Abstract

Chronic energy deficiency in young people is caused by a lack of nutritional intake, such as energy and protein. Consequently, the nutrients required for daily needs are insufficient. This study aims to determine the acceptability test results and protein content in soy flour muffins as a snack for young women with chronic energy deficiency. An experimental study was conducted with 25 participants to assess the acceptability of three muffin formulas, varying in wheat flour to soy flour ratios: 150:0, 90:60, and 80:70. Following processing and acceptability testing, the control and preferred formula were analyzed for protein content in soy flour muffins. The results indicate that the preferred formula among the panelists (DP18) was formula 3, with a wheat flour to soy flour ratio of 80:70, containing a protein content of 10.70%. This formula exhibited an energy density of 4.23 kcal/g and a Protein Energy ratio of 12.31%. Muffins supplemented with 60 g/serving of soy bean can fulfill 10% of daily calorie and protein requirements. Future researchers are encouraged to conduct community-based projects to assess the utility of these muffins in increasing body weight and average arm circumference.

Abstract

Obesity is a condition of excessive accumulation of body fat tissue which will cause disease. Obesity can be defined as a result of overeating. This study aims to determine the effect of balanced nutrition education using the emodemo method on the knowledge and attitudes. This research is a quantitative Pre-Experimental with the type of pre-test and post-test One Group Design, data collection using questionnaires. The sample of this research is 34 respondents using Proportional Random Sampling technique. Statistical tests used the Wilcoxon Signed Runk Test to determine the effect before and after being given counseling using the emodemo method module game assembling donut rings on the level of knowledge and attitudes about balanced nutrition. The level of knowledge of obese adolescents by 8.8% increased to 85.3%. While the attitude level of obese adolescents was 82.4% increasing to 88.2%. There is an effect of balanced nutrition education using the emodemo method on the knowledge and attitudes of obese adolescents. Schools can provide healthy canteens that provide balanced nutritious meals for adolescents.

Abstract

Many teenage girls in Indonesia suffer from anemia, prompting exploration into alternative dietary interventions. Moringa leaves, known for their high iron content, offer a potential solution. This study aimed to formulate tofu meatballs enriched with moringa flour, evaluating their iron content and organoleptic qualities as a feasible iron supplement for adolescent girls. Three tofu meatball formulations were tested: F1B with no added moringa flour, F2B with 5 g, and F3B with 10 g. Iron content was assessed using ICP-OES, and organoleptic tests were conducted. Statistical analysis included the Kruskal-Walli’s test, with Mann-Whitney test for significant differences. Results revealed F2B had the highest iron content at 1.34 mg/100 g, followed by F1B at 1.06 mg/100 g, and F3B at 1.23 mg/100 g. However, iron levels per serving fell short of the 10% daily requirement. While F1B was preferred for taste, aroma, color, and texture, F2B and F3B were still acceptable. Future improvements could involve using boiled moringa leaves and seasoning to enhance organoleptic qualities.

Abstract

One of the chronic diseases with high blood glucose levels is a characteristic of Diabetes Mellitus. Utilization of herbal ingredients needs to be developed to reduce blood sugar levels in diabetes, and one of them is by using moringa leaf extract and noni fruit. This study aimed to analyze the effect of a combination of moringa leaf extract and noni fruit on blood glucose levels and tissue cytology in diabetic mice. The study was a randomized pretest-posttest control group design using 28 male mice divided into seven groups. The data analysis showed the lowest decrease in blood glucose levels in the group of diabetic mice given noni fruit and moringa leaf extract at a dose of 150mg/20g BW/oral/day for two weeks. The results of histological examination of liver and pancreas tissue showed no tissue is damaged.

Abstract

Lead is one of the heavy metals used as an additive in gasoline to enhance lubrication and combustion efficiency in motor vehicles, such as container truck drivers, and is commonly found on highways. Truck drivers have a higher tendency to inhale air containing lead while on the road, which can lead to poisoning. Hair and blood can serve as biomarkers of lead exposure in the body. The purpose of this research is to determine the lead levels in the hair and blood of container truck drivers at PT. Trans Indo Sakti Surabaya using Atomic Absorption Spectrophotometry (AAS). This research is a descriptive study conducted at the Analytical Chemistry Laboratory of the Department of Medical Laboratory Technology, Health Polytechnic Ministry of Health Surabaya and the Standardization and Industrial Services Center Laboratory in Surabaya from October 2022 to May 2023. The samples used in the study are 15 container truck drivers, selected using purposive sampling technique. This study demonstrates results of the lowest hair lead level value at 0.1936 µg/g and the highest at 3.026 µg/g. Among the respondents, 9 were categorized as having normal levels, while 6 respondents were categorized as having abnormal levels. For the blood samples, the lowest lead level obtained was 0.146 µg/dL and the highest was 3.81 µg/dL. The lead levels are still categorized as normal. The presence of lead in the body is influenced by age, length of employment, duration of work, and smoking habits.

