Abstract

Jenis unggas ditengarai memiliki serat otot yang berbeda karena adanya perbedaan pola pemeliharaan, umur potong, dan jenis pakan sehingga jika diolah menjadi abon diduga memberikan hasil produk yang berbeda kualitasnya. Penelitian ini bertujuan untuk menganalisis bagaimana pengaruh jenis daging unggas terhadap kualitas organoleptik abon. Rancangan penelitian yang digunakan dalam penelitian ini adalah rancanngan acak lengkap (RAL) yang terdiri dari 3 perlakuan dan 5 ulangan pada uji kualitas fisik dan 25 panelis untuk uji organoleptik. Perlakuan yang digunakan adalah P1: daging ayam kampung, P2: daging entok, dan P3: daging itik alabio. Variabel yang diukur dalam penelitian ini adalah kualitas organoleptik meliputi warna, aroma, tekstur, rasa, kerenyahan, dan penerimaan umum. Data yang diperoleh dianalisis ragam. Selanjutnya apabila perlakuan menunjukkan pengaruh nyata, maka dilanjutkan dengan uji beda nyata terkecil (BNT). Hasil penelitian menunjukkan adanya pengaruh yang sangat nyata (P<0,01) dari jenis unggas yang berbeda terhadap tekstur abon dengan nilai 2,56±0,82 (P1), 2,84±0,69 (P2) dan 2,28±0,68 (P3), namun tidak berpengaruh nyata dengan peubah warna, aroma, rasa, kerenyahan, dan penerimaan umum.  Disimpulkan bahwa abon dari daging jenis unggas ayam kampung lebih baik dibandingkan dengan yang berasal entok dan itik alabio.

Abstract

Sapi Bali merupakan ternak lokal Indonesia yang unggul dalam adaptasi lingkungan serta berperan penting dalam penyediaan protein hewani dan peningkatan ekonomi masyarakat. Penelitian ini bertujuan untuk mengkaji karakteristik peternak dan produksi karkas sapi Bali di Kabupaten Konawe, Sulawesi Tenggara. Metode yang digunakan adalah survei dengan teknik purposive sampling, dengan mengambil 40% wilayah yang memiliki populasi sapi lokal terbesar, yaitu Kecamatan Uepay, Tonggauna, Abuki, dan Wonggeduku. Dari masing-masing wilayah, dipilih 40% desa dengan populasi sapi tertinggi, dengan syarat responden memiliki minimal satu pasang sapi potong.Parameter yang diamati meliputi karakteristik peternak (lama beternak, umur ternak, asal-usul ternak, dan data penjualan) serta performa karkas (bobot karkas, persentase karkas, dan bobot non karkas). Hasil penelitian menunjukkan bahwa rata-rata pengalaman beternak berkisar 3–5 tahun, kepemilikan awal ternak umumnya 2 ekor, dan mayoritas ternak berumur dara. Penjualan ternak berkisar 2–4 ekor per peternak. Total populasi sapi potong dari empat kecamatan mencapai 14.750 ekor, dengan populasi tertinggi di Kecamatan Tonggauna sebanyak 4.872 ekor. Hasil analisis karkas menunjukkan bahwa sapi jantan memiliki bobot potong, bobot tulang, dan bobot karkas yang lebih tinggi dibanding betina. Namun, sapi betina menunjukkan bobot total daging dan rasio daging terhadap tulang yang lebih baik. Secara keseluruhan, produktivitas sapi Bali di Kabupaten Konawe tergolong baik, didukung oleh karakteristik peternak dan populasi ternak yang cukup besar, meskipun terdapat perbedaan performa karkas antara jantan dan betina.

Abstract

This study aims to determine and evaluate the effect of basil leaf extract (Ocimum basilicum L) on the physicochemical properties of dendeng made from rejected laying hens meat. Rejected laying hen meat was treated with basil leaves at various concentrations, namely 0%, 10%, 15%, and 20%. The data were analyzed using analysis of variance based on a completely randomized design with 4 treatments and 4 replicates. The variables observed in the physicochemical test included tensile strength, yield, pH, and moisture content. The results showed that the addition of basil leaves to  dendeng had a significant effect (p<0.05) on the physicochemical properties of dendeng. It was concluded that basil leaves could reduce tensile strength, yield, and moisture content, and affect pH

Abstract

This study aims to determine the pattern of growth and development of non carcass organs in Bali cattle males and females. And this research is expected to provide information to the public and farmers about biological phenomena organ growth and development of non carcass Bali cattle males and females, as well as basic data in making estimates, the production of non carcass organs as well as information for research selanjutnuya. Samples of this research data is withheld Bali cattle (slaughter) in Slaughterhouse Kendari. Observations were carried out on cattle by 28 head with 2-3 years of age and body weight between 90-300 kg. The method used in this research is Huxley allometric equation Y = axb transformed into logarithms log equation is Y = log a + b log x and the real difference test with a test -student, the observed variables is slaughter weight, non carcass weight and the weight of the non carcass parts of Bali cattle male and female as the head, front legs, hind legs, skin, lungs, liver, intestines and stomach. The results showed that the coefficient of growth of non carcass organs (offal) Bali cattle male and female is as follows (b = 0.25 and 0.40). The coefficient of non carcass organ growth clearly different one (p<0.05), which means non carcass weights have time to cook early development when compared to the overall body growth. While the pattern of growth and development of non-organ parts of Bali cattle carcass relative male and female alike, with the growth coefficient b<1. The conclusion of this study is the growth of non carcass organs and parts non organ Bali cattle carcass of males and females have a pattern of rapid growth/early ripe with weight. It is advisable to do further research with a sample of cattle that more and consider cutting in series (serial slaughter) at certain ages

Abstract

This study was aimed to determine the growth and development of Broiler chicken carcass and components at different sex and age . The method used in this study is the Huxley Y = a x b allometric equation which is transformed into a logarithm equation Log Y = Log a + b Log X. This research was conducted in the Cage of the Animal Production Department of the Faculty of Agriculture, Halu Oleo University. The parameters observed in this study were the carcass and carcass parts. Based on the results of the study showed that the growth coefficient of male and female broiler carcasses were not significantly different (P>0.05) which meant that they had a time of early development when compared to the growth of parts of the body as a whole. The growth and development patterns of the carcasses of both male and female broiler chickens at the age of 0 - 5 weeks is relatively the same.
