Abstract

Salah satu tujuan dari mata kuliah Kimia Makanan adalah mahasiswa mampu menerapkan hasil belajar Kimia Makanan pada pemilihan makanan kemasan. Tujuan penelitian ini adalah untuk mengetahui gambaran mengenai penerapan hasil belajar Kimia Makanan mahasiswa prodi Pendidikan Tata Boga pada pemilihan makanan kemasan. Metode penelitian yang digunakan adalah metode deskriptif. Anggota populasi sebanyak 107 orang dengan anggota sampel dalam penelitian ini sebanyak 52 orang yang terdiri dari mahasiswa Tata Boga angkatan 2008, 2009 dan 2011 dengan teknik Proportionate Stratified Random Sampling. Instrumen yang digunakan berupa kuesioner (angket) tertutup. Hasil penelitian menunjukkan bahwa penerapan hasil belajar Kimia makanan mahasiswa prodi Pendidikan Tata Boga pada pemilihan makanan kemasan berupa produk bakery dan konfeksioneri (45%) dengan alasan rasanya enak. Produk beku (42%) dengan alasan komposisi bahan/kandungan kimianya. Produk makanan (44%) dengan alasan komposisi bahan/kandungan kimia. Produk minuman (46%) dengan alasan komposisi bahan/kandungan kimia. Peneliti menyimpulkan bahwa penerapan hasil belajar Kimia Makanan mahasiswa prodi Pendidikan Tata Boga  berada pada kriteria cukup diterapkan dan dapat disimpulkan bahwa sebagian besar responden memilih tersebut dengan alasan komposisi bahan/kandungan kimianya. Saran dari hasil penelitian ini ditujukan pada tenaga pengajar di Prodi Pendidikan Tata Boga untuk memberikan pengarahan yang lebih intensif pada saat pembelajaran mata kuliah Kimia Makanan agar  mahasiswa dapat menerapkan hasil belajar Kimia Makanan dalam kehidupan sehari-hari.

Abstract

The prevalence of stunting in children under five is influenced by genetic factors and nutritional status originating from direct nutritional intake. This study aims to determine the contribution of genetic factors and food intake to the occurrence of stunting in toddlers in the Rajapolah Community Health Center area. This research used an observational methodology with a case-control design involving a total of 66 toddler participants. Among them, 33 people were identified as having stunting (with height-for-age Z-score < -2 SD), while 33 people had normal nutritional status (height-for-age Z-score => -2 SD). The participants were selected using purposive sampling. Data analysis includes applying the unpaired T test for normally distributed data, as well as the Mann-Whitney test for non-normally distributed data. The results of this investigation highlight significant differences in genetic aspects of height (both father and mother) between the stunted and non-stunting toddler groups (with p values of 0,029 and 0.046, respectively). In addition, nutritional intake, including energy (p-value<0,001), protein (p-value<0,001), fat (p-value=0,01), and carbohydrates (p<0,001), was between the two groups. Based on these findings, it can be concluded that genetic factors (in the form of parental height) and nutritional intake (including energy, protein, fat and carbohydrates) have a significant influence on the occurrence of stunting in toddlers. Therefore, this research is a basis for designing interventions aimed at mitigating the problem of stunting within the operational scope of the Rajapolah Community Health Center.

Abstract

The incidence of stunting under five is also related to the low level of knowledge in providing food intake that can meet children's needs. Appropriate intervention is expected to be able to deal with stunting incidents which can be irreversible at a later stage This study aimed to determine the effect of developmental stimulation interventions and providing MP-ASI nutrition education on stunted children under five. The design of this study was experimental with pre and post design. This study used educational media MP-ASI modules and stimulation, detection, early intervention of child growth and development (SDIDTK) by first conducting developmental screening using a developmental pre-screening questionnaire (KPSP). The intervention is carried out for 1 month. The subjects in this study were 44 stunted toddlers in Condong Village using a purposive sampling method. For data that were not normally distributed, the Wilcoxon test was used to determine the significance of the effect of the intervention, and for normally distributed data, a paired t-test was used. There were significant differences in the variables of weight, height, nutritional status, height/age, and energy intake of stunting toddlers before and after the intervention (p-value<0,05). However, there were no significant differences in the variables of protein, fat intake and child development (p-value>0,05). It is necessary to carry out further research related to the duration of providing child development stimulus to stunting toddlers, so that the results of changes in child development can occur significantly.

