Abstract

Penelitian ini bertujuan untuk mengetahui studi penerimaan konsumen terhadap cup cake rumput laut. Rumput laut Eucheuma cottonii diperoleh dari pasar kodim, Pekanbaru. Penelitian ini dilakukan dengan menggunakan metode Rancangan Acak Lengkap (RAL) satu faktor dengan 4 taraf perlakuan 0%, 10%, 20% dan 30%. Hasil penelitian berpengaruh sangat nyata terhadap nilai organoleptik meliputi rupa, rasa, aroma, sedangkan tekstur tidak berbeda nyata dan nilai kimia yang meliputi kadar abu, kadar protein dan kadar serat kasar sedangjan kadar air dan kadar lemak tidak berbeda nyata. Berdasarkan parameter uji perlakuan terbaik cupcake dengan penambahan tepung rumput laut 20% dengan rupa 6,72 warna hijau kecoklatan, rasa 6,69 sedikit manis, aroma 7,00 aroma tepung rumput laut, tekstur 6,73 padat sedikit lembut dan kadar air 18,13 %, kadar protein 14,88 %, kadar lemak 0,26%, kadar abu 1,00 %, serat kasar 4,49 %.

Abstract

Shrimp paste is a source of protein because the protein of shrimp paste has a high protein (15-20 g/100 g). However, shrimp paste is only consumed as a flavor and seasoning mixture. The study was aimed to determine the quality of organoleptic and chemical of shrimp paste using the difference of salt and cooking time. The used method was an experimental method with a factorial Completely Randomized Design (CRD) consisting of 3 treatments, namely A1 (10 g salt), A2 (15 g salt) and A3 (20 g salt). Meanwhile, cooking time was 30 minutes, 45 minutes, and 60 minutes. The tested parameters were organoleptic (flavor, odor, texture, and appearance), proximate (moisture, ash, protein, and fat), and pH. The results showed that the interaction between 15 g salt and 45 minutes of cooking time was the best treatment with the organoleptic of 7.29 flavor (shrimp taste slightly reduced, less salty), 7.59 odor (the specific odor of shrimp paste), 7.21 texture (thick, homogenous, soft), 7.63 appearance (blackish brown). The proximate of shrimp paste was 38.12% moisture, 3.05% ash, 9.68% protein, 0.72% fat, and 7.05 pH.

Abstract

The purpose of this research was to determine the chemical quality and consumer acceptance of the staple fish sausage fortified with natural dyes, namely carrot extract and red spinach extract. The research method used was experimental design (CRD), as the treatment was S0 (Jelawat fish meat). ), S1 (Jelawat fish meat added 20% red spinach extract), S2 (Jelawat fish meat added 20% carrot extract). From the results of the study of the preference test, it is known that the Jelawat  fish sausage with the addition of 20% carrot extract (S2) was preferred by consumers with a percentage (87.50%) with very like criteria and percentage (6.25%) like criteria. Organoleptic values are taste (8.0), aroma (8.5), appearance (8.3) and texture (8.6). The nutritional content of Jelawat sausage added with carrot extract was higher than the other treatments, with protein content (15.43%) moisture content (55.32%) fat content (2.43%) ash content (6.19%) and carbohydrate content (20.63%). The characteristics of the sausage are thick and brass colored, fishy aroma and carrot aroma is more dominant, fish taste is slightly sweet and carrot-like, while the texture is dense and elastic.

