Abstract

Abstrak Tujuan penelitian ini adalah menguji metode in vitro yang paling potensial digunakan dalam skrining indeks glikemik (IG) pada nasi yang menurut literatur memiliki IG berbeda (rendah, sedang dan tinggi). Metode Englyst et al. (2003) dan Argyri et al. (2016) menjadi metode in vitro terpilih yang diuji validitasnya untuk mengetahui kemampuan keduanya dalam menggolongkan pangan sesuai hasil pengujian IG in vivo. Sebanyak enam varietas beras dimasak menggunakan rice cooker kemudian nasi diuji kadar proksimat (protein, lemak, air, abu, karbohidrat), serat pangan total, amilosa, amilopektin dan pati. Sebanyak 20 orang yang memenuhi kriteria inklusi dibagi dalam dua kelompok sebanding untuk diukur kadar gula darah 2 jam setelah mengonsumsi makanan. Nasi hitam Cirebon, Cisokan dan Inpara 5 memiliki IG sedang, sedangkan nasi Inpari 24, Sintanur dan ketan Grendel tergolong IG tinggi. Kadar glukosa nasi pada metode Englyst et al. (2003) menit ke-20 dan Argyri et al. (2016) menit ke-120 apabila dibuat pemeringkatan terendah hingga tertinggi menunjukkan urutan peringkat yang sesuai dengan urutan nilai IG in vivo. Kesimpulan penelitian ini adalah metode Argyri et al. (2016) menunjukkan hasil yang lebih mendekati nilai IG in vivo dan prosedur pengukuran yang dilakukan lebih mirip dengan proses pencernaan pada tubuh manusia, sehingga metode ini lebih direkomendasikan dalam memperkirakan pengkategorian IG in vivo pada sampel berupa nasi (r2=0,461, p<0,01).Kata kunci: indeks glikemik, in vitro, nasi Abstract  The aim of this study was to test the most potential in vitro methods to used in screening the glycemic index (GI) of rice which according to the literature had different GI category (low, medium, high). Englyst et al. (2003) and Argyri et al. (2016) became the selected in vitro method that tested their validity by determine their ability to classify food according to the results of in vivo GI. Six rice varieties were cooked using a rice cooker then tested for proximate analysis (protein, fat, water, ash, carbohydrate), total dietary fiber, amylose, amylopectin and starch. A total of 20 subjects who met the inclusion criteria were divided into two comparable groups to measure their blood glucose levels for 2 hours after consuming test food. Cirebon black rice, Cisokan and Inpara 5 have moderate GI, while Inpari 24, Sintanur and Grendel glutinous rice were classified as high GI. Glucose levels of rice as measured by Englyst et al. (2003) at 20th minute and Argyri et al. (2016) at 120th minute has a comparable rank with in vivo GI. The conclusion of this study is method by Argyri et al. (2016) showed results that were closer to the in vivo GI and the measurement procedure was more similar to the digestive process in the human body, thus its became more recommended method to estimating the categorization of in vivo GI in rice samples (r2=0,461, p<0,01). Abstract

The prevention and management of hypertension through healthy lifestyle modifications is a challenge for public health. The prevalence of hypertension among Indonesians was 34,1%. Lifestyle behaviors such as body mass index, central obesity, and sodium intake are associated with the risk of hypertension. This study aimed to analyze the influence of nutritional status and abdominal circumference on blood pressure in adult men. This cross-sectional research was conducted in Sukajadi Village, Bogor, between 2022-2023. The subjects were 73 purposively selected adult men. Data on subject characteristics were obtained through interviews. Anthropometric data were obtained by measuring abdominal circumference, body weight, and body height to assess the body mass index (BMI). Consumption data were collected using SQ-FFQ. The data analysis was performed using a linear regression test with a significance level of 95%. The results showed that Body mass index (p=0,007) and abdominal circumference (p=0,005) affected systolic blood pressure, while sodium intake (p=0,906) was not related to systolic blood pressure in adult men. Conclusions: Body mass index and abdominal circumference greatly influenced the systolic blood pressure. Further studies are needed to determine the various factors that influence systolic blood pressure and the risk of hypertension.

