Abstract

Stunting yaitu balita yang memiliki kondisi tinggi badan yang kurang dibandingkan dengan umurnya. Ada beberapa faktor-faktor yang bisa mengakibatkan terjadinyastunting pada balita, salahsatunya asupan karbohidrat dan protein. untuk menganalisis hubungan asupan karbohidrat dan asupan protein dengan kejadianstunting pada balita (24-59 bulan). Penelitian ini menggunakan metode casecontrol yang dilakukan di Kelurahan Karanganyar Kecamatan Kawalu Kota Tasikmalaya. Sampel dalam penelitian ini sebanyak 50 balita untuk setiap kelompok kasus ataupun kelompok kontrol, teknik pengambilan sampel menggunakan teknik quota sampling. Analisis data dalam penelitian ini menggunakan uji Chi Square. Hasil penelitian menunjukkan asupan energi (OR=6,111; 95% CI: 2,201 – 16,965)), asupan protein (OR=5,160; 95% CI: 2,016 – 13,207) berhubungan dengan kejadian stunting pada balita (24-59) di Kelurahan Karanganyar Kecamatan Kawalu Kota Tasikmalaya.

Abstract

Low breastfeeding is a problem that must be faced together because it can affect children's lives in the future. The lack of exclusive breastfeeding can interfere with child growth and development. Based on several studies in Indonesia, one of the factors that influence the low rate of exclusive breastfeeding is the lack of family support. Exclusive breastfeeding in West Java province in 2018 reached 57.97%. This number is still below the national target (65.16%). Based on the information from the Tasikmalaya City Health Office, the coverage of exclusive breastfeeding in Tasikmalaya City in 2018 reached 69.00%, but has not reached the target. The purpose of this study was to determine the support of husbands, parents, and in-laws in exclusive breastfeeding. This study used a qualitative method of focus group discussions (FGD). This method presented a direct relationship between the researcher and the person providing the information, making it possible to gain insight into the attitudes, motivations and behavior of the target towards the support and barriers to exclusive breastfeeding. There were four informants in this study. The results of this study indicated that the factors that support the success of exclusive breastfeeding in this study were the wishes of the baby's own mother, support from her husband, the baby's grandmother, and health workers who assisted in childbirth.

Abstract

Mothers as the main caregivers of children in providing feeding practices must be based on knowledge, attitudes, and good practices. The purpose of this study was to see the effect of stunting prevention through participatory counseling regarding the application of balanced nutrition to toddlers by involving local preachers on the mother's knowledge, attitudes, and nutritional intake of stunting toddlers in the stunting locus village, Gedong Tataan district. This researchwasquasi-experimental with a pre and post-test control group design. The research subjects were 21 stunted children under five in the treatment group and 21 stunted children under five as controls.The treatmentgroup was given participatory counseling intervention involving posyandu cadresand local preachers, while the control group was given counseling about balanced nutrition by posyandu cadres. Counseling was carried out for 3 weeks in a row onthe subjects of the treatment and control groups. Wilcoxon Rank Test and Mann Whitney were used to seedifferences in each group on knowledge, attitudes, and nutrient intake. This study showed that there were significant differences in knowledge (p=0,000), attitudes (p=0,000), energy intake (p=0,008), and protein (p=0,000). Stunting prevention interventions through participatory counseling on balanced nutrition involving local preachers have proven effective in increasing mothers' knowledge and attitudes about balanced nutrition as well as the nutritional intake of stunted children under five.

Abstract

The Stunting rate in Seluma Regency is quite high in Bengkulu Province reaching 38.5 percent. The decline in the Stunting rate in Seluma in 2019 was 10.35 percent or down 28.15 percent from 38.5 percent. The purpose of this study was to analyze the effect of providing fish-based semi-finished food (analog sausage) as an alternative to increasing protein adequacy to reduce stunting rates in Seluma Regency. The study used a quasi-experimental design by presenting analog sausages to children under five, which was held from July to November 2021. The research location is in Seluma Regency. The population is children under five in Seluma Regency with a total sample of 75 children under five determined by purposive sampling. The intervention was carried out by giving 50 g/day sausages in intervention group I and 100 g/day in intervention group II, while the control group was given 50 g/day commercial sausages with an intervention duration of 4 weeks. Data analysis using the Anova test to analyze differences in energy and protein consumption and status of the intervention and control groups. The results showed significant differences in energy adequacy levels (TKE) and protein adequacy levels (TKP) in the three groups before and after the analog sausage intervention. The results of the Anova test showed that there was no significant difference in nutritional status in the three groups (p0.05)

Abstract

Patient eating satisfaction is an indicator of the success of organizing food in the hospital. One way to evaluate the success of organizing a patient's meal is from the remaining food. Currently, there are many hospitals with leftover food from patients that exceed the established standards. The aim of the study was to analyze the food satisfaction of inpatients with leftovers at hospital of dr. H. Abdul Moeloek, Lampung Province. This type of analytic observational research with a cross sectional design. The number of samples in this study were 66 people. The chi-square test was used to analyze the relationship between patient satisfaction and food waste. There is a relationship between taste (p=0.000), time of distribution (p=0.028), and the appearance of the waitress (p=0.028) and food waste, and there is no relationship between the completeness of cutlery and food waste (p=0.095). This study shows that there is a significant relationship between the taste, time of distribution, and the appearance of the waiter with leftovers, but not the completeness of cutlery. It is recommended that the Nutrition Installation of dr. H. Abdul Meoloek Hospital conduct an evaluation to improve the taste of food, the right time of distribution, the appearance of better waiters.

