Abstract

This study aims to evaluate the impact of maternal education on nutritional knowledge and feeding practices of children under two years old. This research consisted of 70 subjects using pre-experimental techniques with a one group pre-test & post-test design. The location of this research is Sukadamai Village, Dramaga District, Bogor Regency in January-March 2024. Mothers' knowledge, attitudes and practices before and after the intervention increased for the better. There were significant differences in protein nutrients (p=0.033) and iron (0.002) while for other nutrients (energy, fat, carbohydrates, calcium and vitamin A) there were no significant differences before and after the intervention (p>0.05). The nutritional status of children under two years old based on the WAZ, HAZ dan WHZ indices before and after the intervention was given was mostly in the normal category. There were no significant differences for all WAZ, HAZ and WHZ indices before and after the intervention (p>0.05).

Abstract

Gotu Kola is a herbal plant that can improve cognitive ability. This study aims to find a flakes formulas of composite flour of arrowroot starch and cassava flour with addition of gotu kola as a functional food for elementary school children’s breakfast. The tests show that the final selected formula flakes (FTA) are the flakes made of 60% arrowroot starch, 40% of cassava flour, with 2.5% addition of gotu kola. Acceptance test show that 91.67% of consumer target accept FTA. The results of physical analysis show that FTA have 51.04 g/mmof hardness, 273.79% of water absorption, and 0.13 g/ml of bulk density. The results of nutrition content analysis show that FTA contained 3.28% of water, 1.35% of ash, 0.43% of fat, 3.09% of protein, 91.86% of carbohydrate, and 384 kcal of energy, 11.33 mg/100 g of Ca, 5.93 mg/100 g of Fe, and 52.45 mg/100 g of P. Nutrient contributions of flakes FTA against RDA of children aged elementary school are 6.39—8.39% for energy, 1.80—3.09% for protein, 0.21—0.24% for fat, 11.13—14.61% for carbohydrate, 0.33—0.40% for Ca, 14.83—25.95% for Fe, and 1.47—3.67% for P.

Abstract

Indonesia is one of the countries that produces porang and gembili tubers that can be processed into value-added food products. One innovation that can be developed is the analog rice made from these two tubers. Porang and gembili tubers are known to contain bioactive compounds and dietary fiber that provide functional benefits, such as lowering blood glucose levels, improving lipid profiles, and improving digestive tract health. This study aimed to evaluate the physical and proximate qualities of three analog rice formulations using commercial porang and gembili flours. The experimental design used was a Completely Randomized Design (CRD) with two replications, conducted from August to December 2024 at the Technopark Laboratory (Faculty of Agricultural Technology) and Nutrition Analysis Laboratory (Department of Community Nutrition, FEMA IPB). The formulations had porang and gembili ratios of F1 (75:25), F2 (50:50), and F3 (25:75). Data were analyzed using One-Way ANOVA preceded by variance homogeneity testing, followed by DMRT multiple range test. The results showed that cooking time and bulk density differed significantly between F1, F2, and F3. The expansion ratio, degree of breakage, and hardness differed significantly among F3, F1, and F2. F3 exhibited the highest brightness (L*) value. Proximate analysis revealed significant differences in ash, moisture, protein, fat, and carbohydrate contents among all formulations. The F3 formulation, which had a higher proportion of gembili, demonstrated the greatest potential as a staple carbohydrate source. However, further sensory and consumer acceptability improvements are needed.

