Abstract

Background: The occurrence of natural disaster in Southeast Asia due to its location along the Asia Pacific Ring of Fire is high. The consequences of the natural disasters on various aspects, like that social, financial, and food security can be large. This initiative promotes the development of emergency food products to address the daily nutritional requirements of natural disaster victims, ensuring their survival. The specified standard is 2,100 kcal/day, emphasizing a balanced distribution of macronutrients (40-50% carbohydrates, 35-45% fat, and 10-15% protein). Objectives: This literature review explored the potential raw materials for emergency food products in the Southeast Asia. Methods: This review utilized databases from Google Scholar and PubMed websites, employing specific keywords for each identified category to gather the latest literature. The literature obtained was 10 article. Discussions: This review explores solutions to the challenges posed by natural disasters in Southeast Asia, focusing on the potential use of locally available resources as raw materials for emergency food products. Raw materials, including Fish Hydrolyzate Protein (FPH), offer numerous benefits due to their bioactive contents, such as antioxidant, antihyperglycemic, antimicrobial, antitumor, ACE inhibitor activity, calcium binding, and anticoagulant properties, particularly beneficial for vulnerable groups. The review also delves into the elimination of raw materials, the nutritional content of various types of emergency food products, and innovative solutions for emergency food products in Southeast Asia. Conclusions: The potential raw materials identified have the capability to yield innovative emergency food products with both excellent physicochemical quality and health potential.

Abstract

Natural disasters have crucial impacts on food aspects. This problem can be addressed by innovations in nutrient-dense products. However, the reality is that innovation in emergency food products is still minimal, especially in those with high protein content. This research created Mizepi products made from maize flour and Fish Protein Hydrolysate (FPH) for existing emergency food requirements. This organoleptic quality research was conducted on 112 consumer panelists with seven formulations of Mizepi and compared them with maize flour and FPH in grams such as F1 (1:1), F2 (4:7), F3 (4:11), F4 (7:4), F5 (7:11), F6 (11:4), and F7 (11:7) using the Hedonic Test and Just About Right (JAR) on nine scales. Selection of the best formulation was analyzed using the Effectiveness Index Test method. The shelf life test was carried out on the best formulation, namely F4 using the Accelerated Shelf-Life Testing (ASLT) method at temperatures of 35 oC, 45 oC and 50 oC respectively. Samples were observed every 7 days for 28 days. Parameters using water content and Free Fatty Acid (FFA). The organoleptic quality test with hedonic test explained that the product with the most preferred categories is in terms of aroma (F6), color (F1), texture (F4), flavor (F6 and F4), and overall (F4). The most favorable JAR test results for color of all samples were the same, namely yellow, savoriness (F4 and F6), typical savory aroma of corn (F5, F6, F7), typical savory aroma of fish (F3), and crunchy texture (F4). Test results for the shelf life of Mizepi products in the best formulation can be stored well for 46 days at a temperature of 35 oC with water content parameters. The best formulation of F4 meets emergency food requirements, namely it is acceptable in terms of taste, and acceptable.

Abstract

Stunting is a condition of malnutrition that hampers children's physical growth due to inadequate nutritional intake. This condition impacts health, cognitive development, and increases the risk of diseases. The primary causes of stunting include insufficient nutrition, infections, food security, childcare practices, healthcare services, and sanitation. The prevalence of stunting in Indonesia reached 21.6% in 2022. The government has issued Presidential Regulation No. 72 of 2021 to accelerate stunting reduction. To explore the potential of fermented eggs as a nutritional intervention to prevent stunting, this study aims to identify the nutritional benefits of fermented eggs, assess the enhancement of nutrient bioavailability through fermentation, and evaluate the effectiveness of fermented eggs in improving children's nutritional status. This literature review gathers and analyses studies related to the nutritional impact of fermented eggs. Fermentation enhances the digestibility and bioavailability of proteins, fats, and micronutrients such as B vitamins, folate, and iron. This process breaks down complex proteins and fats into simpler, more absorbable forms. Fermented eggs present a potential solution for preventing stunting by improving digestibility and nutrient bioavailability while providing beneficial probiotics that support overall health. Given their nutritional profile, fermented eggs can serve as an effective and sustainable nutritional intervention.

