Abstract

The use of synthetic preservatives in the food industry has raised significant health and environmental concerns due to their carcinogenic potential, endocrine-disrupting effects, allergenic risks, and toxic residues in ecosystems. This study examines the potential of sea grapes (Caulerpa spp.) as a natural food preservative from an axiological perspective, encompassing health values, environmental ethics, and socio-economic benefits. Caulerpa racemosa and Caulerpa lentillifera contain polyphenols, flavonoids, tannins, terpenoids, alkaloids, and sulfated polysaccharides (ulvan, fucoidan), which exhibit strong antioxidant and antimicrobial activities. These compounds have been shown to inhibit pathogenic bacteria, slow oxidation, and function effectively as preservatives in various forms such as extracts, edible films, powders, and functional food applications. From an axiological standpoint, the use of Caulerpa supports food safety, public health, environmental sustainability, and economic empowerment of coastal communities through product diversification and value-added processing of renewable marine bioresources. Despite its promising potential, challenges remain, including variability in metabolite content, the need for standardization, and long-term safety assessments. This study highlights Caulerpa spp. as a strategic candidate for developing safe, eco-friendly, and sustainable natural food preservatives. Abstract

The rising prevalence of degenerative diseases in Indonesia, such as hypertension and diabetes mellitus, is closely associated with dietary shifts toward high fat, sugar, and low fiber consumption. One crucial preventive effort is the development of functional foods, especially resistant starch, which helps improve glycemic response, gut health, and metabolic profiles. This study aims to assess the development potential of resistant starch from mas banana as a functional food to support national food security. The research method was a qualitative literature review, analyzing scientific publications on the characteristics, synthesis, application, and benefits of resistant starch from mas banana. Results reveal that resistant starch from mas banana can be produced through physical, chemical, and enzymatic modifications, yielding superior starch properties which not only provide beneficial physiological effects but also have the potential to substitute imported wheat-based products. The development of functional foods based on mas banana resistant starch is scientifically relevant and an axiological strategy to strengthen food security by diversifying local carbohydrate sources. Abstract

This study goes into the intricate web of social class dynamics depicted in the Indonesian novel "Laskar Pelangi" by Andrea Hirata. Set against the backdrop of Belitung, the narrative unfolds the lives of a group of students as they navigate the challenges of education and dreams. The primary aim of this research is to dissect the nuanced portrayal of social classes within the novel, examining how they shape characters' identities, opportunities, and interactions. To achieve a comprehensive understanding, a qualitative approach is employed, involving close textual analysis of key passages and character interactions. The analysis focuses on identifying and categorizing the various social classes represented in the novel, exploring the factors that contribute to their formation, and elucidating the implications of these class distinctions on character development and societal structures. Themes such as education, economic disparities, and cultural influences are scrutinized to unravel the intricate threads that weave the social tapestry of "Laskar Pelangi." This study concludes by synthesizing the findings, offering a nuanced understanding of how social class dynamics are intricately interwoven into the narrative fabric of "Laskar Pelangi." The novel serves as a microcosm reflecting broader societal structures in Indonesia, shedding light on the complexities and challenges faced by individuals from different social strata. This exploration contributes to the broader discourse on literature and social class, emphasizing the relevance of such analyses in understanding the cultural and societal nuances depicted in literary works.

Abstract

This study explores the perceptions of English teachers in Lombok, West Nusa Tenggara, Indonesia, regarding Discovery Learning (DL) and Project-Based Learning (PjBL) in senior high school settings. The research employed a descriptive qualitative approach, involving questionnaire sheet, interviews, and document analysis to gather data from two English teachers at SMKN 1 Kuripan and three English teachers at MAN 1 Lombok Timur who use or have used the DL and PjBL models. The findings indicated that teachers' perceptions on both teaching models are highlighting their effectiveness in engaging students actively, fostering critical thinking and problem-solving skills, and promoting student-centered learning environments. In addition to their effectiveness, the implementation of these models also have challenges there are often faced by the teachers, including addressing varying levels of student prior knowledge, managing time constraints, and resourcing limitations. Despite these challenges, the teachers have adopted the way to overcome them, such as adapting their approach to accommodate students’ diverse needs, seeking professional development opportunities, and employing collaborative strategies. The study concludes that understanding teachers’ perceptions and addressing the challenges associated with implementing innovative teaching models is crucial for optimizing student learning outcomes in English language instruction.
