Abstract

AbstractThis study aims to determine the variations effect of black garlic concentration on the sauce's physical, chemical, and organoleptic characteristics. The experimental design used was a Completely Randomized Design with a single factor, the ratio of black garlic concentration to sauce paste. The experiment was performed with five treatments and three replications. The ratio of black garlic concentration to the sauce paste in this experiment was 5:95 (A1), 10:90 (A2), 15:85 (A3), 20:80 (A4), and 25:75 (A5). The results showed that the black garlic concentration significantly affected the sauce's physical and chemical characteristics (Total Dissolved Solids (TDS), color intensity, viscosity, antioxidant activity, and total polyphenols). The organoleptic test showed that black garlic concentration significantly affected panelists' preference for color, taste, viscosity, and overall parameters and did not significantly affect aroma preference. The best treatment was the sauce with a 15:85 (A3) concentration ratio of black garlic to sauce paste. The best treatment sauce's physical characteristics were 34.23±0.17 °Brix TDS, 1.35±0.12 color intensity, and 0.41±0.05 Poise viscosity, while the chemical characteristics were 22.75±0.38% antioxidant activity and 1.07±0.21 mg GAE/g total polyphenols. The organoleptic test of the best treatment sauce's results was 5.97 color preference, 5.30 aroma, 5.57 taste, 5.43 viscosity, and 5.23 overall preference.Keywords: antioxidant, black garlic, organoleptic, product diversification, sauce AbstrakPenelitian ini bertujuan untuk mengetahui pengaruh variasi konsentrasi black garlic terhadap karakteristik fisik, kimia, dan organoleptik saus. Rancangan percobaan pada penelitian ini adalah rancangan acak lengkap dengan faktor tunggal, yaitu perbandingan konsentrasi black garlic terhadap bahan saus. Percobaan dilakukan dengan 5 perlakuan dan 3 kali ulangan. Perbandingan konsentrasi black garlic terhadap bahan saus pada percobaan ini adalah 5:95 (A1), 10:90 (A2), 15:85 (A3), 20:80 (A4), dan 25:75 (A5). Hasil penelitian menunjukkan bahwa konsentrasi black garlic berpengaruh nyata terhadap karakteristik fisik dan kimia saus, yaitu Total Padatan Terlarut (TPT), intensitas warna, viskositas, aktivitas antioksidan dan total polifenol. Uji organoleptik menunjukkan bahwa konsentrasi black garlic berpengaruh nyata terhadap kesukaan panelis pada parameter warna, rasa, viskositas, dan keseluruhan, serta berpengaruh tidak nyata terhadap kesukaan aroma. Perlakuan terbaik diperoleh pada saus dengan perbandingan konsentrasi black garlic terhadap bahan saus 15:85 (A3). Karakteristik fisik saus tersebut adalah TPT 34,23±0,17 °Brix, intensitas warna 1,35±0,12, dan viskositas 0,41±0,05 Poise, sedangkan karakteristik kimianya adalah aktivitas antioksidan 22,75±0,38% dan total polifenol 1,07±0,21 mg GAE/g. Hasil uji organoleptik terhadap saus dengan perlakuan terbaik adalah kesukaan warna 5,97, aroma 5,30, rasa 5,57, viskositas 5,43, dan keseluruhan 5,23.Kata kunci: antioksidan, black garlic, diversifikasi produk, organoleptik, saus

Abstract

This research aims to examine and analyze the effect of digital leadership on work performance through organizational commitment. The research population is all employees in the Mitra Industrial Area (KIM) Karawang, West Java. A total of 214 samples were taken using random sampling. The digital leadership variable uses two dimensions with three indicators each, the organizational commitment variable uses three dimensions with three indicators each, and the work performance variable uses three indicators. The results obtained show a positive and significant effect of digital era leadership on work performance and a positive and significant effect of organizational commitment on work performance. These results are analyzed together with the dimensions used. The results obtained from leadership in the employee dimension are greater than the innovation focus dimension. The greatest organizational commitment is in the normative commitment dimension.

Abstract

The purpose of this study is to analyze the entrepreneurial orientation partially affects competitive advantage. The entrepreneurial orientation and product innovation simultaneously affect competitive advantage, and competitive advantage partially affects marketing performance. This study uses saturated sampling with a total sample of 107 lubricating oil managers in the city of Semarang. The data analysis technique in this study uses path analysis techniques, with the help of the Statistical Package for Service Solution (SPSS) program 22. The results show that entrepreneurial orientation partially has a positive and insignificant effect on competitive advantage, product innovation partially has a positive and significant effect on competitive advantage, entrepreneurial orientation and product innovation simultaneously have a positive and significant effect on competitive advantage, competitive advantage partially affects marketing performance.

