Abstract

The Penimbangan is one of the potential locations for underwater tourism in the Regency of Buleleng, with a unique dive spot. Planning and sustainable coastal development are essential for the continuity of the ecosystem, the sea, and the economy. Fish and coral studies in Penimbangan, District Buleleng, occurred from December 2022 to February 2023. Location observation shared four sites of data retrieval. The determination sites study uses purposive sampling based on the spread of coral naturally. Data was collected by Underwater Photo Transect (UPT) for coral and Underwater Visual Census (UVC) for fish. Transect area coral 50m long with quadratic transect (58cm x 44cm), and classified categories using CPCe software. Transect area fish of 350 m2 (length 70 m, limit right and left 2.5 m), identified fish to species level. The most studied habitat associations in coral reefs are coral (HC) and fish in coral assemblages. Percentage composition substrate basis in Penimbangan, namely dead coral with algae (106.74), coral (90.27), and sand (70). Lifeform coral is found in as many as ten types; the most are CM (39.00), CE (23.20), and ACS (10.07). A total of 17 families with 70 reef fish species were recorded in this study. The family with the most species is Pomacentridae (25), followed by Chaetodontidae (9) and Labridae (8). Abstract

This study aims to evaluate the effect of carrageenan addition on the physicochemical properties of fruit slice jam made from Sonneratia caseolaris. This mangrove fruit contains 0.32% pectin, making it a potential raw material for jam production. However, conventional jam has limitations in practicality, leading to the development of fruit slice jam, which has a compact, non-sticky, and plastic-like texture. The study employed a Completely Randomized Design (CRD) with four treatments: P0 (control, 2% pectin), P1 (1.25% carrageenan), P2 (1.50% carrageenan), and P3 (1.75% carrageenan), each replicated five times. The physical parameters analyzed included hardness, cohesiveness, adhesiveness, and springiness, while the chemical parameters consisted of moisture content, ash content, reducing sugar, and pH. Data were analyzed using one-way ANOVA at a 95% confidence level, followed by Duncan's Multiple Range Test (DMRT). The results indicated that increasing carrageenan concentration significantly (P<0.05) decreased adhesiveness, springiness, and moisture content, while hardness, cohesiveness, ash content, reducing sugar, and pH increased. Thus, carrageenan addition significantly influences the physicochemical properties of fruit slice jam made from S. caseolaris, offering a promising innovation for fruit-based jam products

Abstract

Marine debris is a solid material that is intentionally or unintentionally left in the waters and can directly threaten the condition and productivity of water areas. Tirta Ayu Beach and Balongan Beach are tourist destinations that are threatened by marine debris. The presence of tourists on the beach is very beneficial for increasing regional and community income, but it can also result in an increase in the generation of waste generated so that a lot of this waste accumulates and is distributed to various places and has a negative impact on the waters. This study aims to determine the species composition, weight, density, and distribution of marine debris at Tirta Ayu Beach and Balongan Beach. Sampling was conducted at 8 research stations, then classified and analyzed based on UNEP and KLHK provisions. The results showed that the types of marine debris found on Tirta Ayu Beach and Balongan Beach included plastic, plastic foam, rubber, paper and cardboard, wood, glass, cloth, and other materials. Plastic is a type of marine debris dominating Balongan Beach (89%) and Tirta Ayu Beach (81%). The highest density value of marine debris based on quantity and weight was found on Tirta Ayu Beach with a value of (5.0 ± 1.9 items/m2) and a weight of 25.8 ± 16.3 gram/m2.

Abstract

The mangrove apple (Sonneratia caseolarisi) has potential as an alternative food source due to its high nutritional and antioxidant content. This study aims to analyze the effect of storage duration on mangrove apple-based fruit slices' microbiological and chemical quality by adding rosella extract, focusing on Total Plate Count (TPC) value, antioxidant activity, and proximate analysis. The slices were made by adding 50% rosella extract based on the weight of the fruit pulp and were tested during storage at 0, 7, 14, 21, and 28 days. The research methods included TPC testing to count microorganisms, antioxidant activity testing using the DPPH method, and proximate analysis to determine moisture, fat, protein, ash, and carbohydrate content. The results showed that TPC values increased significantly with longer storage time, with the highest increase in the fourth week. Antioxidant activity also decreased over time, indicating the degradation of antioxidant compounds due to oxidation. Proximate testing revealed increased moisture and fat content, while protein, ash, and carbohydrate levels decreased as storage duration increased.

