Abstract

Chronic kidney disease is associated with reduced quality of life, increased healthcare spending, and premature death. This analysis aims to obtain an overview of the relationship between food consumption habits and the prevalence of chronic kidney disease in Indonesia. This study analyzes aggregate data at the provincial level related to chronic kidney failure with selected variables. All provinces were taken as samples. In addition to the prevalence of chronic kidney disease, 4 other variables analyzed as independent variables were the proportion of habitual consumption of fatty/cholesterol/fried foods ≥ 1 time per day, the proportion of habitual consumption of meat/chicken/fish processed with preservatives ≥ 1 time per day, the proportion the habit of consuming soft drinks or carbonated drinks ≥ 1 time per day, the proportion of habitual consumption of energy drinks ≥ 1 time per day. Data were analyzed using scatter plots. The province with the highest prevalence of chronic kidney failure is North Kalimantan Province. The results of the bivariate analysis with scatter plots showed that the habit of consuming fatty/cholesterol/fried foods ≥ 1 time per day, consumption of processed meat/chicken/fish with preservatives ≥ 1 time per day, and consumption of soft drinks or carbonated drinks ≥ 1 time has a positive relation for the prevalence of chronic kidney failure, while the consumption of energy drinks is negatively related to the prevalence of chronic kidney failure in Indonesia. The high prevalence of chronic kidney disease in Indonesia illustrates that public awareness still needs to be increased regarding food consumption habits in the family environment.

Abstract

The search for sustainable feed alternatives has led to exploring unconventional sources, including food waste, amidst the growing demand for halal gelatin, which has created a significant need for fish skin by-products. Therefore, this study aimed to authenticate the halal status of catfish skin gelatin by verifying feed origin and determining the contents of pig contaminants. Halal standard was verified using a specific DNA analysis of pig components, conducted at each stage, including feed containing pig, fish skin, and catfish gelatin. Gelatin in catfish skin was predominantly composed of amino acids glycine and proline, and fish enlargement stage which led to a skin yield of 5.36 ± 0.75%. Furthermore, the yields of gelatin were 8.67%, 9.94%, and 9.19%, with gel strengths of 133.4 ± 1.2, 129.9 ± 1.4, and 121.9 ± 2.8 bloom, respectively, for the different quarantine periods. The characterization of gelatin using FTIR showed the presence of functional groups, such as amide A, I, II, and III. Real-time PCR detected the presence of pig DNA in feed but not in catfish skin or gelatin. In conclusion, a quarantine period of 0 days for catfish fed pig-containing feed was sufficient to cleanse catfish skin of pig contaminants, with no indication of pig DNA being found.

Abstract

Ulva lactuca, a green seaweed that is widely distributed in Indonesia, is abundant but still underutilized. Even though this seaweed contains a sulfated polysaccharide called ulvan as much as 30-40% of its dry biomass and secondary metabolite. These components can be applied in various fields including as a reducing agent for silver ions in the bottom up synthesis of silver nanoparticles. The utilization of seaweed extract combined with ultrasonication is expected to enhance the efficacy of environmentally friendly silver nanoparticle synthesis. The objective of this study was to obtain he crude extract of U. lactuca andto investigatethe impact of extract concentration and ultrasonication duration on the biosynthesis of silver nanoparticles. The study consists of two main phases 1) bio-synthesis employing different concentrations of the U. lactuca crude extract, and 2) bio-synthesis using selected extract concentrations combined with ultrasonic assistance for varying durations. The results of this study indicate that the crude extract of U. lactuca is a crude ulvan polysaccharide with a yield value and sulfate content of 26.9 ± 0.90% and 20.04 ± 1.02%, respectively. A reddish-brown color indicates the formation of silver nanoparticles. Based on the absorbance intensity, a 10% (v/v) concentration of ulvan crude extract produced the highest absorbance intensity (0.038 a.u). In addition, the ultrasonication duration of 60 minutes has succeeded in producing the smallest particle size (267.40 ± 6.52 nm) with a homogeneous particle distribution (PdI 0.265 ± 0.05). Scanning electron microscope (SEM) images depicted oval-shaped silver nanoparticles, while the Fourier-transform infrared (FTIR) spectrum indicated the degradation of sulfate and polysulfide functional groups in the crude extract during the biosynthesis process. These findings highlight the significant role of sulfate/sulfide groups present in the U. lactuca crude extract in the biosynthesis of silver nanoparticles.

Abstract

Empty oil palm bunches (OPEFB) contain important nutrients such as nitrogen (N), phosphorus (P), potassium (K), and micronutrients such as boron (B), copper (Cu), zinc (Zn), iron (Fe), and manganese (Mn). These nutrients can be released into the soil and are available for plant growth with empty oil palm bunches. Composting is a natural recycling method and returns organic matter to the biological cycle. OPEFB as an organic fertilizer has great potential to help increase soil fertility and productivity. Utilization of organic waste in the form of liquid compost can be done using a composter. Processing waste into compost can have quite high economic value. This community service activity received a positive response from the Kampung Tengah village community because it increased knowledge related to the processing of OPEFB waste and also organic waste so that it becomes useful and economically valuable compost.