Abstract

The initial physiological change in adolescent girls is the onset of menstruation. The most prevalent challenge they face regarding menstruation is primary dysmenorrhea, characterized by persistent or intermittent pelvic pain in the lower abdomen. The aim of this study was to investigate the influences of stress levels and physical activities on primary dysmenorrhea. A cross-sectional was conducted in Cirebon, Indonesia, in 2023 included young women who had never given birth (nullipara), aged 17–25 years old, had menstruated, and had no history of smoking and alcohol. The data were collected using a set of questionnaires consisting of the Numeric Rating Scale (NRS) to determine primary dysmenorrhea pain, the Depression Anxiety Stress Scales 42 (DASS 42) to determine the level of stress and the International Physical Activity Questionnaire (IPAQ) to determine physical activity. Pearson's correlation test was used to assess the correlation between the variables (stress levels, physical activity, and dysmenorrhea). A total of 150 young women were included in the study. Moderate stress levels (23.3%) and high physical activity (90.7%) were the most prevalent categories observed among studied participants. Approximately 42% of them experienced mild dysmenorrhea pain. Our analysis indicated that stress levels and physical activities had strong positive correlations with dysmenorrhea pain levels, with r=0.782 and r=0.748, respectively, with both had p<0.001. This highlights that controlling stress could be beneficial in preventing dysmenorrhea pain among young women.

Abstract

Chronic energy deficiency (CED) in pregnant women is a condition of energy and protein deficiency that lasts for years and causes problems in the mother and fetus. Due to its significant consequences, determining the determinants associated with CED incidence is of utmost importance. The aim of this study was to determine the determinants of the incidence of CED in pregnant women in Indonesia. A cross-sectional study was conducted on pregnant women in Banyumas, Central Java, Indonesia, in 2022. Plausible determinants included maternal age, pregnancy interval, parity, educational attainment, nutritional knowledge, employment, frequency of antenatal care (ANC), and nutritional intake. The Chi-squared test followed by multivariate logistic regression were used to determine the factors associated with the incidence of CED. Our data indicated that 32% of the pregnant women had CED. Univariate analysis found that maternal age (p=0.022), pregnancy interval (p=0.009), educational attainment (p=0.012), knowledge of nutrition and CED (p=0.023), frequency of utilization of ANC services (p=0.028), energy intake (p=0.002), protein intake (p=0.006), vitamin C intake (p=0.016), folate intake (p=0.011), and calcium intake (p=0.004) were significantly associated with CED incidence in the pregnant women. Multivariate analysis indicated that extreme maternal age (OR; 3.49; 95%CI: 1.10–11.05), low educational attainment (OR: 4.12; 95%CI: 1.37–12.33), short pregnancy interval (OR; 7.30; 95%CI: 1.84–28.99), low frequency of ANC (OR: 3.06; 95%CI: 1.01–9.19) and low protein intake (OR: 6.80; 95%CI: 1.62–28.59) were associated with CED incidence. This study underscores the importance of increasing nutritional intake, frequency of ANC, and pregnancy interval among pregnant women to reduce the risk of CED and its adverse health outcomes.

Abstract

Malaria is a national and global problem that really needs attention and Indonesia is the second highest country with the highest number of cases 304,607 in 2021. The use of insecticides at inappropriate doses causes resistance to targets. The aim of this study was to analyze the toxicity of silver nanoparticles to adult Anopheles mosquitoes in malaria endemic areas as well as to determine the lethal concentration (LC50) and to project effectiveness in the lifetime. This research is experimental and uses a post-treatment with control design which was carried out in 4 stages from 2019-2022, which includes laboratory scale tests (2019), field laboratory scale tests (2020), ecological endemic area scale tests (2021), and lifetime tests (2022). Calculation of LC50 in nanosilver toxicity 5965 mg/l and Calculation of life time projections produces the formula Y=(-) 0.012Ln(X)+0.6933. Absorption of silver nanoparticles into the bodies of Anopheles sp. occurs through the spiracles and attacks the Ache enzyme in the central nervous system thereby stopping the working system of the mosquito which will then die. Nanosilver is a very effective herbal insecticide used as an effort to control malaria cases in endemic areas with the right dose and method. For life time, a dose of 1500 mg/l nanosilver effectively kills 74% of adult Anopheles sp mosquitoes on day 32 and it is projected that on 1 year the efficacy of nanomaterials still has an efficacy of 62%).

Abstract

The prevalence of gestational diabetes mellitus (GDM) in the world is 16.2% of live births associated with hyperglycemia in pregnancy, and 7.4% are caused by type 1 or 2 diabetes which is detected for the first-time during pregnancy. The prevalence of GDM in Indonesia reaches 3.6% and the highest rate is found in the Special Province of Yogyakarta (2.6%). One of the risk factors for GDM is excess nutrition which is influenced by daily intake. This study aims to determine the relationship between nutritional intake and body mass index (BMI) with HbA1c levels in first-trimester pregnant women. This study used a cross-sectional design. A simple random sampling with inclusion and exclusion criteria was employed, involving 47 pregnant women as subjects. Nutritional intake was measured with the semi-quantitative food frequency questionnaire (SQ-FFQ). The nutritional status of pregnant women is measured by BMI. HbA1c was measured by the turbidimetric inhibition immunoassay (TINIA) method. Analysis of research data using the Pearson product-moment correlation test and rank Spearman. The results of this study stated that there was a relationship between nutritional intake and BMI with HbA1c levels. Diagnosis of GDM and appropriate intervention can reduce the risk of complications of diabetes mellitus (DM).

