Abstract

Background: Young women can suffer from anemia due to monthly menstruation and by having many activities without adequate iron-filled nutrition. Otherproblems found on them are overweight and obesity. The data show that one with overweight or obesity can lead to iron deficiency anemia (IDA) along with increasingproinflammatory cytokines, which will cause the transcription of hepcidin. The increaseof hepcidin transcription will inhibit the absorption of iron from the intestine into the circulation, inhibiting spending iron reserves into circulation, and inhibitingthe release of iron recycled from splenic macrophages. This can cause IDA. The purpose of this study was to obtain the proportion of iron deficiency anemia in overweight or obese young women.Methods: The design of this study was cross sectional using purposive sampling. The subjects of this study were the student from fiveselected Senior high schools inBoyolali, Central Java, Indonesia. The determination of IDAis done by using hemoglobin and indexes of erythrocytes. Results: This study was the follow-upof the previous study, which was conducted to 14 obese and/or overweightyoung women withanemia From 14 subjects, there wasone subject suffered from other anemia and 13 subjects with IDA (using index erythrocytes examination). Their mean of MCV was 72.68±4.29fl, MCH was 23.08±2.63pg, and MCHC was 35.21±0.65 %.Conclusions: From this study, almost all overweight or obeseyoung women with anemia were indicated as IDA (92.8%).

Abstract

Vitamin C is an essential micronutrient with important antioxidant and physiological roles. However, it is highly unstable during processing due to its sensitivity to heat, oxygen, and light. This scoping review mapped evidence on drying-based encapsulation techniques: freeze drying, spray drying, and foam-mat drying. It examines their effect on the vitamin C level in fruit powder. A systematic search was conducted in PubMed, ScienceDirect, Springer, MDPI, and Google Scholar for studies published between 2015 and 2025. The search followed the PRISMA-ScR framework. Seven studies met the criteria and covered acerola, camu-camu, banana, açaí, papaya, satsuma mandarin, orange peel, and mulberry. The findings show that freeze-drying was consistently the most effective technique for retaining vitamin C levels. Some studies even reported an increase in vitamin C levels, possibly due to the breakdown of the fruit matrix, which made the nutrient more available. During Spray drying, low retention values (11%) were obtained in banana paste, and almost total retention (99%) was achieved in camu-camu pulp. The retention of mulberry juice during optimized foam-mat drying amounted to a maximum level of 90%. Coating materials, such as gum Arabic (GA) and carboxymethyl cellulose (CMC), provided better stability in vitamin C levels. However, there are some gaps regarding encapsulation efficiency, degradation kinetics, and particular mechanisms of the matrix that could clarify retention rates beyond 100%. Thus, future studies should focus on these parameters for the refinement of scalable yet low-cost drying strategies of functional fruit powders.

Abstract

Anemia is a condition in which the body experiences a lack of Hb in the blood. One of the causes of anemia is the need for iron and protein that is not fulfilled by the daily intake. Snake fruit seed flour and red beans have high potential to be developed into health-beneficial products such as snacks. The purpose of this study was to develop snack bars as a treatment for anemia in adolescent girls and to analyze hedonic tests, microbiological contamination, and nutritional content. The data analysis used was the Kruskal-Wallis test with Dunn's Post-Hoc test. This study shows that the snack bar formulation of snake fruit seed flour and red bean has a statistically significant effect with a p-value <0.05. Based on the level of liking of high school adolescent girls, the most preferred formulations are formulations P0 and P3. The P0 treatment has nutritional content (carbohydrate 43.33%, protein 14.30%, fat 19.70%, total calories 400 Kcal, iron 3.6 mg, vitamin C 24.5 mg, and zinc 4.8 mg) and the P3 formulation has nutritional content (carbohydrate 49.49%, protein 10.71%, fat 13.53%, total calories 360 Kcal, iron 11.4 mg, vitamin C 28.0 mg, and zinc 5.2 mg), so it has the potential to innovate supplementary feeding for anemic adolescent girls.

Abstract

Butterfly pea flowers are rich in anthocyanin and have therapeutic benefits, particularly due to their antioxidant properties. However, their use in the food and pharmaceutical industries is still limited due to their low stability in environmental conditions, which causes degradation, decreased stability and bioavailability. Nanoencapsulation is a potential method for improving the stability and effectiveness of anthocyanin. This review aims to identify various coating materials and encapsulation techniques used to protect  anthocyanin in butterfly pea flowers, as well as to evaluate their effects on the final product's stability, characteristics, and physicochemical properties. Literature search were conducted through PubMed, ScienceDirect, Scopus, and SpringerLink using structured keywords, following the inclusion criteria based on the Population, Concept, Context (PCC) framework and the PRISMA-ScR protocol. A total 7 published articles met the inclusion criteria. The results show that combination gelatin with coating materials such as pectin or maltodextrin was effective and commonly used. The use combination of gelatin+pectin or gelatin+maltodextrin with freeze drying is capable of forming a strong film, binding anthocyanin, stabilising colour, and proceting anthocyanin from degradation due to its low-temperature process, resulting in high encapsulation efficiency, high retention, and good morphology and particele size. In conclusion, no ideal coating material and encapsulation techniques. Further in vivo bioavailability studies are warranted to evaluate the most promising combinations, gelatin + pectin or gelatin + maltodextrin with freeze drying.

Abstract

Background: Obesity is a risk factor for metabolic syndrome which can increase mortality. Obese sufferers often fail to lose body weight (BW) through non-pharmacological therapy. Obesity synthetic drugs can cause side effects, so natural ingredients are needed as alternative therapies.Objectives: This study aims to determine the effect of raja banana peel extract (RBPE) on BW, body mass index (BMI), body fat percentage (BFP), and visceral fat mass in obese male rats.Methods: The research subjects were 30 male Wistar rats weighing 125-200 g, aged eight weeks. Obesity was induced by being given high-fat high fructose (HFHFr) feed for 28 days. Rats were randomized and divided into five groups: the negative control group (C-) was given standard feed and distilled water, the positive control (C+) was given standard feed and orlistat, treatment 1 (T1), treatment 2 (T2), and treatment 3 (T3). Which were given standard feed and RBPE doses of 200 mg/kgBW/day, 400 mg/kgBW/day, and 800 mg/kgBW/day. Data before and after the induction of obesity were analyzed using paired t-tests. BW, BMI, and visceral fat mass were analyzed using the One-Way Analysis of Variance (ANOVA) and Repeated Measure ANOVA tests. BFP was analyzed using the Kruskal-Wallis test and the Friedman test.Results: RBPE can significantly reduce BW (p=0.026), BMI (p<0.001), and BFP (p<0.001). However, all groups had no significant difference in visceral fat mass (p=0.187). T3 was the group with the lowest average BW, BMI, BFP, and visceral fat mass although the highest weight loss during the intervention period occurred in C+.Conclusions: RBPE has the potential as an alternative therapy for obesity because it can reduce BW, BMI, and BFP. Future studies can investigate the effect of RBPE on other obesity parameters such as lipid profiles.