Abstract

Severe acute malnutrition (SAM) is a global health concern that affects children and leads to delayed growth. The aim of this study was to compare the impact of F100 milk and Bregas Nutriroll, a local ready-to-use therapeutic food (RUTF), on SAM children. An unmasked, non-blinded, two-group, and simple randomized controlled trial was conducted. Indonesian children aged 12–59 months with SAM were randomly assigned to receive either F100 milk or Bregas Nutriroll. After eight weeks, the increase in the mean weight gain in both groups was assessed. The Bregas Nutriroll group (n=19) had a mean weight gain of 1.07±0.09 kg, while the F100 group (n=17) had a mean weight gain of 1.05±0.11 kg. The Bregas Nutriroll group had a slightly higher gain of mid-upper arm circumference (MUAC) than the F100 group (0.62±0.34 cm vs 0.50±0.37 cm). The gain of children’s height of the Bregas Nutriroll group was 0.96±0.42 cm, while the F100 group was shorter at a mean of 0.81±0.44 cm. Statistically significant differences (p<0.001) in nutritional status were observed based on weight, MUAC, and height/length after F100 and Bregas Nutriroll interventions. The intervention with F100 increased hemoglobin (Hb) levels of 0.71±1.25 mg/dL, while the Bregas Nutriroll intervention led to an increase of 0.11±1.39 mg/dL. In conclusion, our study showed that community-based treatment with F100 milk or Bregas Nutriroll resulted in nutritional status in children with SAM. These findings suggested that both treatments could be effective in treating SAM in improving nutritional status and child health outcomes.

Abstract

Background: The profiling of a drink made from bay leaves combined guava juice has not been previously reported despite the positive health aspects of both plants. Objectives: To analyze the sensory characteristics of jelly drink bay leaf water extract with guava juice combination using the Quantitative Analysis Descriptive (QDA) sensory evaluation method. Methods: The QDA carried out of three stages, namely the panelist preparation stage, Forum Group Discussion (FGD), and quantitative descriptive test. QDA was carried out on four jelly drink product formulas, namely F0 (standard), F1 (75:25), F2 (50:50), F3 (25:75) from the ratio of bay leaf extract:guava juice. Results: Sensory attributes consist of 17 attributes, namely appearance (particle aggregation size, viscosity, homogeneity), aroma (bay leaf, guava, sweet), texture (gritty, ease of spreading), taste (guava, sweet, sour, bay leaf), mouthfeel (gritty, jelly-like consistency, viscosity), aftertaste (astringent and bitter). The results of the one-way ANOVA analysis showed significant differences between the formula and the control product (p<0.05). Formula 1 and 3 not accepted by consumers because there are weaknesses, such as the inhomogeneous appearance and the strong aroma of bay leaf obtained the highest value in formula 1. In contrast, formula 3 has the highest value in astringent and bitter aftertaste, gritty texture and mouthfeel. Conclusions: The selected treatment is formula two of jelly drink with a ratio of bay leaf water extract: guava juice = 50:50. A description like this will assist food technology in developing new products.

Abstract

The popularity of ready-to-serve foods has increased in Indonesia, particularly among busy consumers with limited time for cooking at home. However, the consumption of ready-to-serve foods high in sugar, salt, and fat (SSF) has prompted concerns regarding their potential adverse health impacts when consumed excessively. The present study aimed to investigate consumers’ behavior and perception regarding the purchase of ready-to-serve foods and the practice of food producers in providing these products. The study employed a structured questionnaire involving 100 consumers selected based on purposive sampling. Additionally, focus group discussions were conducted with 80 ready-to-serve food producers across five Indonesian cities using a cross-sectional research design. The data analysis, conducted using binary logistics, yielded significant findings regarding the relationship between consumers’ income and their purchase decisions regarding ready-to-serve food. This study revealed that price (42%), taste (31%), and accessibility (23%) were the primary factors influencing consumers’ food choices. However, it also indicated that nutrition and health aspects received inadequate attention from consumers, which is a cause for concern. Concurrently, the producers who participated in this study indicated that they prioritize sanitation and hygiene (53.8%) in their food production, citing regulatory requirements as the primary driver of this practice. It is regrettable that the majority of the producers (92.5%) lacked information regarding the nutrition content of their products. Moreover, they did not actively contribute (2%-11%) to controlling SSF levels except to respond to consumers’ demands. These findings underscore the necessity for enhanced awareness campaigns and implementation strategies involving all stakeholders to promote healthier, ready-to-serve foods. The implications of these findings for future policy and practice are significant, highlighting the need for a more comprehensive approach to nutrition education and labeling in the ready-to-serve food industry in Indonesia.

