Abstract

The need of people’s face protection  from sun exposure is continuosly increasing. However, the available sunscreen in the market are mostly chemicaly generated. Seaweed (Kappaphycus alvarezii) produced carrageenan, which can be used as stabilizer, thickener, and emulsifier on sunscreen production.  Black mangrove fruit (R. mucronata) contains an antioxidant activity, tanin, flavonoids, and phenolic compounds, which are potential to be used for UV light absorber as well as skin protector. The aims of this research were to determine: (1) the best carrageenan concentration in the cream; (2) content of total phenol, flavonoids, and tannin of mangrove fruit extract; and (3) Sun Protection Factor (SPF) value of sunscreen cream.  The experiment used a complete random design  and with Duncan test.  The result showed that the best natural sunscreen formulation was an addition of 0.5% carrageenan and 1%  extract  from R. mucronata. The best characteristics of natural sunscreen were found within the level of 7.62 pH, 38.250 cP viscosity, 100% emulsion stability, 3.72% shrinkage, and  <102 colonies/g total microbial, 10.21 ± 0.06  SPF content,  37.90% total phenol,  0.51% total flavonoids, and 6.20 mg/g tannins.   Keywords: antioxidant, carrageenan, flavonoids, Rhizophora mucronata, SPF

Abstract

Beberapa komponen antioksidan dihasilkan oleh bahan pangan secara alamiah termasuk bahan dari hasil perairan. Keong Matah Merah (Cerithidea obtusa) merupakan komoditas perikanan yang biasa dikonsumsi masyarakat dan diyakini bisa digunakan sebagai obat. Tujuan penelitian ini adalah untuk menganalisis aktivitasantioksidan dan komposisi kimia dari Keong Matah Merah. Komposisi kimia Keong Matah Merah dianalisis dengan metode AOAC untuk kandungan proksimat, kandungan mineral dengan metode APHA, kandungan asam amino dengan metode AOAC . Penentuan aktivitas antioksidan dilakukan dengan metode Molyneux. Hasil penelitian menunjukkan bahwa Keong Matah Merah (Cerithidea obtusa) mempunyai kadar: air 77,5%, protein 13,8%, lemak 2,8%, dan abu 4,5%, makro mineral tertinggi natrium 283,45 mg/100 g dan terendah kalsium39,78 mg/100 g, kadar mikro mineral tertinggi selenium 39,25 mg/100 g dan terendah tembaga 0,29 mg/100 g. Kandungan asam amino esensial tertinggi isoleusin 4,82 % dan terendah arginin 0,95%, kandungan asam amino non-esensial tertinggi asam glutamat 12,08% dan terendah sistein 0,84%. Ekstrak metanol pada Keong Matah Merah mempunyai aktivitas sebagai antioksidan kuat dan mempunyai nilai IC50 58,19 ppm dengan pembanding vitamin C sebesar 3,55 ppm.Kata kunci: Keong Matah Merah, Cerithidea obtusa, gizi, antioksidanAntioxidant compounds are frequently produced by natural foods. Matah Merah Snail (Cerithidea obtusa) is one of fishery commodities which is commonly consumed by society and traditionally used for therapeutic purposes. The aim of this research was to investigate the nutrient composition and antioxidant activity of Matah Merah (C. obtusa). The nutrient compounds were analyzed using proximate contents according to AOAC method, mineral contents using APHA method, and amino acid contents using AOAC method. The results showed that Matah Merah Snail (Cerithidea obtusa) contained 77.5% of moisture, 13.8% of protein, 2.8% of fat, and 4.5% of ash. Analyses of macro- and micro-minerals revealed that the highest level of macro-minerals was sodium 283.45 mg/100 g and the lowest one was calcium 39.78 mg/100 g. The highest level of micro-minerals was selenium 39.25 mg/100 g and the lowest one was copper 0.29 mg/100 g. The highest content of essential amino acidswas isoleusin 4.82% and the lowest one was arginine 0.95%. The highest content of non-essential amino acids was glutamic acid 12.08% and the lowest one was cysteine 0.84%. Methanol extract of Matah Merah Snail (C.obtusa) displayed potential antioxidant activities with IC50 value of 58,19 ppm, with IC50 of vitamin C as positive control was 3,555 ppm.Key words: Matah Merah Snail, Cerithidea obtusa, nutrition , antioxida

