Abstract

Background: Broiler chicken meat has high nutritional content that makes it susceptible to damage due to the growth and development of microorganisms, which thrive in its nutrient-rich environment. Purpose: The objective of this study aims at determining the impact of refrigerated storage duration prior to frozen storage on the physical quality of broiler chicken breast meat (pH, water binding capacity, and cooking loss). Methods: This study was conducted using a Completely Randomized Design (CRD) with 4 (four) treatments and 5 (five) replications. The research treatment was the cooling of chicken breast meat before freezing. The cooling periods were as follows: frozen without direct cooling (P0); 2 hours cooling (P1); 4 hours cooling (P2); 6 hours cooling (P3). The physical quality measurements included pH, water binding capacity, and cooking loss. The data obtained were analyzed by Analysis of Variance (ANOVA) and the results that had a significant effect were further tested by Duncan's Multiple Range Test (DMRT).  Results: The refrigeration treatment had a significant impact on the pH values, water binding capacity, and cooking loss values (P<0.05). The pH values, water binding capacity, and cooking loss values were the highest in P0 (without cooling), which underwent no cooling prior to freezing. Conclusion: The duration of the refrigeration period prior to freezing had significant impacts such as a decrease in pH values, an increase in water binding capacity, and a decrease in cooking loss values of the broiler chicken breast meat. The application of a six-hour refrigeration period prior to frozen storage was observed to produce pH values, water binding capacity, and cooking loss values that remained within the range of good physical quality of broiler chicken breast meat.

Abstract

This study aims to investigate the influence of service quality on customer satisfaction at UMKM PODOMORO Chicken in Medan City. The research method employed was in-depth interviews with regular customers of the restaurant. The results indicate that service quality encompassing factors such as service speed, staff friendliness, food quality, and cleanliness of the environment significantly impacts customer satisfaction. These findings align with consumer behavior theories that highlight the role of customer experience in shaping brand preferences and loyalty. Practically, the study suggests that UMKM PODOMORO Chicken management should focus on enhancing their service quality to improve customer satisfaction and foster strong customer loyalty. Future research could examine additional factors influencing customer satisfaction in the restaurant industry, and stakeholders in the industry are encouraged to adopt best practices to elevate service quality.

Abstract

The purpose of this study is to describe and describe comprehensively the influence of organizational culture and work environment on the work effectiveness of public high school teachers in Central Jakarta. This research was conducted at a public high school in Central Jakarta. This research method uses quantitative research survey methods, as for analyzing the data using path analysis. The path analysis technique in this study is to determine the causal relationship between variables or the direct influence of exogenous variables on endogenous variables. The endogenous variables in this study are work effectiveness, while the exogenous variables in this study are organizational culture and work environment. Data was collected through filling out a questionnaire. Based on the calculation results obtained path analysis: 1) organizational culture has a direct effect on the effectiveness of teachers' work with a path coefficient value of 0.728 and tcount of 15.510, meaning that organizational culture has a positive direct influence on the effectiveness of teachers' work, which can be accepted increasing. A good organizational culture increases the effectiveness of teachers' work. 2) the direct effect of the work environment on the effectiveness of the teacher's work, the path coefficient is 0.699 and tcount is 14,277. That is, the work environment has a direct effect on the effectiveness of the teacher's work. 3) Organizational culture has a direct positive effect on the work environment with a path coefficient value of 0.671 and tcount 13,218.

Abstract

The recognition of processing chicken nuggets by the group of farmers in Sidelego village is an alternative to increase added value from the use of meat from the old chicken. This community service aims to increase the knowledge and skills of the farmers in Sidelego village utilizing chicken meat as a chicken nugget product. The community service activity involved 20 participants from a farmer's group in Sidelego village. The procedure for this activity is designed in 4 stages, including the preparation, training, demonstration, and evaluation of the activity. The farmers' first evaluation showed that most had consumed chicken nuggets; however, they had never tried to make chicken nugget products. The farmers' response to this activity was perfect, and they actively participated in the delivery of training materials and the practice of making chicken nuggets. The evaluation at the end of the activity, most of the participants (80-90%) were able to understand the materials of the training, and they could make chicken nugget products with a high level of acquisition. About 70% of participants with a moderate acquisition level could design modified nugget products with various kinds or variants, such as nuggets with additional ingredients, such as various types of vegetables or tempeh. Based on the preference test, most of the participants gave an assessment of chicken nugget products in the range of preference levels from the moderate to like a category on the color (80.00%), aroma (80%), taste (70.00%) and texture (80%). It was concluded that most participants (80-90%) understood the process of producing chicken nuggets. The chicken nuggets product can be received very well with the preference level in all categories (color, aroma, taste, and texture).

