, and sustainable STEM education
