Abstract

Maximum exercise can cause oxidative stress which is characterized by high levels of MDA and decreased SOD enzyme activity. Tempeh milk and tempeh yogurt are natural sources of antioxidants that can prevent damage by free radicals and excess ROS formation. This study aimed to analyze the effect of tempeh milk and tempeh yogurt on oxidative stress in rats with maximum exercise. This study is a true experimental with a pre-test post-test control group design on 28 rats given maximal physical activity and treatment for 10 days which were divided into four groups, the control group without maximal physical activity treatment, the control group with maximal activity treatment, the tempeh milk intervention group and the tempeh yogurt intervention group. The statistical analysis used was paired t-test and one-way ANOVA test. The intervention of tempeh milk (4.2 ml/weight of rats) and tempeh yogurt (4.4 ml/weight of rats) had a significant effect (p less than 0.05) on decreasing MDA levels, and also had a significant effect (p less than 0.05) on increasing SOD enzyme activity in rats with oxidative stress. In conclusion, tempeh milk and tempeh yoghurt can reduce MDA levels and increase SOD enzyme activity. Abstrak: Latihan fisik maximal dapat memicu stres oksidatif dengan ditandai tingginya kadar MDA serta aktivitas enzim SOD yang menurun. Susu tempe dan yoghurt tempe menjadi salah satu pangan sumber antioksidan alami yang dapat dimanfaatkan untuk mencegah terjadinya kerusakan yang disebabkan oleh radikal bebas dan pembentukan ROS secara berlebih. Tujuan penelitian ini, untuk menganalisis pengaruh dari susu tempeh dan yoghurt tempeh terhadap stres oksidatif pada tikus dengan latihan fisik maksimal. Penelitian ini merupakan true experimental dengan pre-test post-test control group desain pada 28 ekor tikus yang diberikan aktivitas fisik maximal dan perlakuan selama 10 hari yang dibagi menjadi 4 kelompok, kelompok kontrol tanpa perlakuan aktivitas fisik maximal, kelompok kontrol dengan perlakuan aktivitas fisik maximal, kelompok intervensi susu tempe dan kelompok intervensi yoghurt susu tempe. Analisis statistik yang digunakan adalah uji paired t-test dan uji one-way ANOVA. Intervensi susu tempeh (4,2ml/BB tikus) dan yoghurt tempeh (4,4ml/BB tikus) berpengaruh secara signifikan (p kurang dari 0.05) terhadap penurunan kadar MDA, dan juga berpengaruh signifikan (p kurang dari 0.05)  pada peningkatan aktivitas enzim SOD tikus dengan stress oksidatif. Sehingga dapat disimpulkan bahwa susu tempe dan yoghurt tempe dapat menurunkan kadar MDA serta meningkatkan aktivitas enzim SOD.

