Abstract

This study aims to determine the comparison of body measurements and body weight of male and female Balinese cows. The research was at the Kendari City Slaughterhouse. Measuring 94 Bali cows consisting of 47 males and 47 females aged 1-3 years. Data were analyzed by Student's T-test. The results showed that the average male body weight was 191.30 kg and female 181.98 kg. The average body measurements of male and female Balinese cows are body length (114.11 cm and 110.15 cm), gumba height (111.68 cm and 109.60 cm), chest circumference (149.30 cm and 146.15 cm), front canon bone circumference (14.89 cm and 14.75 cm), rear canon bone circumference (16.67 cm and 16.63 cm). Where there is no significant difference in linear body measurements in the two sexes of cattle (p> 0.05). It was concluded that the linear measurements of the bodies of Balinese male and female cattle from traditional livestock breeding in Sulawesi Sulawesi were relatively uniform. But quantitatively the body measurements of male Bali cattle are relatively higher compared to female Bali cattle.

Abstract

This study aims to determine the pattern of growth and development of non carcass organs in Bali cattle males and females. And this research is expected to provide information to the public and farmers about biological phenomena organ growth and development of non carcass Bali cattle males and females, as well as basic data in making estimates, the production of non carcass organs as well as information for research selanjutnuya. Samples of this research data is withheld Bali cattle (slaughter) in Slaughterhouse Kendari. Observations were carried out on cattle by 28 head with 2-3 years of age and body weight between 90-300 kg. The method used in this research is Huxley allometric equation Y = axb transformed into logarithms log equation is Y = log a + b log x and the real difference test with a test -student, the observed variables is slaughter weight, non carcass weight and the weight of the non carcass parts of Bali cattle male and female as the head, front legs, hind legs, skin, lungs, liver, intestines and stomach. The results showed that the coefficient of growth of non carcass organs (offal) Bali cattle male and female is as follows (b = 0.25 and 0.40). The coefficient of non carcass organ growth clearly different one (p<0.05), which means non carcass weights have time to cook early development when compared to the overall body growth. While the pattern of growth and development of non-organ parts of Bali cattle carcass relative male and female alike, with the growth coefficient b<1. The conclusion of this study is the growth of non carcass organs and parts non organ Bali cattle carcass of males and females have a pattern of rapid growth/early ripe with weight. It is advisable to do further research with a sample of cattle that more and consider cutting in series (serial slaughter) at certain ages

Abstract

Chicken is one of the mainstay commodities and is a very popular food ingredient by various groups of society. Chicken consists of carcass and non-carcass parts, all of which are almost utilized. A study conducted on as many as 36 Chickens to see differences in patterns of growth and development of non-carcass organs of different sexes and ages. Data analysis was performed using the allometric equation Huxley Y = aX The results showed that the coefficient of non-carcass growth and development of non-carcasses of male and female Chickens was significantly different from one which meant that it had time to cook development premature compared to overall body growth and growth patterns of non-carcass organ growth of Chickens both in males and females at the age of 0 - 5 weeks showed no significant difference. It can be said that male and female broiler chickens aged up to 5 weeks have the same pattern of growth and development of non-carcass organs and earlier than the overall body growth.

Abstract

This study was aimed to determine the growth and development of Broiler chicken carcass and components at different sex and age . The method used in this study is the Huxley Y = a x b allometric equation which is transformed into a logarithm equation Log Y = Log a + b Log X. This research was conducted in the Cage of the Animal Production Department of the Faculty of Agriculture, Halu Oleo University. The parameters observed in this study were the carcass and carcass parts. Based on the results of the study showed that the growth coefficient of male and female broiler carcasses were not significantly different (P>0.05) which meant that they had a time of early development when compared to the growth of parts of the body as a whole. The growth and development patterns of the carcasses of both male and female broiler chickens at the age of 0 - 5 weeks is relatively the same.

Abstract

The research aims to determine the extent of differences in the carcass composition of four types of ducks using semi-intensive cultivation. A total of 16 ducks aged 3 months were used as experimental units. A completely randomized design with 4 treatments and 4 replications was the research design. The results showed that ducks of the same age, namely: Alabio ducks, Peking ducks, Mojosari ducks, and Manila ducks, showed very significant differences (P<0.01) in the variables of slaughter weight, carcass percentage, thigh and back percentage. However, there was no significant difference (P>0.05) in the percentage of chest, wings, and neck. It was concluded that the live weight, carcass percentage, and carcass parts of Manila ducks were higher than those of Alabio, Peking, and Mojosari ducks. Meanwhile, Alabio ducks are taller than Peking ducks and Mojosari ducks.

