Abstract

Purpose: The purpose of this research is the demand for popular patisserie products in Bali, which prompted The Mulia, Mulia Resort & Villas, Nusa Dua, Bali to establish Cannelé as their additional dining outlet to offer exquisite patisserie offerings. Research methods: The study employs a POAC-based approach (planning, organizing, actuating, and controlling) supported by theories in Gastronomy, Menu Engineering, and Gastronomic Culinary. This study employs a qualitative approach, collecting data through observation, document study, interview, and focus group discussion. Findings: The Mulia, Mulia Resort & Villas develop and manage Cannelé through POAC management cycle. Menu management was conducted rigorously through menu engineering and trend analysis to classify items based on sales performance for operational analysis. The model that can be designed and applied is the operational management cycle. The comparison of menu categories shows a strong foundation for items in the Star and Plow horse and potential to the Puzzle. A significant number of items fall in dog categories. Patisserie/cake product line, ice cream, and coffee show the strongest performance. Meanwhile, the savory menu/main dishes and kids’ menu demonstrate low sales. Implication: This study contributes valuable applied knowledge in culinary management and hospitality tourism, particularly in F&B product strategy within luxury hotel environments.

Abstract

This study aims to maximize the implementation of two aspects, namely the Green Meeting Concept with Green MICE Business. The study uses qualitative descriptive analysis techniques by exploring the explanation of the green economy concept, things that affect the green economy, the benefits of green MICE Business and supporting government policies. As to overcome this problem, the event organizers should limit the number of waste used in an event. Therefore, it is important that event handlers practice environmental protection during organizing an event. Evaluating environmental impacts from both positive and negative perspectives provides a better understanding of the proper use of natural resources. Perform calculations for investment planning to support the green MICE movement as part of supporting a green economy.

Abstract

This research aims to describe the pro-environment behavior based on the Tri Hita Karana concept in Bindu Traditional Village, Badung, Indonesia. This type of research uses a qualitative descriptive method to explain Tri Hita Karana as a form of pro-environmental implementation in Bindu Traditional Village. The results show that the implementation of pro-environmental behavior in the form of Tri Hita Karana teachings in people's lives in the Parhyangan (aspects of God) is realized by worshiping and serving the God, in the Pawongan (aspects of human) by helping each other and working together with humans, and in the Palemahan (aspects of natural environment) by preserving nature.

Abstract

This research aims to analyze the implementation of sustainable tourism in spiritual tourism at Pura Luhur Tamba Waras in Desa Sangketan, Tabanan Regency, Bali, Indonesia. This research uses qualitative analysis techniques. The data source used is secondary data and is accessed through company documents, journals, books, articles, and websites. The results show that sustainable tourism in spiritual tourism at Pura Luhur Tamba Waras are the application of basic concepts in sustainable tourism, namely the social concept of cooperation. The economic concept has also been implemented very well, namely the surrounding community can sell spiritual facilities and infrastructure in the temple area, but the implementation of the environmental concept is not good because the waste that is used for spiritual tourism is not well managed. Pura Luhur Tamba Waras has implemented three basic concepts of sustainable tourism, namely social, economic and environmental but the concept of the environment has not been maximally implemented.

Abstract

This study aimed to determine the application of green human resource management at  Hotel Le Morgane, France, and to analyze the hotel's environmental performance through the application of green human resource management. The method used is descriptive statistics by distributing questionnaires to 42 employees. Data collection methods used in this study were observation, a document study, a literature study, interviews, and questionnaires. The results of study indicate that green human resources application at Hotel Le Morgane starts with Green Recruitment and Selection, Green Training and Development, Green Performance Assessment, and Green Reward and Compensation. The hotel needs to pay attention to environmental performance indicators in practices carried out by human resources.

Abstract

The importance of critical education for mentally retarded children in learning Balinese dance is related to learning, knowledge, and training for mentally retarded children. Critical education as an approach that can help marginalized mentally retarded children in obtaining dance learning to realize the social reality faced in education. Therefore,this article seeks to find out the relationship between critical education for mentally retarded children and the dance learning at the Denpasar Extraordinary Primary School of Kuncup Bunga. Critical education relations relate to the relationship of government stakeholders, teachers, communities, and parents of students who have power over mentally retarded children. The teacher considers mentally retarded children as weak children have unilaterally produced the most marginalized students in the Denpasar Kuncup Bunga Extraordinary Primary School.