Abstract

ABSTRAKLatar belakang: Olahraga dengan instensitas yang tinggi dapat mengakibatkan peningkatan kadar asam laktat. Konsumsi jus bit-nanas pada atlet dapat meningkatkan kadar oksida nitrat (NO) yang memiliki berbagai fungsi berkaitan dengan aliran darah, pertukaran gas, biogenesis, efisiensi mitokondria,dan penguatan kontraksi otot sehingga mencegah peningkatan kadar asam laktat.Tujuan: Menganalisis pengaruh pemberian jus bit nanas terhadap kadar asam laktat pada atlet sepakbola Kota Semarang.Metode: Penelitian true experimental dengan desain pre-post test with controlled group design. Subjek penelitian adalah 32 orang atlet laki-laki sekolah sepak bola PERSISAC dan Akademi New Tugu Muda berusia 15-16 tahun. Pemberian jus bit-nanas pada kelompok perlakuan 200 ml, sedangkan kontrol diberikan air mineral 200 ml. Pemberian intervensi dilakukan satu kali pada pagi hari sebelum latihan. Pengukuran kadar asam laktat diambil dua kali, sebelum intervensi dan setelah melakukan test RSAT (Running Sprint Test Anaerobic). Data dianalisis menggunakan uji paired-t-test, independent-t-test, one way anova dan mann-whitney.Hasil: Sebagian besar subjek memiliki asupan (energi, karbohidrat, lemak, protein, vitamin C) yang kurang. Tidak terdapat perbedaan (p>0,05) rerata kadar asam laktat antara subjek dengan status gizi underweight, normal dan overweight. Terdapat perbedaan signifikan (p<0,05) antara kadar asam laktat sebelum dan setelah  pemberian jus bit-nanas pada kelompok perlakuan, namun tidak ada beda pada kontrol. Kadar asam laktat pada kelompok perlakuan lebih rendah dibandingkan kelompok kontrol.Simpulan: Pemberian jus bit-nanas sebelum latihan berpengaruh secara bermakna terhadap kadar asam laktat atlet sepak bola Kota Semarang.Kata kunci: atlet sepak bola; jus bit-nanas; kadar asam laktat ABSTRACTBackground: Exercise with high intensity result an increase in lactic acid. The consumption of beet-pineapple juice in athletes can increase nitric oxide (NO) levels that serve a variety of functions related to blood flow, gas exchange, biogenesis, mitochondrial efficiency, as well as strengthening muscle contractions and preventing the increase in lactic acid levels.Objective: This study aimed to analyze the effect of pineapple-beet juice (Beta vulgaris L, Ananas comosus) on lactate acid among football athlete.Methods : Design of true experimental research with pretest-post test control group design. Subject were thirty-two male athletes of PERSISAC and New Tugu Muda Academy football school aged 15-16 years. The treatment of pineapple-beet juice give consist of treatment group consumed 200 ml, while control consumed 200 ml of water. Intervention was given once in the morning before training. Lactic acid measurements was taken twice, before intervention and after RSAT test (Running Sprint Test Anaerobic). All data were analyzed using paired-t-test, independent-t-test, one way anova and mann-whitney.Results: Most subjects had intake (energy, carbohydrate, fat, protein, and vitamin C) inadequate categories. No differences (>0,05) of lactic acid levels average between subjects with BMI in the underweight, normal and overweight categories. There was a significant difference (p<0.05) between lactic acid levels average before and after the consumption of beet-pineapple juice in the treatment group, but there was no difference in the control group. The treatment group were lower  in lactic levels than the control group.Conclusion: Consumption of beet-pineapple juice before exercise shows significant impact on the lactic acid levels of Semarang football athletesKeywords: beet-pineapple juice, football athletes, lactic acid levels

Abstract

ABSTRACTBackground: Healthy Baby Porridge is a term usually used for ready-to-eat complementary food products sold on the roadside. These products were great in demand and were chosen by consumers for cheap and practical reasons. However, the safety of these products was not recognized yet.Objectives: This study aimed to determine the total microbial value of Healthy Baby Porridges based on storage condition and to detect Escherichia coli and Salmonella bacteria.Methods: This study was quantitative descriptive research. The samples tested consisted of porridges and steamed rice. The total microbial value was assessed by using Total Plate Count (TPC), and the presences of Escherichia coli and Salmonella were identified. The TPC was performed for three conditions: (1) soon after samples were purchased at room temperature (26.5 - 27 °C), and after stored for six hours: (2) at room temperature, and (3) in the refrigerator (5°C). Escherichia coli and Salmonella was identified immediately after samples were purchased.Results: The TPC value soon after purchase ranged from 1.7 x 102 to 2.7 x 104. After six hours stored, it was between 1.4 x 103 to 1.9 x 107 at room temperature and between 4.8 x 102 to 1.3 x 106 in the refrigerator. The samples contained no Escherichia coli and Salmonella.Conclusion: The total microbial value of Healthy Baby Porridges had already exceeded the maximum limit of 1 x 102 soon after purchase and increased with storage time, especially at room temperature. Escherichia coli and Salmonella were not found. Consuming products with total microbial value above the threshold can potentially pose a health risk.  Keywords: Healthy Baby Porridges; complementary food; Total Plate Count; Salmonella; Escherichia coliABSTRAKLatar belakang: Bubur Bayi Sehat merupakan istilah yang biasa digunakan untuk produk Makanan Pendamping ASI siap santap yang dijual oleh pedagang kaki lima di pinggir jalan.  Bubur Bayi Sehat diminati karena alasan praktis dan murah. Akan tetapi, belum diketahui bagaimana keamanan pangan produk tersebut dari cemaran mikrobiologis. Tujuan: Penelitian ini bertujuan untuk menganalisis total mikroba Bubur Bayi Sehat pada beberapa kondisi penyimpanan, serta mengetahui keberadaan bakteri Escherichia coli dan Salmonella.Metode: Penelitian ini merupakan penelitian deskriptif kuantitatif. Sampel yang diuji berupa bubur dan nasi tim. Total mikroba diukur dengan metode Angka Lempeng Total (ALT), dan keberadaan Escherichia coli dan Salmonella diidentifikasi. Uji ALT dilakukan pada tiga kondisi yaitu (1) saat awal produk dibeli pada suhu ruang 26,5 – 27 °C, dan setelah produk disimpan enam jam: (2) di suhu ruang dan (3) di kulkas suhu 5°C. Identifikasi Escherichia coli dan Salmonella dilakukan segera setelah pembelian.Hasil: Nilai ALT saat awal produk dibeli berkisar antara 1,7 x 102 – 2,7 x 104. Setelah enam jam disimpan, nilainya berkisar antara 1,4 x 103 – 1,9 x 107 pada suhu ruang, dan antara 4,8 x 102 – 1,3 x 106 di kulkas. Sampel negatif mengandung Escherichia coli dan Salmonella.Simpulan: Nilai ALT mikroba pada Bubur Bayi Sehat sejak awal sudah melebihi batas maksimum 1 x 102 dan meningkat seiring lama penyimpanan, terutama pada suhu ruang. Escherichia coli dan Salmonella tidak ditemukan. Mengonsumsi produk dengan total mikroba di atas ambang batas dapat berpotensi menimbulkan risiko kesehatan.Kata Kunci: Bubur Bayi Sehat; MPASI; Angka Lempeng Total mikroba, Salmonella; Escherichia coli

