Abstract

Each year, 9.6 million people lose their lives to cancer, making it the world's second worst killer. Cancer is a disorder that results from genetic changes and has abnormal growth and spreads to other parts of the body. Cancer treatment is currently done with chemotherapy which has unfavorable side effects, so research needs to be done to determine safer alternatives to cancer treatment. This study aims to determine the activity of bioactive compounds in Arabica coffee beans that have potential as anticancer through identification of target receptors and interaction studies using molecular docking methods against PI3K p110-delta subunit receptors. The results showed that of the 21 compounds, five compounds gave good results, namely compounds 4-O-feruloylqunic acid, 4-O-caffeoylqunic acid, gluconic acid, 3-O-feruloylqunic acid and 3-O-caffeoylqunic acid with bond energy (ΔG) and inhibition constant values of -5.47; -5.33; -4.73; -4.69; -4.40 kcal/mol and 98.02; 123.62; 340.97; 363.82; 591.97 μM, respectively. So that these test ligands/compounds can have potential as PI3K receptor inhibitors in cancer treatment

Abstract

Indonesia is one of the largest banana-producing countries, yet banana peels, which are rich in nutrients, are often discarded as waste. On the other hand, stunting remains a significant health problem, especially in the Jambi region. This community service activity aims to empower PKK women in Simpang Limo Village to process banana peels into healthy cookies as an alternative effort to support stunting prevention. The program was carried out for three months (August–November 2024) involving thirty participants. The methods used included observation, socialization, training on making banana peel flour, and practice in making banana peel-based cookies. The post-training survey results showed a moderate level of knowledge but high interest, with 36.9% of respondents expressing willingness to produce banana peel cookies and 15.4% considering this innovation a positive step in waste reduction. The cookies produced received positive responses, with the community noting their good taste, crunchy texture, and distinctive aroma. This activity shows that the utilization of banana peels has the potential to produce nutritious and economically valuable food products, while also improving the skills of PKK women and potential supporting efforts to reduce stunting.

Abstract

Cancer is one of the leading causes of human death. In 2019, it was reported that cancer was the second (22%) cause of death due to non-communicable diseases in the world's population. Research for alternative anticancer drugs is still being done, including anticancer from plants. One of the plants that have the potential to be developed as an anticancer alternative is the sungkai plant. Sungkai leaves contain many bioactive compounds, one of which is the clerodane-type diterpenoids, peronemins, A2 (1), A3 (2), B1 (3), B2 (4), B3 (5), C1 (6), and D1 (7). The aim of this study was to initial screen the potential of seven Peronemins compounds in Sungkai leaves extract as anticancer candidates. Initial screening was carried out by predicting in-silico anticancer activity of the seven compounds. Dihydrofolate reductase inhibitor (DHFR inhibitor) is one of the anticancer activity screening approaches. DHFR Inhibitor activity from perenomins derivatives with pIC50 values ​​of 0.785 (A2), respectively; 0.785 (A3); 0.799 (B2); 0.799 (B3); 0.799 (C1 and D1). In addition, from compounds 1,2,3,4,5 peronemin derivatives have potential anticancer activity through interaction with the target protein Voltage-gated potassium channel subunit while compounds 6, 7 also have biological activity potential anticancer on target protein Dihydrofolate reductase.

Abstract

Vitamin C is one of the substances needed by the human body which acts as an antioxidant that effectively overcomes the effects of free radicals that damage cells in the body, but vitamin C has properties that are easily oxidized so that innovation is needed to coat (encapsulate) vitamin C in the form of capsules as a drug delivery system. One polymer that can be used for vitamin C encapsulation is cellulose. The cellulose content can be found in the skin and nipah fruit and then synthesized into carboxymethyl cellulose as a vitamin C coating. The microencapsulation method was carried out by mixing 3 g of carrageenan-CMC mixture with variations in the ratio of 1:0; 1:0.5 and 1:1 (%b/b). The encapsulated small beads were made in 200 mL of 2M KCl-CaCl solution by extrusion technique. The microencapsulant was then drained and continued with the crosslinking stage using Glutaraldehyde (GA) 1%. In this in vitro oral simulation study, the encapsulation ratio that produced the best treatment with the highest percentage of drug solubility in the intestine was the ratio (1:0.5), followed by (1:1) and the smallest (1:0) with percentage values of 15.42; 14.06; and 1.67 percent, respectively.