Abstract

The objective of this research was to determine the quality changes ofpangasius catfish dendeng packaged in a plastic bag of high density polyethylene(HDPE), low density polyethylene (LDPE) and aluminum foil during roomtemperature storage. Pangasius catfish weighing 250 – 300 each was taken from afish market in Pekanbaru. The fish was processed for dendeng; and the fishdendeng was packaged in a plastic bag of HDPE, LDPE and alumunium foil; andstored at room temperature for 35 days. The fish dendeng was evaluated forsensory value, moisture, fat and total mould every 0, 7, 14, 21, 28 and 35 days.The results showed that the quality of fish dendeng packaged in HDPE and LDPEdecreased faster than that packaged in aluminum foil. Sensory value packaged inHDPE, LDPE and alumunium foil at initial to the end of stroage was 6,85 – 5,89;6,88 – 5,64; 7,26 – 5,92. Moisture content, fat and total mould of fish dendengpackaged in aluminum foil during storage was 6,60 -11,40 %; 7,30 – 1,70 %;4,0 x103 – 5,9 x 104 respectively; dendeng packaged in HDPE was 6,90 - 11,70 %;9,60 – 1,80 %; 4,1 x 102 – 7,2 x 104 respectively; and dendeng packed in LDPEwas 7,60 - 11,90 %;6,90 – 1,90 %; 3,8 x 102 – 3,9 x 105 respectively.Keywords : Pangasius catfish dendeng, high density polyethylene, low density polyethylene and aluminum foil, sensory evaluation, moisture, fat, mould.

Abstract

Abstract Background: Investing in early childhood growth and development is a strategy for preparing a better future generation. Ensuring maternal mental health, including maternal depression, is a significant effort to achieve responsive care. Objective: This study aims to analyse the association between maternal depression and cognitive function of children aged 7 – 14 years at two points, in 2007/2008 and 2014/2015. Methods: This study used IFLS-4 and IFLS-5 data. The unit of analysis were children aged 7 – 14 years and mothers who lived in the same household. Children's cognitive function was measured using the Raven method, while maternal depression was measured using CESD-10. The analysis was performed using linear regression. Results: From the IFLS-4 data, there was a significant association between maternal depression and cognitive function of children aged 7 – 14 years. Children aged 7 – 14 years with mothers with depression have a risk of having cognitive function 0.1 lower which measure with Z-score (SE: 0.05) than children with mothers without depression. However, in IFLS-5, there was no significant association between maternal depression and cognitive function. Conclusion: There were different results regarding the association between maternal depression and cognitive function of children aged 7 – 14 at the two points observed. Further studies need to be done to analyse the causality between maternal depression and cognitive function in children. Keywords: cognitive function, maternal depression. CESD-10, the raven test Abstrak Latar belakang: Investasi pada tumbuh kembang anak usia dini merupakan strategi menyiapkan generasi penerus bangsa yang lebih baik. Menjaga kesehatan mental ibu termasuk depresi maternal merupakan upaya untuk mencapai pengasuhan yang responsif. Tujuan: Studi ini bertujuan untuk melihat hubungan antara depresi maternal dengan fungsi kognisi anak usia 7 – 14 tahun pada dua titik yaitu tahun 2007/2008 dan tahun 2014/2015. Metode: Studi ini menggunakan data IFLS-4 dan IFLS-5. Unit analisis adalah anak usia 7 – 14 tahun dan ibu yang tinggal dalam satu rumah. Kognisi anak diukur menggunakan metode Raven, sedangkan depresi maternal diukur menggunakan CESD-10. Analisis dilakukan menggunakan regresi linear. Hasil: Dari data IFLS-4 didapatkan hubungan yang bermakna antara depresi maternal dan fungsi kognisi anak usia 7 – 14 tahun. Anak usia 7 – 14 tahun dengan ibu mengalami depresi berisiko memiliki fungsi kognisi 0,1 lebih rendah yang dinilai menggunakan Z-score (SE:0,05) dibanding anak dengan ibu tanpa depresi. Namun pada IFLS-5 tidak terdapat hubungan yang bermakna antara depresi maternal dan fungsi kognisi. Kesimpulan: Terdapat hasil yang berbeda terkait hubungan depresi maternal dan fungsi kognisi anak usia 7 – 14 tahun pada dua titik tahun yang diamati. Abstract

