Abstract

Background: Plant-based ice cream made from soy milk has the potential to serve as a lactose-free functional food alternative; however, it often exhibits limitations in texture and sensory acceptance. The addition of whipped cream is expected to improve the physical and sensory characteristics of plant-based ice cream products. Purpose: This study aimed to evaluate the effect of different ratios of soybean milk to whipping cream on the physical and sensory characteristics of carrot and soybean milk ice cream and to determine the best formulation. Method: The research was conducted from may to July 2025 at the food processing laboratory, Faculty of Agricultural Technology, Udayana University. A Completely Randomized Design (CRD) was used with four treatments:P0 (100% Soybean milk:0% whipping cream), P1 (90%:10%), P2 (70%:30%) and P3 (50%:50%), each replicated three times. Observed variables included overrun, melting time, and sensory attributes such as aroma, texture, color, sweetness, mouthfeel, carrot flavor, soybean flavor, and overall acceptance, evaluated using scoring and hedonic tests by 30 semi-trained panelists. Result: Results showed that the soybean milk and whipping cream ratio significantly affected overrun, melting time, color, texture, mouthfeel, and overall acceptance. The highest overrun was obtained in P3(50.10%), while P0 recorded the lowest (14.41%). The melting time increased with higher whipping cream proportions, from 14.17 minutes in P0 to 110.81 minutes in P3. Sensory evaluation revealed significant differences in color, texture, mouthfeel, and overall acceptance, but no significant differences in aroma, sweetness, carrot flavor, and soybean flavor. Principal Component Analysis (PCA) indicated that P2 (70% soybean milk:30% whipping cream) produced the most preferred ice cream, characterized by a soft texture, creamy mouthfeel and the highest acceptance score. These findings suggest that optimizing the ratio of soybean milk and whipping cream can improve the quality and sensory properties of plant-based ice cream.

Abstract

In Indonesia, approximately 15–20 percent of pregnancies and deliveries are prone to complications, and the risk increases if the mother has comorbidities or certain risk factors. These conditions are not only dangerous for the mother, but also for the fetus, and can even increase the risk of death. This community service activity aimed to improve the ability of Posyandu cadres to detect early and refer high-risk pregnancy cases in Ranah Singkuang Village, the working area of the Air Tiris Community Health Center in Kampar District. The training was attended by 15 Posyandu cadres through the delivery of material on risky pregnancies, the use of the Puji Rochyati Score Card (KSPR), and the referral mechanism. In addition to the material delivery, practical guidance on risk factor assessment using the KSPR was also provided. The results showed an increase in cadres' knowledge, with an average post-test score of 91.55 compared to a pre-test score of 79.11. The cadres were also assessed as capable of filling out the KSPR form correctly. The health center was advised to continue the guidance to ensure that community-based early detection remains sustainable.

Abstract

This article examines the paradigm of scientific integration in Islamic religious universities in Sumatra through a comparative and contextual approach. Although studies on scientific integration have grown rapidly, most remain confined to normative discussions and have not sufficiently examined how integration is constructed, interpreted, and implemented within diverse institutional contexts. Using a quasi-qualitative approach based on in-depth interviews, academic observations, document analysis, and focus group discussions (FGDs), this study explores the dynamics of scientific integration in three State Islamic Universities: UIN North Sumatra, UIN Ar-Raniry Banda Aceh, and UIN Raden Fatah Palembang. The findings show that scientific integration is not understood as a singular unification of religious and scientific disciplines, but as a multi-layered epistemological process encompassing philosophical orientations, methodological alignments, and academic practices. Variations in integration paradigms emerge according to each institution’s vision, historical trajectory, and academic strategy, shaping different models of curriculum design, research orientation, and academic culture. These results indicate that the paradigm of scientific integration in Sumatra develops in a dynamic and context-dependent pattern rather than as a standardized institutional model. Beyond the local context, this study offers a reflective analytical framework for understanding scientific integration as a living epistemological process, contributing to broader discussions on Islamic higher education and contemporary global epistemological challenges.

Abstract

ABSTRACT Malnutrition in geriatric patients is not detected early and associated with increased length of hospital stay and mortality. This study aimed to evaluate the effectiveness of the Mini Nutritional Assessment (MNA), Body Mass Index (BMI), Mid Upper Arm Circumference (MUAC), and Subjective Global Assessment (SGA) in determining the nutritional status of geriatric patients at Dr. H. Moch. Ansari Saleh General Hospital, Banjarmasin. The study used an observational design with a cross sectional approach and involved 70 patients aged ≥65 years selected by purposive sampling. Differences between methods were analysed using the Kruskal–Wallis and Mann–Whitney tests, and effectiveness was assessed through sensitivity, specificity, and accuracy. The results showed that the highest prevalence of malnutrition was identified by MNA and MUAC, whereas BMI yielded the lowest proportion. There were significant differences among MNA, BMI, MUAC, and SGA (p = 0.001). MNA had the highest sensitivity (97.56%) and accuracy (78.57%) in detecting malnutrition compared with the other three methods. Therefore, MNA was considered effective and can be recommended as one of the nutritional screening tools for geriatric patients in hospital settings. Keywords: Effectiveness, Instrument, Nutritional Status, Geriatric.  ABSTRAK Malnutrisi pada pasien geriatri masih sering tidak terdeteksi secara dini dan berkaitan dengan peningkatan lama rawat inap serta mortalitas. Penelitian ini bertujuan menilai efektivitas Mini Nutritional Assessment (MNA), Indeks Massa Tubuh (IMT), Lingkar Lengan Atas (LILA), dan Subjective Global Assessment (SGA) dalam menentukan status gizi pasien geriatri di RSUD dr. H. Moch. Ansari Saleh Banjarmasin. Desain penelitian yang digunakan adalah studi observasional dengan pendekatan cross sectional dengan total responden sebanyak 70 pasien usia ≥65 tahun yang dipilih secara purposive sampling. Pada penelitian ini dilakukan uji beda menggunakan kruskal wallis dan mann witney, serta uji efektifitas meliputi: sensitivitas, spesifisitas, dan akurasi. Hasil menunjukkan identifikasi prevalensi malnutrisi tertinggi diperoleh dari MNA dan LILA, sedangkan IMT memberikan proporsi terendah. Terdapat perbedaan bermakna antara MNA, IMT, LILA, dan SGA (p=0,001). MNA memiliki sensitivitas (97.56%) dan akurasi (78.57%) tertinggi dalam mendeteksi malnutrisi dibanding ketiga metode lainnya. MNA dinilai efektif sehingga dapat direkomendasikan sebagai salah satu alat skrining gizi untuk pasien geriatri yang baik digunakan di rumah sakit. Kata Kunci: Efektivitas, Instrumen, Status Gizi, Geriatri.
