Abstract

Era globalisasi memberikan dampak yang sangat besar dalam perkembangan di segala aspek kehidupan dan mengakibatkan perubahan gaya hidup dan kebiasaan makan masyarakat yang cenderung kurang sehat. Kebiasaan makan seseorang dipengaruhi oleh pengetahuan gizi dan sikap. Penelitian ini bertujuan menganalisis hubungan pengetahuan gizi, sikap dan konsumsi fast food, serta asupan serat dengan status gizi siswa SMA Kornita. Desain penelitian ini adalah cross sectional study yang melibatkan 62 subjek yang dipilih dengan metode insidental sampling. Pengumpulan data dilakukan dengan instrument kuesioner google form, wawancara via telepon, dan pengukuran antropometri dilakukan secara langsung. Hasil penelitian menunjukkan bahwa 71,1% subjek memiliki pengetahuan gizi baik dan 72,6% subjek memiliki sikap netral terhadap konsumsi fast food. Tidak terdapat hubungan yang signifikan antara variabel pengetahuan gizi dengan frekuensi konsumsi fast food secara keseluruhan, tradisional, maupun modern. Hasil analisis uji korelasi terdapat hubungan yang tidak signifikan (p>0,05) antara sikap terhadap fast food dengan frekuensi konsumsi fast food secara keseluruhan, tradisional, maupun modern. Terdapat hubungan yang signifikan positif antara konsumsi fast food secara keseluruhan (p=0,050; r=0,250) dan modern (p=0,025; r=0,285) dengan status gizi. Tidak terdapat hubungan yang signifikan antara asupan serat dengan status gizi (p=0,354; r=-0,0120).

Abstract

Pertumbuhan dan perkembangan balita sangat dipengaruhi oleh kualitas gizi yang diberikan. Indikator yang dapat digunakan untuk mengetahui tumbuh kembang anak adalah status gizi. Tujuan dari penelitian ini adalah untuk menganalisis hubungan budaya pantangan makan dan pola asuh makan dengan keragaman pangan dan status gizi balita di Suku Dayak Provinsi Kalimantan Timur. Desain penelitian yang digunakan adalah cross sectional study. Penelitian dilaksanakan pada bulan Desember 2023 pada 100 balita bersuku Dayak. Penelitian telah lolos kaji etik dengan nomor 1098/IT3.KEPMSM-IPB/SK/2023. Pengumpulan data dilakukan dengan tiga metode yaitu wawancara, pengisian kuesioner, dan pengukuran antropometri secara langsung. Penelitian menunjukkan sebagian besar subjek tidak melakukan budaya pantangan makan (80%). Hampir seluruh subjek memiliki pola asuh makan yang tepat (97%). Keragaman pangan subjek sebagian besar terkategori sedang (50%). Status gizi subjek sebagian besar normal, tetapi masih terdapat balita dengan status gizi underweight (18%), stunting (24%), dan wasting (17%). Uji korelasi menunjukkan adanya hubungan yang signifikan antara pola asuh makan dengan keragaman pangan (p=0,006). Selain itu, didapatkan hubungan yang signifikan antara keragaman pangan dengan status gizi balita TB/U (p=0,020). Tetapi, tidak ditemukan hubungan signifikan antara budaya pantangan makan dan pola asuh makan dengan keragaman pangan dan status gizi pada indikator lain yang tidak disebutkan.

Abstract

This article aims to analyze national policies on food and nutrition in the family food fulfillment practices in Aceh. Various programs to address food and nutrition problems have been made but nutrition problems have not been successfully resolved. The results of the 2018 Basic Health Research (Riset Kesehatan Dasar, Riskesdas) showed that the prevalence of stunting for baby under two years old in Aceh is the highest in Indonesia. This article was based on Foucauldian theory and a qualitative approach, through interviews with 40 families having children under five years old to recall the type of food consumed by all family members for 3 x 24 hours The results show that there is a gap between the practice of fulfilling family food in Aceh and national policies on food and nutrition. The practice of fulfilling family food is focused on carbohydrates and animal protein, while the government promotes the fulfillment of a balanced diet between carbohydrates and proteins (animal and vegetable) with vegetables and fruits. The gap occurs because of differences in the discourses of the power of the body and benefits of food. The community understands that food aims to make the body able to function properly (body productivity discourse). Meanwhile, the government aims for the human body to grow and develop ideally to avoid degenerative diseases (healthy body discourse). Family food fulfillment practices depend on the power of women’s knowledge, especially mothers’ who have the main role in fulfilling family food.

