Abstract

Meat is a food of animal origin that has high nutritional value, because meat contains several nutrients including protein, fat, minerals and vitamins. This study aims to determine the physical and organoleptic quality of beef meatballs using giblets. The materials used in this study were beef, giblets, tapioca flour, garlic, salt, flavourings, and ice cubes. This study used a completely randomized design consisting of 4 treatments and 4 replications P0 (100%) beef without giblets, P1 (80%) beef + 20% liver, P2 (80%) beef + 20% gizzard, P3 ( 80) beef + 20% heart. The parameters measured in this study were pH, cooking loss, yield, shape, aroma, color, texture, taste, elasticity and general acceptance. The results of this study indicate that the addition of giblets to chicken meatballs. beef meatballs. However, it did not have a significant effect (P>0.05) on the organoleptic test of beef meatballs, especially on the variables of shape, aroma, texture, taste, and general acceptance

Abstract

This study aims to evaluate the technical aspects of the health and welfare of goats that are intensively raised in Kendari City. The research method used is the survey method. The determination of the research location was carried out by purposive sampling, then in each sub-district the determination of respondents was carried out using the snowball sampling method. The data was analyzed descriptively. The results of the study showed that disease prevention measures and the provision of deworming drugs in Abeli, Nambo and Poasia Sub-districts were in the bad category while disease treatment in Abeli Sub-district was in the good category and in Nambo and Poasia Sub-districts was in the fairly good category. In terms of animal welfare, in general it was in the fairly good category in Abeli, Nambo and Poasia Sub-districts. Breeders need to be given training and socialization to breeders about the importance of aspects of animal health and welfare in increasing livestock productivity. The conclusion of the study is that the technical aspects of the health and welfare of goats that are intensively raised are in the fairly good category so they need improvement

Abstract

This community service activity contained an introduction to the concept of leadership, organization, and skills of farmer groups located in Rahabite Village, Kolaka Regency with the aim of introducing the function and importance of farmer group organizations, in order to increase cooperation and productivity of the community that is part of the farmer group. The main target of this activity is the goat farming community, mothers who are members of the Family Empowerment and Welfare (PKK), and community leaders. The method of implementing the activity was in the form of counseling and discussion about the importance of leadership, organization, and skills in livestock farmer groups. The activity evaluation was carried out to determine the extent of the participants' response and understanding of the activity by comparing changes in scores in the pre-test and post-test. This activity was attended by 30 participants who were dominated by farmers. The results of the pre-test and post-test showed that this community service activity was able to increase participants' knowledge about leadership, organization, and skills of farmer groups with an average score of 80.

Abstract

Community service activities carried out by the Postgraduate Lecturer Team and Faculty of Animal Husbandry in collaboration with the Livestock and Animal Health Service Office and UPTD livestock breeding focusing on Lawoila Village, Konda Subdistrict, South Konawe District. The aim is to introduce livestock health management to improve cattle productivity, livestock health, and ensure livestock products have the desired quality standards. The methods applied included observation, counseling, and evaluation. Results showed that the livestock health service was well received by farmers in Lawoila Village. The local community showed high enthusiasm in understanding livestock health management with the hope of improving overall livestock productivity. This effort reflects an effective collaboration between academia, local government, and the community in improving the welfare of farmers and strengthening the livestock sector.

Abstract

Dairy cattle are ruminant livestock that produce milk whose productivity is very dependent on maintenance management. This community service activity aims to increase the knowledge and skills of dairy farmers in Raraa Village, East Kolaka Regency. This activity was carried out in several stages, including: 1) Socialization of dairy cattle development; 2. Demonstration on the maintenance and feeding of dairy cows; 3. Monitoring and Evaluation. During the socialization activities, the breeders were very enthusiastic in listening and active in the discussion because the breeders in Raraa Village were just getting to know and starting to raise dairy cows. Farmers are also very focused on paying attention to explanations and technical guidance on the maintenance, management and feeding of dairy cows during direct visits to the breeder's pen. At the end of the activity, an evaluation was carried out to determine the level of understanding of dairy farmers. Monitoring and assistance to farmers is also carried out to help farmers who experience difficulties in the process of caring for and feeding dairy cows. This activity can increase the knowledge and skills of dairy farmers so that farmers can maintain and develop dairy cattle in accordance with the government's goal of distributing dairy cattle seeds in the Southeast Sulawesi region

