Abstract

Indonesia is one of the countries that produces porang and gembili tubers that can be processed into value-added food products. One innovation that can be developed is the analog rice made from these two tubers. Porang and gembili tubers are known to contain bioactive compounds and dietary fiber that provide functional benefits, such as lowering blood glucose levels, improving lipid profiles, and improving digestive tract health. This study aimed to evaluate the physical and proximate qualities of three analog rice formulations using commercial porang and gembili flours. The experimental design used was a Completely Randomized Design (CRD) with two replications, conducted from August to December 2024 at the Technopark Laboratory (Faculty of Agricultural Technology) and Nutrition Analysis Laboratory (Department of Community Nutrition, FEMA IPB). The formulations had porang and gembili ratios of F1 (75:25), F2 (50:50), and F3 (25:75). Data were analyzed using One-Way ANOVA preceded by variance homogeneity testing, followed by DMRT multiple range test. The results showed that cooking time and bulk density differed significantly between F1, F2, and F3. The expansion ratio, degree of breakage, and hardness differed significantly among F3, F1, and F2. F3 exhibited the highest brightness (L*) value. Proximate analysis revealed significant differences in ash, moisture, protein, fat, and carbohydrate contents among all formulations. The F3 formulation, which had a higher proportion of gembili, demonstrated the greatest potential as a staple carbohydrate source. However, further sensory and consumer acceptability improvements are needed.

Abstract

Introduction: Coronary heart disease (CHD) is a leading cause of mortality among the elderly. Promoting healthy lifestyles through balanced diets and regular physical activity is essential for prevention programs. However, the availability of standardized and validated instruments to measure knowledge of healthy lifestyles among elderly individuals is still limited, particularly in Indonesia. This study aimed to develop and validate a knowledge questionnaire focusing on diet and physical activity for elderly individuals at risk of CVD. Methods: A mixed-method validation was conducted, involving qualitative and quantitative approaches. First, content validity was assessed by experts in community nutrition, clinical nutrition, and sport nutrition (n = 8) using the Content Validity Index (CVI) and multi-rates Kappa statistics. Second, face validity was tested with elderly participants (n = 10) to ensure clarity and comprehension. Finally, item validity and reliability testing were examined with elderly participants (n = 30) using the Pearson correlation test between item-total score and Cronbach’s Alpha to determine internal consistency. Results: The I-CVI values for all items ranged from 0,75 to 1,00, and Kappa statistics from 0,72 to 1,00, indicating good to excellent agreement among experts. Face validation confirmed that most items were relevant and understandable, with brief wording adjustments required for clarity. The Cronbach’s alpha of 0,742 reflected good internal consistency. Overall, the validation process demonstrated that 19 of 28 items met the statistical criteria. Conclusion: The healthy lifestyle knowledge questionnaire demonstrated strong validity and reliability in assessing knowledge among elderly individuals at risk of CHD. This instrument is practical and applicable for supporting health promotion and prevention programs focusing on diet and physical activity.

Abstract

Abstract. Winata GM, Hardinsyah H, Marliyati SA, Rimbawan R, Andrianto D. 2024. Phytochemical compounds and antioxidant capacities of Abelmoschus manihot leaf extracts using different solvents. Biodiversitas 25: 942-949. Gedi (Abelmoschus manihot (L.) Medik) leaves are popularly consumed as a green vegetable by Eastern Indonesians. This work aimed to carry out the phytochemical compounds and antioxidant capacities of five extracts, i.e., water, 70% ethanol, absolute ethanol, ethyl acetate, and hexane of Abelmoschus manihot leaf. Qualitative analysis was done as a preliminary screening for flavonoid, tannin, saponin, alkaloid, triterpenoid, steroid, and quinone. Quantitative analysis determined the flavonoid, phenolic, tannin, quercetin, and steroid content. In-vitro antioxidant analysis was conducted to determine free radical scavenging activity and lipid peroxidation inhibitory activity. The results showed that flavonoid was only found in 70% ethanol extract; steroid was obtained in all extracts, while alkaloid, saponin, tannin, quinone, and triterpenoid were absent in all extracts. The results of the quantitative analysis showed that the highest flavonoid was in 70% ethanol extract (39.2 mg GAE/g), phenolic in ethyl acetate extract (34.792 mg QE/g), tannin in 70% ethanol (1.395 mg/g), quercetin in absolute ethanol extract (0.246 mg/g), and steroid content in hexane extract (201.948 mg/g). Half maximal inhibitory concentration (IC50) of each extract to inhibit malondialdehyde (MDA) formation was lower than free radical scavenging activity. The IC50 values of MDA formation in absolute ethanol and hexane extracts were 6.77 ppm and 7.67 ppm, respectively. The IC50 of vitamin E was 3.67 ppm. Further study is needed to determine the mechanism of Abelmoschus manihot leaf extracts as antioxidants used as a functional food.