Abstract

Daya tahan tubuh yang kuat merupakan salah satu kunci terhindar dari infeksi virus COVID-19. Selain makanan bergizi, asupan suplemen dan minuman herbal juga diyakini dapat meningkatkan daya tahan tubuh seseorang. Penelitian ini bertujuan untuk melihat gambaran asupan konsumsi suplemen dan herbal pada mahasiswa sebelum dan selama pandemi COVID-19. Penelitian ini menggunakan desain observasional dan metode potong lintang dengan menyebarkan kuesioner online via google form pada mahasiswa di Indonesia. Pengisian kuisioner online dibuka pada bulan September hingga Oktober 2020. Pemilihan subjek pada penelitian ini dilakukan secara non random sampling yaitu mahasiswa perguruan tinggi di Indonesia, berusia 18-25 tahun, bersedia mengikuti penelitian dan menyelesaikan pengisian kuesioner, Sebanyak 3.024 subjek berpatisipasi. Hasil penelitian menunjukan asal daerah berhubungan erat dengan konsumsi suplemen dan herbal sebelum dan selama pandemi COVID -19 (p value <0,05), sedangkan rumpun ilmu berhubungan erat dengan konsumsi suplemen selama masa pandemi COVID -19 (p value 0,026).

Abstract

Telang flower (Clitoria Ternatea L.) is one of the herbal plants that can be used as a functional drink in the form of tea which has a high antioxidant content. This study aims to analyze the effect of shape, temperature, and brewing time on organoleptic properties and antioxidant activity of Telang flower herbal tea. The design of this study was an experimental study with a factorial randomized design. Tea brewing was distinguished by 3 factors, namely shape, temperature, and brewing time. Panelists used in this study were semi-trained panelists to assess organoleptic as many as 30 people. The organoleptic test used was a hedonic test and hedonic quality based on color, aroma, and taste attributes were assessed using a 5 scales questionnaire. The shape of the flower used in this study was the shape of a whole flower (B) and a smooth flower (H). The temperature (M) used consisted of 3 levels, namely M1 (750C), M2 (850C), and M3 (950C). The brewing time (T) used consisted of 2 levels, namely T1 (5 minutes)17 and T2 (9 minutes). Statistical analysis in this study was ANOVA and Duncan's further test was used to analyze the effect of shape, temperature, and brewing time on hedonic quality and hedonic. HM1T2 treatment is a formula chosen by the panelists based on the attributes of color, taste, and aroma. Based on the analysis of the antioxidant capacity of the selected HM1T2 was 135,29 ppm (moderate antioxidant activity). The conclusion of this study showed that the panelists preferred the treatment of HM1T2, namely smooth flowers with a temperature of 75oC and a brewing time of 9 minutes based on the attributes of color, taste, and beverage aroma.ABSTRAKBunga telang (Clitoria Ternatea L.) merupakan salah satu tanaman herbal yang dapat digunakan sebagai minuman fungsional berupa teh yang memiliki kandungan antioksidan yang tinggi. Penelitian ini bertujuan untuk menganalisis pengaruh bentuk, suhu, dan lama penyeduhan terhadap sifat organoleptik dan aktivitas antioksidan teh herbal bunga telang. Desain penelitian ini adalah eksperimental studi dengan rancangan acak faktorial. Terdapat tiga faktor penyeduhan yang diamati, yaitu bentuk, suhu, dan lama penyeduhan. Panelis yang digunakan dalam penelitian ini adalah 30 panelis semi terlatih untuk menilai sifat organoleptik. Uji organoleptik yang digunakan yaitu uji hedonik dan mutu hedonik berdasarkan atribut warna, aroma dan rasa yang dinilai dengan menggunakan kuesioner 5 skala. Bentuk bunga yang digunakan pada penelitian ini yaitu bentuk bunga utuh (B) dan halus (H). Suhu (M) yang digunakan terdiri dari 3 taraf yaitu M1 (750C), M2 (850C), dan M3 (950C). Lama penyeduhan(T) yang digunakan terdiri dari 2 taraf yaitu T1 (5 menit) dan T2 (9 menit). Aktivitas antioksidan dianalisis menggunakan metode DPPH. Hasil uji organoleptik dan aktivitas antioksidan dianalisis menggunakan metode ANOVA dan uji lanjut Duncan. Perlakuan HM1T2 merupakan formula terpilih oleh panelis berdasarkan atribut warna, rasa, dan aroma. Berdasarkan analisis kapasitas antioksidan terpilih HM1T2 yaitu sebesar 135,29 ppm (aktivitas antioksidan sedang). Kesimpulan pada penelitian ini menunjukkan bahwa panelis lebih menyukai perlakuan HM1T2 yaitu bunga bentuk halus dengan suhu 75oC dan lama penyeduhan 9 menit berdasarkan atribut warna, rasa, dan aroma.Kata kunci: bentuk, suhu, lama penyeduhan, teh bunga telang