Abstract

Abstract:    This study aims to (1) examine the implementation of Nahwu material using the Rosam Albayani method with mind mapping to improve reading skills at Majelis Taklim Alkalaam, (2) analyze its impact on learners’ understanding of Arabic grammar, and (3) identify the characteristics of the developed textbook suitable for non-formal learning contexts. The research applied the Research and Development (R&D) approach with the ADDIE model (Analysis, Design, Development, Implementation, Evaluation). The process began with a needs analysis of learners from diverse educational backgrounds. Learning materials were designed based on visual mind mapping, validated by experts, and implemented in practice. Instrument testing showed validity, with all items exceeding the r-table value (0.396) at a significance level < 0.05. Reliability analysis produced Cronbach’s Alpha scores of 0.722 (pre-test) and 0.874 (post-test), confirming consistency. Normality tests using Shapiro-Wilk indicated data distribution was normal (pre-test 0.445; post-test 0.221). A paired t-test revealed a significant improvement, with average scores rising from 26.00 to 54.40 (p = 0.000 < 0.05). The findings demonstrate that the Rosam Albayani Nahwu textbook is effective, adaptive, and engaging for learners in non-formal settings, providing an innovative solution for strengthening Arabic grammar comprehension.   ملخص:   يهدف هذا البحث إلى دراسة تطبيق مادة النحو بطريقة الرسم البياني القائم على الخريطة الذهنية في مجلس التعليم "الكلام"، وبيان أثرها في تنمية مهارة القراءة وفهم البنية النحوية، إضافةً إلى تحديد خصائص الكتاب التعليمي المناسب للمتعلمين في البيئات غير الرسمية. اعتمد الباحث منهج البحث والتطوير (R&D) وفق نموذج ADDIE (التحليل، التصميم، التطوير، التطبيق، التقييم). بدأ العمل بتحليل حاجات المشاركين ذوي الخلفيات المتنوعة، ثم طُوِّرت المادة التعليمية وفق التصور البصري بخريطة المفاهيم، وقُيِّمت من قِبل الخبراء قبل تطبيقها ميدانيًا. أظهرت نتائج الصدق والثبات أن أدوات الاختبار صالحة وموثوقة (كرونباخ ألفا 0.722 و0.874). كما أثبت اختبار شابيرو-ويلك أن البيانات تتبع التوزيع الطبيعي، وأظهر اختبار "ت" للعينات المرتبطة فروقًا دالة بين الاختبار القبلي (26.00) والبعدي (54.40) بقيمة دلالة 0.000 < 0.05. وعليه، خلص البحث إلى أن طريقة الرسم البياني بالخريطة الذهنية فعّالة ومناسبة لتعليم النحو في السياقات غير الرسمية

Abstract

Food neophobia, defined as the avoidance of unfamiliar or familiar foods due to fear and negative perceptions, can significantly influence children’s dietary variety and nutritional adequacy. Previous studies have highlighted inconsistent findings on its relationship with protein intake, yet limited evidence exists in Indonesia. This study aimed to examine the association between food neophobia and animal protein consumption among toddlers aged 3–5 years in Semarang City, Indonesia. An observational analytic study with a cross-sectional design was conducted from May to July 2024. Data were collected through interviews with parents/caregivers using the Child Food Neophobia Scale (CFNS) and a Semi-Quantitative Food Frequency Questionnaire (SQ-FFQ). Statistical analysis applied Chi-Square tests and logistic regression at a 95% confidence level (p < 0.05). A total of 73 toddlers participated in the study. Findings revealed a significant correlation between food neophobia and frequency of dairy product consumption (p < 0.001), with neophobic children being 13.4 times more likely to consume dairy products than food-neutral children. However, no significant associations were observed with the adequacy or frequency of seafood, poultry, or red meat consumption. These findings indicate that while food neophobia may restrict dietary variety, the preference for dairy can serve as a compensatory nutrient source, particularly for calcium and protein, supporting growth and development. In the Islamic perspective, the inclusion of milk as a wholesome and pure food aligns with Quranic teachings, reinforcing family health practices that integrate both nutritional and spiritual well-being.