Abstract

Pengentasan stunting merupakan prioritas pembangunan kesehatan pada periode tahun 2020-2024 di Indonesia. Salah satu strategi untuk mencegah stunting adalah dengan memberikan makanan yang dimodifikasi untuk ibu hamil seperti sosis ikan lele dan tepung daun kelor. Berdasarkan hal tersebut peneliti ingin menganalisis uji kesukaan sosis ikan lele dengan penambahan tepung daun kelor. Penelitian ini menggunakan metode eksperimen Posttest Only Control Group Design dengan 25 orang ibu hamil di wilayah kerja Puskesmas Kemuningsari Kidul sebagai panelis. Pengumpulan data menggunakan Uji Skala Hedonik. Kemudian dianalisis dengan Friedman dan Wilcoxon Signed Rank Test dengan proporsi penambahan tepung daun kelor untuk sosis lele adalah 0% (kelompok kontrol), 5%, 10%, dan 15%. Hasil penelitian menunjukkan bahwa daya terima warna, aroma, dan rasa dengan penilaian terbaik adalah perlakuan X1 (5%). Berdasarkan uji Friedman didapatkan p-value (0,05) untuk indikatornya adalah 0,009; 0,004; dan 0,001. Artinya sosis ikan lele dengan penambahan tepung daun kelor memiliki perbedaan yang nyata untuk ketiga indikator tersebut. Namun, tingkat penerimaan tekstur tidak signifikan sebesar 0,126. Selanjutnya menurut pengukuran berat bahan baku mentah sosis ikan lele dapat memenuhi kebutuhan gizi selama hamil sebagai selingan karena mengandung protein 33,7%-52,5% dan kalsium 7%-8,2%. Penelitian ini menyimpulkan bahwa sosis lele dapat dianggap sebagai camilan yang dimodifikasi untuk memenuhi kebutuhan gizi selama kehamilan.

Abstract

Diarrhea  disease is ranked second as the most common cause of death in children under five, both preventable and treatable. Diarrhea in the children under five group is the most vulnerable group and can result in death if not treated seriously. The highest incidence of diarrhea cases occurs in the first two years of life and will decrease as the child gets older. The purpose of this study was to determine the risk factors for the occurrence of diarrhea in toddlers in the working area of the Tanon 1 Public Health Center, Sragen Regency in 2015-2020. This type of research is analytic by design cross sectional. Secondary data in this study arecase children under five diarrhea, environmental sanitation factors, food sanitation factors and social economic factors. The data analysis used was univariate and bivariate with the chi square test α = 0.05. The results of the study show that there is a relationship between latrine management in 2015 (p-value=0.001) in 2016 (p-value=0.007) in 2017 (p-value= 0.032), there is a relationship between waste management (p-value=0,048) and cleanliness of food equipment in 2016 (p-value= 0.021), there is a relationship with clean water sources (p-value=0.049) and food management in 2017 (p-value= 0.003), there is a relationship with the condition of the floor of the house in 2019 (p-value= 0.49) with the incidence of diarrhea in children under five at the Tanon 1 Public Health Center, Sragen Regency.

Abstract

Background: Infant mortality rate (IMR), especially in the perinatal period, is caused by the condition of low-birth-weight babies (LBW). The nutritional and health conditions of pregnant women play an important role in determining the nutritional status of infants starting during pregnancy. Maternal factors are one of the causes of LBW in infants. Objectives: Analyzing maternal factors (parity, Hemoglobin (Hb) level of the mother during pregnancy, age of the mother during pregnancy, nutritional status of the mother during pregnancy (chronic energy deficiency = KEK), and the distance between pregnancies that cause the incidence of LBW babies at the Situbondo Health Center in 2020. Methods: The case-control method was used in this study by using cohort register data at the Situbondo Health Center. In March 2022, data were collected from 82 mothers including 41 mothers of LBW babies as a case group and 41 mothers of the control group who did not have LBW babies. Data were analyzed using chi-square test. Results: The results proved that maternal hemoglobin level was associated with the incidence of LBW babies (p=0.026; OR=3.088; 95%; CI=1.240-7.692). However, the variables of parity, maternal age during pregnancy, maternal nutritional status (SEZ), and pregnancy distance were not associated with the incidence of LBW babies. Conclusions: Low Hb levels in pregnant women have a higher risk of delivering LBW babies. It is recommended that pregnancy checks be carried out by pregnant women regularly at least 6 visits to health facilities and it is recommended to take blood supplement tablets regularly, eat healthy foods and do not believe in myths that are detrimental to the health of pregnant women.
