Abstract

Pada proses pemisahan/ filtrasi di beberapa industri gula menggunakan alat Rotary Vacuum Filter (RVF). Salah satu faktor pengaruh kapasitas produk gula yang dihasilkan adalah proses pemisahan nira dan kotorannya pada alat Rotary Vacuum Filter (RVF) dalam produksi gula di stasiun pemurnian. RVF yang terpasang di beberapa industri gula umumnya dapat memisahkan nira dan kotorannya menghasilkan nira tapis dan blotong dengan tekanan high vakum optimum sebesar -40 cmHg hingga -45 cmHg dan %pol blotong sebesar 0,25 – 3%. Akan tetapi, terjadi perubahan tekanan vakum menjadi -20 cmHg hingga -30 cmHg yang mengakibatkan nilai %pol blotong meningkat menjadi lebih besar dari 3% sehingga berdampak pada jumlah produk gula yang dihasilkan menurun. Oleh karena itu, perlu dilakukan analisis pengaruh tekanan vakum yang diberikan pada RVF terhadap %pol blotong. Tujuan dari penelitian ini adalah mengidentifikasi dampak dari perubahan tekanan high vakum pada RVF terhadap nilai %pol blotong guna mencegah terbuangnya nira dalam blotong. Penelitian ini dilakukan dengan melakukan pengamatan pada alat RVF di lapangan kemudian dilakukan perhitungan kehilangan gula dalam blotong seiring meningkatnya nilai %pol pada blotong menggunakan Microsoft excel. Berdasarkan hasil pengamatan dan perhitungan pada tekanan high vakum sebesar -20 cmHg (%pol = 3,97), -30 cmHg (%pol = 3,14), dan -40 cmHg (%pol = 1,78) menunjukkan bahwa semakin besar tekanan high vakum RVF maka semakin tinggi juga nilai %pol blotong yang dihasilkan sehingga berakibat pada kapasitas produk gula yang semakin menurun dari kapasitas produk yang ditargetkan tiap tahunnya. Hasil penelitian menunjukkan bahwa tekanan high vakum RVF yang efektif dalam menghasilkan nilai pol blotong rendah yaitu -40 cmHg.

Abstract

Breast milk is the best food for babies and has many benefits for feeding babies and mothers. The nutritional content is used for the development of the body's immune system and the baby's brain. One of the obstacles in providing breast milk is the lack of milk production after giving birth. Using katuk leaf juice as a snack product is believed to increase secretion and facilitate breast milk. So far, many boiled katuk leaves are still eaten as a vegetable due to a need for knowledge and skills in making steamed sponge cakes for breastfeeding mothers. Duyu Village. This community service activity aims to increase participants' knowledge of katuk leaf juice-based sponge cake as an alternative snack. The benefits achieved in activity are that participants can learn how to make steamed sponge cake based on katuk leaf juice and can increase the production of breast milk secretion for breastfeeding mothers. The methods that will be used in this training activity include the lecture method, used to explain material about how to make steamed sponge cake; practice method, used to practice how to make steamed sponge cake; Discussion method, carried out after the training activity is completed to find out the participants' responses. This training activity included pregnant and breastfeeding mothers in Duyu Village, Palu City. The type of product being socialized is steamed sponge cake based on katuk leaves. The location of the service is Duyu Village, Palu City. Community Service Activities will be held on August 19 2023.

Abstract

The use of ecoenzyme-based solutions (EE) is one innovation in supporting sustainable food security in drylands. This research and community service project was conducted in Putukrejo Village, Kalipare District, Malang Regency, with the aim of increasing the productivity of cassava and moringa plants while supporting stunting prevention. Ecoenzymes were obtained from the fermentation of household organic waste, brown sugar, and clean water fermented for three months. The solution was applied to cassava and moringa at a dose of 15 per tree dissolved in one liter of water, applied weekly. The results showed an increase in the vegetative growth of moringa and cassava compared to the control group. From a socio-economic perspective, this technology improves the community's skills in production and opens up business opportunities for cassava and moringa-based food products. These findings are in line with the achievement of SDGs 2 (Zero Hunger) and SDGs 12 (Responsible Consumption and Production).

