Abstract

Hypertension is a major risk factor for cardiovascular diseases and remains the leading cause of mortality globally. Non-pharmacological interventions using local functional foods are promising alternatives for blood pressure management. SOYDRA pudding, a novel combination of soymilk and red dragon fruit, contains bioactive compounds such as flavonoids, isoflavones, and dietary fiber, which are known to have antihypertensive properties. This study aimed to evaluate the effect of SOYDRA pudding as a dietary intervention on blood pressure in patients with grade 1 hypertension. A randomized crossover trial was conducted from September to November 2024 at the outpatient clinic of the Arosuka Hospital, West Sumatra. Thirty-two participants aged 40–60 years with grade 1 hypertension were included in this study. The intervention consisted of consuming SOYDRA puddings twice daily (2 × 150 g/day) along with nutritional education over a 30-day period. Blood pressure measurements were performed before and after the intervention. Data were analyzed using the dependent t-test and Wilcoxon test. Results, there was a statistically significant reduction in systolic blood pressure from 146,3 ± 6,2 mmHg to 132,5 ± 5,9 mmHg (p = 0,000) and in diastolic blood pressure from 92,7 ± 4,8 mmHg to 84,1 ± 4,2 mmHg (p = 0,000) after the 30-day intervention. In conclusion, the administration of the SOYDRA pudding at a dose of 2 × 150 g/day for 30 days significantly reduced both systolic and diastolic blood pressure in patients with hypertension. These findings highlight the potential of functional food-based dietary strategies in non-pharmacological hypertension management.

Abstract

Metabolic syndrome is a medical condition that can occur due to various factors such as obesity, lack of physical activity, and genetic factors, and can lead to metabolic disorders. It can cause insulin resistance, high levels of triglycerides, low levels of high-density lipoprotein (HDL), high blood glucose levels, hypertension, and central obesity. One way to manage metabolic syndrome is through food interventions that have hypocholesterolemic effects, such as tempeh. This narrative review delves into the potential benefits of tempeh made from raw materials other than soybeans for metabolic syndrome disease. The review analyzed 13 original research articles published in the last sixteen years from Google Scholar, PubMed, and Science Direct. The findings suggest that tempeh made from non-soy ingredients like moringa seeds, quinoa seeds, barley seeds, fava beans, chickpeas, lotus seeds, and sorghum seeds contain bioactive components and nutritional content that can help reduce cholesterol levels, inflammation, oxidative stress, and blood pressure. Therefore, tempeh made from non-soy ingredients can be used as a functional food and nutraceutical to help improve the condition of metabolic syndrome. Further research on experimental animals is necessary to identify the effectiveness and mechanisms of non-soy tempeh at the molecular level against metabolic syndrome diseases.

Abstract

Dietary fiber, resistant starch, bioactive compounds, phenolic antioxidants, flavonoids, and inulin are found in mangrove and banana flour. The combination of the two flours is expected to produce cookies that increase the metabolism of obesity. This study aims to identify the chemical characteristics, level of preference, and glycemic index of mangrove and banana flour cookies (mangpis) to increase metabolism in obese subjects. This study consists of three stages. The first stage of chemical characteristic analysis and preference level using a Completely Randomized Design (CRD) design with 4 treatments with 2 repetitions. The second stage of the best and selected formula from the level of preference tests its glycemic index value and glycemic load using a Completely Randomized Design. and the third stage of steamed intervention using Pre-Post Randomized Control Group Design. The results showed that F1 had the highest air, dietary fiber, crude fiber, and resistant starch content, while F0 had the highest protein, energy, and carbohydrate content. F2 cookies had the highest fat content. The glycemic index of steamed F2 was included in the medium category with a low glycemic load. The 28-day F2 intervention reduced triglycerides but did not affect fasting blood sugar or insulin levels.

Abstract

Introduction: This study aimed to acquire students' perceptions of the assessment items used by instructors implemented in the community-based Interprofessional Education (IPE) program during the COVID-19 pandemic. The study also compared the students' perceptions of the instructors' assessment items regarding student characteristics. Motivation for joining the IPE program and a comparison between motivation and gender and disciplines were also identified in this study. Methods: The research method is observational with a cross-sectional approach. Sixth-semester medical, nursing, and nutrition students who had completed the community-based IPE program were involved. Students' perception was measured using a questionnaire on the instructors' assessment items developed based on the IPE competencies. Motivation was measured using a Motivated Strategies for Learning Questionnaire (MSLQ). Results: A majority of students across the three programs agreed or strongly agreed with the assessment items, and there were no significant differences in student perceptions from the variables of gender (p = 0.23) and disciplines (p = 0.68). The correlation between students' motivation and their perception of the instructors' assessment items was significant (r_s = 0.61 with p < 0.01). However, there was a weak and not significant correlation between students' grade point average (GPA) with the perception of assessment items (r_s= 0.1 with p = 0.07). Conclusions: All instructors' assessment items were still perceived as relevant and can be used to assess the students during IPE online learning. Thus, the result of this study can be considered to be used in another setting with a similar situation.

