Abstract

The study aimed to investigate the association between food consumption with hyperglycemia among middle-aged adults in Indonesia. This cross-sectional study utilized secondary data from the 2018 Indonesia Basic Health Survey (IBHS). A total of 8,477 subjects met the inclusion criteria and included in this study. Fasting Blood Glucose (FBG) was analyzed in the laboratory using an enzymatic analysis. The fasting blood glucose was categorized as hyperglycemia (≥126 mg/dl) and normal (<126 mg/dl). A food frequency questionnaire was used to assess the food intake. Multiple logistic regression was used to analyze the association of food consumption and hyperglycemia. Our results found that the prevalence of hyperglycemia in this population was 43%. The mean FBG was 104.68±31.99 mg/dL for male and 110.75±43.92 mg/dl for female subjects. Frequent consumption of sweet desserts (OR=1.265; CI=1.132, 1.413), Sugar-Sweetened Beverages (SSB) (OR=1.433; 95% CI:1.263−1.626), salty foods (OR=1.189; 95% CI=1.079−1.311), fried foods (OR=1.172; 95% CI=1.033−1.331), and instant foods (OR=1.186; 95 % CI=1.088−1.293) were significantly associated with increased odds of hyperglycemia. There was a significant association between food consumption and hyperglycemia among middle-aged adults in Indonesia.

Abstract

The aim of this study was to analyze the relationship between anthropometric profiles and Triglyceide/High-Density Lipoprotein (TG/HDL-C) ratio in adult Islamic boarding school students. A cross-sectional study was conducted on 83 Islamic boarding school students, aged 19 to 23 years, selected using a consecutive sampling design. Anthropometric measurements consisted of Waist Circumference (WC), Waist-to-Hip Ratio (WHR), and Skinfold Thickness (SFT). There were 45.8% students who had high TG/HDL-C ratio, WC (p<0.001; r=0.379) and WHR (p<0,001; r=0.455). The respondents' waist circumference and waist-to-hip ratio were positively associated with TG/HDL-C ratio.

Abstract

Background: HIV/AIDS remains a major public health challenge worldwide, and treatment adherence continues to be a critical factor in achieving effective viral suppression. Knowledge about HIV prevention plays a vital role in shaping health behaviors and promoting adherence to antiretroviral therapy (ART). This study aimed to analyze the association between knowledge of HIV prevention and treatment adherence among people living with HIV/AIDS (PLWHA) using a social epidemiology framework. Methods: A cross-sectional quantitative study was conducted among 101 PLWHA receiving ART in public health centers and clinics. Data were collected through structured questionnaires covering demographic characteristics, knowledge of HIV prevention, and treatment adherence, verified with medical records. Data were analyzed using descriptive statistics and the Chi-square test (α = .05) to assess the relationship between knowledge and adherence levels. Results: The majority of respondents were male (82.2%) and had completed secondary education (66.3%). Most participants demonstrated fair to good levels of HIV prevention knowledge; however, adherence levels varied. The Chi-square test revealed a highly significant association between knowledge and treatment adherence, χ²(4) = 202, p < .001, indicating that higher knowledge was strongly correlated with improved adherence. Conclusion: The findings emphasize that knowledge enhancement significantly improves ART adherence and contributes to the control of HIV/AIDS. Strengthening education programs, peer support, and community engagement are essential strategies to foster sustainable adherence and align national efforts with global HIV prevention targets.

Abstract

Background: Insulin resistance and chronic hyperglycemia in diabetes are linked to the synthesis of the inflammatory biomarker hs-CRP. Goat milk kefir and vitamin D have anti-diabetic and anti-inflammatory properties. Objectives: Aimed to evaluate the impact of goat milk kefir fortified with vitamin D3 on hs-CRP levels of diabetic rats. Methods: Twenty-one male Rattus norvegicus rats were randomly divided into four groups for a 35-day study: Control (C), Diabetes Mellitus (DM), unfortified goat milk kefir treatment (P1), and vitamin D3-enriched goat milk kefir treatment (P2). Diabetes was induced via intraperitoneal injection of streptozotocin (STZ) at 65 mg/kg BW and nicotinamide (NA) at 230 mg/kg BW. Goat milk kefir was administered orally at 2 mL/200 g BW/day, with the fortified version containing 600 IU of vitamin D3 per 100 mL. Fasting blood glucose levels and serum hs-CRP were measured pre- and post-intervention using the GOD-PAP and ELISA methods, respectively. Data were analyzed using bivariate and multivariate methods in GraphPad Prism 8. Results: There was a statistically insignificant decrease in hs-CRP levels in the P2 group (p-value=0.21) and in the P1 group (p-value=0.63), suggesting limited impact on inflammation. However, there was a statistically significant drop in blood glucose levels in the P2 group (∆FBG -65.50±35.44 mg/dL, p-value=0.03) and in the P1 group (∆FBG -81.63±50.07 mg/dL, p-value=0.05). Conclusions: The reduction in hs-CRP levels indicates that vitamin D3-fortified kefir may help modulate low-grade inflammation and shows promise in managing diabetes. Future research should examine dose, duration, and sample size for better efficacy assessment.

