Abstract

Sapi Bali merupakan plasma nutfah lokal sapi potong Indonesia yang memiliki potensi besar untuk dikembangkan di Sulawesi Tenggara. Meskipun memiliki keunggulan adaptasi lingkungan, pertumbuhan yang cepat, dan kinerja reproduksi yang baik, populasi sapi Bali di daerah ini menghadapi tantangan terutama dalam penggemukan dan pengelolaan feses. Artikel ini mengidentifikasi beberapa permasalahan utama, termasuk kurangnya pengetahuan dan keterampilan peternak, serta kurangnya pemahaman tentang manajemen pakan dan analisis ekonomi. Melalui diskusi dengan masyarakat peternak, solusi yang ditawarkan termasuk peningkatan pengetahuan melalui program bimbingan teknis dan sekolah lapangan tentang penggemukan sapi Bali, manajemen kesehatan ternak, dan produksi pupuk kompos berkualitas. Langkah-langkah ini diharapkan dapat meningkatkan efisiensi usaha peternakan serta mengurangi dampak lingkungan negatif yang dihasilkan oleh sistem pemeliharaan yang ekstensif.

Abstract

Fried chicken merupakan salah satu produk olahan ayam yang menggunakan prinsip deep frying untuk meningkatkan karakteristik produk dan kerenyahan yang khas dalam proses penggorengan. Produk ini menggunakan berbagai jenis minyak nabati yang menghasilkan kecerahan produk dengan perpaduan marinasi susu sebagai peningkat tekstur dan strain ayam berbeda. Penelitian ini bertujuan untuk menganalisa pengaruh jenis marinasi susu, minyak nabati, dan strain ayam berbeda terhadap sifat fisik, kerenyahan dan kadar kolestrol fried chicken. Penelitian ini menunjukkan bahwa penggunaan susu sapi, minyak nabati, dan strain ayam memberikan pengaruh sangat nyata (p<0,01) terhadap kerenyahan dan kadar kolestrol, tetapi berpengaruh nyata (p<0,05) terhadap pH fried chicken, dan tidak berpengaruh nyata (p>0,05) terhadap DIA fried chicken. Interaksi produk susu sapi dan minyak nabati memberikan perbedaan sangat nyata (p<0,01) terhadap kadar kolestrol, berbeda nyata (p<0,05) terhadap kerenyahan, serta tidak berbeda nyata (p>0,05) terhadap pH dan DIA fried chicken. Interaksi jenis produk susu dan strain ayam berbeda sangat nyata (p<0,01) terhadap pH, kerenyahan, dan kadar kolestrol, tetapi tidak berbeda nyata (p>0,05) terhadap DIA fried chicken. Interaksi minyak nabati dan strain ayam memberikan perbedaan sangat nyata (p<0,01) kadar kolestrol, berbeda nyata (p<0,05) terhadap pH, serta tidak berbeda nyata (p>0,05) terhadap DIA dan kerenyahan fried chicken. Jenis susu sapi memberikan perbedaan sangat nyata (p<0,01) terhadap kerenyahan dan kadar kolestrol, tetapi tidak berbeda nyata (p>0,05) terhadap pH dan DIA fried chicken. Jenis minyak nabati memberikan perbedaan sangat nyata (p<0,01) terhadap kadar kolestrol, tetapi tidak berbeda nyata (p>0,05) terhadap pH, DIA dan kerenyahan fried chicken. Jenis strain ayam memberikan perbedaan sangat nyata (p<0,01) terhadap pH, DIA, kerenyahan dan kolestrol fried chicken. Perlakuan susu sapi low-fat, minyak jagung dan strain Malindo merupakan perlakuan yang paling baik karena memiliki peranan kasein terhadap peningkatan kondisi asam pada daging ayam.

Abstract

Meatballs are one of the processed meat products that can be added by Moringa leaves in the manufacturing process. Moringa leaves contain a lot of protein, vitamins, and minerals. With the addition of Moringa leaves, in addition to increasing the nutritional value of meatballs, it also increases the potential of the foodstuff and can produce products that are of high nutritional value but are economical because Moringa leaves are cheap and easily available. The method used in the first community service program is to approach, interview and deepen problems and find solutions to problems. Second, using the method of learning by doing with teaching media in the form of a guide book on how to make herbal meatballs, giving brochures and demonstrations and banners that attract the interest of the community. Providing counseling and training by providing training and demonstration material or practice how to make herbal meatballs. Outcomes of this community service program 1) Increasing the competitiveness of the business of animal origin food products with herbal raw materials, 2) Increasing the turnover of community groups such as, improving values ​​in the community, 3) Providing additional knowledge to the public about processing livestock products (herbal meatballs) , 4) Producing products that can be useful to maintain fitness and body immunity so as to reduce the risk of exposure to covid-19.

Abstract

The activity aims to provide Technical Guidance on Broiler Chicken Maintenance Management for Breeders in Puosu Jaya Village, Konda District. The problem experienced was the low knowledge of the farming community about how to manage chickens so that they can increase their productivity. Community service activities are carried out by implementing a chicken intensification technology package so that it was more profitable and develops in the community, especially the breeder community. The method of activity was carried out in preliminary activities, counseling and demonstrations as well as evaluation design. It can be concluded that the community really needs guidance in developing the potential of broiler farms that they have been working on, which has an impact on increasing income and developing chicken population.