Abstract

This study about activity of antioxidant aimed to determine the chemical characterization of sandfish, sandfish meat and sandfish powder, determine the best formulation in manufacturing Holothuria atra tablet based on DEPKES RI standard and to determine the antioxidant activity and the active compounds that act as antioxidants in the extract of Holothuria atra tablets. The method used in the manufacture of tablets is the direct compression method using 6 formulations to treat the kind of powder substance that is the ingredient of sandfish are intact and substances from the meat of sandfish. Tablet chosen based on the standards of the Ministry of Health that includes the physical characteristics of the test tablet and shelf-life stability. Tablet rivet sandfishtested the antioxidant activity by the method of 2,2-diphenyl-1-picrylhydrazyl (DPPH). Tests to determine the active compounds that act as antioxidants with thin layer chromatography (TLC) and bioautography antioxidants and also to determine the functional groups using analysis of Fourier Transform Infrared (FTIR). The yield of sandfish powder is considerably low. Yield of sandfish powder are 10.26% and sandfish meat powder are 9,82%. The protein content of sandfish powder are 60,89% lower compared to sandfish meat powders of 63,57%. Formula elected from the sandfish tablet test based on physical characteristics and stability test of the shelf life of the tablet is the formula A2 with the composition of the powder formulation Holothuria atra (25%), Ac-Di-Sol (2%), L-HPC (2%), Aspartame (0.5%), menthol (0.2%), talk (1%), magnesium stearate (1%) and lactose: mannitol (67.8%) and has antioxidant activity with IC50 value of 97.22 ppm. TLC test and Bio-autography showed that the class of antioxidant compounds are steroid, and suspected compounds at FTIR test, that act as antioxidants compound has similarities to the sterol class.

Abstract

Jangilus fish ( Istiophorus orientalis) is one of pelagic commodities which is commonly consumed by society and used for traditional foods. The objective of this research was to determine the effect of immersion solution on tsukuda-ni from Jangilus fish (Istiophorus orientalis). The steps of the research were determine the best type of immersion solution (carbonated drink, rice vinegar, soy sauce, or sweet sake) and the best concentrations of solution (10%, 20%, 30%, 40%, 50% dan 60% [v/v]). The experimental design used in this experiment was complete random design with Tukey test. The study showed that carbonated drink was the best type of immersion solution. The statistical analysis results showed that concentrations of solutions immersion gave significant effect on protein, lipid content, cutting strength, and water activity. The study showed that 40% carbonated drink was the best concentrations. Tsukuda-ni with 40% of the carbonated drink had 30.95 ± 1.20 kg/cm2 power cut, 0.73 water activity (aw), 61.02% water, 4,48% ash, 28,89 % protein, 0,34% fat, and 4,49% carbohidrat content. Abstract

Api-api putih (Avicennia marina) merupakan salah satu jenis bakau yang melimpah di Indonesia dan dapat dimanfaatkan sebagai sumber antioksidan alami. Penelitian ini bertujuan untuk menentukan pengaruh waktu ekstraksi dan fraksinasi daun A. marina terhadap aktivitas antioksidannya. Serbuk daun A. marina dimaserasi dengan pelarut etil asetat pada durasi waktu ekstraksi selama 1, 2, 3, dan 4 hari. Sementara itu, fraksinasi ekstrak etil asetat dilakukan dengan kolom kromatografi secara isokratik. Aktivitas antioksidan dari ekstrak kasar dan fraksi-fraksi dianalisis dengan metode DPPH (1,1-diphenyl-2-picrylhydrazyl). Hasil analisis menunjukkan perlakuan selama satu hari merupakan durasi waktu ekstraksi terbaik untuk mendapatkan rendemen ekstrak (1,65±0,01 %) dengan aktivitas antioksidan tertinggi (IC50 186,67±2,82 ppm). Eluen pengembang terbaik untuk fraksinasi ekstrak etil asetat adalah campuran eluen etil asetat: n-heksana (3:7), yang menghasilkan delapan fraksi. Namun, fraksinasi menurunkan aktivitas antioksidan pada fraksi-fraksi, dibandingkan dengan ekstraknya. Hal ini diduga disebabkan oleh efek sinergis antar senyawa dalam ekstrak. Penelitian lebih lanjut dapat dilakukan untuk isolasi senyawa aktif yang terdapat ekstrak etil asetat daun bakau A. marina. ABSTRACTGrey mangrove (Avicenia marina) is one of the abundant types of mangrove in Indonesia, which can be used as a natural antioxidant source. This study aimed to determine the effect of extraction duration and fractionation on the antioxidant activity of A. Marina leaves. A. marina leaves powder was macerated by ethyl acetate solvent for 1, 2, 3, and 4 days. Meanwhile, fractionation was carried out using column chromatography with an isocratic method. The antioxidant activity of crude extracts and fractions was analyzed by DPPH (1,1-diphenyl-2-picrylhydrazyl) method. The result showed that one-day treatment was the optimum extraction duration to obtain the extract’s yield (1.65±0.01%) with the highest antioxidant activity (IC50 186.67±2.82 ppm). The best eluent in fractionation was a mixture of ethyl acetate: n-hexane (3:7) eluents, which produced eight fractions. However, fractionation reduced the antioxidant activity of fractions, compared to the crude extract. This might have happened because of the synergistic effect among compounds in the extract. Further research can be carried out to isolate the active compounds in the A. marina leaves extract.

