Abstract

Background : Hypertension is a condition when systolic blood pressure ≥ 140 mmHg and diastolic blood pressure  ≥ 90 mmHg blood. One of herbal therapies to help lowering blood pressure is by utilizing foods which contain high potassium, such as bananas, melons, and young coconut water.Objective : To analyze the effect of banana melon and young coconut water pudding on lowering blood pressure levels of hypertensive patients at the Palembang Public Health Center.Method : A quasi-experimental study with pre and pos test control group design. The subjects were 60 hypertensive patients at Palembah PHC who were eagerly fulfilled inclusion and exclusion criteria. Data analysis were used t-dependent and t-independent tests to analyze the effect of melon banana pudding and young coconut water with blood pressure.Results : The results showed there was an average decrease in systolic and diastolic blood pressure in the treatment group of 13.07 mmHg (p= 0.000) and 6.93 mmHg (p= 0,000). Consumption of banana melon pudding and young coconut water showed a significant effect on reducing 6.1 mmHg systolic blood pressure (p=0.003) and 4.56 mmHg diastolic blood pressure (p=0,000). T-independent test showed that systolic blood pressure in the treatment and control groups obtained p-0.005 and diastolic blood pressure obtained p-value 0.048.Conclusion : Consumption of banana melon pudding and young coconut water could lower blood pressure levels f hypertensive patients

Abstract

Background: Coronavirus 2019 (COVID-19) is a respiratory disease caused by corona virus. Smokers are the most vulnerable group form Covid-1. Dirty hands can spread disease by providing entry to pathogens, bacteria, or viruses. Handwashing could be effective and efficient prevention to prevent covid-19 infection.Objective: To determine the relationship between gender and smoking habits, handwashing and nutritional behavior among respondents.Methods: A descriptive-analytic study with a cross-sectional design. Respondents were 966 people who lived in Bengkulu Province. Data collection was carried out by online questionnaire which were distributed through WhatsApp media. Data analysis used the chi-square test.Results: There were significant relationship between gender and smoking habits (p = 0.003), gender and handwashing (p = 0.000), gender and nutritional behavior related with fresh food consumptions (p = 0.026). There were no relationship between gender and nutritional behavior related to preserved/instant foods consumption (p = 0.463), nutritional behavior and fruit-vegetable consumption habits (p = 0.090).Conclusion: There is a relationship between gender and smoking and handwashing habits.

Abstract

Obesity results in a risk of cardiovascular disease such as hypertension and metabolic disorders such as kidney disorders, cancer and potentially social phobia disorders.  The incidence of obesity in adolescents is considered serious because it will continue into adulthood. Obesity can occur because teenagers do less physical activity and eating patterns that often consume junk food. This study aimed to determine the relationship between physical activity and junk food consumption patterns and the incidence of adolescent obesity in SMA Negeri 1 Bengkulu City in 2023. This research used a case control research design. Research subjects whose nutritional status was obese were identified in the past to determine the presence of risk factors. The subjects for this research was class X and class XI of SMAN 1 Bengkulu City with 76 subjects using purposive sampling technique.  Data analysis used the Chi-square test. The results of this study indicated that there was a relationship between physical activity and the incidence of adolescent obesity at State Senior High School 1 Bengkulu City in 2023 (p-value=0,005, OR=4,632) and there is a relationship between junk food consumption patterns and the incidence of adolescent obesity at SMAN 1 Bengkulu City in 2023 (p-value=0,000, OR=6.981). Teenagers in Bengkulu City 1 Public High School mostly do not strenuous physical activity, and almost some teenagers often eat junk food. Suggestions for subjects include education to increase knowledge and attention to the importance of regulating physical activity and eating patterns as well as optimizing nutritional status.

Abstract

Background: Seruit is an indigenous food in Lampung. The dish typically consists of a combination of seafood, vegetables, and spices that are stir-fried together to create a savory and aromatic dish beloved by locals and visitors alike. The key ingredient in seruit is the use of fresh seafood such as shrimp, squid, and fish. Objectives: The study aimed to determine a formula based on acceptability and macronutrient content, especially proteins. Methods: The study used a completely randomized experimental design. Seruit was a typical Lampung chili sauce, consisting of shrimp paste chili sauce supplemented with grilled snakehead fish meat. The seruit formulation used in this study consisted of a mixture of 30, 40, and 50 g of chili sauce and 70, 60, and 50 g of snakehead fish. Duncan’s Multiple Range Test (DMRT) was used to analyze organoleptic. Proximate test was used to determine the content of water, ash, crude fiber, carbohydrates, protein, and fat. Results: The acceptability was conducted by 30 semi-trained panelists with the selected formula, namely F3 with a mixture of 50 g of snakehead fish with color indicators (3.50±1.09), aroma (3.72±0.88), taste (3.87±0.94), and texture (3.62±1.02). 100g of harpoon contains 19.67% water content, 1.18% ash content, 2.63% crude fiber, 12.36% protein, 3.17% fat, and 60.98% carbohydrates. Seruit with F3 formula was chosen by the panelists and is a high source of protein. Conclusions: Seruit formula F3 with the addition of 50 g grilled snakehead fish is the selected formula and has potential as a local food source of protein that can be served in the daily diet according to a balanced nutritional diet.