Abstract

Abstract. Winata GM, Hardinsyah H, Marliyati SA, Rimbawan R, Andrianto D. 2024. Nutritional composition of gedi (Abelmoschus manihot) leaves powder in comparison to common natural galactagogue plants in Indonesia. Biodiversitas 25: 2583-2589. Galactagogue is a substance believed to help initiate, maintain, and increase breast milk production. Low or no breast milk production and perceived insufficient milk are the most common reasons that cause a mother to stop breastfeeding earlier. To help this problem, natural galactagogue consumption is highly recommended. Gedi (Abelmoschus manihot (L.) Medik) plant is locally used in Indonesia as food ingredient and medicinal plant. The leaves have been believed for generations to increase breast milk production. This study aimed to evaluate the macro- and micronutrient content of gedi leaves powder, compared to torbangun (Coleus amboinicus) and katuk (Sauropus androgynous) leaves powder as common natural galactagogue plants in Indonesia. Clean fresh leaves were oven-dried and ground. Carbohydrates, crude fiber, protein, fat, ash, energy, water, vitamins A, B1, B2, B6, B9, C, E, and K, mineral calcium, iron, magnesium, sodium, zinc, phosphorus, and potassium were analyzed using standard methods. The analysis result showed that gedi leaves powder contained highest carbohydrate (51%), crude fiber (10.3%), vitamin K (1,110 µg/100 g), mineral magnesium (700 mg/100 g), sodium (89.6 mg/100 g), and calcium (2,671 mg/100 g) content, which were significantly different compared to torbangun and katuk leaves powder (P<0.05). Total energy (344 kcal/100 g), protein (25%), ash (13.6%), zinc (4.8 mg/100 g), potassium (2,314 mg/100 g), and iron (8.9 mg/100 g) content of gedi leaves powder were between torbangun and katuk leaves powder. This study showed that gedi leaves powder had a high carbohydrate, crude fiber, vitamin K, and mineral, especially calcium and magnesium, and sufficient protein and energy content, compared to torbangun and katuk leaves powder as common natural galactagogue plants in Indonesia. Further research in the extraction, bioactive compound, and in vivo study has to be carried out to scientifically prove the galactagogue effects of gedi leaf powder.

Abstract

Spirulina (Arthrospira sp.) is widely recognized as a nutrient-dense microalgal biomass with potential functional properties. This study aimed to characterize the nutritional composition, bioactive pigment profile, and antioxidant activity of locally produced spirulina powder from Central Java (Indonesia), with particular emphasis on its radical scavenging capacity evaluated using the DPPH assay. Spirulina powder was analyzed for proximate composition (moisture, crude protein, crude fat, carbohydrate, and ash), as well as major bioactive pigments including phycobiliproteins, chlorophyll, and β-carotene. Antioxidant activity was determined using the DPPH radical scavenging assay. The spirulina powder contained 56% protein. The bioactive pigment profile was dominated by phycobiliproteins, particularly C-phycocyanin, alongside high levels of chlorophyll and β-carotene. Antioxidant evaluation showed a concentration-dependent DPPH radical scavenging activity, with an IC₅₀ value of approximately 396 ppm, indicating moderate direct radical scavenging capacity within the DPPH system. These findings suggest that local spirulina from Central Java possesses limited instantaneous free radical scavenging activity when assessed using a single-mechanism chemical assay. However, its complex nutritional matrix may contribute to antioxidant mechanisms beyond direct radical neutralization, although this was not specifically evaluated in the present study.