Abstract

Background: Ferritin is an important mediator of immunomodulatory dysregulation and pro-inflammatory effects, which contribute to cytokine storms that could lead to sepsis in a critically ill patients with COVID-19. The role of ferritin as a biomarker of sepsis in those patients is yet fully understood. The aim of this study is to investigate an association between ferritin levels and sepsis in patients with COVID-19.Method: This study was a retrospective, cross-sectional study of 474 COVID-19 hospitalized patients at Dr. M. Djamil Hospital, Padang.Result: Most of the COVID-19 patients in this study were between the ages of 18 and 49 (38,61%), female (55.91%), with moderate clinical illness (40.50%), and had one comorbidity (41,14%) with obesity as the most common comorbidity (37.97%). More than half of patients (54,22%) had ferritin levels of ≥500 ng/mL (median 1,201 ng/mL with a range of 503–12,010 ng/mL). The incidence of sepsis was significantly higher in the group whose ferritin level was ≥ 500 ng/ml compared to those with less ferritin level (P<0.001; OR=3.33; 5.99% vs 17.91%; CI 95%=1.74-6.36).Conclusion: There is a statistically significant association between the ferritin level and sepsis in patiens with COVID-19 at DR M Djamil Hospital.

Abstract

Indonesia, there are relatively few users of contraceptive implant methods compared to other types of contraception, although implants have a higher level of effectiveness than other contraceptives. The government has made various efforts but to no avail. The purpose of the study was to determine the factors that influence the low use of contraceptive implants at the Minasa Upa Health Center in Makassar City. The research method is an analytic survey with a "cross-sectional study" method and sampling using a simple random sampling technique of 67 people. The study was conducted in MarchMay 2021 using a questionnaire. Statistical analysis was performed using the Chisquare test = 0.05. The results showed that the phi value of perceived significance was p=0.001(p>0.05), socioeconomic p=0.756 (p>0.05), and the anxiety factor was p=0.369 (p>0.05). So it is known that perception has a significant relationship with the low use of contraceptive implants methods, while socioeconomic and anxiety factors do not have a significant relation. Therefore, it is recommended for health workers to conduct regular counseling about contraception, especially contraceptive implant methods, to increase mothers' knowledge so that negative perceptions of contraceptive implant methods can be reduced.

Abstract

This research aims to analyze the quality of freshwater cultivation and analyze the pollution index for freshwater cultivation in Desa Kota Karang, Kec. Kumpeh Ulu, Kabupaten Muaro Jambi. This research uses quantitative analysis techniques. The results of analysis and water quality tests concluded that the cultivation ponds in Desa Kota Karang were in the lightly polluted category. Based on research conducted on 10 ponds, there were 3 ponds that met quality standards, the rest were in the lightly polluted category. This is based on tests and analysis of physical, chemical and biological parameters. Meanwhile, the results of the pollution index analysis obtained IP values ranging from 0.88 to 2.91. According to PP Number 22 of 2021, if 1 < IP ≤ 5 then the cultivation pond in Desa Kota Karang is in the lightly polluted category. Based on the results of the air quality analysis and pollution index, the air quality in the cultivation ponds in Kota Karang Village is still suitable for use for fish cultivation. Therefore, it is necessary to carry out further monitoring and recovery efforts for BOD and COD parameters that have exceeded class III quality standards of PP Number 22 of 2021 concerning Freshwater Fisheries Cultivation, so that ponds in Desa Kota Karang remain safe for carrying out cultivation activities.