Latar belakang: Kurangnya pengetahuan tentang tanda bahaya selama kehamilan, persalinan, dan masa nifas dapat menyebabkan kematian ibu. Buku KIA (Kesehatan Ibu dan Anak) merupakan salah satu media promosi kesehatan yang dapat meningkatkan pengetahuan ibu tentang tanda bahaya maternal. Tujuan: Studi ini bertujuan untuk mengetahui determinan minat membaca Buku KIA pada ibu hamil. Metode: Studi ini merupakan studi potong lintang (cross-sectional) dengan melibatkan 509 ibu hamil yang tinggal di 7 kabupaten terpilih yaitu Kota Bandar Lampung, Kota Palembang, Kabupaten Lebak, Kabupaten Karawang, Kota Semarang, Kota Surabaya, dan Kota Makasar. Analisis bivariat dan multivariat dilakukan dengan menggunakan secara berturut-turut uji chi-square dan regresi logistik ganda Hasil: Ibu hamil yang berumur lebih dari 34 tahun memiliki peluang lebih tinggi dalam memiliki minat membaca Buku KIA (OR: 1,655; 95%CI: 0,988-2,773) dibandingkan dengan ibu hamil yang berumur 20-34 tahun. Ibu hamil yang mendapatkan penyuluhan terkait Buku KIA oleh tenaga kesehatan memiliki peluang lebih tinggi dalam memiliki minat membaca Buku KIA (OR: 2,807; 95%CI: 1,471-5,355) dibandingkan dengan ibu hamil yang tidak mendapatkan penyuluhan. Kesimpulan: Umur ibu hamil dan penyuluhan terkait Buku KIA oleh tenaga kesehatan merupakan determinan minat membaca Buku KIA pada ibu hamil. Penyuluhan Buku KIA dengan sasaran semua usia ibu hamil sebaiknya dilakukan oleh tenaga kesehatan terlatih. Kata Kunci: Buku KIA, ibu hamil, dukungan tenaga kesehatan.

Abstract

ABSTRACT Since 2014, Indonesia has been implementing universal health coverage to increase health insurance coverage. However, health insurance utilization by the community for maternal health is still low. This research aimed to determine factors related to the use of health insurance for antenatal care and delivery services among pregnant and childbirth women. The research conducted in 7 districts/cities, namely Kota Bandar Lampung, Kota Palembang, Kabupaten Lebak, Kabupaten Karawang, Kota Semarang, Kota Surabaya, dan Kota Makasar. A total of 517 respondents has been interviewed. The results showed that most respondents aged 21-34 years (68.5%), unemployed (74.7%) and graduated from high school or higher (58.4%). Around 11% of the respondent had health insurance. 73.0% of respondents who had health insurance used it for antenatal care and 88.3% used it for delivery. Multivariate analysis shows that the level of income is related to the use of health insurance for antenatal care and delivery, whereas mothers who have income level higher than Rp 2,000,000 had lower odds to utilize health insurance for antenatal care (OR=0,56; 95%CI:0,35 - 0,91) and delivery (OR=0,52; 95%CI:0,27 - 1,02). Therefore, there is a need for broader socialization of health insurance utilization for antenatal and delivery, especially for couples at reproductive age. Namun, pemanfaatan jaminan kesehatan oleh masyarakat untuk kesehatan ibu masih rendah. Penelitian ini bertujuan untuk mengetahui faktor yang berhubungan dengan pemanfaatan jaminan kesehatan untuk pemeriksaan kehamilan dan pelayanan persalinan pada ibu hamil dan bersalin. Penelitian dilaksanakan di 7 (tujuh) kabupaten/kota, yaitu Kota Bandar Lampung, Kota Palembang, Kabupaten Lebak, Kabupaten Karawang, Kota Semarang, Kota Surabaya, dan Kota Makasar. Sebesar 517 responden yang berhasil diwawancarai. Hasil analisis menunjukkan bahwa sebagian besar responden berumur 21 – 34 tahun (68,5%), tidak bekerja (74,7%) dan berpendidikan tamat SMA+ (58,4%). Sekitar 11,0% responden tidak memiliki jaminan kesehatan. Dari responden yang memiliki jaminan kesehatan, hanya 73,0% di antaranya yang memanfaatkan untuk pemeriksaan kehamilan dan 88,3% memanfaatkan untuk persalinan. Analisis multivariat menunjukkan bahwa tingkat pendapatan berhubungan dengan pemanfaatan jaminan kesehatan untuk pemeriksaan kehamilan, dan persalinan, dimana ibu yang memiliki tingkat pendapatan ≥Rp 2.000.000,- memiliki kemungkinan lebih rendah untuk memanfaatkan jaminan kesehatan untuk pemeriksaan kehamilan (OR=0,56; 95%CI:0,35 - 0,91) maupun persalinan (OR=0,52; 95%CI:0,27 - 1,02). Oleh sebab itu, perlu sosialisasi lebih luas agar memanfaatkan jaminan kesehatan untuk pemeriksaan kehamilan dan persalinan, terutama pada Pasangan Usia Subur (PUS). Abstract