Abstract

Stunting masih menjadi permasalahan serius di Indonesia, termasuk di Kabupaten Bengkalis. Program Kampung Keluarga Berkualitas (Kampung KB) menjadi salah satu upaya strategis untuk memerangi stunting di Desa Sumber Jaya. Salah satu daerah di Indonesia yang memiliki prevalensi stunting yang tinggi adalah Kabupaten Bengkalis. Pada tahun 2021, prevalensi stunting di Kabupaten Bengkalis mencapai 23,9%, lebih tinggi dari rata- rata nasional (24,4%). Penelitian ini bertujuan untuk menggambarkan peran sumber daya manusia (SDM) dalam program percepatan penurunan stunting di Desa Sumber Jaya. Penelitian ini menggunakan metodologi kualitatif dengan pendekatan eksploratif. Data dikumpulkan melalui wawancara, observasi, dan dokumentasi dengan 12 responden yang terlibat dalam program. Hasil penelitian menunjukkan bahwa SDM memiliki peran penting dalam berbagai aspek program, seperti edukasi gizi, monitoring pertumbuhan anak, dan pendampingan keluarga. Integrasi program Kampung KB serta kolaborasi lintas sektor yang kuat merupakan langkah strategis dalam memerangi stunting di Indonesia. SDM di Kampung KB Desa Sumber Jaya berperan penting dalam edukasi gizi, pemantauan anak, dan pendampingan keluarga. Namun, masih ada kendala. Keberhasilan program penurunan stunting ditopang sinergi lintas sektor yang aktif. Penelitian ini menunjukkan bahwa sumber daya manusia memiliki peran krusial dalam keberhasilan program Kampung Keluarga Berkualitas dalam menurunkan prevalensi stunting di Desa Sumber Jaya. Sehingga, perlu komitmen lintas sektor dalam membantu serta mendukung program pemerintah dalam upaya Percepatan Penurunan Stunting Kabupaten Bengkalis.

Abstract

Penelitian ini bertujuan menganalisis perbedaan dan pengaruh karakteristik subjek dan sosial ekonomi keluarga, kebiasaan snacking, pemilihan snack, aktivitas fisik, dan asupan zat gizi pada siswa di SDN Pondokcina 1 Depok antara status gizi obese dan normal. Penelitian ini menggunakan desain studi cross-sectional dengan jumlah subjek 60 anak. Data kebiasaan snacking diukur menggunakan kuesioner semi quantitative food frequency questionnaire, pemilihan snack menggunakan food choices questionnaire, aktivitas fisik dan asupan makanan menggunakan recall 2x24 jam. Hasil menunjukkan perbedaan signifikan pada nilai tengah frekuensi snacking, jenis snack camilan, aktivitas fisik weekday, tingkat kecukupan zat gizi energi, protein, lemak, dan karbohidrat, serta nilai tengah asupan serat antara subjek normal dan obese (p<0,05). Tidak terdapat perbedaan signifikan jenis snack minuman dan makanan sepinggan, kategori frekuensi snacking, faktor pemilihan snack, dan tingkat kecukupan serat (p>0,05). Faktor yang memengaruhi kejadian obesitas, yaitu tingkat kecukupan karbohidrat (OR=6,14). Tingkat kecukupan karbohidrat yang berlebih menyebabkan obesitas. Penelitian selanjutnya disarankan untuk menggunakan desain studi case control dan matching subjek untuk memperkuat hubungan antara faktor yang memengaruhi dengan kejadian obesitas.