Abstract

This study aims to develop a pie product substituting wheat flour with composite flour from catfish head flour and chia seeds flour as an alternative high-calcium product. The experimental design used was a completely randomized design with four percentages of wheat flour substitution with composite flour (100:0%, 93:7%, 86:14%, 79:21%). The analysis used was organoleptic test (acceptance test), physical analysis (color and texture), nutritional profile analysis (proximate, calcium, and calcium bioavailability). Data were analyzed using One-Way ANOVA and independent sample T-test. The level of pie hardness, ash content, protein, fat, calcium and calcium bioavailability increased along with the increasing use of composite flour, but carbohydrate content decreased. Substitution of wheat flour with composite flour tended to decrease panelist’s preference for pie color, but did not affect panelist’s assessment of aroma, texture, taste, and overall acceptance. Substitution (86:14%) of wheat flour with composite flour was chosen as the best formula with the results of nutritional content of 13.98% water content, 2.94% ash content, 11.47% protein, 25.57% fat, 46.04% carbohydrate, and calcium content of 541.13 mg/100 grams. The results of this study indicate that substitution of wheat flour with a mixture of catfish head flour and chia seeds flour in pies can provide an alternative product of high calcium. Penelitian ini bertujuan untuk mengembangkan produk pie substitusi tepung terigu dengan tepung komposit dari tepung kepala ikan lele dan tepung chia seeds sebagai alternatif produk tinggi kalsium. Rancangan percobaan yang digunakan adalah rancangan acak lengkap dengan empat persentase substitusi tepung terigu dengan tepung komposit (100:0%, 93:7%, 86:14%, 79:21%). Analisis yang digunakan adalah uji organoleptik (uji penerimaan), analisis fisik (warna dan tekstur), analisis kandungan gizi (proksimat, kalsium, dan bioavailabilitas kalsium). Data dianalisis menggunakan One-Way ANOVA dan independent sample T-test. Tingkat kekerasan pie, kadar abu, protein, lemak, kalsium dan bioavailabilitas kalsium meningkat seiring dengan peningkatan penggunaan tepung komposit, tetapi kadar karbohidrat menurun. Substitusi tepung terigu dengan tepung komposit cenderung menurunkan kesukaan panelis terhadap warna pie, tetapi tidak memengaruhi penilaian panelis terhadap aroma, tekstur, rasa, dan penerimaan keseluruhan. Substitusi (86:14%) tepung terigu dengan tepung komposit dipilih sebagai formula terbaik dengan hasil kandungan gizi sebesar 13,98% kadar air, 2,94% kadar abu, 11,47% protein, 25,57% lemak, 46,04% karbohidrat, dan kandungan kalsium sebesar 541,13 mg/100 gram. Hasil penelitian ini menunjukkan substitusi tepung terigu dengan campuran tepung kepala ikan lele dan tepung chia seeds pada pie dapat memberikan produk alternatif tinggi kalsium.

Abstract

Diabetes mellitus has a significant impact on health and, in the long term, can lead to complications. Women are at a higher risk of developing type 2 diabetes mellitus compared to men. For women of reproductive age, diabetes mellitus can affect reproductive health and pregnancy quality, which may influence the next generation. The study aimed to determine risk factors for type 2 diabetes mellitus in women of reproductive age in Bekasi City. This was matched case control study, involving 72 subjects selected by purposive sampling. The study was conducted at community health centre in Bekasi. Results: There were no significant differences in nutritional status (p=0.083) and age at menarche (p=0.234) of women of reproductive age with T2DM and non-T2DM. Long menstrual cycles increase the risk of type 2 diabetes mellitus by 6.2 times higher than normal menstrual cycles (p=0.005). A history of gestational diabetes in women of reproductive age increases the risk 2.2 times higher for women of reproductive age to experience T2DM in the future (p=0.027). Long menstrual cycles and gestational diabetes are important factors contributing to the increased risk of T2DM in women of reproductive age.

Abstract

Vitamin D deficiency is not only caused by disease, but also by insufficient intake. Insufficient vitamin D levels are associated with an increased incidence of allergies. This study aimed to determine the relationship between the source of vitamin D intake and the frequency of allergies in adult women in Bogor City. This research used a cross-sectional design involving 395 women aged 19-49 years and domiciled in Bogor City from August-November 2023. The sampling technique used was purposive sampling based on inclusion criteria. Data collection was carried out by filling out a questionnaire. Bivariate data were analyzed using chi-square. The results of the study show that consumption of vitamin D has a significant effect on the incidence of allergies, where people who consume vitamin D are less at risk of developing allergies (allergic and not allergic) (0.021) and is supported by the statement that the frequency of administration of vitamin D apparently influences the risk of not experiencing allergies ( 0.033). The results showed that intake of other sources of vitamin D: fish (p=0.359), cod liver oil supplements (p=0.106), milk enriched with vitamin D (p=0.844), dairy products enriched with vitamin D (p=0.503) , is not significantly related to the frequency of allergic events. The conclusion is regular consumption of vitamin D supplements can help reduce the frequency of allergies. Further research on the effects of immunomodulation and allergy prevention with experimental approaches is needed. Future research suggestions should investigate the optimal dose of vitamin D supplements for allergy prevention.

