Abstract

The purpose of this research was to estimate the shelf life of wajik that is packed with oil paper and tapioca edible film. Estimation of shelf life using the acceleration method by storing wajik for 30 days at three different temperatures, there are temperatures of 30°C, 35°C, and 40°C. The parameters observed during the storage process were sensory assessments of rancidity and thiobarbituric acid (TBA) values of wajik. Data were analyzed using linear regression and the equations obtained were used to calculate the shelf life of wajik at normal temperature, which is 29°C. The wajik shelf life packed with oil paper based on rancidity sensory test is 29.787 days on the zero order reaction with the regression equation y = -2225.17x + 5.0060, with an activation energy value (Ea) of 4419.188 kal.mol-1, and the value of quality degradation (k) is 0.094 quality unit per day, while the wajik shelf life based on the TBA value test is 27.294 days on the first order reaction with the regression equation y = -3164.10x + 6.7644, with an activation energy value (Ea) of 6283.903 kal.mol-1, and the value of quality degradation (k) is 0.022 quality unit per day. The wajik shelf life packed with tapioca edible film based on rancidity sensory test was 45.455 days on the zero order reaction with the regression equation y = -3444.46x + 8.6946, with an activation energy value (Ea) of 6840.698 kal.mol-1, and the value of quality degradation (k) is 0.066 quality unit per day, the wajik shelf life based on the test TBA value is 32.234 days on the first order reaction with the regression equation y = -1086.80x - 0.0582, with the activation energy value (Ea) of 2158,385 kal.mol-1, and the value of quality degradation (k) is 0.026 quality unit per day. Keywords: Edible film, oil paper, shelf life, wajik.

Abstract

This study was conducted experimentally by using Completely Randomized Design (CRD) with 4 treatments, namely AA1 (H3PO4 5%), AA2 (H3PO4 10%), AA3 (H3PO4 15%) and AA4 (H3PO4 20%) with 4 replications. Data obtained were analyzed statistically using Analysis of Variance (ANOVA) and if F count is greater than or equal to F table then continued with DNMRT test at 5% level. Observation was the physic chemical properties from the used cooking oil which includes  purified water content, free fatty acids, saponification, reduceperoxideand and organoleptic test (color and odor). The results showed interaction H3PO4 concentration significantly affect (P <0.05) the acquisition of free fatty acids, saponification and reduceperoxideand but did not significantly effect (P>0.05) the water content and organoleptic (color and smell). The results show that the higher the concentration of H3PO4 in the refining of used cooking oil significantly decreased the contents of free fatty acids, saponification,  reduceperoxideand and organoleptic test (color and odor) but increased saponification. It can be concluded that the best treatment was AA4 treatment (H3PO4 20%) with the content of purified water content 0.178%, free fatty acids 0.392%, saponification 180.98 mg KOH/g and greduceperoxideand 2.595 meq/g. Keyword: used cooking oil, refining used cooking oil, bagasse carbon

Abstract

One of the most significant current discussions in development country is poverty, including in Indonesia.  Indonesia is one of the most populous in the worlds with 237.6 million people in 2010, where 76.93 % of povertyareconcentratedin Java(55.33%) andSumatra(21.6%). This paper attempted to create profiling poverty of 151 residences and cities in Sumatera. The poverty characteristics included in the profiling are:levelof education, manpower distribution, expenditures per capita, health, housing facilities, and government’s poverty eradication programs. Data resources are from Badan Pusat Statistik (BPS). The data were analyzed by principle component analysis (PCA) and Hierarchical Data Analysis.Factor analysis produced as many as 32 variables as the main components, adequate for further analysis as 'key factors' for social economic characteristic profile of residences and cities in Sumatera.  These main components demonstrated the adequate values of KMO, MSA, and Bartlett's Test of Sphericity. Following the result from Factor Analysis to obtain the important factors of poverty, the method of hierarchical cluster analysis was, further, used to classify the profiles of 108 residences and cities in Sumatera. The results of cluster analysis with 5interesting clusters of poverty profile of socio-economic indicators show that Cluster 1 comprises of 7 residences with similar characteristic of level of educationand manpower distribution. Cluster 2 includes 9 residences with similar level of education and expenditures per capita. Cluster 3 consists of 36 residences and 2 cities with similar manpower distribution and expenditures per capita patterns. Cluster 4 comprises of 23 residences and 3 cities showing its own distinct characteristics in their similarity patterns of expenditures per capita and housing facilities. Then, the cluster 5 consists of 2 residences and 27 cities showing the similar patterns in level of education and housing facilities.   Keywords: economic social, poverty, factor analysis, cluster analysis.