Abstract

Probiotik adalah mikroorganisme hidup yang memberikan manfaat bagi inangnya dengan cara mengubah mikroba di tubuh inang, meningkatkan proses pencernaan, memperkuat respons terhadap penyakit, serta memperbaiki kualitas lingkungan. Sementara itu, imunostimulan adalah senyawa yang dapat meningkatkan daya tahan tubuh ikan dengan memperbaiki ketidakseimbangan dalam sistem kekebalan, baik melalui peningkatan imunitas spesifik maupun non-spesifik pada ikan budidaya. Kombinasi probiotik dan imunostimulan alami dapat membantu meningkatkan pertumbuhan ikan sehingga dapat meningkatkan produktivitas budidaya ikan di Kota Batam. Tujuan dari kegiatan ini yaitu dapat meningkatkan pengetahuan dan keterampilan pembudidaya mengenai aplikasi probiotik dan imunostimulan alami, serta dapat memberdayakan kelompok pembudidaya ikan Kota Batam sehingga hasil produksinya dapat meningkat. Metode yang diterapkan dalam kegiatan ini meliputi presentasi, demonstrasi dan praktik, pendampingan, serta monitoring dan evaluasi. Materi yang disampaikan dalam kegiatan ini mencakup manajemen kualitas air, pengenalan penyakit ikan budidaya, serta pengenalan probiotik dan imunostimulan alami dalam budidaya ikan. Kegiatan ini diikuti oleh 17 orang perwakilan kelompok pembudidaya ikan (POKDAKAN) binaan Dinas Perikanan Kota Batam. Sebelum kegiatan dimulai, peserta mengisi kuesioner pre-test untuk mengetahui tingkat pemahaman peserta sebelum materi disampaikan. Berdasarkan hasil kuesioner yang dibagikan, sebagian besar peserta tidak pernah melakukan pemeriksaan kualitas air dan tidak pernah melakukan pemeriksaan kesehatan ikan. Peserta sudah banyak yang pernah mendengar tentang probiotik dan pernah menggunakan probiotik, tetapi banyak peserta yang menggunakan probiotik tanpa mengetahui manfaat probiotik dan cara penggunaan probiotik yang tepat. Peserta juga belum mengenal imunostimulan dan belum pernah menggunakan imunostimulan. Kegiatan ini berlangsung dengan baik dan mendapatkan respons positif dari peserta. Interaksi yang baik antara peserta dan pemateri menunjukkan bahwa materi yang disampaikan telah diterima dengan baik oleh peserta.

Abstract

Biskuit merupakan salah satu produk makanan ringan yang digemari oleh banyak kalangan Masyarakat yang saat ini banyak sekali inoasi ang dikembangkan. Salah satu biskuit yang dikembangkan dari sumber tepung alternatif adalah biscuit pedada yang dibuat dari tepung buah mangrove jenis Sonneratia caseolaris. Penelitian telah dilaksanakan dar Desember 2022 hingga Februari tahun 2024 di Laboratorium Pengolahan Pangan, Laboratorium Mikrobiologi, dan Laboratorium Kimia dan Analisis di Fakultas Perikanan dan Kelautan Universitas Airlangga. Parameter pengujian selain analisis proksimat pada produk juga dilakukan uji organoleptik. Berdasarkan hasil uji proksimat, biskuit dengan substitusi tepung pedada menunjukkan rata-rata penilaian kadar karbohidrat, kadar protein, kadar lemak, dan kadar air pada setiap perlakuan yaitu P0 kontrol (0%), 25% (P1), 50% (P2), 75% (P3). Sementara hasil pengujian organoleptik yang dilakukan memiliki penilaian kualitas warna (p < 0,05) yang menunjukkan bahwa terdapat pengaruh yang signifikan antara substitusi tepung pedada terhadap kualitas warna, aroma, rasa, dan tesktur pada biskuit. Substitusi tepung terigu dengan tepung buah pedada pada biskuit berpengaruh terhadap meningkatkan karbohidrat serta rendah protein dan lemak dan mengurangi kadar gluten. Pengujian organoleptik menunjukkan bahwa perlakuan dengan hasil terbaik ialah pada P1, konsentrasi tepung pedada 25% memiliki warna, tekstur, dan aroma yang paling disukai panelis.