Abstract

This study aims to evaluate calcium bioavailability through serum calcium level in pregnant rats treated with two Milk-Based Drinks (MBD) containing Lactic Acid Bacteria (LAB), i.e Lactobacillus Casei Shirota Strain (LcS) drink, and Four Strains Bacteria (FS) (Lactobacillus rhamnosus, Lactobacillus paracasei, Lactobacillus delbrueckii subp. bulgaricus, Streptococcus thermophiles). It was a completely randomized experimental study using 24 Sprague Dawley rats. Rats were divided into one negative control group with a normal nutritional status (A0) and three undernourished groups. The undernourished groups were divided into one positive control group (A1), one group receiving MBD containing LcS group (A2), and another group receiving MBD containing FS (A3). All rats received high protein diets during pregnancy. The intervention was started in early pregnancy (D0) until 19 days of pregnancy (D19). Blood samples were collected at the D0 and D19. No significant differences in food intake were found among the rats in all groups. Administration of MBD containing LAB in A2 and A3 showed significant (p<0.05) increment of calcium bioavailability (30.79±6.88%; 20.44±9.04%). Both MBDs treatment containing LAB showed no significant difference in serum calcium bioavailability (p>0.05). The results suggest that MBDs containing LAB are useful in enhancing calcium bioavailability.

Abstract

Green mussel is a food ingredient rich in nutrients and widely known by the general public due to its affordable price and easy accessibility. Mackerel fish floss with the substitution of green mussel is one alternative dish that can help improve the provision of protein and iron for women of reproductive age. This research aims to develop and analyze the nutritional content of the floss product based on mussels. The study used three different formulations with varying ratios of mackerel fish and green mussel: F0(100:0), F1(80:20), and F2(60:40). Based on organoleptic tests, physical characteristics, and nutritional content analysis, F2 was determined as the selected formula. The selected formulation of the floss contains 8.93% moisture content, 6.04% ash content, 34.91% protein, 27.85% fat, 22.27% carbohydrates, and 8.17 mg of iron. A serving size of the mackerel fish floss with green mussel substitution, equivalent to 1 tablespoon, contributes 72 kcal (3.2-3,5%) of daily energy for woman of reproductive age. The selected formulation of mackerel fish and green mussels floss meets the criteria to claim it as a high-protein and iron product.

Abstract

Infant anthropometry is an indicator of neonatal survival. This study aimed to determine the effects of maternal anthropometry on estimating infant anthropom­etry. This cross-sectional study on 173 pregnant women at Public Hospital X in Ternate, Indonesia, was conducted from August 2018 to March 2023. The el­igible criteria were pregnant women aged ≥18 years, single pregnancy, and antenatal care (ANC) visits to the same hospital. The variables used included ma­ternal anthropometric measurements (body weight, body height, third-trimester weight (TTW)), gestational weight gain (GWG), education, age, ANC visits, and gestational age at delivery (GAD). A logistic regression model was employed to estimate significant variables related to infant anthropometric measure­ments (birth weight, birth length, and head circumference). The results showed that TTW, GWG, ANC, and GAD had significantly affected birth weight. Bodyweight, height, and TTW also significantly affected birth length. In addition, only GAD significantly affected the head circumference. In multivariate analysis, TTW and GWG significantly affected birth weight. Furthermore, only body height and GAD affected the birth length. Maternal anthropometrics become impor­tant indicators for estimating birth weight and birth length.

Abstract

Penelitian ini bertujuan mengetahui pengaruh pemberian ekstrak etanol daun pegagan terhadap gambaran darah dan peningkatan fungsi kognitif pada tikus. Penelitian ini menggunakan 16 ekor tikus Wistar jantan, dibagi secara acak ke dalam 4 kelompok dan masing-masing diberi ekstrak etanol daun pegagan setiap hari dengan level 0, 100, 300, dan 600 mg ekstrak/kg bobot badan selama 8 minggu. Hasil penelitian menunjukkan bahwa pemberian ekstrak pada level 300 mg/kg bobot badan meningkatkan nilai packed cell volume (PCV), sel darah merah (SDM), dan nilai hemoglobin (Hb). Pengamatan aktivitas pada kelompok dengan level 300 dan 600 mg/kg bobot badan menunjukkan adanya peningkatan dibandingkan kelompok kontrol (P0,05). Pemberian ekstrak etanol daun pegagan juga berperan dalam meningkatkan keberhasilan pengenalan lorong target. Hasil di atas mengindikasikan dengan kuat bahwa ekstrak pegagan mempunyai peran penting dalam perbaikan profil hematologi dan meningkatkan fungsi kognitif.

