Abstract

Duck eggs are highly nutritious animal based food products but are prone to quality deterioration during storage. One natural preservation method is immersion using basil leaf solution, which has antibacterial properties. This study aimed to determine the effect of storage duration and basil leaf solution concentration on the internal quality of duck eggs and to identify the most effective treatment combination. The research was conducted at the Livestock Production Laboratory, Faculty of Agriculture, Universitas Sumatera Utara, using a factorial Completely Randomized Design (CRD) with two factors: basil solution concentration (0%, 15%, 30%, and 45%) and storage duration (0, 10, 20, and 30 days). Observed parameters included albumen index, yolk index, weight loss percentage, and pH value. The results showed a highly significant interaction (P<0.01) between the treatments on albumen index, yolk index, and pH. Immersion in 45% basil solution was effective in maintaining albumen and yolk indices as well as pH, while the 30% concentration was most effective in reducing weight loss. Day 10 was identified as the optimal storage period, during which all internal quality parameters remained stable. After this period, egg quality significantly declined.

Abstract

Meat is one of the ingredients that is susceptible to physical damage caused by biochemical activity. Andaliman has biological activities such as antioxidants, anti-inflammatory, and antimicrobial. This study aims to determine the effect of giving Andaliman fruit (Zanthoxylum acanthopodium DC) on the physical quality and organoleptic test of buffalo meat sausages which were carried out in May-June 2025 at the Animal Production Laboratory, Animal Husbandry Study Program, Faculty of Agriculture, Universitas Sumatera Utara. The design used in this study was a Completely Randomized Design with 4 treatments and 5 replications. The treatment consisted of giving Andaliman extract (P0 = 0%; P1 = 0.2%; P2 = 0.4%; P3 = 0.6%). The parameters observed were the physical quality of the sausage, including pH value, percentage of water binding capacity, and percentage of cooking loss as well as organoleptic tests of the sausage. The results of this study indicate that the administration of Andaliman extract (Zanthoxylum acanthopodium DC) gave very significant different results on pH value, water binding capacity and sausage cooking loss. The administration of Andaliman extract (Zanthoxylum acanthopodium DC) gave very significant different results on the color, aroma, texture and taste of sausages. The best treatment results were found in P3, namely with a concentration of 0.6%.

Abstract

Karo Regency is one of the biggest coffee producing regions in North Sumatra Province. Plantation waste by-product from coffee production is the coffee seed waste which is usually discarded and causes environmental pollution. The purpose of this community service is to apply the waste of coffee fruit skin into sheep and goat feed using silage technology so that it can reduce the cost of feed for farmers. The method used is interviews and finding solutions to problems, training accompanied by practice using teaching media such as guidebooks, leaflets and banners, assistance and reinforcement supported by equipment from the service team so farmers are more interested. Outcomes of community service programs are improving farmers 'knowledge and skills, reducing the cost of animal feed using abundant coffee seed waste, reducing environmental pollution, developing the concept of business integration between plantations and animal husbandry so as to increase farmers' incomes. The results obtained are based on a long-term indicator that the utilization of coffee fruit seed waste using silage technology for animal feed can reduce feed costs, increase livestock production, increase farmers' skills and knowledge and can overcome waste pollution. It was concluded that silage technology using coffee seed waste is very effective to improve science, environmental health, income and farmers' standard of living.

Abstract

One of the programs in the 8th Sustainable Development Goals (SDGs) is "Supporting inclusive and sustainable economic growth, full and productive employment, and decent work for all", with the target of achieving higher levels of economic productivity through certification, technological quality improvement, and innovation. Seribu Jandi Village, located in Simalungun Regency, is a center for orange producers. However, some of the oranges produced are categorized as rejected oranges. The main problems faced by orange farming communities in this village are the high volume of rejected oranges and their lack of understanding of processing rejected oranges. As a result, the rejected oranges are only thrown away which pollute the environment. Therefore, it is necessary to take corrective actions by processing rejected oranges into multipurpose products, such as biocatalysts, biodisinfectants, and floor cleaning fluids. Biocatalysts can be used to optimize the absorption of soil elements by orange plants, which certainly will maximize the use of fertilizers. Biodisinfectants are more recommended to be used than chemical disinfectants because chemical disinfectants have side effects that can cause irritation to human skin. Cleaning liquid can be used instead of chemical cleaning fluid, which also has an impact on the environment. In relation to this problem, it is necessary to carry out a series of activities that will greatly help the orange farming community in Seribu Jandi Village. The activities to be carried out are conducting training and counseling on the utilization of rejected oranges into multipurpose products.

Abstract

Biogas is renewable energy that can be used as substitute of LPG and generator fuel. The utilization of waste into biogas has been implemented in Tadukan Raga Village, Sinembah Tanjung Muda (STM) Hilir District, Deli Serdang Regency since 2018 by building a facility for processing biomass into biogas by utilize rumen waste and cow dung at pilot scale. This facility has been handed over by the Ministry of Environment and Forestry to the community to manage independently. However, there is a problem in the lack of understanding of the community in the management, development and maintenance of this facility. This problem resulted in the abandonment of the biogas plant so that production and operations not running and some equipment requiring repairs. The purpose of this program is to strengthen and empower observer groups and users of biogas production facilities in Tadukan Raga Village. Therefore it is necessary to carry out: an analysis of the sustainability of the biogas plant program and the use of biogas as an alternative to overcoming livestock manure pollution in the program of Desa Binaan USU 2022, repair of biogas reactor and piping and the use of biogas stoves modified from LPG stoves.