Abstract

Background: Chronic obstructive pulmonary disease (COPD) exacerbations contribute significantly to morbidity, mortality, and healthcare costs. While long-term oxygen therapy (LTOT) is a standard treatment for severe resting hypoxemia in COPD, its impact on exacerbations remains unclear. This meta-analysis aimed to evaluate the effect of LTOT on the frequency and severity of COPD exacerbations. Methods: A systematic search of PubMed, Embase, and Cochrane Library was conducted (January 2018 to December 2023) for randomized controlled trials (RCTs) comparing LTOT to no LTOT in COPD patients. The primary outcome was the rate of moderate to severe COPD exacerbations. Secondary outcomes included hospitalization due to exacerbations and all-cause mortality. The risk of bias was assessed using the Cochrane Risk of Bias tool. A random-effects model was used to pool data, and heterogeneity was assessed using the I² statistic. Results: Nine RCTs with 2,949 participants were included. LTOT was associated with a statistically significant reduction in the rate of moderate to severe exacerbations (Rate Ratio [RR] 0.72; 95% Confidence Interval [CI] 0.67 to 0.78; p < 0.000001), representing an estimated 28% reduction. LTOT also significantly reduced hospitalization for exacerbations (RR 0.69; 95% CI 0.61 to 0.79; p < 0.000001) and all-cause mortality (RR 0.71; 95% CI 0.57 to 0.89; p = 0.003). Conclusion: LTOT significantly reduces the frequency of moderate to severe COPD exacerbations, related hospitalizations, and all-cause mortality. These findings support LTOT use in eligible COPD patients to improve clinical outcomes.

Abstract

This study aims to evaluate the readiness of online courses offered by the ICE Institute based on seven quality assurance dimensions developed through ICE-I QAT. These seven dimensions include course information, instructor information, technology and learning tools, learning materials, interaction, assessment, and evaluation. The method used was descriptive quantitative by using instrument quality assurance criteria was developed by ICE-I. Sample of this research were 77 courses and were curated by the partner universities collaborating with the ICE Institute in 2024. The results show variability in the readiness levels of the courses across each dimension. For example, in the course information dimension, only 45 out of 77 courses met the minimum standards, while in the assessment dimension, only 23 courses met the standards. These findings indicate that many courses still need quality improvement, particularly in learning materials, interaction, and assessment. The discussion highlights the importance of providing clear information, effective use of learning technology, and comprehensive instructional materials to enhance student engagement and course completion. The study concludes that improving the quality of online courses is essential to support effective and meaningful distance learning at the ICE Institute.

Abstract

Background: Broiler chicken meat contains high nutritional content, so it is easily damaged due to contamination by microorganisms if it is not handled and stored correctly. Purpose: The aim of this research was to determine the effect of storage at cold temperatures (±4 0C) on the microbiological quality of broiler chicken thigh meat soaked in fermented cabbage (Brassica oleracea) liquid. Methods: The experimental design used was a Completely Randomized Design (CRD) with five treatments and four replications. The treatment was cold temperature storage (±4 0C) on broiler chicken thigh meat that had been soaked in fermentation liquid, namely: without cold temperature storage (P0), storage for 2 days (P1), storage for 4 days (P2), storage for 6 days (P3), and storage for 8 days (P4). The data obtained were analyzed using analysis of variance (ANOVA), and if the results were significantly different, they were further analyzed using Duncan's Multiple Range Test (DMRT). Results: The results of the analysis of variance showed that storage at cold temperatures (±4 0C) of broiler chicken thigh meat that had been soaked in fermented cabbage (Brassica oleracea) liquid had no significant effect (P>0.05) on total microbes, total BAL, and total Escherichia coli. Conclusion: Storage at cold temperatures (±4 0C) of broiler chicken thigh meat soaked in cabbage fermentation liquid for up to 8 days can maintain Total Microbes, Total Lactic Acid Bacteria (LAB), and total Escherichia coli. Total Microbes meet the Indonesian National Standard (INS), but the total E. coli has exceeded the Indonesian National Standard (INS) limit.