Abstract

Meat safety is a major component of food safety that impacts public health, so supervision and protection are needed. This study aims to analyze the level of Good Manufacturing Practices (GMP) implementation in providing safe, healthy, intact, and halal (ASUH) food in Kolaka Regency. The data collected focuses on the mechanism of beef production, the stages of receiving live cattle to becoming carcasses, and the evaluation of the level of compliance with the principles of GMP and halal control points (HCPs) in the beef production process. The method of determining respondents was non-probability sampling with incidental sampling techniques. The results showed that the implementation of GMP in general and the HCPs checklist at the Kolaka Regency slaughterhouse had values of 32.72 and 37.3, which are inadequate to meet GMP standards. The Kolaka Regency government must strive to build slaughterhouses with facilities and infrastructure that meet GMP standards. Halal butchers and slaughterhouse staff need regular training on GMP standard cutting techniques to produce ASUH meat. Supervision of cutting activities at the slaughterhouse also needs to be carried out. The conclusion is that it is necessary to improve and supervise all slaughterhouse activities so that GMP standard aspects can be met.

Abstract

Feed availability is a key factor in increasing beef cattle productivity. This activity aims to strengthen beef cattle feed availability strategies through a collaborative approach involving all relevant stakeholders in Muna Regency. This FGD activity was held in August 2025 in one of the beef cattle development centers in Kabangka District, Muna Regency. FGD participants consisted of various important elements, including the Southeast Sulawesi Regional Research and Innovation Agency (BRIDA) Team, the Halu Oleo University (UHO) Research Team, the Muna Regency Livestock and Animal Health Service (PKH) Team, the Kabangka Subdistrict Agricultural Extension Center (BPP), and local farmers. The data obtained from the FGD was analyzed using descriptive methods. The main strategies recommended are the application of feed processing technology, crop-livestock integration, increasing the capacity of livestock farmers, and protecting grazing land. Therefore, together with stakeholders in Muna Regency, it can become a driving force in developing the beef cattle industry in Muna Regency. The results obtained show that Muna Regency has great potential for beef cattle development, supported by its population and availability of land, natural resources, and feed from agricultural waste. However, this potential is constrained by low feed quality, traditional management systems, and limited knowledge and infrastructure among farmers. The main strategies recommended are the application of feed processing technology, crop-livestock integration, increasing the capacity of livestock farmers, and protecting grazing land. Therefore, together with stakeholders in Muna Regency, this can be a driving force in overseeing the development of beef cattle.

Abstract

Farmers in Rahabite, Toari District, have historically operated individually, thereby encountering typical agricultural constraints, particularly diminished bargaining power in product marketing and limited access to information. The primary objective of this Community Service (PkM) activity was to facilitate the establishment of a functional and independent Farmers' Business Group (Kelompok Usaha Tani or KUT). The implementation method employed a structured participatory approach, aligned with a pre-designed activity matrix. The PkM stages comprised: (1) Preparation, involving observation, interviews, and coordination with village officials; (2) Implementation, encompassing socialization regarding the importance of collective action, facilitation of deliberations for KUT formation, board election, and the drafting of Articles of Association/Bylaws (AD/ART); and (3) Post-Implementation, consisting of initial mentoring and evaluation. The results demonstrated a 100% success rate based on established indicators: the establishment of KUT "Tani Mekar Jaya and Wanita Tani Naga," the election of a core management structure (Chairperson, Secretary, Treasurer), and the ratification of the AD/ART as the operational foundation. Farmer participation in the deliberations reached 85%, exceeding the target of 70%. Theoretical analysis utilizing the Institutional Theory framework indicates that this PkM successfully triggered three isomorphism mechanisms: (1) Mimetic Isomorphism through the socialization of case studies; (2) Normative Isomorphism via the professional guidance of the PkM team; and (3) Coercive Isomorphism through the adoption of binding AD/ART. Conclusively, this activity successfully transformed a collection of individual farmers into a formal institutional entity prepared for operation.