Abstract

An active smoker is someone who smokes cigarettes, resulting in an impact on their health, as well as on passive smokers and the surrounding environment. Smoking exposes individuals to the risk of lead inhalation due to cigarette smoke. Accumulated lead from smoked cigarettes can pose a health risk. This study aimed to identify respondent characteristics and analyze lead levels in both active and passive smokers. The research employed a descriptive approach with quantitative analysis. The sample consisted of urine samples from 20 active and passive smokers in the vicinity of Wadung Asri, selected using purposive sampling. The study was conducted at the Toxicology Laboratory, TLM Department of the Health Polytechnic in Surabaya, and at BARISTAND from October 2022 to May 2023. Based on the characteristics of active and passive smokers, regarding age, those aged 21-44 accounted for 25% of active smokers and 30% of passive smokers, those aged 45-59 constituted 10% in both categories, and those aged 60-74 constituted 15% of active smokers and 10% of passive smokers. The study results revealed that lead levels in the urine of active smokers ranged from a high of 0.1592 µg/mL to a low of 0.0885 µg/mL. Conversely, in passive smokers, lead levels in the urine ranged from a high of 0.0885 µg/mL to a low of 0.000032 µg/mL. Thus, the conclusion drawn from this study is that one respondent exhibited lead levels exceeding the normal threshold of <0.15 µg/mL.

Abstract

Lead (Pb) is one of the heavy metals with high toxicity which can pollute an environment and affect survival. Lead that enters the body is excreted into the bones, teeth and hair. A small amount of Pb, stored in the brain. 99% of lead binds to erythrocytes. The purpose of this study was to analyze the levels of lead (Pb) in the blood of pedicab drivers at Jembatan Merah, North Surabaya. This type of research is a type of descriptive research conducted at the Toxicology Laboratory, Campus of Technology, Medical Laboratory of the Surabaya Polytechnic, Surabaya Center for Standardization and Industrial Services from October 2022 to May 2023. The research sample was 20 venous blood of pedicab drivers at the Red Bridge in North Surabaya with the following criteria: has an age of more than 30 years and has a service life of more than 2 years and then tested using the Atomic Absorption Spectrophotometry (AAS) method. The results of the 20 samples showed that blood lead levels in pedicab drivers in the North Surabaya Region were still within the normal threshold set by WHO in 2021, namely <5 µg/dl or 0.05 mg/L.

Abstract

Saat ini, negara Indonesia telah memasuki masa dimana mayoritas penduduknya berada dalam kelompok dengan lanjut usia. Dikarenakan adanya keterbatasan fisik pada lansia, sebagian besar lansia di Indonesia tidak mampu hidup sendiri dan memerlukan bantuan orang lain pada setiap aktivitasnya. Dampaknya, semakin rendahnya kualitas hidup lansia di Indonesia telah menyebabkan proses pembangunan negara terhambat. Seiring berjalannya waktu, pemerintah telah melakukan sejumlah langkah untuk mengatasi isu-isu yang dihadapi oleh lansia. Salah satu solusi yang diimplementasikan adalah program posyandu lansia. Dari upaya tersebut masih didapati beberapa kendala seperti kurangnya keaktifan pengurus maupun lansia sekitar untuk mengikuti dan mengaktifkan layanan posyandu lansia. Berdasarkan penelitian-penelitian sebelumnya, peningkatan jumlah pemanfaatan Layanan posyandu lansia dapat dilakukan dengan melakukan upaya pendampingan kader posyandu. Berasal dari masalah tersebut, dilakukan kegiatan pengabdian masyarakat dalam bentuk penyuluhan kader posyandu lansia Abimanyu Polkesbaya. Saat kegiatan dilaksanakan, telah dipaparkan sebuah penyuluhan dengan metode ceramah dan diskusi mengenai pentingnya kesehatan pada lansia dan kepengurusan posyandu lansia.

Abstract

Upaya pemeliharaan kesehatan lansia dilakukan sejak lansia berusia 60 tahun dengan tujuan untuk menjaga agar tetap hidup sehat, berkualitas, dan mandiri. Kesehatan fisik dan mental menjadi faktor penting yang perlu diperhatikan pada lansia. Kegiatan pengabdian kepada masyarakat yang diselenggarakan pada tanggal 6 September 2023, berlokasi di Poltekkes Kemenkes Surabaya, dihadiri 38 lansia. Alat yang digunakan untuk pemeriksaan tekanan darah dan denyut nadi menggunakan alat tensimeter sedangkan pemeriksaan glukosa darah acak menggunakan alat point of care. testing (POCT). Hasil yang didapat adalah lansia yang ikut program ini terbanyak 68% berjenis kelamin perempuan, selain itu ada 12 dari 26 (32%) lansia memiliki memiliki tekanan darah tinggi. Terdapat 1 dari 38 (3%) lansia memiliki denyut nadi di atas batas normal dan 3 dari 38 (8%) lansia dengan kadar glukosa darah di atas batas normal. Abstract

Background: Pregnant women experiencing chronic energy deficiency are at risk of giving birth to low birth weight and premature (stunted) babies. Objectives: In an effort to prevent stunting, the study investigates the effects of a 1:1:1 ratio of Moringa oleifera, Cyclea barbata, and Centella asiatica leaf extract on fetal growth and blood protein levels. Methods: This research used a laboratory experimental approach with 25 adult female Mus musculus Balb/C mice as a model of malnourished pregnancy, was divided into 5 groups: pre-test, positive control, negative control, placebo and test group. Moringa oleifera, Cyclea barbata, and Centella asiatica leaf extracts are administered to the test group and positive control in 1:1:1 ratio. Results: The study results indicated that in pregnant mice without malnutrition receiving a mixture of Moringa oleifera, Cyclea barbata, and Centella asiatica leaf extracts, the average fetal body length was 9.7% higher and their weight was 7.4% heavier than pregnant mice with experiencing chronic energy deficiency. Conclusions: The administration of Moringa oleifera, Cyclea barbata, and Centella asiatica leaf extract can contribute to improving fetal development and blood protein levels. However, its effectiveness is more pronounced in normal pregnancies than in pregnancies with chronic energy deficiency as it can prevent stunting.