Abstract

Background: The prevalence of hypertension in West Java and West Sumatra are in high level. Hypertension in rural areas tends to be higher than in urban areas, and women are higher than men. The lack of control of blood pressure in people with hypertension and the delay in seeking treatment can increase mortality. Purposes: This study aims to analyze the women’s access to health facilities and health-seeking behavior carried out by women in rural areas. Methods: This study was a cross-sectional method in Purwakarta (Sunda) and Padang Pariaman (Minang) District. There are 75 people each sample women aged 35–55 years with hypertension. Analysis statistic using Pearson Chi-Square. Results: The results show that above 60% of responden chosen Puskesmas became health facilities. Sunda women significantly use doctor’s clinics more than Minang women (p-value 0.05). Most Sunda women changed their behavior by taking antihypertensive drugs and losing weight to controlling blood pressure compared to Minang women (p 0.05). Conclusion: The conclusion, Puskesmas as a main place for treatment and medical-related to control their blood pressure. However, changes in the health behavior of Sunda women prefer to take drugs, and weight loss, while the Minang women tend to reduce salt consumption.

Abstract

Globalization and technological development have led to changes in lifestyles, including eating habits such as coffee consumption. The proliferation of cafes is evidence that coffee consumption has become a trend among adolescents and young adults who are exhibiting shift toward unhealthy eating patterns, such as consuming of high-sugar coffee. This study aims to analyse changes in eating habits in adults based on the theory of A Multidimensional Approach to the Study of Food Habits. This study used a systematic review using PRISMA method. Articles were sourced from two databases, Scopus and Google Scholar covering the past 8 years (2016-2024) with a total of 18 articles reviewed. The results showed that culture, ideology, food consumption, and preferences significantly influence coffee consumption habits. In Indonesia coffee culture not only about taste, but also involves social interaction, self-identity, and self-expression. Additionally, it was influenced by access, habits, needs, psychological factors, culture, and health. Coffee selection preferences were shaped by technological and socioeconomic factors including (promotions, discounts, employment, and income). This study provides insights into the factors influencing changes in eating habits, particularly coffee consumption, and can inform the development of effective interventions to promote healthy eating habits in this age group.

Abstract

The study aims to analyze the relationship between economic and food consumption variables with stunting prevalence among Indonesian children. The unit of analysis for this cross-sectional study was secondary data set from 2019 for 34 provinces obtained from Statistics Indonesia, the Food Security Agency, and the Ministry of Health of the Republic of Indonesia. In the majority of provinces (88.24%) the stunting prevalence was still categorized as serious public health problem with the prevalence of 30% or higher. The economic outlook in 2019 showed an economic growth, decrease in Gini ratio and the unemployment rate in 34 provinces. However, the poverty rate was very diverse between provinces and concentrated in eastern Indonesia. There were 17 provinces that had higher food than non-food expenditures. There were 31 provinces with normal energy adequacy level and 28 with normal protein adequacy level. However, there was no provinces reached maximum score in Desirable Dietary Pattern (DDP) as the indicator for food diversity, signaling that none of the provinces achieved adequate diversity in food consumption in 2019. The multivariate linear regression with backward elimination technique showed that seven of independent variables were qualified for the final model with R2 of 0.7406. The three variables significantly correlated with stunting prevalence (p<0.05) were food expenditure, protein adequacy level, and DDP score. Hence, these variables can be categorized as causal factors for stunting at provincial level analysis which can feed the food and nutrition policy and its monitoring and evaluation strategy. However, further analysis is needed to determine the direct and indirect relationship between economic factors, food expenditure, and food consumption with the prevalence of stunting among children in Indonesia so that stunting prevention and alleviation programs can be more precise and optimal.