Abstract

ABSTRACTBackground:  Obesity is a complex condition with multiple contributing variables, making it challenging to treat the obesity epidemic. The prevalence of obesity has increased in many sectors of society since the late 1970s, and this rising trend is concerning due to the negative health consequences and significant healthcare costs associated with excess body weight. Spirulina has gained interest due to its bioactive components and advantageous effects on health. This review focuses on the underlying molecular mechanisms that contribute to the occurrence of obesity. In addition, the role of antioxidants in the treatment of obesity is also discussed.Objectives: To determine the Effects of Spirulina Platensis on Oxidative Stress and Inflammation Of Overweight/Obesity.Methods: This research design used the literature review method. This technique is carried out with the aim of putting forward various theories that are relevant to the problem being faced or studied as a reference material in discussing the results of the study.Results:The result of the research  from the article review found that the causes of obesity based factors that cause the incidence of obesity consist of environmental factors, namely physical activity only as a trend and various food choices, health service factors, namely the influence of counseling, genetic factors namely age, parental fatness, gene mutation, and behavioral factors, namely diet and lack of health,  physical activityConclusion: Obesity is caused by many factors including environmental factors, health services, genetics, and behaviorKeywords : Keywords; spirulina plantensis;obesity; Oxidative Stress                                                                                                             ABSTRAKLatar belakang: Obesitas adalah kondisi yang kompleks dengan berbagai variabel yang berkontribusi, sehingga sulit untuk mengobati epidemi obesitas. Prevalensi obesitas telah meningkat di banyak sektor masyarakat sejak akhir 1970-an, dan tren yang meningkat ini mengkhawatirkan karena konsekuensi kesehatan yang negatif dan biaya perawatan kesehatan yang signifikan terkait dengan kelebihan berat badan. Spirulina telah menarik perhatian karena komponen bioaktifnya dan efek menguntungkan bagi kesehatan. Ulasan ini berfokus pada mekanisme molekuler yang mendasari yang berkontribusi terhadap terjadinya obesitas.Tujuan : Untuk mengetahui efek spirulina plantensis pada stres oksidatif dan peradangan kelebihan berat badan/obesitas.Metode: Desain penelitian yang digunakan dalam penelitian ini  menggunakan metode tinjauan pustaka. Teknik ini dilakukan dengan tujuan untuk mengemukakan berbagai teori yang relevan dengan masalah yang sedang dihadapi atau yang sedang diteliti sebagai bahan acuan dalam pembahasan hasil penelitianHasil: Penelitian dari telaah artikel ditemukan bahwa penyebab obesitas berdasarkan faktor-faktor yang menyebabkan kejadian obesitas terdiri dari faktor lingkungan yaitu aktivitas fisik hanya sebagai tren dan pilihan makanan yang beragam, faktor pelayanan kesehatan yaitu pengaruh penyuluhan, faktor genetik yaitu usia, kegemukan orang tua, mutasi gen, dan faktor perilaku yaitu pola makan dan kurangnya aktivitas fisik.Simpulan: Obesitas disebabkan oleh banyak faktor termasuk faktor lingkungan, pelayanan kesehatan, genetik, dan perilaku.Kata kunci : spirulina plantensis; obesitas; stres oksidatif

