Abstract

Business in the culinary sector is considered profitable because food is one of the basic needs that is unavoidable for humans. This study examines the development of recommendations for the structure and wage scale for SME practitioners. The objectives of this study are: (1) To identify the financial compensation received by employees of Small Businesses in the culinary sector. (2) To analyze the internal and external compensation comparisons for small businesses. (3) To formulate an ideal and effective wage structure and scale for employees in the culinary sector. The data type used in this study is quantitative data, and the data sources are obtained from primary data (direct interviews, questionnaires) and secondary data obtained from the South Jakarta city government website, the Central Statistics Agency, and other and articles and other scientific literature. The methods used are descriptive methods including mode, salary survey, salary mapping, and the two-point method. The research findings reveal 8 critical positions, with 4 critical positions (general manager, supervisor, driver, social media admin) still having compensation levels below the external survey. Furthermore, this research provides recommendations for wage structure and scale that can serve as references for msmes development.

Abstract

MSMEs play a role active in increase economy and absorption power work , like increase in GDP for Indonesia. One of form businesses that have potency towards the country is business in the sector culinary . Amount business in the sector culinary increase every years in Bandung City and can give field new job​ for others. Businessman own obligation For arrange structure and scale wages for employee they with consider a number of factor like category , position position , length of service , level education , and abilities . Study This aim For analyze compensation finances received by employees at one of the SMEs in Bandung City will evaluated positions worker the as well as designing structure and scale wages for XYZ SMEs in Bandung City with use Adhered and Overlapping methods . Analysis process use Google Sheets software tool for make it easier calculation and manufacturing graph . Research result show that improvements wages with Adhered method can chosen by SME XYZ because need more spending​ less and more in accordance with expenditure operational from these SMEs

Abstract

This research aims to help and provide input to the owners of SME XYZ in mapping salaries using the adhered and overlapping method and using the Hay method in determining compensation factors. The data collection method was carried out through descriptive quantitative research, where respondents were interviewed to obtain employee profile and salary data to analyze the employee salary mapping structure. The analysis results show that the total salary using the adhered method is IDR 75,775,851.05, while with the overlapping method the total salary is IDR 70,998,886.54. which means the difference between the actual salary and the existing method is large.

Abstract

UKM XYZ is one of the culinary businesses located in Bogor City, West Java, which has been established since 1963. Managed by 23 staff members with various roles, ranging from Supervisors to security guards, the welfare of employees is crucial in the business. One aspect of employee welfare can be observed through the compensation system implemented. Compensation provided may include basic salary, allowances, and other benefits. UKM XYZ adopts a daily wage payment system for its staff, with the amount varying based on the job type within the UKM. However, the current compensation system lacks consideration for other factors, making it less than ideal. Therefore, this research aims to evaluate the compensation system for UKM XYZ. Drawing on Salary mapping theory, this study seeks to provide a better understanding of the compensation system for the UKM. The methods employed in this research include compensable factors, analysis of the given system (job grading), and a simple method with adhered and overlapping schemes, aimed at enhancing employee satisfaction within the compensation system.

Abstract

This research aims to help provide recommendations and improvements in calculating wages in UKM XYZ using the overlapping method and complying with it. It is hoped that this research can provide a clear picture of the existing incentive system in SME XYZ and provide a strong basis for analyzing and designing a more effective and sustainable incentive structure for the company. The data obtained in this research was obtained from interviews and direct observation at UKM XYZ. The findings obtained in the field indicate that UKM XYZ has not carried out appropriate system improvements, therefore improvements are needed. The results obtained after improving the recovery system using the overlapping method and complying with it were that the total new salary using overlapping was IDR 72,860,000 or an increase of 3.06% compared to the original salary. Meanwhile, by using the compliant method the salary increases by 1.54%. So from these results it can be concluded that the most suitable method to justify the salary structure of SME XYZ is the overlapping method.

Abstract

The food and beverage industry contributes significantly to Indonesia's Gross Domestic Product (GDP), with UMKM AC, located in Bogor City, being one of the contributors. This research formulates a business strategy for UMKM AC using the Business Model Canvas (BMC), SWOT analysis, and evaluation of Key Performance Indicators (KPIs) with the Balanced Scorecard (BSC). Data were collected through questionnaires and literature studies. The BMC analysis results indicate strengths in customer segmentation and community relations. The internal and external factor analysis shows that UMKM AC is in a position to grow and develop. The SWOT analysis identifies opportunities for UMKM AC, focusing on strategies that have a positive impact. The BSC evaluation shows overall good performance, but there are some strategic goals that need further improvement. This research highlights the importance of strategic planning and performance evaluation for SMEs in facing industry competition.