Abstract

Telah dilakukan riset tentang pengaruh konsentrasi larutan asap cair terhadap mutu belut asap yang dihasilkan. Belut yang digunakan adalah jenis Monopterus albus dan asap cair yang dipakai diperoleh dari CV Pusat Pengolahan Kelapa Terpadu,Yogyakarta. Riset pendahuluan dilakukan untuk mengetahui waktu pengeringan yang terbaik, dengan melakukan pengeringan dalam oven pada suhu 90ºC selama 2, 4, 6, dan 8 jam diikuti pengujian kadar air terhadap produk yang dihasilkan. Riset utama dilakukan unluk mengetahui pengaruh konsentrasi asap cair terhadap mutu belut asap yang dihasilkan dengan variasi konsentrasi larutan asap cair 0, 10, 20, dan 30%. Penilaian mutu dilakukan berdasarkan analisis komponen asap, komposisi proksimat, den mutu organoleptik. Hasil penelitian menunjukkan bahwa konsentrasi larutan asap cair terbaik untuk pembuatan belut asap adalah 30% dengan waktu pengeringan 8 jam yang menghasilkan rendamen 28,04%. Secara umum produk ini disukai oleh panelis dengan nilai orgenoleptik 7,36 dengan karakteristik kadar air 10,38%, lemak 2,74%, protein 68,96%, dan abu 15,81%. Asap cair den belut asap hasil pengolahan menggunakan asap cair tidak mengandung senyawa Polycyclic Aromatic Hydrocarbons (PAH), sebaliknya belut asap komersial mengandung senyawa PAH.

Abstract

Mineral requirements in humans can be obtained by eating food derived from vegetable or animal. One of the foodstuffs from animal that can contribute for mineral availability in green mussels. The purposes of this study were to determine the types and amounts of macro and micro minerals in green mussel, determine the solubility of Ca, Fe, Zn, and Se in green mussels with three cooking methods (boiling, frying and roasting) and recommend to the public the best way of cooking to obtain mineral nutrient content. In preliminary study conducted proximate analysis includes the moisture content, ash, fat, protein and carbohydrates, and total macro and micro minerals. In further research, green mussel samples that had cooked (boiling, toasting, and baking), were analyzed the solubility of minerals. The highest macro mineral content of the green mussel was sodium content,while the micro minerals of green mussel was selenium. Cooking that gave mineral reduction of at least up to the biggest decline in a row which is the method of cooking by boiling, roasting and frying. Frying reduced mineral content up to 80% while boiling and roasting up to 59% and 69%

Abstract

Mangrove fruits have a variety of bioactive metabolites that may control microbial growth. The present study was conducted to formulate and evaluate the antibacterial activities of Rhizophora stylosa fruit extract. The antibacterial activity of R. stylosa crude extract was investigated against Staphylococcus aureus, Staphylococcus epidermidis, and Propionibacterium acnes by disc diffusion method. The herbal gel formulations were developed using different concentrations of kappa carrageenan and Carbomer 940 as the gelling agent. The physicochemical characteristics and in vitro antibacterial activity of the gel were evaluated. The results revealed that the extract had a minimum inhibitory concentration value of 0.05 mg/ml against S. aureus and P. acne, and 0.1 mg/mL against S. epidermidis. All herbal gel formulations with 0.5% w/w of the extract showed a strong inhibitory activity against P. acnes. The herbal gel showed a good homogeneity, pH, viscosity, spreadability, and physical stability in an accelerated condition. Among all formulation studied, F1 was considered as the optimized formulation which contains 0.5% of the R. stylosa fruit extract with 0.25% kappa carrageenan and 0.5% Carbomer 940. It can be concluded that the developed gel formulation has potential against Acne vulgaris. Further research is needed to determine the safety and efficacy so R. stylosa can be developed as an alternative natural anti-acne agent.