Abstract

This technical guidance activity aims to teach how to process organic fertilizer based on cow dung which is mostly produced by the community's livestock, so that it can  reduce the cost of inorganic fertilizer and be more profitable. This activity was carried out in farmer groups in Morome and Alebo Villages, Konda District, South Konawe Regency. The method of activity is carried out by: (1) lectures and discussions on materials and methods of processing organic fertilizers, (2) demonstrations and guidance on the  selection of materials and processing of cow dung-based organic fertilizers, (3) packaging and marketing methods for livestock manure-based organic fertilizers. cow. The counseling material presented received a positive and satisfactory response from the participants. In general the participants wanted to adopt the training materials and were very active in the technical guidance. It was concluded that the participants were very interested in applying the guidance materials taught and producing them commercially. The participants hoped that their village would often be given agricultural and livestock guidance and counseling activities.

Abstract

This activity is a community service activity carried out to help increase the productivity of goat selling breeders around the coast of Kendari City, especially in the Anduonohu Market area. Implementation of activities carried out in the form of counseling in the form of visits, delivery of material and discussions directly to goat farmer. The material presented was in the form of planting forage as the main source of feed for goats and using reinforcing feed, the need for strong and tidy goat pens, namely a stage model so that they can maintain environmental cleanliness and livestock health, Management of goat manure waste into bokashi fertilizer. The results of the activity show that they understand and are capable of cultivating forage as the main source of feed and know the importance of using forage boosters (concentrates). 2) Farmers know the benefits of using stilt pens to maintain a clean environment and goat health but have not implemented them due to limited funds to build cages. 3) Farmers do not know about the use of EM4 in leftover feed and livestock manure to produce bokashi organic fertilizer in a short time.

Abstract

  This technical guidance aims to provide understanding to cattle breeders regarding the benefits of integrating cattle and food crops in one area so that participants are motivated and encouraged to carry out integration between cattle and food crops. This technical guidance was implemented at Sindang Kasih Village, West Ranomeeto District. Implementation of technical guidance uses lecture and discussion methods. The tools and materials used are vehicles, cell phones, and laptops. In general, Cattle Farmers in Sindang Kasih Village already understand the integration of cattle and food crops and its benefits and are committed to implementing this integration as indicated by the ability of all participants to answer questions correctly at the end of the activity session (100%). The challenges and problems of beef cattle farming include maintenance and waste processing systems. Integrating livestock with food crops in Sindang Kasih Village has been implemented well. The livestock in Sindang Kasih needs to be further improved to become one of the breeding and fattening centers in Southeast Sulawesi.

Abstract

People in Alebo village, Konda subdistrict, South Konawe Regency, are very familiar with cattle farming because almost all of them raise cattle and work as vegetable and secondary crop farmers. The aim of this activity is to teach how to prepare feed formulations and process drum manure into bokashi fertilizer so that the livestock community gets added value in the form of side income. In the process of raising cattle, these breeders do not optimally understand the system of raising cattle properly and correctly, especially the issue of feed formulation and processing manure into organic fertilizer. This is due to the limited knowledge and skills of farmers in managing their cattle farming business, especially providing feed and managing livestock waste. Based on the results of discussions with farmers, the target to be achieved after implementing the village development program is to increase the knowledge and skills of farmers regarding ration formulation techniques as cattle feed that meet quality standards by utilizing local feed raw materials, and processing livestock waste into fertilizer bokashi.

Abstract

Quality improvement protein content, yield and taste of beef patties can be improved by adding black cumin and using different parts of the meat. This research aims totest the effectinteraction of black cumin levels and different parts of the flesh on quality of protein content, yield and tastebeef patty, testing independent effects giving different kinds of black cumin to quality of protein content, yield and taste beef patty, testing independent effects use of different parts of meat against quality of protein content, yield and taste beef patty. This research used a Completely Randomized Design with a 5 x 3 Factorial pattern with a quality test for protein content and yield using 3 (three) replications and a taste test using 12 (twelve) replications. The first factor is the black cumin level of 0%, 0.5%, 1%, 1.5%, and 2%. The second factor is the parts of the meat, namely the sirloin, top side and shank. Research variables include protein content, yield, and taste. The results showed that the interaction of black cumin levels and different parts of the meat showed a significant influence (P0.05) on yield and taste values, the independent effect of giving different black cumin showed a significant effect (P0.05) on yield and taste values, and the independent influence of using different parts of meat had a significant effect (P0.05) on the taste value. It can be concluded from the research results that the best treatment combination is J4P2 (2% black cumin with top side meat).

Abstract

The aim of this study was to investigate the dynamics and population structure of Bali cattle in the Baito District of South Konawe Regency. The research was conducted from December 2022 to January 2023. Sample villages/kelurahan were selected using purposive sampling, and four villages/kelurahan were identified as research locations. Respondents, totaling 20 individuals per village who owned Bali cattle, were selected using the purposive sampling method. The data collected included both primary and secondary data. The observed variables encompassed population dynamics, including the influx and outflow of cattle, and population structure, comprising male Bali cattle, calves, heifers, adult females, and female Bali cattle. The findings revealed population dynamics in Baito District, with a birth rate of 207 livestock (average 51.75), a mortality rate of 18 cattle (average 4.50), a selling rate of 58 cattle (average 14.50), and a purchase rate of 19 livestock (average 4.75). Consequently, the average livestock entering was 56.25, while the average livestock leaving was 19.25. Analyzing the population structure based on physiological status in the Baito District, adult female Bali cattle constituted 40.00%, heifers accounted for 16.58%, and female calves comprised 5.26% of the total study population. Additionally, adult males represented 18.42%, young males were at 15.00%, and male calves constituted 4.74%.