Abstract

ABSTRACTThe objective of this study was to analyze the influence of blondo, snakehead fish flour and brown rice flour-based biscuit on the improvement of the nutritional status of anthropometric and serum albumin in malnourished children aged 3-5 years old. The design of this study was Randomized Controlled Trial (RCT) with single blind pre-post study. The total subjects were 50 underfive children and divided into two groups. They were given the biscuits for 90 days. Before intervention, the body weight and serum albumin level of subjects were measured. The analysis method were paired t-test. The result showed that the difference between baseline and endline in control group for energy was 20.8±3.9 kcal, treatment group was 45.6±8.6 kcal, endline in control group for protein was 9.5±1 g, and treatment group was 16.6±2.4 g. The changing of weight in the control group from 11.7±0.8 kg increase to 13.3±1.1 kg, the weight of treatment group from 11.7±0.7 kg increase to 13.6±1.0 kg. The increasing of albumin level in the control group was 0.3±0.1 g/dL, and treatment group was 1.0±0.2 g/dL. The increase of weight for age and albumin level after consuming nutritious biscuits can increase and normalize the nutritional status of the malnourished children. It is concluded that intervention of the formulated biscuits for 90 days could increase the nutritional status (weight for age and weight for height) and the serum albumin level in the 3-5 years old malnourished children.Keywords: albumin, biscuit, blondo, brown rice flour, malnutrition, snakehead fish flourABSTRAKTujuan penelitian adalah menganalisis pengaruh biskuit berbasis blondo, ikan gabus (Channa striata), dan beras merah (Oryza nivara) terhadap perbaikan status gizi antropometri dan serum albumin anak gizi kurang usia 3-5 tahun. Kelompok perlakuan diberikan biskuit selama 90 hari. Sebelum dan setelah intervensi dilakukan pengukuran berat badan, tinggi badan, dan kadar serum albumin. Metode analisis menggunakan paired t-test. Hasil penelitian menunjukkan perubahan asupan energi antara awal dan akhir masa perlakuan pada kelompok kontrol adalah energi 20,8+3,9 kkal, kelompok perlakuan 45,6+8,6 kkal, perbedaan asupan protein kelompok kontrol 9,5+1 g dan kelompok perlakuan 16,6+2,4 g. Perubahan berat badan kelompok kontrol 11,7+0,8 kg menjadi 13,3+1,1 kg, kelompok perlakuan 11,7+0,7 kg menjadi 13,6+1,0 kg. Peningkatan albumin kelompok kontrol 0,3+0,1 g/dL, kelompok perlakuan 1,0+0,2 g/dL. Peningkatan berat badan dan albumin setelah mengonsumsi biskuit mampu memperbaiki status gizi anak gizi kurang menjadi normal. Dengan demikian, dapat disimpulkan bahwa intervensi formula biskuit selama 90 hari dapat meningkatkan status gizi BB/U, BB/TB, dan kadar serum albumin anak gizi kurang usia 3-5 tahun.Kata kunci: albumin, biskuit, blondo, gizi kurang, tepung beras merah, tepung ikan gabus

Abstract

The occurrence of stunting has become one of the global health challenges, especially in developing countries. The average prevalence of stunting in North Maluku province from 2021 to 2023 is around 24.9% for children under 5 years old. Stunting is a nutritional problem caused by multiple factors. Factors suspected to influence the occurrence of stunting include the diversity of food consumption and food security. Food diversity can be described through the expected food patterns score, while food security can be measured using the food security index indicator. The purpose of this research is to identify the factors causing stunting in North Maluku province from 2021 to 2023. This study uses a cross-sectional design with secondary data sources. Data analysis used Pearson and Spearman correlation as well as multiple linear regression tests. The results of the bivariate data analysis show that the average years of schooling for women (P<0.001) and the ratio of healthcare workers (P<0.001) are significantly related. As for the desirable dietary patterns (P=0.426), the population below the poverty line (P=0.142), food expenditure >65% (P=0.822), lack of access to electricity (P=0.177), lack of access to clean water (P=0.833), and life expectancy (P=0.110), these are variables that do not have a significant relationship. The multivariate analysis results show that the p-value for the average years of schooling for women is 0.005 and the healthcare worker ratio is 0.004. Thus, it can be concluded that there is a significant influence between the average years of schooling for women and the ratio of healthcare workers on the incidence of stunting in children in North Maluku province from 2021 to 2023.