Abstract

ABSTRACTBackground: Emergency food is a practical and highly nutritious alternative intake. Meanwhile, the nutritional content of emergency food must be 2,100 kcal daily. Limited food supplies due to disasters also result in malnutrition for disaster victims. Some nutritional problems that arise during disasters include malnutrition at vulnerable ages and decreased nutritional status in community groups. Based on this, practical, nutritious food that can be consumed directly is needed. One of the local food ingredients that can be used to make emergency food is sweet potatoes. Objective: This research aims to determine variations of sweet potato as an alternative ingredient in making emergency food. Results: The development of emergency food based on local food can be an effort to overcome the problem of lack of food availability. One food ingredient that can be used as emergency food is sweet potatoes. Sweet potatoes contain minerals and vitamins such as potassium, phosphorus, vitamin C, vitamin K, and Vitamin B, and fiber. Several processed products developed using purple sweet potato as emergency food include biscuits, food bars, noodle snack bars, and jalangkote. Conclusion: The benefits of sweet potatoes as emergency food can be used as alternative food, based on processed products developed using sweet potatoes as emergency food. This study also emphasizes sweet potatoes as a nutritious and practical food source for disaster victims at a relatively low price and easy to obtain. Keywords: emergency food; sweet potato; local food  ABSTRAKLatar belakang: Pangan darurat merupakan alternatif asupan yang praktis dan bernutrisi tinggi. Adapun, kandungan nutrisi dalam pengan darurat adalah harus memenuhi sebesar 2.100 kkal per hari. Keterbatasan bahan pangan karena bencana berakibat pula pada kekurangan gizi korban bencana. Beberapa masalah gizi yang muncul ketika bencana diantaranya adalah kurang gizi pada usia rentan hingga menurunnya status gizi pada kelompok masyarakat. Berdasarkan hal tersebut maka diperlukan pangan yang praktis dan bergizi serta bisa langsung dikonsumsi. salah satu bahan pangan lokal yang dapat digunakan sebagai pembuatan pangan darurat adalah ubi jalar.Tujuan: Penelitian ini bertujuan untuk variasi ubi jalar sebagai alternatif bahan dalam pembuatan pangan darurat. Hasil: Pengembangan pangan darurat berbahan dasar pangan lokal mampu menjadi upaya dalam mengatasi masalah kurangnya ketersediaan makanan. Salah satu bahan makanan yang dapat dijadikan sebagai pangan darurat adalah ubi jalar. Ubi jalar tersebut mengandung mineral dan vitamin seperti kalium, fosfor, vitamin C, vitamin K dan Vitamin B serta terdapat pula kandungan serat. Beberapa produk olahan yang telah dikembangan menggunakan bahan ubi jalar ungu sebagai pangan darurat diantaranya adalah biskuit, food bar, snack bar, mie . Simpulan: Manfaat ubi jalar seebagai pangan darurat bisa dijadikan sebagai pangan alternatif hal ini didasari dengan adanya olahan produkyang telah di kembangkan menggunakan ubi jalar sebagai pangan darurat. Kajian ini juga meenenkankan ubi jalar sebagai sumber pangan bergizi dan praktis bagi para korban bencana dengan harga relatif murah dan gampang di dapatkan.Kata Kunci : pangan darurat; ubi jalar; pangan lokal

Abstract

Prediabetes is a serious global health problem. The prevalence of prediabetes is estimated to be higher than that of diabetes mellitus (DM), and 5%-12.5% of prediabetic patients will develop DM. Epidemiological studies showed that consumption of polyphenol-rich foods impacts blood glucose control and improves insulin resistance. Moringa leaves contain high levels of flavonoids that are effective in glucose control. This study aimed to determine the effect of moringa leaf extract supplementation on increasing GLP-1 levels in prediabetes models. This study used a randomized controlled trial-post-test-only design. Twenty-five male Rattus norvegicus were divided into five groups, namely the normal group, the prediabetes group, and three intervention groups, each given moringa leaf extract at a dose of 75 mg/kgbb, 150 mg / kgbb and 225 mg / kgbb. After 4 weeks of intervention, a GLP-1 examination was conducted. Data analysis using the ANOVA test. There was a significant difference in GLP-1 levels in the intervention group compared to the prediabetes control group (p<0.05). GLP-1 levels increased as the dose given increased. In the intervention group, the dose of 225 mg/kg bw showed the highest increase in GLP-1 levels, but there was no significant difference compared to the 150 mg/kg bw dose group. Moringa leaf extract supplementation is proven to increase GLP-1 in the Rattus norvegicus model. The effect gets better with increasing doses. Further development and testing related to this supplementation are needed so it can be used as a safe non-pharmacological treatment for prediabetes and DM patients.