Abstract

Penggunaan air dalam kemasan mengalami peningkatan konsumsi di Indonesia, salah satunya adalah penggunaan air galon. Bentuk pencemaran yang dapat terjadi pada air galon isi ulang adalah karena saat proses pencucian yang rentan terhadap kontaminan dan menjadi peluang terjadinya penyebaran bakteri. Penelitian ini bertujuan untuk menganalisis total coliform dan fecal E.coli pada sampel air galon di PT. XYZ. Pendekatan yang digunakan, yaitu secara kuantitatif deskpriptif. Dalam penelitian ini diberikan perlakuan pada dua suhu, yaitu 36 ˚C dan 40 ˚C dengan satu pengambilan hasil uji. Analisis yang digunakan dalam pengujian Total Coliform dan Fecal E-coli dengan menggunakan acuan MA PPOM 61/MIK/06, metode ini digunakan untuk dapat melihat adanya pertumbuhan koloni bakteri aerob mesofil setelah cuplikan diinokulasikan pada media lempeng agar dengan cara tuang dan diinkubasi pada suhu yang sesuai. Media padat yang digunakan dalam pengujian ini adalah ENDO dan MFC. Hasil dari penelitian dengan menggunakan suhu dengan Methode For Water and Waste Water 21th Edition Section 9100 tidak ditemukannya koloni bakteri E.coli pada air isi ulang galon atau hasil uji koloni nol (0). Sehingga air isi ulang dapat dikonsumsi dengan baik meskipun penelitian ini tidak mengambil sampel secara menyeluruh dari bagian lain, namun tidak menurunkan kewaspadaan terhadap indikator kualitas air minum isi ulang galon.

Abstract

Iron deficiency anemia in toddlers can be prevented by introducing complementary foods alongside breastfeeding. Fish, rich in protein and iron, offers a valuable nutritional source for young children, but proper processing is crucial. This research investigated the impact of fish-based complementary food processing practices (known as MP-ASI in Indonesia) on the nutritional intake and hemoglobin levels of children under five in Tiro District, Pidie Regency. Using a quasi-experimental design, this study involved 40 toddlers from the stunting-prone area of Tiro District, Pidie Regency, along with their mothers as respondents. The toddlers, aged 12-36 months without severe illnesses, were included in the study. The intervention comprised educating and practicing complementary food processing. Before-and-after intervention comparisons showed significant improvements in energy, carbohydrate, protein, zinc, and iron intake levels. Additionally, there was a notable increase in the average hemoglobin (Hb) level, rising by 1.06 g/dl after one month of fish-based complementary food processing intervention. In summary, this intervention effectively enhanced the nutritional quality of children's intake and increased their hemoglobin levels, contributing to the prevention of iron deficiency anemia in toddlers.

Abstract

Hunger is a condition of food insecurity. One of the efforts that can be made to reduce the incidence of food insecurity is to maintain food security, especially in households. This is an analytic observational study with a cross-sectional design with a random sample of 60 households in Caringin district, Bogor regency. Assessment of household food availability was based on a food availability questionnaire consisting of several types of food groups. Income and expenditure were measured by assessing household income. The condition of household food diversity was measured using the HDDS questionnaire. The chi-square test was used to analyze the relationship between consumption behavior, income, household expenditure, and household food security. There was a relationship between income (p=0.00) and expenditure (p=0.00) with household food security, while consumption behavior is not (p=0.14). It is concluded that there was a relationship between income and expenditure on food security, but behavior did not show an insignificant relationship. There needs to be an in-depth analysis to find other factors influencing food security apart from the variables examined in this study.