Abstract

Peningkatan kualitas fisik beef patty dapat dilakukan dengan penambahan jintan hitam dan penggunaan bagian daging yang berbeda. Penelitian ini bertujuan untuk menguji pengaruh interaksi level jintan hitam dan bagian daging yang berbeda terhadap kualitas fisik beef patty, menguji pengaruh mandiri penambahan jintan hitam yang berbeda terhadap kualitas fisik beef patty, menguji pengaruh mandiri penggunaan bagian daging yang berbeda terhadap kualitas fisik beef patty. Penelitian ini menggunakan Rancangan Acak Lengkap pola Faktorial 5 x 3 dengan 3 (tiga) ulangan. Faktor pertama adalah level jintan hitam 0%, 0,5%, 1%, 1,5%, dan 2%. Faktor kedua adalah bagian-bagian daging yaitu has luar, top side, dan shank. Variabel penelitian meliputi pH, rendemen, dan daya ikat air. Hasil penelitian menunjukkan bahwa interaksi level jintan hitam dan bagian daging yang berbeda menunjukkan pengaruh yang nyata (P<0,05) terhadap nilai pH dengan interaksi terbaik terdapat pada perlakuan J4P2 (jintan hitam 2% dengan daging top side), pengaruh mandiri pemberian jintan hitam yang berbeda menunjukkan pengaruh yang nyata (P<0,05) terhadap nilai pH dengan pemberian terbaik terdapat pada perlakuan J3 (jintan hitam 1,5%), dan pengaruh mandiri penggunaan bagian daging yang berbeda memberikan pengaruh yang nyata (P<0,05) pada nilai pH dan rendemen dengan penggunaan terbaik terdapat pada perlakuan P2 (daging top side). Dapat disimpulkan dari hasil penelitian bahwa kombinasi perlakuan terbaik adalah J4P2 (jintan hitam 2% dengan daging top side).

Abstract

This study aimed to obtain information on the influence of age differences on the growth of Bali cattle that are traditionally reared in cages. The number of cattle used was nine heads. During the study, individual cages were used. This study had a randomized block design with three ranges of body weight as a group. The treatment in this study was the difference in the age of cattle, which consisted of cattle aged one year (I1), age two years (I2), and three years (I3). The results showed that the difference in the age of the cattle had no significant effect (P> 0.05) on the dry matter consumption of feed, daily body weight gain, and the conversion of Bali cattle feed traditionally reared in pens. However, there is a tendency that cattle aged one year have better growth and efficiency in using feed than cattle aged 2 and 3 years. It can be concluded that raising cattle at one year of age results in more efficient growth than cattle at 2 and 3 years. However, further testing needs to be done with more cattle and a more comprehensive range of body weight.

Abstract

That was study aims to determine the effect of temulawak juice in drinking water on slaughter weight and carcass weight. The treatment in this study used quail and ginger extract. The data obtained were then tabulated using analysis of variance and continued with Duncan's multiple distance test. The results of this study indicate that the application of temulawak juice in drinking water did haven’t a significant effect on the percentage of quail carcass, liver and gizzard, but had a significant effect on the percentage of heart.

Abstract

Meat is a food of animal origin that has high nutritional value, because meat contains several nutrients including protein, fat, minerals and vitamins. This study aims to determine the physical and organoleptic quality of beef meatballs using giblets. The materials used in this study were beef, giblets, tapioca flour, garlic, salt, flavourings, and ice cubes. This study used a completely randomized design consisting of 4 treatments and 4 replications P0 (100%) beef without giblets, P1 (80%) beef + 20% liver, P2 (80%) beef + 20% gizzard, P3 ( 80) beef + 20% heart. The parameters measured in this study were pH, cooking loss, yield, shape, aroma, color, texture, taste, elasticity and general acceptance. The results of this study indicate that the addition of giblets to chicken meatballs. beef meatballs. However, it did not have a significant effect (P>0.05) on the organoleptic test of beef meatballs, especially on the variables of shape, aroma, texture, taste, and general acceptance

Abstract

Consumer pleasure for meatballs needs to be innovated with various ingredients including catfish meat and chicken meat. This study aims to determine the effect of catfish substitution on the physical and sensory quality of rejected laying hen meatballs. This study used an experimental method which is a completely randomized design (CRD) with 5 treatments and 5 repetitions. The treatment used was as follows, (P0) 100% meat of rejected layers, (P1) 80% meat of rejected layers: 20% catfish, (P2) 70% meat of rejected layers: 30% catfish, (P3) 60% meat of rejected layers: 40% catfish, (P4) 50% meat of rejected layers: 50% catfish. The parameters measured in this study were the organoleptic test of meatballs of rejected laying hen meat which had no significant effect (P>0.05) on all variables including color, shape, aroma, texture, taste and general acceptance of meatballs, aroma, tenderness, taste, texture and color of meatballs