Abstract

Abstrak: Stunting merupakan kondisi gagal tumbuh pada anak balita akibat kekurangan gizi kronis sehingga anak lebih pendek untuk usianya. Tujuan dari pengabdian ini berfokus pada pengembangan potensi pengolahan bahan pangan lokal yaitu sosis berbahan dasar ikan patin untuk meningkatkan konsumsi zat gizi terutama protein sebagai upaya pencegahan stunting pada balita melalui metode penyuluhan dengan media booklet dan demonstrasi pembuatan sosis berbahan dasar ikan patin yang bekerjasama dengan Kelompok Wanita Tani yang berlokasi di Kelurahan Parakannyasag Kecamatan Indihiang Kota Tasikmalaya dengan jumlah responden sebanyak 31 orang. Responden diberikan pretest terlebih dahulu sebelum pemberian edukasi, untuk mengetahui sejauh mana pengetahuan responden terhadap materi yang akan diberikan. Selanjutnya posttest diberikan setelah materi edukasi tersampaikan. Berdasarkan hasil analisis deskriptif diperoleh nilai rata-rata pretest responden 6,55% dan pada posttest 8,23%. Hal ini berarti terjadi peningkatan nilai pengetahuan siswa setelah mendapatkan edukasi.Abstract: Stunting is a condition of failure to thrive in children under five due to chronic malnutrition so that children are shorter for their age. The purpose of this service focuses on developing the potential for processing local food ingredients, namely sausages made from catfish to increase the consumption of nutrients, especially protein as an effort to prevent stunting in toddlers through counseling methods with booklet media and demonstrations of making sausages made from catfish in collaboration with the farmer women's group located in Parakannyasag Village, Indihiang District, Tasikmalaya City with a total of 31 respondents. Respondents were given a pretest before giving education, to find out the extent of the respondent's knowledge of the material to be given. Furthermore, the posttest is given after the educational material is delivered. Based on the results of the descriptive analysis, the average pretest value of the respondents was 6.55 and the post-test was 8.23. This means that there is an increase in the value of students' knowledge after receiving education.

Abstract

One effort to improve nutritional status is consuming nutritious food and nutrition education for children to instill healthy eating habits from an early age. The purpose of this study was to analyze the effectiveness of providing snacks on the nutritional status and nutritional intake of adolescents. This type of research was a quasi-experimental design with a one-group pre-posttest design without a control group. The research subjects were adolescents aged 11-14 years. Snacks are given for 1 month that meets ± 20% energy and ± 8% protein and ± 15% fat. T-test to analyze the nutritional status of adolescents and nutrient intake before and after giving the distraction food. The results of this study showed that providing distracting food could increase body mass index (p-value=0,000), student weight (p-value=0,000), intake of protein (p-value=0,000), vitamin C (p-value=0,0008), and zinc (p-value=0,0004), but height, carbohydrate intake, and iron intake had no significant effect (p-value>0,05). This study concluded that the provision of snack food effectively increased students' nutritional knowledge, student weight, and intake of protein, vitamin C, and zinc, but height and body mass index, as well as carbohydrates and iron, did not increase significantly. The suggestion from this study is that distraction for adolescents is highly recommended to improve nutritional status so schools should be able to make a policy in providing distracting food as a program to improve adolescent nutrition at school.

Abstract

The COVID-19 pandemic raises the likelihood of food insecurity and affects the nutritional status of children. This study aims to examine the relationship between household food poverty and children's dietary diversity. The cross-sectional study has done at Lhokseumawe City and North Aceh District. A sample of 289 children aged 12–59 months participated in this study. The Food Insecurity Experience Scale (FIES) was used to measure household food insecurity. Meanwhile, the Individual Dietary Diversity Score (IDDS) was done to assess children's dietary diversity. The Chi-square was employed to analyze the association between household food insecurity and children's dietary diversity. The prevalence of household food insecurity was 8,3%, consisting of 5,5% moderate food insecurity and 2,8% severe food insecurity. Most children had diverse food consumption (88,6%). However, 11,4% of children had low dietary diversity. Household food insecurity was significantly correlated with children's dietary diversity (p= 0,002). Conclusion, the COVID-19 pandemic indirectly impacts household food insecurity, which can worsen the condition of food consumption for toddlers, especially regarding diversity in food consumption. A strategy is required to assist food-insecure households to maintain and increase children's dietary diversity.
