Abstract

Kulit kayu raru yang memiliki senyawa bioaktif yang dapat digunakan sebagai antidiabetes. Penelitian ini bertujuan untuk menentukan kadar alkaloid dalam ekstrak Kulit Kayu Raru (Cotylelobium lanceolatum Craib) dengan pelarut etanol dan metanol serta menentukan aktivitas antibakteri isolat dengan pelarut non polar. Penelitian yang dilakukan meliputi ekstraksi simplisia kulit kayu raru dengan metode maserasi menggunakan pelarut etanol dan metanol. Ekstrak yang dihasilkan diekstraksi cair-cair dengan pelarut kloroform untuk mendapatkan isolat alkaloid. Kemudian isolat diuji aktivitasnya terhadap uji antibakteri. Penelitian ini merupakan fundamental yang direncanakan dilakukan dalam satu tahun dan merupakan kelanjutan penelitian tahun sebelumnya. Penelitian ini menggunakan dana internal Universitas Muslim Nusantara Al-Washliyah. Adapun Tingkat Kesiapan Teknologi dalam penelitian ini adalah 2. Hasil penelitian ini adalah senyawa alkaloid dari ekstrak kulit kayu raru dapat difraksinasi dengan ekstraksi cair-cair pelarut kloroform. Hasil fraksinasi diidentifikasi menggunakan spektroskopi FT-IR hasil identifikasi mengandung gugus fungsi N-H, C-N, C=O, C=C Aromatik, dan C=O Tajam, yang menandakan teridentifikasi mengandung senyawa alkaloid. Kadar senyawa alkaloid ditentukan dengan Spektrofotometri UV, fraksi kloroform ekstrak etanol dan metanol masing-masing adalah 18,9491± 0,09222956, dan 21,0325 ± 0,098274937 µg/g. Abstract

Goat-milk kefir contains lactic acid and ethanol formed through the symbiotic metabolism of lactic acid bacteria and yeasts; however, information on their changes during prolonged fermentation remains limited. This study aimed to characterize ethanol accumulation during six days of goat-milk kefir fermentation and to determine lactic acid after 24 h. Goat milk (250 mL) was heated at 75 °C, inoculated with 4% (w/v) kefir grains, and fermented at 25 ± 2 °C. Ethanol was screened using iodoform, acidified potassium dichromate, and esterification reactions, followed by visible spectrophotometric quantification at 443 nm after Conway microdiffusion. Lactic acid was quantified using HPLC-UV at 210 nm with 50 mM phosphate buffer (pH 2.8), a flow rate of 1 mL/min, and an injection volume of 20 µL. The pH decreased from 4.19 on day 1 to 2.15 on day 6, while ethanol increased from 0.227 to 0.657 g/dL (p<0.001). Commercial kefir contained 0.453 g/dL ethanol. The ethanol and lactic-acid calibration models showed R² values of 0.996; lactic acid in 24-h kefir was 3.923%. Prolonged fermentation therefore produced progressive acidification accompanied by ethanol accumulation, with the greatest change occurring during the first three days. These findings establish fermentation time as an important determinant of the metabolite profile of goat-milk kefir and provide a basis for subsequent studies using independent fermentation batches and fully validated analytical methods.

Abstract

Background: Tekelan leaf (Chromolaena odorata (L.) R.M.King & H.Rob) is one of Indonesia's natural resources rich in bioactive compounds. Its traditional use for treating wounds, sore throats, diarrhea, and various other ailments is suspected to be linked to its antioxidant and antibacterial content. Objective: This research aimed to analyze the antioxidant activity of the ethanol extract, n-hexane fraction, and ethyl acetate fraction of tekelan leaves, and to test their antibacterial activity against Staphylococcus aureus and Escherichia coli. Method: The study used an experimental method. Antioxidant activity was tested using the DPPH (2,2-diphenyl-1-picrylhydrazyl) method with a UV-Vis spectrophotometer, and the results were expressed as IC₅₀ values. The antibacterial test against S. aureus and E. coli was conducted using the disc diffusion method, and the inhibitory power was measured based on the inhibition zone diameter (mm). Results: The antioxidant test results showed that the ethanol extract and ethyl acetate fraction had strong activity with IC₅₀ values of 98.26 ppm and 75.43 ppm, respectively, while the n-hexane fraction showed weak activity (IC₅₀ 110.54 ppm). In the antibacterial test at a 40% concentration, the ethanol extract, n-hexane fraction, and ethyl acetate fraction inhibited the growth of both bacteria with strong to very strong categories. The highest average inhibition zones against E. coli and S. aureus were 19.03 mm and 21.36 mm (ethanol extract), 10.56 mm and 12.13 mm (n-hexane fraction), and 13.60 mm and 15.40 mm (ethyl acetate fraction), respectively. This activity was still lower than the positive control chloramphenicol, which produced inhibition zones of 28.23 mm (E. coli) and 27.43 mm (S. aureus). Conclusion: It was concluded that the extract and ethyl acetate fraction of tekelan leaves have strong antioxidant activity, while the n-hexane fraction is classified as weak. All samples (extract, n-hexane fraction, and ethyl acetate fraction) showed strong antibacterial activity against E. coli and S. aureus, although they have not matched the effectiveness of chloramphenicol.