Abstract

Background: Waffle is sweet food like cake but cooked differently, are a beloved snack for teenagers. Chaya is a leafy vegetable that is often consumed because it has a nutritional content that is beneficial for health and can be made into snacks such as waffles. Objectives: This study aimed to evaluate the nutritional and cyanide content of Chaya Leaf waffles using a selected formula as a potential solution for iron deficiency anemia in adolescents girls. Methods: Experimental research with a randomized complete design was conducted, varying the amount of Chaya Leaf are 0g, 25g, 50g, and 75g in waffle formulations. Sensory analysis is based on hedonic test results which are evaluated using SPSS version 25 analyzed using one-way ANOVA followed by DMRT (Duncan's Multiple Range Test) analysis, while proximate analysis was conducted following SNI 4305:2018 guidelines. Iron content was measured using atomic absorption spectrophotometry (SNI 01-2896-1998) and cyanide content using the acid titration method and the wet titration method based on SNI 4305:2018. Results: A hedonic test involving 30 semi-trained panelists favored formula F4, containing 75 g of Chaya Leaf, for its color (p-value<0.001), taste (p-value=0.001), and texture (p-value=0.019). In 100 g of waffle, water content was 54.15%, ash content was 2.06%, protein was 20.90%, fat was 12.16%, and carbohydrates were 63.67%. The iron content was 0.43 mg, and cyanide levels were found to be 0.919 mg/g. Conclusions: Formula F4 was preferred by panelists for its high iron content and safe cyanide levels, suggesting the potential of Chaya Leaf waffles as a nutritious snack for teenagers.

Abstract

Background: Cases of underweight and anemia in Acehnese toddlers are high, requiring urgent intervention. A viable alternative is local food-based supplemental feeding, using high-protein and iron-rich meals. One of the examples is the innovative instant kanji rumbi porridge, which is made from Aceh's local protein sources. Objectives: The study aimed to analyze the effect of instant kanji rumbi porridge on hemoglobin (Hb) levels and the anemia status of underweight toddlers through a cluster-randomized control trial design. Methods: The study was conducted in three community health centers in Aceh Besar district and 15 posyandu (integrated service posts) clusters. 46 subjects selected based on the inclusion and exclusion criteria (23 in the intervention group and 23 in the control group). The intervention of instant kanji rumbi porridge was administered for 3 months, with each participant consuming it twice daily. Results: The instant kanji rumbi porridge intervention was successful in reducing the anemia rate from 92.3% of anemic toddlers at baseline to 60.7% by the end of the study. The consumption of instant kanji rumbi porridge significantly increased the energy and nutrient intake of the toddlers both before and after the intervention, as well as within the intervention groups. All groups exhibited an increase in Hb levels; however, the rise in the intervention group was substantially greater than that in the control group (p-value=0.013). Conclusions: Instant kanji rumbi porridge has the potential to be used as a complementary food for toddlers to increase macro and micronutrient intake, especially iron, hence elevating hemoglobin levels and reducing anemia in this age group.

Abstract

Abstrak: Pada umumnya, pengusaha kuliner atau ibu rumah tangga menghasilkan limbah minyak goreng dari proses penggorengan, yang dikenal sebagai "minyak jelantah", yang berarti penggunaan minyak berulang kali. Banyak orang, seperti ibu rumah tangga atau pengusaha kuliner, belum menyadari dampak buruk dari mengkonsumsi minyak yang digunakan berkali-kali dan memanfaatkannya sebelum dibuang. Tujuan dari pengabdian ini adalah untuk memberikan pelatihan tentang cara menggunakan minyak jelantah sebagai bahan utama pembuatan sabun. Responden dari kegiatan ini adalah ibu-ibu PKK salah satu desa di Lampung selatan yang berjumlah 25 orang. Responden diberi pretest terlebih dahulu. Sebelum pelatihan, pretest diberikan kepada responden untuk mengetahui sejauh mana pengetahuan mereka tentang pelatihan yang akan diberikan. Setelah pelatihan, posttest diberikan. Hasil analisis deskriptif menunjukkan bahwa pengetahuan ibu PKK meningkat setelah pelatihan, dengan nilai rata-rata pre-test sebesar 8,44% dan nilai rata-rata post-test sebesar 9,08%.Abstract: In general, culinary entrepreneurs or housewives produce waste cooking oil from the frying process, known as "oil used", which means repeated use of oil. Many people, such as housewives or culinary entrepreneurs, are not yet aware of the negative impacts of repeated use of cooking oil and utilize it before throwing it away. The purpose of this service is to provide training on how to use used cooking oil as the main ingredient in making soap. A group of PKK women in Karang Anyar Village, South Lampung, held a demonstration of making soap using used cooking oil. A total of 25 people became respondents. Respondents were given a pretest first. The purpose of this service is to provide training on the use of used cooking oil as a basic ingredient for making soap. The PKK mothers' group in Karang Anyar Village, South Lampung, conducted a demonstration of making soap using used cooking oil. A total of 25 people became respondents. Before the training, a pretest was given to respondents to find out how far their knowledge was about the training that would be given. After the training, a posttest was given. The results of the descriptive analysis showed that the knowledge of PKK mothers increased after the training, with an average pre-test value of 8.44% and an average post-test value of 9.08%.

