Abstract

The food industry experiences various serious problems when several food MSMEs (micro/small/medium enterprises), especially micro-scale ones, practice improper food manufacturing methods, such as the use of formalin and borax which are prohibited for food preservation, and the marketing of expired food, even repackaged, and the writing of halal labels that are not followed by the fulfillment of requirements. Efforts to prevent things that are detrimental to the community, as well as food and beverage MSME actors, are not only the responsibility of government agencies but also the entire community, including universities for education and assistance in improving the quality and quantity of products produced, as well as the quality of human resources of business actors. The methods used include counseling and skills training, and the outcome is an increase in knowledge of 31%

Abstract

Introduction: In emergency conditions such as the COVID-19 pandemic, many drugs treating SARS-CoV-2 are currently being developed through the concept of repurposing the existing drugs. This study aims to evaluate the physicochemical, pharmacokinetic and toxicity (ADMET) profiles of 15 drugs that have been used clinically for other viral diseases, and inspect their activity as antivirals against SARS-CoV-2. Methods: The physicochemical properties were obtained by using the ChemDraw and the ADMET were predicted using pkCSM on line tools. The selected drugs based on Lipinski's Rules were docked into main protease of SARS-CoV-2 (PDB. 6LU7) using Molegro program. Results: Six drugs complied with Lipinski's Rules and showed good ADMET profile except for their hepatotoxicity, but favipiravir and oseltamivir were predicted to be non-hepatotoxic. Oseltamivir also showed high binding affinity with free energy score below -100 kcal/mol. Conclusions: Oseltamivir is a potential antivirus for COVID-19 based on physicochemical, ADMET profile, and in silico activity against protease of SARS-CoV-2.

Abstract

Bacterial infections, such as S. aureus and E. coli, remain a global health issue, particularly concerning bacterial resistance, which often leads to serious complications. One approach to address this problem is the development of Metal Organic Frameworks (MOFs), known for their high conductivity and antibacterial activity. Zn-based MOFs are known to possess strong antibacterial activity because Zn²⁺ ions can damage bacterial cell membranes, disrupt enzymatic processes, and induce oxidative stress. In comparison, Zr-based MOFs are well known for their excellent chemical stability and biocompatibility. In this study, hydrogels containing three types of MOFs-Zn-BDC, Zn-Fer, and Zr-BDC were developed. This research aims to synthesize and characterize alginate-gelatin hydrogels containing MOFs and evaluate their antibacterial activity. The results indicate that the modification of alginate-gelatin hydrogels with MOFs has been successfully synthesized, as evidenced by FTIR, XRD, and SEM-EDS analyses. The materials successfully produced include Hy/Zn-BDC, Hy/Zn-Fer, and Hy/Zr-BDC. Antibacterial activity testing shows that adding MOF into the hydrogel matrix significantly increases the inhibition against S. aureus and E. coli compared to the hydrogel without MOF. Among the three MOF variants, Hy/Zn-BDC showed the highest antibacterial activity, followed by Hy/Zn-Fer and Hy/Zr-BDC. Specifically, Hy/Zn-BDC inhibited S. aureus growth by 95% and E. coli by 100%, accompanied by the lowest effective inhibitory concentration values (2.0 mg/mL and 2.4 mg/mL, respectively). These results demonstrate the high effectiveness of Zn-based MOF in enhancing the antibacterial performance of the hydrogel as well as its potential development for wound dressing applications.