Abstract

Indonesia is the highest exporter of Gracilaria sp. seaweed and this seaweed contains high dietary fiber (64.74%), and also strong antioxidant activity. The aim of the study was to determine the best formula based on fiber levels, phenols, tannins, and flavonoids from rice analogue from Gracilaria sp. Determination of rice analogue from seaweed Gracilaria sp. used complete random design (RAL), with three repeats, if the test results showed real difference than continued with duncan's test at a confidence level of 95%. The concentration of treatment is the addition of 0, 10, 13, and 16%. The resultsed of analysis according to the Codex Alimentarius Commission (2009) included foods of high fiber sources, with range of 6.09-10.77%. It contains bioactive components (alkaloids, phenols, tannins, and flavonoids). The content of phenols, tannins, flavonoids ranges from 160,32-192,89 mg/ kg; 0,14-0,24%; 4,02-5,18 mg QE/g. The best formulation of rice analogue from based on fiber, phenols, tannins, flavonoids levels was at a concentration of 13%

Abstract

Keong matah merah (Cerithidea obtusa) terbukti memiliki potensi farmakologis sebagai obat. Penelitian ini bertujuan menganalisis kadar enzim transaminase, yaitu serum glutamic pyruvic transaminase (SGPT) dan serum glutamic oxaloacetic transaminase (SGOT) pada serum tikus putih (Rattus novergicus) jantan galur Sprague Dawley yang diberi ekstrak etanol daging keong matah merah (C. obtusa) selama 28 hari. Kadar SGOT dan SGPT yang mengalami peningkatan secara bersamaan dapat menjadi indikator kerusakan hati. Hasil penelitian menunjukkan daging mentah segar keong matah merah (C. obtusa) mempunyai kadar air, protein, lemak, dan abu berturut-turut sebesar 74,22%; 11,99%; 0,63%, dan 8,40%. Ekstrak etanol daging mentah segar keong matah merah memiliki rendemen sebesar 3,41%. Penelitian ini menggunakan 24 ekor tikus putih jantan, yang dibagi secara acak menjadi 4 kelompok dan mendapatkan perlakuan yang berbeda selama 28 hari. Kelompok 1 (kontrol) beri akuades 2 ml/hari, kelompok 2 beri metotreksat 0,125 mg/kg BB/dua hari , kelompok 3 dan 4 diberi ekstrak etanol daging keong matah merah berturut-turut dengan dosis 100 dan 200 mg/kg BB/hari. Pengambilan sampel serum darah dilakukan pada hari ke-29 secara intrakardiak, kemudian dilakukan analisis kadar SGOT dan SGPT. Hasil penelitian menunjukkan bahwa ekstrak etanol daging keong matah merah dengan dosis 100 dan 200 mg/kg BB/hari secara signifikan menurunkan kadar SGOT dan SGPT pada serum tikus putih jantan. This study aimed to anal,yze the levels of transaminase enzymes, namely serum glutamic pyruvic transaminase (SGPT) and serum glutamic oxaloacetic transaminase (SGOT) in the serum of male white rats (Rattus novergicus) Sprague Dawley strain given ethanol extract of red eye snail meat (C. obtusa) for 28 days. Levels of SGOT and SGPT which increase simultaneously can be an indicator of liver damage. The results showed that fresh raw meat of red eyed snail (Cerithidea obtusa) had water, protein, fat and ash content respectively of 74.22%; 11.99%; 0.63%, and 8.40%. Ethanol extract of fresh raw meat of red eyed snail has a yield of 3.41%. This study used 24 male white rats which were randomly grouped into 4 groups and received different treatments for 28 days. Group 1 (control) was given a 2 ml of distilled water/day, group 2 was treated with methotrexate 0.125 mg/kg BW/two days, while groups 3 and 4 were fed with ethanol extract of red eye snail meat of 100 and 200 mg/kg BW/day respectively. Blood serum samples were taken by intracardiac method on the 29th day and then analyzed for SGOT and SGPT levels. The results showed that the red eye snail meat ethanol extract with doses of 100 and 200 mg/kg BW/day was significantly able to reduce SGOT and SGPT levels in male white rats serum.