Abstract

The Putat leaf (Planchonia valida) is a plant traditionally used by the community in the Tanjung Lanjut area, Jambi, both as a salad ingredient and as a traditional medicine to treat skin diseases and promote health. This identifies that the putat plant contains chemical compounds that potentially have antioxidant activity. In this study, putat leaf samples (Planchonia valida) that potentially have antioxidant activity. In this study, Planchonia valida (P. valida) leaf samples using n-hexane and ethyl acetate solvents through a multistep maceration process. Subsequently, phytochemical screening and antioxidant activity tests were conducted to obtain information about fractions that have the potential to be further isolated. The extraction percentage with a yield value of 1,28% was obtained in the maceration process. Further isolation was carried out using isolate liquid chromatography and FT-IR instruments. The obtained isolate was in the form of a wet solid, and through characterization, it was classified as a steroid compound suspected to be ergosterol. Free radicals or oxidants have reactive effects on the human body and can trigger various types of diseases. Antioxidants are known to have the ability to inhibit or neutralize free radicals in the human body. This study tested antioxidant activity using the DPPH (1,1-diphenyl-1,1-picrylhydrazyl) method on isolating F1. Isolate F1 was found to have antioxidant activity with a value of 714.637 ppm, falling into the range of weak antioxidant activity

Abstract

Extraction was carried out using n-hexane and ethyl acetate solvents using multistage maceration. Next, phytochemical screening and antioxidant activity tests are carried out to obtain information about fractions that can potentially proceed to the isolation stage. In the maceration process, an extract percentage was obtained with a yield value of 1.39%. Next, isolation was carried out using vacuum liquid chromatography. The isolates obtained were then characterized using UV-Vis and FT-IR spectrophotometer instruments. The isolate obtained was in the form of a wet solid, and if seen through characterization, it belonged to the class of steroid compounds; it was suspected to be an ergosterol compound. Antioxidants are known to have the ability to inhibit and reduce the presence of free radicals in the human body. In this study, antioxidant activity was tested using the DPPH (2,2-diphenyl-1-picrihidazil) method on F1 isolates. The F1 isolate obtained was proven to have antioxidant activity with a value of 99.2265 ppm, which is classified in the strong antioxidant activity range.

Abstract

Mangrove merupakan tanaman agroindustry yang memiliki potensi untuk dikembangkan. Tanjung Solok merupakan daerah pesisir yang dikelilingi oleh tanaman mangorove dimana salah satu jenisnya adalah jeruju. Masyarakat belum mengetahui bahwa jeruju memiliki banyak manfaat diantaranya pada bidang kesehatan sebagai antioksidan, antiinflmasi, antijamur dan antikanker. Selain itu jeruju juga dapat diolah menjadi berbagai produk pangan. Ekstrak daun jeruju telah diteliti memiliki kandungan senyawa golongan flavonoid, polifenol, kumarin, alkaloid, saponin dan terpenoid. Adanya potensi antioksidan dari daun jeruju, membuka peluang dengan pemanfaatannya sebagai teh herbal. Ekstrak daun jeruju juga dapat digunakan sebagai bahan pada pembuatan kerupuk. Melihat adanya potensi pengembangan produk pangan berbahan dasar daun jeruju, maka perlu dilakukan pendampingan kepada masyarakat dalam melakukan pengolahan daun jeruju menjadi produk pangan fungsional. Berdasarkan Evaluasi kegiatan PPM, peningkatan pemahaman dan keterampilan Masyarakat meningkat sebesar 80-87%.