Abstract

Abstrak Ikan bandeng (Chanos chanos) merupakan potensi perikanan payau. budidaya ikan bandeng di Jawa Timur masih menggunakan sistem tradisional, dimana air baku tambak menggunakan aliran air sungai setempat dan pasang surut air laut. Budidaya ikan bandeng secara tradisional memiliki kelemahan yaitu sulit menjaga kualitas air sehingga mudah tercemar oleh limbah rumah tangga maupun limbah industri. Bioakumulasi logam berat merupakan proses peningkatan konsentrasi suatu zat yang masuk kedalam tubuh mahkluk hidup. Salah satu logam berat yang dapat mencemari perairan yaitu logam timbal (Pb). Penelitian ini bertujuan untuk mengetahui konsentrasi limbah timbal (Pb) yang terkandung pada air, sedimen, dan daging ikan bandeng di tambak tradisional Desa Watuagung (Gresik), Desa Kalanganyar (Sidoarjo), dan Desa Jarangan (Pasuruan). Selain itu, untuk mengetahui tingkat pencemaran Pb di Desa Watuagung (Gresik), Desa Kalanganyar (Sidoarjo), dan Desa Jarangan (Pasuruan). Metode penelitian ini dengan mengambil data secara acak (purposive random sampling). Dengan pengambilan sampel di tiga lokasi yang berbeda, setiap lokasi terdapat tiga stasiun yang diuji. Hasil dari penelitian ini, kandungan logam Pb pada air dan daging ikan bandeng tidak terdeteksi, pada sedimen terjadi akumulasi logam Pb namun kadarnya masih dibawah baku mutu dan masih layak untuk kegiatan budidaya ikan bandeng. Tingkat pencemaran logam Pb pada ketiga lokasi tambak (Gresik), (Sidoarjo), dan (Pasuruan) masih tergolong aman. Nilai indeks pencemaran Igeo, CF, dan BCF masih dibawah ambang batas dan masih tergolong aman. Kata Kunci: Ikan Bandeng, Logam Berat, Timbal, Bioakumulasi Abstract Milkfish (Chanos chanos) is a potential brackish water fishery. milkfish cultivation in East Java still uses a traditional system, where the raw water of the pond uses local river water flow and sea tides. Traditional milkfish cultivation has the disadvantage that it is difficult to maintain water quality so that it is easily contaminated by household waste and industrial waste. Bioaccumulation of heavy metals is the process of increasing the concentration of a substance that enters the body of a living creature. One of the heavy metals that can pollute waters is lead. This study aims to determine the concentration of lead (Pb) waste contained in water, sediment, and milkfish meat in traditional ponds in Watuagung Village (Gresik), Kalanganyar Village (Sidoarjo), and Jarangan Village (Pasuruan). In addition, to determine the level of Pb pollution in Watuagung Village (Gresik), Kalanganyar Village (Sidoarjo), and Jarangan Village (Pasuruan). This research method is by purposive random sampling. By taking samples at three different locations, each location has three stations that are tested. The results of this study, the Pb metal content in water and milkfish meat was not detected, in the sediment there was an accumulation of Pb metal but the levels were still below the quality standards and were still suitable for milkfish cultivation activities. The level of Pb metal pollution in the three pond locations (Gresik), (Sidoarjo), and (Pasuruan) was still relatively safe. Abstract

Spesies asing invasive adalah salah satu isu strategis di Indonesia karena keberadaanya menjadi ancaman terhadap kelestarian keanekaragaman hayati dan keberlanjutan konservasi ekosistem. Termasuk spesies ikan nila (Oreochromis niloticus) di Danau Dampelas, komoditas ini bukan asli Sulawesi sehingga dikhawatirkan mempengaruhi populasi spesies asli, komposisi struktur dan proses ekosistem. Penelitian ini bertujuan untuk identifikasi spesies invasive di Danau Dampelas secara morfologi dan molekuler. Identifikasi molekuler dilakukan dengan menggunakan DNA mitokondria berdasarkan daerah Cytochrome Oxidase Sub Unit I (COI). Sampel ikan nila dikumpulkan dari tujuh stasiun pengamatan di danau Dampelas. Hasil identifikasi dengan metode morfologi dan molekuler menunjukan hasil yang sama, yaitu Oreochromis niloticus. Berdasarkan identifikasi morfologi Oreochromis niloticus memiliki bentuk pipih dan oval, kepala sedikit runcing, warna tubuh kehitaman atau keabuan. Sirip ekor memiliki garis vertical, letak mulut terminal, sirip dorsal memanjang dengan mengeras dan bentuk ekor truncate. Hasil penelitian molekuler menunjukan bahwa semua sekuen ikan berhasil diamplifikasi dengan gen COI (654 bp). Hasil BLASNT menunjukan persentase identitas 100%.

Abstract

Lobsters from the Panulirus sp. group are a potential resource in renewable fisheries, but when exploitation continues to increase and there is no control, the number may continue to decline and become extinct. Lobster catching is not limited to the adult phase, but in all phases, including the puerulus phase (baby lobster/clear lobster seed). This study aimed to determine the diversity of baby lobster seeds landed in coastal waters in the Pacitan Regency area based on baby lobster catching activities. This research was conducted in January 2023 - January 2024. Data processing using Primer7 and MS Excel software. Based on the results of observations and data collection, both primary and secondary, 4 lobster species were obtained, namely pearl lobster (Panulirus ornatus), sand lobster (Panulirus homarus), bamboo lobster (Panulirus versicolor), and batik lobster (Panulirus longipes). Sand lobster, pearl lobster, batik lobster, and bamboo lobster were the most abundant at each station. During sampling, the average value of monthly catches in 2024 decreased compared to 2023. Water quality in this area is suitable for lobster habitat, with DO 8-8.5 ppm, salinity 33-35 ppt, pH 7-7.2, and temperature 27.0- 29.2 °C.
