Abstract

Stunting is caused by a lack of important nutrients that occur early in life. Consumption of nutritious food is one of the efforts to improve the nutritional status of stunted children. One of the sources of nutritious food that is widely grown in Indonesia is spinach and strawberries which are rich in micronutrients such as iron, protein, calcium, beta-carotene, vitamins A, vitamin C, calcium, and phosphorus. These food ingredients can be processed into jelly candy snacks that are delicious and liked by children. The PKM team created a new food innovation in the form of a jelly candy called NACHBERRY "Spinach & Strawberry" which has a high nutritional content that has gone through a sensory test involving 20 panelists. Sensory test results of jelly candy made from spinach have a better score than jelly candy made from strawberry.

Abstract

Stunting refers to the condition of a child's height being shorter than the height of his age, which is caused by a lack of nutritional intake for a long time in the first 1000 days of life (HPK), diabetes, or kidney failure; hampering Indonesia's demographic bonus where the ratio of the non-working age population to the working age population decreases; threat of reducing intelligence level by 5-11 points. In addition to nutritional factors, stunting is caused by a lack of public knowledge, especially pregnant women, mothers of toddlers and posyandu cadres. The purpose of this community empowerment is to increase the knowledge of posyandu cadres and the community in the Rangkah Surabaya Health Center area through health promotion by forming the Community Movement Prevent Stunting (GEMAS), academic and technical related to the implementation of Posyandu. The provision of stunting education is expected to be able to carry out posyandu activities optimally on target. Cadre education activities showed an increase in general knowledge of posyandu cadres, attitudes and actions of cadres and knowledge about stunting.

Abstract

The First 1000 Days of Life Movement (HPK) is also known as Scaling Up Nutrition (SUN) as a state effort to accelerate nutrition improvement, especially handling nutrition from 1000 days from pregnancy to two years of age. Pregnant women, nursing mothers, newborns and children under two years of age (baduta) are the target groups to improve the quality of life for the first 1000 days of humanity. For cadres as the spearhead of health workers who are directly involved with the community, there is still a low level of knowledge of cadres from an academic and technical perspective regarding the implementation of Posyandu. Providing 1000 HPK education is expected to be able to carry out posyandu activities optimally on target. The 1000 HPK cadre education activities showed an increase in scores for general knowledge of posyandu cadres, attitudes and actions of cadres and knowledge of balanced nutrition. The knowledge that the respondents had before being given education & training was good, this is probably due to the age characteristics that are in the range of 30-40 and the education of the respondents who graduated from high school allows the respondents to have good knowledge.

Abstract

Forensic science is multiplying. One of them is the identification of events at sea. Of course, the victim’s body can be submerged in seawater for days so that components in seawater can affect the victim’s body. This research aimed to see the effect of storage time on the level and purity of DNA in nail samples. Identification of nail DNA using the Polymerase Chain Reaction (PCR) method. The DNA purity test examines nail samples using a spectrophotometer read at 260 and 280 nm wavelengths. Measurement of DNA levels using the PCR instrument on the STR TPOX locus, the result was 32.02 ug/uL on positive control, 36.73 ug/uL in seawater immersion on the 2nd day, 35.35 ug/uL in seawater immersion on the 7th day, and 34.5 ug/uL in seawater immersion on the 20th day. At the STR TH01 locus, the result was 32.155 ug/uL on positive control, 38.05 ug/uL on the 2nd day of immersion in seawater, 35.18 ug/uL on the 7th day, and 33.88 ug/uL on the 20th day. Results Examination of the Total Plate Number of seawater on the 2nd day, 7th day, and 20th day of immersion found no colonies of germ colony growth. This study obtained sufficient DNA purity from the 2nd day, 7th day and 20th day. So that the samples could be analyzed for DNA levels, the result obtained from the study showed a decrease in DNA levels at the TPOX Locus and TH01 Locus from the 2nd day, 7th day, and 20th day.

Abstract

According to the AKG (2019), the potassium requirement of adults is 4,700 mg. If a snack is given 10% of the requirement, then 470 mg is obtained per snack meal. To meet this need, an innovation of high-potassium snacks was carried out by formulating red beans in the form of flour into pancakes. The purpose of this study to determine the acceptability and potassium content of red bean pancake formulation as an alternative snack for people with hypertension. This study was an experiment on 4 different formulations with a ratio of wheat flour and red bean flour 100: 0 g, 85: 15 g, 70: 30 g, 50: 50 g, then tested for acceptability and tested for potassium levels. The highest acceptability test was in formulation 3 (PKM 3), which was 3.59 in the preferred category with a potassium content of 447.5 mg/100g. One serving of red bean pancake snack based on caloric needs obtained 80 grams for adult men with 358 mg of potassium and 67 grams for adult women with 300 mg of potassium. The highest acceptability test was in formulation 3 (PKM 3). One serving of red bean pancake snack can not meet the needs of potassium

Iron deficiency is one of the causes of anemia which is still common in pregnant women and adolescents. The aim of this study was to determine the acceptability and levels of iron in churros formulated by RALE (red bean and soybean flour) as a snack to prevent anemia for girls. The research method is an experiment on 3 formulations of adding many flours: red bean: soybean with the formulations CP 1 (85:5:10), CP 2 (75:10:15), and CK 3 (100:0:0), using organoleptic tests in the form of likes and dislikes for color, taste, aroma, texture which were presented to 25 panelists. Test for iron content using ICP-OES method for the best organoleptic formulation and test results (CK 3). The results showed the CP 1 formulation were the most preferred with an average score of 4.32 which was included in the like category. The conclusion of this study showed organoleptic properties, the formulation favored by the panelists was the CP 1 formulation with a ratio of flour: red bean flour: soybean flour of 85:5:10, having an iron content of 3.86 mg/100 grams churros.