Abstract

Penatapan Doulu is one of the popular tourist areas in Karo Regency, Indonesia. Tourism activities cause waste problems that have the potential to pollute the surrounding environment. This study aims to analyze and evaluate waste problems in the Penatapan Doulu tourism area which includes waste management policies and methods, as well as providing future considerations for proposed waste management strategies through the concept of collaborative management. This study analyzes all kinds of waste generated from 30 restaurants located in the Penatapan Doulu tourist area. The method for calculating waste generation and composition is based on SNI 19-3964-1994. The results showed that the total waste generation reached 76.03 kg/day with the waste composition dominated by plastic 42.02%, fruit peels 28.07%, and food 13.46%. Evaluation of the current condition obtained a value of 2.58 which is categorized as moderate. Proposed strategies that need to be carried out in the Penatapan Doulu tourist area are making trash bins based on the type of waste and pilot village programs which are a concrete manifestation of synergy between stakeholders and handling waste problems must be carried out by all parties with collaborative management carried out effectively.

Abstract

Good quality animal feed was a determining factor for the success of livestock industry. Maggot BSF had the potential as a promising protein source feed. The aimed of this researceh was to investigate digestibility of crude protein, dry matter, organic matter of BSF maggot flour. The maggot was kept in media of fermented palm oil coir (FPOC) with dose of fermenter 1, 3, 5%. The maggot processed into flour and fed to kampong chickens. The reseach was conducted experimentally using a completely randomized design (CRD) with 4 treatments and 5 replications. The treatments were: M0 (fish meal), M1 (Maggot FPOC 1%), M2 (maggot FPOC 3%) and M3 (maggot FPOC 5%). Based on the results of the study, it was found that BSF had a significant effect (P <0.05) on protein digestibility (M0 = 75.70, M1 = 63.03, M2 = 73.32, and M3 = 56.24), a very significant effect (P <0.01) on the digestibility of dry matter (M0 = 64.72, M1 = 44.08, M2 = 44.26, and M3 = 37.43), and the digestibility of organic matter (M0 = 68.59, M1 = 45, 32, M2 = 48.08, and M3 = 47.47). Maggot flour from FPOC 3% produced good crude protein digestibility in kampong chicken compared to FPOC 1% and 3% .

Abstract

Mix pasture contains more complete nutrition for animal feed. This study aims to determine the effect of giving sheep feces compost with different fertilization doses and intervals on the productivity of mixed pastures (Clitoria ternatea and Brachiaria ruziziensis). This research was conducted in Kotangan Village, Kec. Galang, Kab. Deli Serdang North Sumatra from September to November 2020. The experimental design was used a split-plot design with two treatment factors and three replications. Factor I is the main plot, namely the fertilization interval: N1 = once every four weeks and N2 = once every two weeks. Factor II as a subplot which were doses of compost : P0 = control (without compost), P1 = compost 1 kg/plot (10 t/h), P 2 = compost 2 kg/plot (20 t/h) and P3 = compost 3 kg/plot (30t/h).The variables observed were plant height, number of leaves, number of tillers, number of branches, fresh production, dry matter, crude protein, and crude fiber. The results showed that sheep feces compost doses and different time intervals for fertilization had a significant effect (P<0,05 ) on the number of leaves and tillers of Brachiaria ruziziensis, crude protein, and coarse fiber of mixed pasture. There was no significant effect (P>0,05) on plant height, the number of leaves and number of branches of Clitoria ternatea, the height of Brachiaria ruziziensisas, and fresh and dry mixed pasture production. The appropriate fertilization interval was once every two weeks, and the best fertilizer dose was 3 kg/plot (30 t/h).

Abstract

Goat meat is very popular in Indonesia. Goat meat is very popular in Indonesia. One method of preserving goat meat is by treating it with acid, a process known as rarit. This study aims to determine the effect of using Jungga citrus on the physical and organoleptic quality of goat meat rarity. The experimental design used in this study was a Completely Randomized Design (CRD) with 4 treatments and 5 replications, resulting in a total of 20 experimental units: P0=0%, P1=6%, P2=12%, P3=18%. The parameters were physical quality tests, including pH and yield of goat meat, and organoleptic tests for color, aroma, taste, and texture. The results of this study indicate that marinating goat meat with Jungga citrus solution produces significantly better organoleptic results, including texture, aroma, taste, and pH. However, there were no significant differences in color and yield between treatments. The best treatment with good results was found at a dose of 18 ml of Jungga citrus (P3) with the addition of 82 ml of mineral water. This indicates that the use of Jungga citrus in marinating goat meat effectively improves organoleptic quality such as texture, aroma, and taste. However, it does not affect the color of the meat or yield, thus maintaining the color of the meat. In conclusions Jungga citrus are good for preserving goat meat into rarit.