Abstract

Metabolic syndrome (MS) is a growing public health problem, characterized by central obesity, high blood sugar levels, increased blood pressure, and lipid profile disorders that can increase the risk of cardiovascular disease. This community service activity was carried out to strengthen the competence of Posyandu cadres in the Tahtul Yaman Community Health Center (Puskesmas) work area in Jambi City in conducting early detection and providing education about MS. The program was implemented through three main stages: module development, module-based training, and direct mentoring in the field. The training module was designed by integrating the Health Belief Model (HBM) approach and andragogy principles, so that the learning process was more participatory and oriented towards the cadres' real-life experiences. A total of 15 cadres from nine Posyandus actively participated in this activity. Evaluation was carried out through pre- and post-tests to assess knowledge gains, and the Direct Observation of Procedural Skills (DOPS) method to measure practical skills. The results showed a significant increase in knowledge scores, with the pass rate increasing from 73.33% to 100% after the training. Cadres were able to implement screening procedures according to standards and explain the examination results well. However, the communication-education aspect still needs strengthening to make health messages more easily accepted by the public. Overall, this program has proven effective in increasing the capacity of Posyandu cadres as the frontline of promotive and preventive health services at the community level.

Abstract

Obesity is a major risk factors for non-communicable diseases, and its prevalence continues to increase in Indonesia. Community Health Centers, as primary healthcare providers, play a crucial role in obesity prevention through the empowerment of local health cadres. This community service aimed to enhance cadres’ knowledge and skills in early obesity detection. The program was implemented through a structured training consisting of material delivery and hands-on anthropometric measurement sessions, followed by field visits to Posyandu to evaluate cadres’ practical skills in performing anthropometric assessments. A total of 15 Posyandu cadres from the working area of Tahtul Yaman Community Health Center participated in this activity. The results showed a significant increase in knowledge, with median scores rising from 90 (range 50–100) in the pre-test to 100 (range 80–100) in the post-test (p = 0.007). The proportion of cadres achieving the passing score also increased from 53.3% to 100% (p = 0.006). Field observations indicated that most cadres were able to perform anthropometric examinations independently and in accordance with standard procedures. These findings suggest that structured training combined with practical field reinforcement may contribute to improving cadres’ competencies, thereby supporting their role in sustainable, community-based obesity prevention efforts. Abstract

ABSTRACTBackground: Stunting among toddlers is a significant public health issue in Indonesia, with a high prevalence in various regions, including Tegal City. One of the efforts to reduce stunting is through nutritional interventions based on animal protein that is easily available and has high nutritional value.Objective: This study aimed to develop catfish sausage fortified with duck eggs as a local nutrition intervention to improve children's nutritional status.Materials and Methods: The research was an experimental study using a completely randomized design with three formulations (S1 had 1 egg, S2 had 3 eggs, and S3 had 5 eggs), each repeated three times. The formulations adhered to SNI 3820:2024 standard requiring minimum 75% meat content. Parameters analyzed included protein, fat, moisture content, pH, texture, and amino acid profile. Statistical analysis using one-way ANOVA was applied at 5% significance level.Results: Sausages with duck egg fortification had protein content of 14.55-15.62% and fat content of 5.27-9.08%. Sample S2 showed the highest protein (15.62%), optimal texture (hardness 8N, chewiness 4N), and stable pH (6.2) meeting SNI standards. Amino acid analysis revealed significant levels of lysine (1.85%), histidine (1.24%), and leucine (2.95%).Discussion: Duck egg fortification significantly improved nutritional quality. A 50g serving provides 60-70% of daily protein needs for children aged 1-3 years. Essential amino acids play crucial roles: lysine supports bone growth and calcium absorption, histidine aids tissue repair and immune function, while leucine activates mTOR pathway for muscle protein synthesis. Sample S2 demonstrated the most balanced formulation with optimal protein enrichment while maintaining desirable texture and microbiological stability during cold storage.Conclusion: Catfish sausage fortified with duck eggs has potential as an effective local wisdom-based nutritional intervention for stunting reduction in Indonesia.Keywords: Sausage; catfish; duck egg; protein; stunting