Abstract

Background: The prevalence of overweight and obesity among university students Indonesia has been rising, with food choices playing a central role in both nutritional and environmental outcomes. However, evidence on knowledge, attitudes, and practices (KAP) toward sustainable diets and their relationship with food choice motives among students with overweight and obesity remains absent in the Indonesian context. This study aimed to determine the association between KAP of sustainable diets and food choice motives among overweight and obese students at IPB University (Institut Pertanian Bogor). Methods: A cross-sectional study was conducted at IPB University Dramaga Campus, Bogor. A total of 97 subjects from undergraduate and postgraduate students from non-nutrition majors were recruited with a purposive sampling technique. Bivariate analysis was performed using the Spearman rank correlation test, and multivariate analysis was performed using binary logistic regression. Results: Most of the subjects (86.6%) had a poor knowledge. Similarly, attitude and practice were also predominantly poor (76.3% and 92.8%, respectively). Spearman correlation analysis revealed significant associations between knowledge and attitude, knowledge and practice, and attitude and practice (p<0.05). The multivariate analysis demonstrated that a good attitude towards a sustainable diet was significantly associated with food choice motives among IPB University Students with overweight and obesity (OR=5.280; 95%CI=1.768-15.769; p=0.003). Conclusion: Attitude of sustainable diet was significantly associated with food choice motives among IPB University students with overweight and obesity. University health programs should integrate sustainable diet education targeting attitudinal change, particularly among students with excess body weight.

Abstract

Vitamin A fortification in unbranded palm oil is an alternative solution to overcome Vitamin A deficiency problem. It, however, needs further study to determine consumer acceptance and preference of the Vitamin Afortified unbranded palm oil in order to make the fortified oil is acceptable and consumed by consumer. This study was divided into two steps, they are field study, held in Barrang Lompo Island - Makassar and Babakan Village - Bogor, and laboratory study, held in Organoleptic Laboratory and Food Processing Laboratory in Department of Community Nutrition, Bogor Agricultural University. Percentage of panelist assessment and non-parametric statistical test (Kruskal- Wallis Test) was used to measure consumer acceptance and preference of fortified unbranded palm oil. The result of this study indicated that the color and aroma of fortified unbranded palm oil is accepted by the consumer. The color, aroma, and taste of food that processed with fortified unbranded palm oil were also accepted by the consumer. The complaint during the usage of fortified unbranded palm oil were mainly caused by the way consumer used and storing the sample. Thus, it can be concluded that there were no change between fortified unbranded palm oil characteristics, both used in a controlled circumstances (laboratory) and in an uncontrolled circumstances (household).

Abstract

Lactic Acid Bacteria (LAB) can be an alternative intervention to help improve pregnancy outcomes. This study aimed to examine the effects of milk-based drinks (MBD) containing a single strain, namely Lactobacillus casei Shirota strain, and MBD containing multiple strains, namely Lactobacillus delbrueckii subsp. Bulgaricus, Lactobacillus paracasei, Lactobacillus rhamnosus, and Streptococcus thermophi- lus to improve gut dysbiosis and offspring birthweight in malnourished pregnant rats, conducted at the Experimental Animal Laboratory from 2020 to 2021. The sample consisted of female rats that were induced with malnutrition and mated. Twenty four female Sprague Dawley rats, aged 7-8 weeks, weighing 150-250 grams, were randomly divided into one negative control group (A0) and three malnourished groups. The malnourished groups consisted of the positive control group (A1), MBD-LcS group (A2), and MBD-multi strain group (A3). The intervention was administered for 19 days. Data was analyzed using ANOVA. Results showed that administering MBDs significantly affected total coliform bacteria (p<0.05).  Moreover, it significantly affected the offspring’s birth weight. The highest birth weight was found in the A3 group (5.18±0.88 g). Overall, prodiving MBDs containing beneficial bacteria significantly improved total coliform bacteria and pregnancy outcomes. Thus, it can help reduce nutritional and health problems in the future.