Abstract

Antioksidan merupakan senyawa yang dapat menetralisir radikal bebas sehingga berperan dalam pencegahan penyakit degeneratif. Kabupaten Sigi memiliki potensi pangan lokal kaya antioksidan, seperti buah sukun dan ubi jalar ungu, namun pemanfaatannya masih rendah karena keterbatasan pengetahuan dan keterampilan pengolahan. Kegiatan pengabdian ini bertujuan untuk meningkatkan pengetahuan dan keterampilan masyarakat Desa Beka dalam mengolah sukun dan ubi ungu menjadi brownies sebagai makanan selingan alternatif kaya antioksidan. Metode yang digunakan meliputi ceramah, praktik pembuatan produk, dan diskusi. Peserta kegiatan adalah ibu-ibu rumah tangga di Desa Beka, Kecamatan Marawola, Kabupaten Sigi. Hasil pelatihan menunjukkan adanya peningkatan keterampilan peserta dalam mengolah pangan lokal menjadi produk fungsional yang bergizi, disukai, dan berpotensi memiliki nilai jual. Brownies sukun substitusi ubi ungu yang dihasilkan memiliki tekstur lembut, rasa enak, dan aroma khas. Kegiatan ini tidak hanya memberikan keterampilan teknis, tetapi juga meningkatkan kesadaran masyarakat mengenai pentingnya diversifikasi pangan lokal. Kesimpulannya, produk brownies sukun substitusi ubi ungu berpotensi dikembangkan sebagai usaha rumahan berbasis pangan lokal yang mendukung peningkatan kesehatan dan ekonomi masyarakat.

Abstract

Introduction: Stunting remains a major public health issue in Indonesia, particularly in coastal areas where access to health services and nutrition information is limited. Fishermen’s wives play a vital role in sustaining household economies and ensuring family nutrition. Objective: This program aims to empower fishermen’s wives through the development of Sambusa Mandar, a traditional local food enriched with protein and micronutrients from local resources combined with health education and entrepreneurial capacity building to prevent stunting and improve family welfare. Method: The program was carried out in four stages: coordination, needs assessment, and development of Standard Operating Procedures (SOP) for hygienic sambusa processing;  design and implementation of digital-based promotion through social media and website platforms; training and dissemination, including the use of a sambusa skin-making machine, food safety practices, and business management; and promotion, public dissemination, and program evaluation involving local stakeholders. Result: The program significantly improved beneficiaries’ knowledge of nutrition and food hygiene, increased production capacity from 300 to 600–1000 sambusa skins per day, and standardized product quality through SOP-based processing. Moreover, the adoption of digital marketing expanded product reach and visibility, while health education raised awareness of balanced diets to prevent stunting. The program also enhanced household income and opened new entrepreneurial opportunities for coastal women, aligning with the Sustainable Development Goals (SDGs) 2 (Zero Hunger), 3 (Good Health and Well-being), and 8 (Decent Work and Economic Growth). Conclusion: Empowering fishermen’s wives through nutritious food processing and health education has improved family nutrition, reduced the risk of stunting, and created new economic opportunities. The integration of local food innovation, SOPs, and digital promotion ensures sustainability and supports coastal community welfare.

Abstract

Bencana memiliki dampak yang dapat merugikan manusia, termasuk remaja yang merupakan masa emas dimana anak harus dibekali makanan yang cukup gizi sebagai acuan dasar untuk kelangsungan hidupnya yang akan datang tanpa mengalami gangguan yang akan mengganggu proses tumbuh kembang. Penelitian ini bertujuan untuk mengetahui ketahanan pangan, asupan zat gizi dan indeks masa tubuh (IMT) pada remaja pasca bencana di Kota Palu. Metode yang digunakan adalah survey deskriptif dan dilaksanakan di Sekolah Menengah Pertama (SMP) Negeri 3 Palu yang dekat dengan lokasi bencana gempa bumi, tsunami dan liquifaksi dengan total sampel 96 responden. Hasil penelitian menunjukkan bahwa remaja dengan kategori tahan pangan lebih besar (61,46%) dibandingkan dengan kategori rawan pangan dengan kelaparan (10,42%) dan kategori rawan pangan tanpa kelaparan (28,12%). Kemudian asupan energi dengan kategori kurang lebih besar (98,96%) dibandingkan dengan kategori cukup (1,04%) dan IMT siswa sebagian besar masuk dalam kategori underweight (58,33%). Kesimpulan bahwa remaja yang terkena dampak bencana masih termasuk dalam kategori tahan pangan namun asupan gizi kurang yang mengakibatkan berat badan kurang sehingga berpengaruh pada IMT kategori underweight.

