Abstract

The teenage phase is a crucial period in preparing to become a woman of childbearing age who is able to prepare for the health of future generations. Therefore, nutritional status and supporting factors for growth and development in adolescence are the focus of attention in sensitive nutrition interventions. One effort to improve adolescent nutrition is through providing snacks in the form of nutritious snack bars which are formulated using local food ingredients typical of the target area. The potential of snakehead fish which has a high protein content has been used as a traditional snack such as pempek, so efforts are needed to increase the use of snakehead fish as a snack bar product. The aim of this research was to carry out social mapping and develop local food-based products as an initial project in a sensitive nutrition intervention effort to accelerate stunting reduction. Social mapping related to teenagers was carried out on 100 young women at SMA Negeri 4 Palembang and product formulation was carried out at the Nutrition Laboratory, Faculty of Public Health, Sriwijaya University. The results of the social mapping research showed that 59 subjects (59%) were at risk of CED and 30 subjects (30%) had anemia. The snack bar formulation product most liked by the trained panelists was the snakehead fish formulation with the addition of gulo puan F3, F6 and F9. The product formulation most preferred by consumer panelists is the F3 formulation.

Abstract

Background: One of the fundamental aspects of nutritional problems arises due to the imbalance of food intake and body needs, which can lead to over or undernutrition. Research shows that 20,45% of university students are underweight and 4,54% are obese. College students are prone to disordered eating patterns, fast food consumption, and lack of physical activity, which can affect health and academic performance. Objective: To analyze the relationship between lunch macronutrient intake, physical activity, and nutritional status in Sriwijaya University students. Methods: This cross-sectional study involved 102 active students (2019–2023) who ate lunch at the faculty canteen, selected using purposive sampling considering class proportion. 24-hour food recall (two non-consecutive days) assessed nutrient intake, Body Mass Index (BMI) determined nutritional status, and the IPAQ questionnaire measured physical activity. Results: Significant relationships were found between energy intake (p = 0,000), carbohydrate intake (p = 0,000), protein intake (p = 0,001), fat intake (p = 0,006), and physical activity (p = 0,008) with nutritional status. Students with imbalanced nutrient intake and low physical activity were at higher risk of abnormal nutritional status. Conclusion: The study concludes that there is a significant relationship between lunchtime energy intake, carbohydrate intake, protein intake, fat intake, and physical activity with the nutritional status of Universitas Sriwijaya students. Students should maintain a balanced diet and increase physical activity to achieve optimal nutrition.

Abstract

Food safety is a critical public health issue, especially in institutional settings such as university canteens, where large populations are served daily. Inadequate hygiene and sanitation practices by food handlers can lead to foodborne illnesses, placing students and staff at risk. This study evaluated hygiene and sanitation conditions in the canteens of a leading public university in South Sumatra Province, Indonesia, known for its active food service facilities. This study examined food handlers’ knowledge, attitudes, and practices and assessed the microbiological safety of chicken curry by testing for Escherichia coli (E. coli) contamination and total plate count. Using a cross-sectional design, data were collected from 35 food handlers and 7 chicken curry samples across multiple canteens. Structured questionnaires and microbiological analysis were employed. Results revealed that although most food handlers demonstrated good knowledge and positive attitudes, 57.1% exhibited poor hygiene practices. Several chicken curry samples exceeded acceptable E. coli levels, indicating potential health risks. These findings underscore the urgent need for ongoing hygiene training, strict supervision, and standardized certification for food handlers to mitigate microbial hazards and ensure food safety in university settings.

Abstract

Abstract Diarrhea cases are always in the top ten diseases that always appear in every health center. One of the causes is the lack of hygiene of food handlers. Several studies have stated that food handlers assume that clean hands are those that do not look dirty. This kind of thinking is a concern for the government regarding the health conditions of the community. In fact, invisible germs on the hands can still stick there. To correct the mistaken assumption that hands are clean only from the naked eye, it is necessary to conduct education with the Emo-Demo concept so that the community becomes more aware of the importance of washing hands with soap (CTPS). The purpose of this community service program (PKM) is to increase the knowledge and awareness of food handlers in implementing CTPS habits. The PKM method applied is in the form of counseling and emo-demo accompanied by evaluation through pre-test and post-test. The target is housewives in Babatan Saudagar Village, Pemulutan District, Ogan Ilir Regency. The results of this PKM show that knowledge about CTPS before and after counseling has increased. The emo-demo concept also makes respondents more aware of the importance of CTPS even though hands look clean. Good practices and increased knowledge are expected to be a solution to reduce diarrhea cases at the household level and generally in Indonesia. Keywords: Emo-Demo; handwash; knowledge; food handler.

Abstract

The Sustainable Development Goals (SDGs) emphasize the integration of reproductive health into national strategies and programs, including universal access to sexual and reproductive health services such as Family Planning (FP). This study aims to examine the factors influencing the use of long-term contraceptive methods among married women of reproductive age in urban areas of South Sumatra. A quantitative approach with a cross-sectional design was employed, using secondary data from the 2017 Indonesian Demographic and Health Survey (IDHS). The sample consisted of 247 married women. Data were analyzed using logistic regression. In urban areas of South Sumatra, 13.8% of married women of reproductive age used long-term contraceptive methods. The use of these methods was significantly associated with the number of living children and employment status (p < 0.05). Among all variables, education was found to be the most strongly associated factor with the use of long-term contraceptive methods (p = 0.04; PR = 4.238, 95% CI: 1.070–16.779). Education plays a pivotal role in the use of long-term contraceptive methods. Enhancing knowledge and awareness about these methods significantly influences women’s decisions to adopt them.