Abstract

This study aims to determine the antihyperlipidemic effect of a combination of red betel extract and sambiloto herb in an experimental animal model of Type 2 Diabetes Mellitus (T2DM). This study was a randomized pre-post-test experiment with a control group design on 25 male Sprague-Dawley rats. Rats experienced T2DM with a high-fat diet for 14 days and Streptozotocin (STZ) induction of 55 mg/kgBW preceded by nicotinamide (NA) 100 mg/kgBW. We confirmed T2DM if the rats' fasting glucose levels were less than 200 mg/dl. The rats were randomly divided into 5 groups: negative control (K1), positive control (K2), combination of red betel leaf and sambiloto herb extract 75:25 (P1), 50:50 (P2), and 25:75 (P3). The combination of red betel leaf and sambiloto herb extract at any dose was able to significantly reduce total cholesterol, LDL cholesterol, and triglyceride levels (p<0.05). The combined extract of red betel leaf and sambiloto herb at a ratio of 75:25 yielded the effective dose for reducing total cholesterol, triglyceride levels, and LDL. In T2DM rats, the combination of these extracts has the potential to increase total cholesterol, LDL, and triglyceride levels.

Abstract

Calcium is an important macro-mineral that is really needed by the body.Calcium from fish bones can be an alternative source of calcium for thosewho are allergic to milk lactose which is usually used as calcium source. Theweakness of fish bone calcium is that it still has a fishy odor, which reducesthe hedonic value of products fortified with fish bone calcium. This researchaims to determine the optimization of concentration and stirring time in citricacid to produce bio-calcium from catfish (Pangasius sp) bones with the bestcalcium content and hedonic characteristics using Response SurfaceMethodology (RSM). The citric acid concentration tested was a minimum of0.25% and a maximum of 1% with stirring times of 30, 60 and 90 min. Dataprocessing was carried out with the help of Design Expert 11 software. Therecommended model is the quadratic model. The recommended optimizationresults for the bio-calcium production solution are a citric acid concentrationof 0.25% and a soaking time of 30 min. Verification was carried out accordingto the optimization solution and gave yield results of 88.9%, particle size of51.07 µm, calcium content 24.05; with a color hedonic value of 4.115, aroma4.059 and overall 4.090 out of a maximum value of 5. XRD pattern showed nodifference between fishbone powder and bio-calcium with degree crystallinity57 and 56.2%, respectively. FTIR spectra showed that both fishbone powder andbio-calcium powder contained hydroxyapatite, however citric acid slightly removedprotein due to absence of amide 1 peaks in bio-calcium powder. Citric acid at0.25% for 30 min helped to increase the yield and reduced some organiccompound to obtain bio-calcium powder. The proper concentration of citric acidand stirring time yielded catfish bone bio-calcium with higher calcium contentand hedonic value.

Abstract

Metabolic Syndrome is continuing to grow worldwide. Indonesia is no exception. High-calorie diets and physical inactivity trigger several pathways involved in metabolic syndrome. These include inflammation and insulin resistance. Associated with type 2 diabetes mellitus, cardiovascular disease, and death, metabolic syndrome is important. There is therefore a need for early intervention to reduce the complications of this disease. Striped catfish (Pangasius hypophthalmus) is one of the freshwater fish farmed in Indonesia. Turmeric (Curcuma longa Linn.) is also widely used in Indonesian food preparations. This review aims to focus on striped catfish oil and turmeric extract that positively affect inflammation and insulin resistance in the intervention of metabolic syndrome. This review shows that striped catfish oil contains omega-3 fatty acids (EPA and DHA), while turmeric extract contains flavonoids, tannins, and saponins. Based on the results of the review, it is known that bioactive compounds found in catfish oil and turmeric extract can be used as nutraceutical ingredients to intervene in metabolic syndrome.