 ABSTRACT                The purpose of this research was to know the level oconsumer acceptance on eel nugget with the addition of yellow sweet potato flour. The treatment was the addition of yellow sweet potato with different amount consisting of 4 levels i.e. N0 (control), N1 (25 gr of yellow sweet potato flour), N2 (50 gr of yellow sweet potato flour), and N3 (75 gr of yellow sweet potato flour). The results showed that N2 treatment was most preferable by consumer acceptance. Whereas the organoleptic value of appearance 3.64 (74% panelists) with criteria have a golden yellow colored, aroma 3.48 (52% panelists) with spice flavor criteria, the eel meat and yellow sweet potato flour was equally specific, taste 3.51 (58% panelists) taste criteria of eel and yellow sweet potato flour was equally specific, texture 3.63 (78% panelists) have a chewy and compact criteria, and for the proximate value of moisture content 64.51%, protein content 14.73%, fat content 3.85%,  ash content 1.71%, fiber content 2.81%. It can be seen that the eel nuggets with the addition of yellow sweet potato flour was very significant effect to appearance, aroma, taste, texture, moisture, protein, fat and fiber content, but no significant effect to ash content. Keywords: Nugget, Eel, Yellow sweet potato flour

Abstract

ABSTRACT            This study aimed to determined the effect of cookies fortified with 2gram Chlorella sp. powder on cookies on consumer acceptabilityand nutritional value of cookies Chlorella sp. This research method was experimental and descriptive, consisted of the manufacture of Chlorella sp. powder and the manufacture of cookies Chlorella sp. The test parameters observed were organoleptic and proximate. The results showed that the characteristics of the cookies Chlorella sp. light green color, slightly fragrant cookies, crunchy texture, and sweet taste with nutritional value of protein equal to 9,78%, fat 25,27%, water 3,13%, ash 1,56%, and carbohydrates 60,26%.Keywords: Chlorella sp., Cookies, Nutritional value, Consumer acceptability

Abstract

 ABSTRAK This study aims to determine consumer acceptance of nori seaweed that has been added fish protein concentrate cork (KPI) with the different treatments. The design used was Completely Randomized Design (RAL) with nori without addition of KPI (N0) , nori addition of 5% KPI (N1), and nori addition of 10% KPI (N2) treatment. The parameters tested were consist of organoleptic and proximate test. Proximate test including moisture content, ash content, protein content, and crude fiber content.The results showed that (N1) treatment with 5% addition of KPI was the best treatment for organoleptic test and (N2) treatment with 10% addition of KPI for proximate test with 93.75% color rating, 81.25% odor, 91.25% texture, 76.25% 10.05%, ash content 5.43%, protein content 30.07%, and crude fiber content 31.30%. Keywords :gabus fish, organoleptic, proximate, protein, seaweed.
