Abstract

The vegetarian diet has become a dietary pattern that many people have started to choose along with increasing public knowledge of the benefits of a plant-based diet to reduce the risk of diseases that can harm the body.. One of the vegetable ingredients used in this study were banana peels and chickpeas as a comparison. Banana peels and chickpeas have good nutritional content and can be processed into a variety of food products. Besides being used as food raw material, it also improves nutritional content when processed into food. So that this effort can be done in making a vegetarian patty made from vegetable, namely banana peel as an alternative for vegetarians. This research is an experimental study of making a vegetarian patty with plantain peels and chickpeas as an alternative for vegetarians. Data collection techniques used instruments in the form of hedonic quality test and hedonic test with data analysis used, namely the Mann-Whitney test to determine the difference between 2 treatments or treatments. The research instrument used a questionnaire with a total of 20 panelists trained. The results of the hedonic quality test showed that there was no difference in texture, aroma and color in the Vegetarian Patty made from banana peels and Chickpea nut. However, there are differences in the taste of the Vegetarian Patty processed by banana peels and chicpea nut. The hedonic test results, the panelists liked the taste, aroma, and texture of the Vegetarian Patty made with Chickpea nut while for the color, the panelists liked the color of the Vegetarian Patty with the processed banana peels.

Abstract

Entrepreneurship education plays a crucial role in preparing vocational graduates not only to become job seekers but also to become job creators. This study aims to analyze the effect of entrepreneurship learning on the entrepreneurial readiness of students in the Culinary Management Study Program. A quantitative method was employed using the Partial Least Squares–Structural Equation Modeling (PLS-SEM) approach, involving 22 students enrolled in the Entrepreneurship course. The research instrument was a structured questionnaire comprising valid and reliable indicators, tested through outer loading analysis, Average Variance Extracted (AVE), and Composite Reliability (CR). The results show that entrepreneurship learning has a very strong and significant influence on students’ entrepreneurial readiness, with a path coefficient of 0.921 and an R-square value of 0.848. These findings indicate that a contextual, experience-based, and practical learning approach is effective in shaping students' preparedness to initiate culinary businesses. The study concludes that well-designed and well-implemented entrepreneurship education significantly contributes to students’ readiness to enter the business world. This research recommends enhancing the quality of entrepreneurship learning through industry collaboration, real business projects, and sustainable mentoring programs.

Abstract

This research aims to analyze the condition of the Mata Kucing Tourist Forest as one of the natural tourist attractions in Batam City, Indonesia. A descriptive qualitative analysis approach and a SWOT analysis tool, this research evaluates the internal and external factors that influence the management and development of the Mata Kucing Tourism Forest area. Data was collected through interviews, questionnaires and observations. The research results show that the area has strengths in its strategic location, adequate facilities and attractive natural environment. However, several weaknesses such as lack of promotion and sufficient supervision are challenges. Opportunities for development include the use of public transport, affordability and animal diversity. The threat is mainly related to the prices of food and drinks in tourist forests. Based on the SWOT analysis, a development strategy is proposed to exploit internal strengths and external opportunities while overcoming internal weaknesses and anticipating external threats.

Abstract

This research was conducted to determine the performance of an engine using a gasoline–ethanol fuel blend produced by the Enduro XL engine. To evaluate engine performance, calculations were carried out on effective power, fuel consumption, specific fuel consumption, and mass flow rate. In addition, theoretical mass flow rate, air–fuel ratio, volumetric efficiency, and thermal efficiency were also examined. The experiment was carried out under five variations of engine speed with a constant load, using only one type of fuel, namely Pertamax (gasoline) blended with 20% ethanol. The test results showed that the average power produced by the blended fuel was greater than that of pure gasoline. Fuel consumption increased with higher engine speed because the octane number of the gasoline–ethanol blend was higher than that of pure gasoline, making it more easily combustible. However, the higher the ethanol content in the fuel blend, the lower the air–fuel ratio, resulting in less complete combustion in the combustion chamber. The thermal efficiency of the blended fuel was generally lower than that of pure Pertamax, except for the 20% ethanol blend. Therefore, engine performance using Pertamax fuel was higher than that using BE-20 gasohol. However, fuel consumption for Pertamax was greater compared to BE-20 gasohol.

Abstract

This study is motivated by the low productivity of coastal communities in processing marine waste into economically valuable handicrafts. One of the main obstacles is the lack of proper production tools, which results in inefficient and time-consuming work processes. The purpose of this research is to analyse the effect of production machine effectiveness on increasing the productivity of coastal communities in Batam City. The study adopts a quantitative approach with a descriptive-associative design. Data were collected from 30 respondents using a Likert-scale questionnaire and analysed through validity and reliability tests, multiple linear regression, and classical assumption tests. The results show that the variables of effectiveness, ease of use, and work safety have a significant simultaneous effect on productivity. The regression model formed is: Y = 32.911 – 0.520X₁ + 0.291X₂ – 0.417X₃, with an adjusted R square value of 0.655. This indicates that 65.5% of the variation in community productivity can be explained by the three variables. This research confirms that the use of production machines can serve as a strategic solution to improve work efficiency and productivity among coastal communities. These findings are expected to serve as a foundation for developing future community empowerment programs based on appropriate technology.

Abstract

This study investigates the implementation of the Environmental Education and Mirota Beach Clean-Up Action as a community-based initiative to support sustainable marine tourism in Batam City, Indonesia. Mirota Beach, one of Batam’s prominent coastal destinations, has been facing increasing environmental pressures due to rising tourist activity, improper waste disposal, and limited awareness of coastal conservation. Using a qualitative case study approach, data were collected through observations, interviews, and documentation involving students, local residents, tourism operators, and destination managers. The program integrated environmental education, waste management training, and collaborative clean-up activities conducted with more than 30 participants. The results demonstrate significant improvements in environmental awareness, with over 80% of participants showing increased understanding of the 3R (Reduce, Reuse, Recycle) principles and sustainable marine tourism practices. The clean-up action directly contributed to enhancing the beach’s cleanliness while fostering community engagement and developing a sense of ownership toward environmental preservation. The initiative also produced academic benefits for participating students through experiential learning aligned with higher education’s Tri Dharma. Furthermore, the formation of the Mirota Beach Care Community and ongoing partnerships with local stakeholders highlight strong potential for long-term sustainability. Overall, this program serves as a practical model of collaborative environmental stewardship that supports the achievement of SDG 11 (Sustainable Cities and Communities) and SDG 14 (Life Below Water), and it offers replicable strategies for other coastal destinations in Indonesia.