Abstract

Processing fish with the fermentation method can increase the nutritional content, bring out a distinctive taste, and make the fish last longer. Rusip is a type of complementary food from Bangka Belitung in the form of fish sauce that has been rotten or fermented. Rusip is made from fermented anchovy (Clupeoides borneensis). The concept of fermentation in Rusip is the breakdown of complex protein molecules by proteolytic bacteria into simple amino acid components.The purpose of this study was to determine the presence of proteolytic bacteria that play a role in rusip fermentation.The media used in screening proteolytic bacteria is skim milk agar (SMA) media. Then it was incubated at 37oCfor 24 hours. Bacterial colonies that form a clear zone on the media indicate that these bacteria can degrade protein. After the isolation process and isolates were obtained, the bacteria were characterized by Gram staining method and molecular identification.The results showed that there were proteolytic bacteria in Rusip food, and the 3 best isolates that produced protease enzymes were identified as Bacillus cereus.

Abstract

Type 2 diabetes mellitus (T2DM) is marked by early hyperglycemic symptoms and concurrent insulin resistance, leading to insulin secretion dysregulation. This resistance correlates with heightened Reactive Oxygen Species (ROS) level and reduced malondialdehyde. T2DM elevates malondialdehyde, necessitating antioxidant-rich interventions. Sunflower seed biscuits serve as a rich source of enzymatic antioxidants. The primary objective of this investigation was to substantiate the capacity of sunflower seed biscuits to ameliorate blood glucose and malondialdehyde level in T2DM-afflicted rats. Sunflower seed biscuits were investigated for their impact on blood glucose and malondialdehyde in 24 male Wistar rats. Rats were divided into four groups: diabetes rats (K-), simvastatin-treated (K+), receiving 0.72 g sunflower seed biscuits per rat body weight (X1), and 1.44 g (X2). Administered for 28 days via oral gavage, T2DM was induced through a high-fat diet and streptozotocin. Results showed significant blood glucose reduction in treatment groups (X1: 3.99 ng/mL, X2: 2.89 ng/mL) vs. controls (9.8 ng/mL), with statistical significance (p<0.05). Sunflower seed biscuits effectively lowered blood glucose and malondialdehyde in T2DM rats. The X2 group exhibited superior efficacy in reducing both parameters. Thus, sunflower seed biscuits present promise as a viable dietary option for T2DM management.

Abstract

Background: Elevated cholesterol levels are associated with hypercholesterolemia, the primary cause of death and lost productivity, and a significant risk factor for the onset of cardiovascular disease. Sorghum is known for its high bioactive components and phenolic compounds, flavonoids, β-glucans, and dietary fiber, which act as anti-cholesterol properties.Objective: This study aimed to analyze the impact of sorghum tempeh on cholesterol levels and histopathology of aorta in rats fed a high-fat diet.Methods: A total of 24 male 8-weeks-old Sprague Dawley rats were randomly assigned to four groups: standard diet group (SD), high-fat diet control group (FD), rats fed high-fat diet + low dose of sorghum tempeh (T1), and high-fat diet + high dose of sorghum tempeh (T2). Measurements of cholesterol levels were determined using the total cholesterol ELISA method. Histopathology of aorta analysis was carried out after four weeks of intervention of the four treatment groups using Hematoxylin-Eosin staining.Results: The average total cholesterol levels post-intervention in the SD, FD, T1, and T2 were 89.986±2.089, 220.365±3.847, 121.161±4.111, and 97.836±2.504 mg/dL, respectively. The results showed that the total cholesterol level significantly decreased (p<0.05) after giving a formula of sorghum tempeh with doses of 0.75 g and 1.50 g per 200 g body weight of rats for four continuous weeks. Histopathology of the aorta in the FD and T2 groups showed a significant difference compared to the SD group. The result which was closest to the SD group was the T1 group.Conclusion: Sorghum tempeh is a high-fiber and antioxidant source that can control hypercholesterolemia by lowering serum total cholesterol. It is also possible to improve histopathology but not yet able to approach normal conditions. The administration of sorghum tempeh with a low dose is sufficient, and further research is still required to determine the effect of sorghum tempeh on aorta histopathology.

Abstract

This study aims to explore the effect of antioxidant content on acyl ghrelin levels in obese subjects. This research method is a systematic literature review approach by searching for journal articles in the PubMed database. Inclusion criteria were articles published in the last 10 years using RCT methods on experimental animals and humans with obese nutritional status and providing Moringa leaf intervention. The research results showed that of 69 articles identified, only 7 articles met the inclusion criteria. The findings obtained indicate that the high antioxidant content of Moringa leaves has great potential as a functional food source and is beneficial for body health. The conclusion of the research is that the antioxidant content in Moringa leaves has an effect on obesity and still needs to be studied for its effect on acyl ghrelin.