Abstract

Chronic malnutrition at crucial stages of a child's development can result in stunting, a serious public health concern. The goal of this study was to create high-protein dry noodles. The study used several methods, such as the oven method for measuring water content, the dry ashing method for ash, the Soxhlet method for fat, the Kjeldahl method for protein, the difference method for carbohydrates, the enzymatic method for fiber, the Atwater factor for energy content, the Na₂EDTA complexometric titration for calcium, the atomic absorption spectroscopy (AAS) for iron, the in vitro method for measuring protein digestibility, and the DPPH method for measuring antioxidants. Three formulations, namely F1 (20:20:60), F2 (30:40:30), and F3 (40:30:30), were developed to represent different ratios of sago flour, wheat flour, and fish meal. F1 exhibited the highest nutritional values, particularly in protein (24.60 g), fat (29.19 g), calcium (479.57 mg), iron (26.11 mg), and antioxidant activity (35.79%). The best formulation was selected using the Index of Effectiveness method, combining rankings of nutrient content and sensory acceptability. Due to its higher amount of wheat flour, F2 had the largest calorie (494.04 kcal) and carbohydrate content (33.24 g). Because there was more sago flour in F3, it had the most fiber (14.98 g). These results demonstrate the potential for creating novel, regionally sourced foods, such as Sagurimi made from Nile tilapia, to lessen childhood stunting. In order to evaluate acceptability and efficacy, future research should concentrate on clinical trials and sensory evaluation.

Abstract

Childhood diarrhea remains a major public health concern in flood-prone urban settlements, where inadequate sanitation and environmental contamination are common. This study aimed to develop and validate a community-based sanitation risk model to identify key environmental and behavioral factors associated with childhood diarrhea. An analytical cross-sectional design was conducted among 240 households with children under five years of age. Data were collected through structured interviews, household sanitation observations, and environmental assessments, covering variables such as water source, latrine condition, waste disposal, drainage, handwashing practices, and flood exposure. Bivariate analysis was used to assess associations between sanitation variables and diarrhea, followed by multivariable logistic regression to determine independent predictors and construct the risk model. The results showed that The two-week prevalence of childhood diarrhea was 27.5%. Multivariable analysis identified contaminated water sources (AOR = 3.42; 95% CI: 1.95–5.99), clogged or non-functional drainage (AOR = 3.85; 95% CI: 2.12–6.97), improper solid waste disposal (AOR = 2.67; 95% CI: 1.56–4.61), unimproved latrines (AOR = 2.11; 95% CI: 1.25–3.58), and inadequate handwashing behavior (AOR = 2.48; 95% CI: 1.40–4.38) as significant predictors of diarrhea. The model demonstrated good discrimination in identifying high-risk households. In conclusion, the The developed community-based sanitation risk model provides a simple, evidence-based tool for identifying households at high risk of childhood diarrhea in flood-prone urban settlements. This model can support targeted sanitation interventions and strengthen community-level disease prevention programs.

Abstract

The health of primary school-aged children is a vital component of national development and is significantly influenced by adequate protein intake. This study aimed to create a nutritious cheese stick snack by replacing wheat flour with fish protein hydrolysate (FPH) flour. This experimental study used a completely randomized design with three formulations: F1 (59% wheat flour: 41% FPH flour), F2 (54% wheat flour: 46% FPH flour), and F3 (48% wheat flour: 52% FPH flour). The ingredients include wheat flour, FPH flour, soy protein isolate, margarine, cheddar cheese, and water. Nutritional, chemical, and amino acid profiles were analyzed using standard methods (Kjeldahl, Soxhlet, and HPLC), and statistical analysis was conducted using One-Way ANOVA followed by post hoc tests. The results indicated that formulation F3 had the highest levels of amino acids, including glutamate (19,375.6 mg/kg), aspartate (6,663.8 mg/kg), and leucine (5,992.2 mg/kg), all of which were statistically significant (p<0.05). However, the total protein content was not significantly different (p=0.399). Additionally, F3 had the lowest fat content (26.3%) and highest moisture level (7.8%), which may have affected the texture of the product. These findings suggest that F3 is the most nutritionally advantageous formulation and could serve as a healthy snack option for school-aged children. Future studies are recommended to optimize the product texture and structure through adjustments in formulation and processing methods, as well as to assess consumer acceptability for potential commercialization.