Abstract

ABSTRACTThe general objective of this study was to analyse nutritional adequacy, physical activity, and cardiorespiratory fitness among Indocement’s workers at Bogor. The cross-sectional study was applied with purposive sampling, involving 32 office workers and 32 plant workers. Most of subjects (59.4% and 78.2%) had a normal Body Mass Index (BMI). The mean VO2 max of plant workers (24.4±7.6 mL/kg/mnt) was higher than office workers (22.9±7.5 mL/kg/mnt). There were no differences of macrocutrients adequacy (energy, protein, fat, and carbohydrate) between two workers (p>0.05). Physical activity level of plant workers was higher than the office workers, and it was categorized as moderately active (59.4%), whereas the office workers categorized as sedentary (75.0%). The office workers had better exercise (160.3±118.0 minutes) than the plant workers (89.1±167.6 minutes). Moreover, there were differences on physical activity and habitual exercise between the two groups (p<0.05). The significant correlations between age, physical activity, and habitual exercise with VO2 max were found on plant workers (p<0.05), but not on office workers (p>0.05).Keywords: cardiorespiratory fitness, nutritional adequacy, physical activityABSTRAKTujuan penelitian ini adalah untuk menganalisis tingkat kecukupan gizi, aktivitas fisik, dan tingkat kebugaran kardiorespiratori pegawai PT. Indocement di Bogor. Desain penelitian adalah cross-sectional dengan purposive sampling, melibatkan 32 pegawai kantor dan 32 pegawai lapang PT. Indocement. Sebanyak 59,4% pegawai kantor dan 78,2% pegawai lapang memiliki IMT yang normal. Rata-rata VO2 max kelompok lapang (24,4±7,6 mL/kg/menit) lebih tinggi dibandingkan kelompok kantor (22,9±7,5 mL/kg/menit). Tingkat kecukupan zat gizi kedua kelompok tidak berbeda (p>0,05). Sebagian besar (59,4%) pegawai kelompok lapang mempunyai kategori aktivitas sedang dan sebanyak 75,0% kelompok kantor mempunyai kategori aktivitas fisik ringan. Kebiasaan olahraga kelompok kantor lebih baik (160,3±118,0 menit) dibandingkan kelompok lapang (89,1±167,6 menit). Terdapat perbedaan aktivitas fisik dan kebiasaan olahraga antara kelompok kantor dan lapang (p<0,05). Terdapat hubungan yang signifikan antara usia, kebiasaan olahraga, dan aktivitas fisik dengan VO2 max pada kelompok lapang (p<0,05), dan tidak terdapat hubungan pada kelompok kantor (p>0,05).Kata kunci: aktivitas fisik, kebugaran kardiorespiratori, tingkat kecukupan zat gizi

Abstract

ABSTRACTThe purpose of this study was to analyze the effect of the frequency of moderate-intensity aerobic exercise on body fat of female university students. A quasi experimental design was applied by involving 21 undergraduate students who were divided into three groups of treatments moderate-intensity aerobic exercise intervention for eight weeks. The first group was two times a week, the second group was three times a week, and third group was four times a week. Primary data collected was included subcutaneous fat (triceps, abdomen, and thigh). The results showed that the third group has significantly difference in reducing body fats, namely 6.6 cm triceps, 5.4 cm abdomen, and 9.4 cm thigh (p<0.05).Keywords: aerobic exercise, body fat, moderate-intensityABSTRAKTujuan penelitian adalah menganalisis pengaruh frekuensi senam aerobik intensitas sedang (low impact) terhadap lemak tubuh mahasiswi. Penelitian menggunakan desain quasi eksperimen dengan subjek berjumlah 21 mahasiswi, kemudian dibagi kedalam tiga kelompok perlakuan dengan melakukan senam aerobik intensitas sedang selama delapan minggu. Kelompok pertama diberikan perlakuan dua kali dalam seminggu, kelompok kedua tiga kali dalam seminggu dan kelompok ketiga diberikan perlakuan empat kali seminggu. Data primer terdiri atas lemak tubuh (trisep, abdomen, dan paha depan). Hasil penelitian menunjukkan pada kelompok tiga terdapat penurunan yang nyata (p<0,05) sebelum dan setelah perlakuan sebesar 6,6 cm trisep, 5,4 cm abdomen dan 9,4 cm paha depan.Kata kunci: aerobik, intensitas sedang, lemak tubuh