Abstract

Bandotan (Ageratum conyzoides L.) is a plant distributed worldwide, especially in tropical and subtropical regions. Bandotan can be used as a traditional medicine because it contains beneficial phytochemical compounds such as terpenoids, alkaloids, essential oils, saponins, and phenolics that play a role in inhibiting bacterial growth and serving as natural antioxidants. The objective of this research was to determine the antioxidant and antibacterial activity of the extract, n-hexane fraction, and ethyl acetate fraction from bandotan leaves. This research used an experimental method. It included antioxidant testing of the ethanol extract fractions of bandotan leaves (Ageratum conyzoides L.) using the DPPH method and antibacterial testing using Escherichia coli and Staphylococcus aureus bacteria. The phytochemical screening results showed that bandotan leaves contain alkaloids, saponins, tannins, flavonoids, and glycosides. The antioxidant testing for DPPH radical scavenging revealed that the bandotan leaf extract had an IC50 value of 499.3633 μg/ml, the n-hexane fraction had an IC50 value of 945.7837 μg/ml, and the ethyl acetate fraction had an IC50 value of 382.9216 μg/ml, all categorized as very weak antioxidants. Antibacterial testing indicated that the extract, n-hexane fraction, and ethyl acetate fraction of bandotan (Ageratum conyzoides L.) exhibited antibacterial activity, inhibiting the growth of Escherichia coli and Staphylococcus aureus, with strong activity at the highest concentration of 40% and moderate activity at the lowest concentration of 10%. In conclusion, bandotan leaves have very weak antioxidant activity due to the low content of flavonoids and strong antibacterial activity at 40% concentration and weak activity at 10% concentration.

Abstract

Protein helps the body to grow and maintain tissue and replace damaged cells. If the intake of protein in toddlers is insufficient during their growth period, the growth and development of toddlers can be delayed and nutritional problems related to stunting can arise. And the level of protein adequacy affects the occurrence of stunting. One of the highly nutritious and easily accessible local foods that can be used as additional food is green beans, soybeans have the best source of vegetable protein, red beans have a protein content of between 16% and 20%, and are also a source of minerals and vitamins. The objective of the research was to determine the protein content in several types of beans (red beans, green beans, fresh soybeans) for handling stunting using the kjeldahl method and visible spectrophotometry. The method used in this research used the kjeldahl method, a simple way to determine total nitrogen in samples of several types of beans. This research also used a spectrophotometric method that can determine specific protein levels, had high accuracy and could measure small substances. The protein content obtained in the samples using the Kjeldahl method is Fresh Soybeans 35,19 gram, Green Beans 33,7 gram and Red Beans 28,6 gram divided by 100 grams of sample. The spectrophotometric method is Fresh Soybeans 29,09 gram, Green Beans 17,82gram and Red Beans 13,63 gram divided by 100 grams of sample. The protein content in the samples, namely fresh soybeans, green beans and red beans can be used in handling stunting because the levels obtained in the three samples can meet daily protein.

Bayam merah merupakan tumbuhan yang banyak memiliki manfaat Bayam merah dapat bermanfaat dalam produksi pangan sebagai pewarna makanan alami karena bayam merah mengandung antioksidan salah satunya adalah antosianin Tujuan penelitian ini adalah memanfaatkan zat warna alami bayam merah sebagai pewarna alami makanan dalam bentuk serbuk Metode penelitian ini dilakukan dengan cara bayam merah dihaluskan dengan menggunakan blender kemudian disaring dan diambil filtratnya lalu dikeringkan dilemari pengering lalu digerus sampai homogen Kesimpulan bayam merah Amaranthus gengiticus L dapat dijadikan serbuk Zatwarna yang diperoleh dari bayam merah diaplikasikan pada makanan dengan perbandingan 12 5 g dan 25 g Hasil uji kesukaan Hedonic Test aplikasi zat warna yang paling disukai panelis pada sediaan kue klepon yaitu sediaan 25 g dengan persentase 4 29 Persen dan pada sediaan kue bolu yaitu sediaan 25 g dengan persentase 4 29 Persen

Program Kuliah Kerja Nyata KKN memiliki potensi besar untuk meningkatkan kualitas pelayanan di desa melalui kontribusi mahasiswa sebagai tenaga ahli Penelitian ini bertujuan untuk mengoptimalkan peran mahasiswa KKN jurusan Manajemen dalam memberikan solusi strategis terhadap permasalahan pelayanan publik di Desa Bangun Sari Baru Kecamatan Tanjung Morawa Kabupaten Deli Serdang Pendekatan yang digunakan melibatkan analisis kebutuhan desa penyusunan strategi manajerial serta implementasi program pelayanan berbasis partisipasi masyarakat Hasil penelitian menunjukkan bahwa intervensi mahasiswa KKN mampu meningkatkan efisiensi kualitas layanan serta partisipasi warga desa dalam pengelolaan pelayanan Temuan ini merekomendasikan peningkatan kolaborasi antara perguruan tinggi pemerintah desa dan masyarakat untuk keberlanjutan program serupa