Abstract

Sistem kompensasi yang optimal merupakan salah satu faktor yang berdampak pada kepuasan dan kinerja karyawan. Di Kota Bogor, salah satu Usaha Kecil Menengah (UKM) bernama XYZ belum mengadopsi sistem kompensasi khusus dalam membayar gaji karyawannya. Oleh karena itu, diperlukan struktur kompensasi ideal yang dapat meningkatkan kepuasan kerja karyawan. Tujuan dari penelitian ini adalah untuk mengidentifikasi kondisi sistem kompensasi, menganalisis faktor-faktor yang mempengaruhinya, dan menyusun struktur kompensasi ideal untuk UKM XYZ. Penelitian ini bersifat kuantitatif, dengan analisis data menggunakan pendekatan deskriptif dan metode Point System berbasis Job Value. Hasil penelitian menunjukkan bahwa UKM XYZ belum mengimplementasikan sistem kompensasi yang ideal bagi karyawan mereka. Faktor-faktor kompensasi yang diperhitungkan melibatkan Pendidikan, Pengetahuan dan Pelatihan, Pengalaman Kerja, Kemampuan Fisik, Komunikasi, Kerja Sama, Perencanaan-Koordinasi, Orientasi Pelayanan Pelanggan, Analisis dan Pemecahan Masalah, serta Tanggung Jawab Finansial dan Aset Fisik. Sebagai solusi, direkomendasikan agar UKM XYZ menerapkan sistem kompensasi tumpang tindih (overlapping) untuk mencapai tingkat upah yang kompetitif dengan UKM sejenis sesuai tingkat kenaikan inflasi dan UMP.

Abstract

Pemulihan ekonomi pasca COVID-19 berdampak baik ditandai dengan kestabilan inflasi dan meningkatnya perkonomian Indonesia, hal tersebut ditopang oleh kontribusi UMKM pada PDB dan penyerapan tenaga kerja. Permenaker No. 1 tahun 2017 mewajibkan semua pengusaha untuk membuat Struktur dan Skala Upah (SSU). Penelitian ini bertujuan untuk mengidentifikasi sistem kompensasi, menganalisis keadilan internal dan eksternal, menyusun SSU ideal untuk usaha kecil sektor makanan dan minuman di Kabupaten Bandung Barat. Penelitian dilakukan pada bulan Januari-Juli 2024, dengan sampel 9 Usaha Kecil Kabupaten Bandung Barat. Jenis data meliputi data primer (wawancara dan kuesioner) dan sekunder dari website BPS Kabupaten Bandung Barat dan literatur yang relevan lainnya. Metode yang digunakan dengan analisis statistik deskriptif, survey gaji, pemetaan gaji, dan metode dua titik. Hasil penelitian menunjukkan UKB4 memberikan kompensasi tertinggi sebesar 78% dari keseluruhan critical positions dan 67% sudah di atas UMP Jawa Barat.

Abstract

Tamansari Village in Bogor Regency boasts a key commodity in pohpohan leaves, which has significant potential to be developed by Micro, Small, and Medium Enterprises (UMKM) into processed products such as chips through packaging innovation and partnership strategies. The UMKM "CLB Raos," which has been producing pohpohan chips since 1998, faces key challenges in marketing due to unappealing packaging and a limited partnership network, causing the business to temporarily halt. This mentoring program aims to enhance the competitiveness and sustainability of pohpohan chips through strategic planning, social approaches, implementation, and evaluation. The main interventions in this program include improving packaging from simple clear plastic to full-print aluminum foil, rebranding the product to "KEPOTA," and registering the business with a Business Identification Number (NIB) and Halal Certification. Partnerships with the "Sobat Tani IPB" cafe and the entrepreneurship extracurricular program at SMA N 1 Tamansari were also established to broaden the market reach. The results show a significant increase in the product's appeal and competitiveness in the market. The main challenge faced by this micro-enterprise is the limited mobility of the UMKM actors, which hinders independent product distribution. Therefore, packaging innovation and strategic partnerships are crucial for UMKM development, especially in expanding market reach.

Abstract

Sukajadi Village, located in Kecamatan Tamansari, Kabupaten Bogor, has significant agricultural land with the majority of its residents being farmers. Despite its high agricultural potential, most farmers still face various challenges such as traditional marketing methods, unstable crop prices, limited commodity variety, and lack of knowledge about cultivation techniques. One of the potential yet underutilized commodities is sweet potatoes. KKN-T IPB students designed the Agriwork program, a workshop on sweet potato cultivation and marketing techniques, in collaboration with the Agribusiness and Technology Park (ATP) of IPB University. This program aims to enhance farmers' understanding of effective cultivation and marketing techniques, and establish partnerships with ATP IPB University. The implementation of the program involved four main stages: socialization, land survey, assistance, and partnership. The Agriwork program successfully initiated partnerships between Sukajadi Village farmers and ATP IPB University. Three farmers from local farmer groups expressed interest in partnering, two of whom have undergone land surveys, and one has started planting seedlings. This partnership continues with the harvesting process of 3.5 tons of white and yellow sweet potatoes, supervised by ATP IPB University, and the preparation for signing the memorandum of understanding (MOU) between the farmers and ATP IPB. The AgriWork program by KKN-T IPB and ATP IPB supports Sukajadi farmers in improving sweet potato production and marketing. Three farmers became partners, receiving production assistance, price assurance, and access to modern markets, positioning Sukajadi as a potential sweet potato hub in Bogor.