Abstract

This study evaluated the physical characteristics (thickness and surface morphology) and chemical properties (composition and functional groups) of edible films made from cocoa pulp and watermelon rind. Additionally, it investigated the effect of citrulline concentration on the solubility of the film and its impact on extending the shelf life of Jambi potato dodol. The experimental data were statistically analyzed using analysis of variance (ANOVA) to determine the significance of differences among treatments. The citrulline concentration variation factor consisted of two concentration levels, namely 5% and 15%. The results showed that the thickness of the edible film was 0.26 mm for the film containing 5% citrulline and 0.16 mm for the film with 15% citrulline. The viscosity of the film-forming solution influenced the surface morphology of the edible film. A chemical characteristics test was carried out using FTIR analysis, which showed the presence of several different functional groups at various wave numbers. Dodol packaged with edible film demonstrated a relatively good shelf life against microbial growth. The most effective edible film in enhancing resistance to bacterial contamination was the one containing 15% citrullin.

Abstract

Fermentation has been developed to produce a distinctive taste in food, one of which is coffee. Fermentation affects the quality and taste of coffee in coffee beans. This study conducted coffee fermentation using Lactobacillus plantarum bacteria, isolates of Lactic Acid Bacteria. The research method begins with the preparation of Lactobacillus plantarum inoculants which will be used for coffee fermentation, fermentation, total phenol and flavonoid content, caffeine content, chlorogenic acid content, compound analysis, antioxidants, and proximate analysis. Total phenol and flavonoid, caffeine, chlorogenic acid, and antioxidant using the UV-VIS Spectrophotometer instrument. In addition, compound analysis is carried out using GC-MS. This study showed that the bacterium Lactobacillus plantarum would hydrolyze sucrose into simpler sugars with the enzyme invertase and produce organic acids through glycolysis. Liberica coffee fermented using Lactobacillus plantarum bacteria contains phenol compounds, flavonoids, antioxidants, and compound compounds higher than Original Liberica coffee. Meanwhile, the caffeine and chlorogenic acid of Liberica coffee fermented using Lactobacillus plantarum bacteria are lower than Original Liberica coffee. Overall, the chemical compounds of Liberica coffee that have been fermented using Lactobacillus plantarum bacteria are better than Original Liberica Coffee. Liberica coffee beans fermented using Lactobacillus plantarum bacteria have better physical quality and taste than Original Liberica coffee

Abstract

Red Palm Oil (RPO) is the result of refining from Crude Palm Oil (CPO) which still maintains a high level of phytonutrients that are beneficial for health. The benefits of RPO can be used as a nutraceutical source, because RPO acts as a provitamin A and vitamin E. The addition of Lactic Acid Bacteria (LAB) in a product functions as a probiotic with metabolite activity that can inhibit pathogenic microorganism thereby increasing the durability of a product. The addition of LAB to RPO is expected to increase the nutraceutical value by adding probiotic properties to RPO products. Microencapsulation technology can protect the bioactive content of essential oils against unwanted chemical interactions with other components and provide increased stability during processing. This research is expected to be able to provide information about the potential raw material of fermented RPO as a nutraceutical source by showing the profile of RPO before and after the fermentation process, chemical and physical properties of the microencapsulant. The microencapsulation technique used is the extrusion method. Fermentation of the bioactive compound ingredients in RPO using L. casei has a significant effect. RPO after fermentation using L. casei (Red-PalmZym) produces major compounds in the form of 9-Octadecenoic acid, methyl ester, (E)- Fermentation of RPO with L. casei increases the components of chemical compounds contained therein. The stability of the RPO microencapsulated before fermentation provided an effective protection against oxidative damage to the oil and proved that the microencapsulation process can reduce the level of damage to the oil.