Abstract

The World Health Organization (WHO, 2021) classifies stunting as a major global health issue with a prevalence of 22% or around 149.2 million children in 2020. Factors such as maternal knowledge about nutrition, maternal attitudes towards meeting children's nutritional needs, and parenting practices are important in determining children's nutritional status and the risk of stunting, which can hurt adulthood. This study aims to examine the impact of maternal knowledge, attitudes, and childcare practices on the incidence of stunting in Central Lampung Regency. This study used a cross-sectional survey design involving 360 children aged 0–59 months selected by purposive sampling from six sub-districts. The data collected included child characteristics, nutritional status, maternal nutritional knowledge, attitudes, and practices using a validated questionnaire from previous studies. The LAZ/HAZ, WLZ/WHZ, and WAZ indicators measured children's nutritional status. Data analysis was done using the Partial Least Square Structural Equation Modelling (PLS-SEM) method with SmartPLS 3.0. The results showed maternal knowledge significantly affected attitudes (p = 0.001 for Attitude1; p = 0.026 for Attitude2) but not parenting practices (p = 0.986). Maternal parenting practices had a significant effect on children's meal frequency (p = 0.000) but not on the incidence of malnutrition (p = 0.259) and stunting (p = 0.174). These findings emphasize the importance of interventions that improve maternal knowledge and parenting practices to reduce the risk of stunting.

Abstract

Bunga telang (Clitoria ternatea L.) diketahui sebagai sumber antosianin yang memiliki warna biru alami yang tumbuh liar di kawasan Asia termasuk Indonesia. Bunga telang memiliki warna biru yang memiliki kandungan kaya antosianin. Bunga telang diketahui sebagai sumber antosianin, dan berpotensi sebagai pewarna biru alami yang tumbuh liar di kawasan Asia, termasuk Indonesia. Senyawa utama berupa glukosida delphinidin merupakan antosianin yang bertanggung jawab atas warna biru bunga telang biru. Antosianin adalah pigmen yang larut dalam air, termasuk dalam flavonoid, dan terdapat di hampir semua buah-buahan, dan sayuran pada konsentrasi yang bervariasi. Terdapat 635 antosianin dibedakan berdasarkan posisi serta jumlah gugus metoksil dan hidroksil dalam struktur dasar antosianin. Studi ini bertujuan untuk membahas antosianin berasal dari bunga telang dapat menurunkan status glukosa darah penderita diabetes melitus. Salah satu manfaat biologis antosianin adalah sebagai antidiabetes. Ekstrak tumbuhan kaya antosianin dapat memperbaiki konsekuensi terkait diabetes dengan mengurangi penyerapan glukosa, stres oksidatif, sekresi insulin, sensitivitas insulin, toleransi glukosa, penyerapan glukosa, konsumsi glukosa, aktivitas antioksidan. Oleh karena itu, kandungan antosianin bunga telang sangat bermanfaat bagi kesehatan manusia dalam upaya pencegahan dan sebagai terapi antidibetik bagi penderita diabetes melitus. Diperlukan pengembangan produk baru bunga telang dengan tidak mengurangi sifat fungsionalnya agar manfaat kesehatan bagi yang mengonsumsinya tetap terjaga.

Abstract

Kebugaran kardiorespiratori merupakan salah satu cara dalam mengatasi masalah obesitas dan terjangkit penyakit kardiometabolik remaja di masa depan. Tujuan penelitian ini adalah untuk menganalisis hubungan indeks massa tubuh (IMT), persen lemak tubuh (PLT), rasio lingkar pinggang dan panggul (RLPP) dengan nilai VO2max siswa SMA Negeri 12 bandar lampung. Penelitian ini menggunakan desain cross-sectional dengan subjek siswa kelas X SMA Negeri 12 Bandar Lampung sebanyak 94 siswa. VO2max diukur dengan menggunakan Queens College Step Test. IMT dihitung dengan menggunakan rasio berat badan dan tinggi badan. Bioelectrical Impedance Analysis untuk mengukur PLT. Pita ukur dengan ketelitian 0,01 cm untuk mengukur RLPP. Uji Rank Spearman digunakan untuk menganalisis hubungan IMT, PLT, dan RLPP dengan nilai VO2max. Terdapat hubungan indeks massa tubuh (p = 0,001, r =0,335) dan persen lemak tubuh (p = 0,000, r = -0,563) dengan nilai VO2max, namun tidak untuk rasio lingkar pinggang panggul (p = 0,284, r = 0,112). Kesimpulan dari penelitian ini terdapat hubungan indeks massa tubuh dan persen lemak tubuh dengan nilai VO2max, namun tidak untuk RLPP.