Abstract

Palu, Sigi, and Donggala districts experienced a 7,7 magnitude earthquake on September 28 2018. This incident was declared a national disaster. The impact of the disaster is a decrease in the nutritional status of children under five. Nutritional problems in children under five after the earthquake can be caused by paralysis of health service, lack of availability of clean water, poor environmental sanitation, infectious diseases, and lack of consumption of nutritious food. This research is a descriptive study wich to identify nutritional problems in children under five after the earthquake in Palu, Sigi, and Donggala districts. The type of data used is secondary data, including height, weight, and age. The results showed that the nutritional status of under five children based on the weight for age index were underweight 32,1% and very underweight 16,6%. Nutritional status based on the weight for height index, were malnutrition 13,7% and poor nutrition 4,9%. The nutritional status based on the height for age index were stunting 55,7%. The conclusion that the stunting is a nutritional problem with the highest prevalence after the earthquake. The health of children under five is easily influenced by food security, the environment, and the economy. The high prevalence stunting post-earthquake can be caused by job losses, damage to agricultural land and plantations, disruption of the economic system and development in the area which has an impact on low access to food for families.

Abstract

Stunting pada balita masih menjadi permasalahan kesehatan yang dipengaruhi oleh rendahnya pengetahuan gizi seimbang, keterbatasan ekonomi, serta kurangnya variasi pangan bergizi dalam rumah tangga. Program pengabdian ini bertujuan meningkatkan status gizi anak dan pengetahuan masyarakat dalam pencegahan stunting melalui pemberian makanan tambahan berbasis lokal berupa puding kelor. Kegiatan dilakukan melalui edukasi gizi seimbang, pembuatan dan pembagian puding kelor sebagai PMT. Hasil kegiatan menunjukkan adanya peningkatan absolut sebesar 11,1 atau setara dengan persentase peningkatan 16,3%. Kegiatan ini juga mendapat antusiasme tinggi dari para ibu yang aktif berpartisipasi dalam pembuatan puding kelor dan berkomitmen menerapkannya sebagai alternatif makanan bergizi bagi keluarga. Efforts to Prevent Stunting in Children Through Balanced Nutrition Education and Moringa Pudding Innovation Stunting among toddlers remains a significant public health concern influenced by limited knowledge of balanced nutrition, economic constraints, and a lack of dietary diversity within households. This community service program aimed to improve children's nutritional status and community knowledge in stunting prevention through the provision of locally based supplementary food in the form of Moringa pudding. The activities included balanced nutrition education, preparation, and distribution of Moringa pudding as complementary food. The results showed an absolute increase of 11.1 points, equivalent to a 16.3% improvement in participants’ knowledge. Moreover, the program received a high level of enthusiasm from mothers, who actively participated in the preparation of Moringa pudding and expressed commitment to adopting it as a nutritious alternative food for their families

Abstract

Rasat Eco Dance Studio is one of the cultural community institutions that carries the mission of developing and preserving regional cultural values ​​and carrying out the process of cultural regeneration, especially the culture of the Dayak and Kalimantan tribes. This studio was established and operated on June 6, 2009. Since it began operating, Rasat Eco Dance Studio has carried out a series of cultural activities, one of which is Dance. This studio is located in Tarakan City, North Kalimantan Province. When this institution was first established, it did not have legality, and the administration was still not managed optimally. The management of Rasat Eco Dance Studio is not in accordance with the general procedures in establishing an institution, namely the fulfillment of the legality of the institution, so it is necessary to carry out mentoring and legalization activities regarding the management and administration of the institution to strengthen and increase capacity so that it can continue to work in carrying out cultural missions. The activities carried out include assistance in legalization and mentoring for the completeness of the administration of Rasat Eco Dance Studio and are held in Tarakan City, North Kalimantan Province. The output of this activity is legalization in the form of a deed of establishment of the institution and the completeness of the administration of the Rasat Eco Dance Studio institution.
