Abstract

Many teenage girls in Indonesia suffer from anemia, prompting exploration into alternative dietary interventions. Moringa leaves, known for their high iron content, offer a potential solution. This study aimed to formulate tofu meatballs enriched with moringa flour, evaluating their iron content and organoleptic qualities as a feasible iron supplement for adolescent girls. Three tofu meatball formulations were tested: F1B with no added moringa flour, F2B with 5 g, and F3B with 10 g. Iron content was assessed using ICP-OES, and organoleptic tests were conducted. Statistical analysis included the Kruskal-Walli’s test, with Mann-Whitney test for significant differences. Results revealed F2B had the highest iron content at 1.34 mg/100 g, followed by F1B at 1.06 mg/100 g, and F3B at 1.23 mg/100 g. However, iron levels per serving fell short of the 10% daily requirement. While F1B was preferred for taste, aroma, color, and texture, F2B and F3B were still acceptable. Future improvements could involve using boiled moringa leaves and seasoning to enhance organoleptic qualities.

Abstract

Pregnancy is a critical period in which adequate nutrition is essential for both maternal and fetal health. This study aimed to evaluate the effect of natural product-enriched noodles, combining snakehead fish (Channa striata), Moringa oleifera leaves and okra (Abelmoschus esculentus), on the hemoglobin, hematocrit, and blood protein levels of pregnant women with chronic energy deficiency (CED). Stunting remains a significant public health problem in Indonesia, with a prevalence of 28.9% in Surabaya in 2021. Protein deficiency and anemia during pregnancy increase the risk of intrauterine growth restriction, low birth weight, and stunting. It was hypothesized that the combined nutritional properties of these ingredients — high protein and albumin from snakehead fish, iron and antioxidants from Moringa, and bioactive compounds from okra would synergistically improve maternal nutritional status. A Pre-Experimental One Group Pretest-Posttest Design was employed at Sidosermo Community Health Center, Surabaya, from June to September 2025. All 15 eligible pregnant women with CED at the study site were enrolled using total sampling (n=15); the small sample size and absence of a control group represent key study limitations affecting generalizability and causal inference. Participants consumed protein-enriched noodles made from modified cassava flour, snakehead fish, Moringa leaves, and okra three times per week for one month, a frequency and dose based on prior food-based supplementation programs in pregnant women. The noodle product was confirmed to be high in protein (14.22%) and microbiologically safe. Post-intervention, the number of anemia cases decreased from 11 to 4 participants, hematocrit normalized in 4 of 11 previously low cases, and blood protein levels normalized in 10 of 15 participants. As no inferential statistical analysis was performed, these findings should be interpreted with caution. These results suggest that locally sourced nutritional interventions have the potential to improve maternal nutritional status and contribute to reducing stunting prevalence in Indonesia.

Abstract

ABSTRACT Bulak Village in Surabaya has a population of approximately 22,330 people, with a relatively high proportion of elderly residents. The elderly are a vulnerable group for hypertension and anemia. According to the 2023 Indonesian Health Survey, the national prevalence of hypertension reached 30.8%, and East Java is one of the provinces with the highest rate (36%). To address this issue, a team of lecturers and staff from the Surabaya Ministry of Health Polytechnic conducted community service at the elderly health post in the Bulak urban village area of Surabaya. Activities include socialization, education, and blood pressure, hemoglobin, and hematocrit checks, targeting 49 elderly individuals. The results show that 36.7% of the elderly have stage 1 hypertension and 8.2% have stage 2 hypertension. A total of 51% of respondents have anemia (low Hb), and 67.3% have below-normal hematocrit levels. This condition reflects weak early detection and a lack of awareness regarding the importance of routine health checkups for the elderly. Factors contributing to low knowledge among the elderly include limited examination tools and costs, as well as the suboptimal role of community health posts in disease prevention and control. Therefore, continuous education, strengthening elderly health posts, and the involvement of families and communities are needed to support healthy lifestyles and regular treatment for the elderly.