Abstract

Latar belakang - Covid-19 adalah penyakit yang yang disebabkan oleh Severe Acute Respiratory Syndrome Coronavirus-2 (SARS-CoV-2) S. Virus ini mudah menular ke manusia melalui tetesan cairan (droplet) yang berasal dari tubuh manusia. Dalam upaya pencegahan penanggulangan Covid-19 maka perlu peningkatan imunitas tubuh dengan pangan fungsional melalui media gizi yang tepat. Media gizi merupakan alat bantu untuk mempermudah penyampaian pesan-pesan gizi dan pesan kesehatan lainnya.Tujuan – Tujuan dari pengabdian ini adalah untuk mengetahui pengaruh edukasi gizi terhadap pengetahuan kader posyandu.Metodologi– Pengabdian ini dilakukan di 2 posyandu di kecamatan Tawang yaitu Posyandu Mawar dan Posyandu Anggrek merah. Total jumlah responden sebanyak 76 orang yaitu seluruh ibu-ibu dilingkungan Posyandu tersebut. Pengabdian dilakukan dengan cara pemberian materi mengenai pangan fungsional yaitu tempe dan oncom dalam meningkatkan imunitas tubuh serta demo masak cara pengolahan kedua bahan tersebut. Uji beda t-test digunakan untuk mengetahui perbedaan pengetahuan responden.Hasil – Hasil pemberian edukasi gizi pada responden menunjukkan bahwa terdapat perubahan pengetahuan signifikan terhadap pengetahuan (p<0,05).Kesimpulan – Pemberian edukasi pangan fungsional dengan media penyuluhan dan demo masak dapat meningkatkan pengetahuan para kader porsyandu.Batasan Pengabdian – Pengabdian ini hanya sebatas 2 posyandu di kecamatan Tawang Kota TasikmalayaOrisinalitas/nilai – Pengabdian ini menggunakan metode penyuluhan dan demo masak pembuatan produk berbahan dasar tempe dan oncom

Abstract

Background: Children who often suffered from diseases will affect their nutritional status.Purpose: To determine the risk factors of disease history with nutritional status among stunted children under-five in Pidie Jaya Regency.Methods: A descriptive-analytic study with a cross-sectional design. Total sample were 34 children. Weaning initiation patterns and disease history were obtained through interviews with questionnaire. The nutritional status among children under five were measured by anthropometric. Data were analyzed using chi-square test.Results: Children's disease history in the last three months were correlated with the nutritional status on the HAZ index (P-value = 0.015 (0.05) with OR = 6.0. There was no correlation betweeen disease history with the nutritional status by WAZ and WHZ index (P-value 0.05).Conclusion: The history of the disease in the last 3 months has a significant relationship with HAZ of children under five.

Abstract

Background: Coronavirus 2019 (COVID-19) is a respiratory disease caused by corona virus. Smokers are the most vulnerable group form Covid-1. Dirty hands can spread disease by providing entry to pathogens, bacteria, or viruses. Handwashing could be effective and efficient prevention to prevent covid-19 infection.Objective: To determine the relationship between gender and smoking habits, handwashing and nutritional behavior among respondents.Methods: A descriptive-analytic study with a cross-sectional design. Respondents were 966 people who lived in Bengkulu Province. Data collection was carried out by online questionnaire which were distributed through WhatsApp media. Data analysis used the chi-square test.Results: There were significant relationship between gender and smoking habits (p = 0.003), gender and handwashing (p = 0.000), gender and nutritional behavior related with fresh food consumptions (p = 0.026). There were no relationship between gender and nutritional behavior related to preserved/instant foods consumption (p = 0.463), nutritional behavior and fruit-vegetable consumption habits (p = 0.090).Conclusion: There is a relationship between gender and smoking and handwashing habits.

Abstract

Applying a clean and healthy lifestyle is one of the measures to prevent the massive transmission of COVID-19. This study aimed to determine the application of a clean and healthy lifestyle and social-physical distancing carried out by Indonesian students during the new normal of COVID-19. This research was conducted in June 2020 with a cross-sectional study approach, with the number of respondents being 5,924 students in Indonesia. The technique of filling out the questionnaire was done online by Google Forms. Furthermore, respondents would be asked to fill in the available consent letter and answer questions. Based on the results, most respondents were female students with majors in health (3,982 respondents) from undergraduate study programs (2,529 respondents). The place of residence during the pandemic was staying home with the family (2,715 respondents). A clean and healthy lifestyle involves several variables. Those were included touching eyes, nose, and mouth; using hand sanitizer; keeping a mask; opening the door with elbows; touching public equipment; shaking hands; touching with family; washing hands with soap; cleaning; changing clothes; washing masks; personal equipment; and washing hands directly after arrival had a significant relationship, with p<0.005, and p<0.002 for soaking clothes was also significantly related. Therefore, the clean and healthy lifestyle conducted by respondents could be undergone improvement. Also, respondents did not follow the health protocols, which might trigger COVID-19 transmission.