Abstract

Vitamin A fortification in unbranded palm oil is an alternative solution to overcome Vitamin A deficiency problem. It, however, needs further study to determine consumer acceptance and preference of the Vitamin Afortified unbranded palm oil in order to make the fortified oil is acceptable and consumed by consumer. This study was divided into two steps, they are field study, held in Barrang Lompo Island - Makassar and Babakan Village - Bogor, and laboratory study, held in Organoleptic Laboratory and Food Processing Laboratory in Department of Community Nutrition, Bogor Agricultural University. Percentage of panelist assessment and non-parametric statistical test (Kruskal- Wallis Test) was used to measure consumer acceptance and preference of fortified unbranded palm oil. The result of this study indicated that the color and aroma of fortified unbranded palm oil is accepted by the consumer. The color, aroma, and taste of food that processed with fortified unbranded palm oil were also accepted by the consumer. The complaint during the usage of fortified unbranded palm oil were mainly caused by the way consumer used and storing the sample. Thus, it can be concluded that there were no change between fortified unbranded palm oil characteristics, both used in a controlled circumstances (laboratory) and in an uncontrolled circumstances (household).

Abstract

cardiovascular disease and other metabolic disorders. High levels of C-reactive protein (hs-CRP) are commonly used to gauge cardiovascular risk, as elevated hs-CRP is linked with increased heart disease and chronic inflammation. This study examines how body fat percentage and nutritional status affect hs-CRP levels in individuals with hyperlipidemia. It involved 30 participants from a study at the SEAFAST Center IPB, where they were treated with high antioxidant and anti-inflammatory drinks for 4 weeks. Body fat percentage was measured via Bioelectrical Impedance Analysis (BIA), nutritional status was evaluated through clinical assessments of weight and height, and hs-CRP levels were assessed using ELISA immunoassay. The Chi-square test revealed significant relationships between both body fat percentage (X²=0,043, p-value<0,05) and nutritional status (X² = 0,05, p-value<0,05) with hs-CRP levels. These results suggest that both body fat percentage and nutritional status significantly impact hs-CRP levels in individuals with hyperlipidemia. Effective management of body fat and nutritional status could help reduce inflammation and cardiovascular risk in this population. This study supports the need for targeted interventions to better manage cardiovascular health in individuals with hyperlipidemia.

Abstract

Obesitas pada remaja di Indonesia, khususnya remaja pada usia 16-18 tahun, mengalami peningkatan secara nasional dengan prevalensi 7,3%. Konsumsi makanan selingan dengan kandungan serat dan antioksidan yang cukup dapat menjadi salah satu upaya dalam mengatasi obesitas. Flaky crackers merupakan salah satu jenis makanan selingan yang biasa di konsumsi di Indonesia. Penelitian ini bertujuan untuk mengkaji pemanfaatan tepung ubi jalar ungu pada flaky crackers tinggi serat dan antioksidan untuk remaja. Penelitian dilakukan pada bulan November-Desember 2020 dan Maret-April 2021. Taraf penggunaan tepung ubi jalar ungu meliputi F1(10%), F2(20%), F3(30%), dan F4(40%). Hasil penelitian menunjukkan flaky crackers dengan substitusi tepung ubi jalar ungu tertinggi (F4:40%) merupakan formula terpilih dengan daya terima dan kandungan gizi paling baik. Flaky crackers F4 memiliki klaim tinggi serat dengan kandungan serat sebesar 10,8 g per 100 g produk. Kandungan energi flaky crackers F4 per takaran saji (216 kkal) memenuhi 10% kebutuhan energi remaja usia 16-18 tahun.
