Abstract

The research aims to observe whey edible film coating clove oil antimicrobial compounds on the chemical and microbiological characteristics of gouda cheese. The chemical and microbiological characteristics of Gouda cheese covered with whey edible film were investigated using an experimental method. The research was conducted in a completely randomized design with four treatments. The treatment used different concentrations of clove essential oil (0 %; 5 %; 10 % and 15 %). The value of water content, water activity, color (L*,b*), and inhibition against pathogenic microbes gave a significant value (P0.01) with the addition of clove essential oil concentration. The chemical of gouda cheese coated with whey edible film clove essential oil antimicrobial agent showed that water content was at 41.57 - 43.38 %, the water activity was at 0.915 - 0.930, the color (L* was at 59.07-61.50; a* was at 10.57-11.46; b* was at 23.51 - 25.80) and the treatment starting from a concentration of 5 % clove essential oil resulted in high inhibition of pathogenic microbial, molds, and yeasts.

Abstract

The research aims to observe the effect of konjac glucomannan and different types of plasticizers on the microstructure of whey film. The microstructure of whey film was investigated using an experimental method. The research was conducted in descriptive methods with two treatments.The treatment used konjac glucomannan concentration (P4= 2.5 %; P7= 3 %) and different types of plasticizers (C1= glycerol 30 %; polyethylene glycol 30 %). The results showed that the combination of whey and konjac glucomannan had an effect on the microstructure of the film. The addition of konjac glucomannan concentration, 30 % glycerol, and 30 % PEG plasticizers gave microstructural characteristics with good whey film surface. The microstructure of this film was determined during the heating, drying process and the contribution of the gel from konjac glucomannan to the whey film structure. A more homogeneous edible film microstructure was obtained using a 2.5 % concentration of KGM with the use of 30 % glycerol plasticizer where the distribution of konjac glucomannan was mixed into the whey protein matrix evenly (homogeneous).

Abstract

Edible film has considerable potential as a food coating material for enhancing freshness, safety, and storage of different food products. Its advantages make it a suitable replacement for synthetic plastic packaging and a possible alternative for biodegradable materials. The research aims to observe the effect of acidic and alkaline pH on the mechanical properties of the whey-konjac film. The mechanical properties of the whey-konjac film were investigated using an experimental method. The research was conducted in a acompletely randomized design with three treatments, The treatment used different pH (P1: Control; P2: acidic condition/pH4 and P3: alkaline condition/pH 10). The values of thickness and water vapor transmission rate did not give a significant value (P0,05), value of elongation and tensile strength gave a significant value (P0,05). The mechanical properties of whey-konjac film showed that thickness was at 0,0343-0,0357 mm; the elongation was at 47,88-62,68%; the tensile strength was at 6,86-11,16 N; the water vapor transmission rate was at 6,99-7,47 g/mm-2.day-1. Films in acidic conditions can improve an excellent  cross-sectional structure of the film (flat surface and homogeneous), and films in alkaline conditions can improve thickness, elongation, and reasonable water vapor transmission rates.