Abstract

Hipertensi adalah suatu kondisi kronis yang prevalensinya semakin hari semakin meningkat, termasuk di Indonesia yang mencapai 34,1%. Jenis kelamin, usia, stress, dan kurang aktifitas fisik merupakan beberapa faktor risiko kejadian hipertensi. Susu rendah lemak mengandung sejumlah zat gizi yang terkait dengan efek menurunkan tekanan darah. Tujuan penelitian ini adalah untuk menganalisis pengaruh pemberian susu rendah lemak terhadap tekanan darah sistolik dan diastolik pada wanita postmenopause penderita hipertensi. Ini adalah penelitian eksperimental pada 19 subjek dengan riwayat hipertensi minimal satu bulan yaitu wanita postmenopause yang diambil secara purposive sampling. Subjek kelompok intervensi diberikan susu rendah lemak 2x/hari selama 2 minggu. Data yang diperoleh dianalisis dengan uji Shapiro-Wilk, paired t-test, Wilcoxon, independent t-test, dan Mann Whitney. Terjadi penurunan tekanan darah sistolik kelompok intervensi sebesar 8,5 mmHg dan tekanan darah diastolik sebesar 5,5 mmHg setelah pemberian susu rendah lemak selama 2 minggu. Perbedaan tekanan darah sistolik kelompok kontrol sebesar 1,1 mmHg sedangkan tekanan darah diastolik sebesar 0,6 mmHg. Tidak terdapat perbedaan yang signifikan secara statistik antara susu rendah lemak dengan tekanan darah sistolik dan diastolik. Namun, terdapat perbedaan yang signifikan secara klinis antara susu rendah lemak dengan tekanan darah sistolik dan diastolik.

Abstract

Penelitian ini dilatarbelakangi oleh kehadiran Komunitas Muslim di Desa Pegayaman dan Desa Kampung Gelgel Provinsi Bali sejak abad ke-14 yang secara langsung berbaur serta mendapat pengaruh dari budaya Hindu. Dari sinilah terjadi akulturasi dan asimilasi yang menjadi fokus penelitian sebagai bagian dari budaya ber-arsitektur masyarakat kedua desa tersebut. Penelitian ini bertujuan untuk mengungkap fungsi, estetika, dan makna yang terlihat pada akulturasi dan asimilasi, baik pada bangunan ibadah, rumah, maupun fasilitas lainnya. Metode yang digunakan adalah deskriptif kualitatif dengan pendekatan akulturatif, sedangkan proses penelitian dilakukan dengan cara pengukuran objektif berdasarkan observasi artefak arsitektur. Hasil penelitian menunjukkan bahwa akulturasi Islam dan Hindu terlihat pada arsitektur di Desa Pegayaman dan Desa Kampung Gelgel berupa: (1) Mahkota atau mudra sebagai hiasan pada puncak atap yang mempunyai makna kekuasaan serta kewibawaan; (2) Bebaturan atau sendi bermakna sebagai landasan hidup dan kehidupan manusia; (3) Pepatran atau simbar memiliki makna keagungan dan kehormatan. Asimilasi terlihat pada pola permukiman kedua desa: (1) Desa Pegayaman menggunakan ngerebong; (2) Desa Kampung Gelgel menggunakan maputer-puter. Kedua pola ini memiliki ciri khas berupa banyaknya persimpangan atau pertemuan pada setiap ujung jalannya (jalan yang betemu dengan gang). Berdasarkan hal itulah, maka kedua pola itu disebut pola ‘labirin’. Pola ini merupakan pengembangan dari bentuk ‘pempatan agung’ yang ada pada konsep Arsitektur Tradisional Bali. Akulturasi dan asimilasi di Desa Pegayaman dan Desa Kampung Gelgel dipengaruhi oleh konsep menyama braya, nyama slam, serta nyama hindu.

Abstract

The achievement of stunting reduction in Indonesia is still below the national target. The low coverage of preventive health efforts in several regions is one of the causes of the high prevalence of stunting in Indonesia. The purpose of this study is to analyze the modeling of the coverage of preventive health efforts with the prevalence of stunting in toddlers in Indonesia. A type of analytical descriptive research with a cross-sectional design. The research data is sourced by Indonesian Health Profile, 2023. The collected data was then processed and analyzed using simple and multiple regression statistical tests. There was a linear relationship between coverage of complete basic immunization, monitoring the growth of childs, implementation of GERMAS, and proper sanitation with the prevalence of stunting in toddlers in Indonesia (p-value ≤ 0.05). The coverage of monitoring the growth of childs and proper sanitation was feasible to significantly predict the prevalence of stunting in toddlers in Indonesia (p-value ≤ 0.05) with the regression model equation being stunting = 55.837-0.211*CMGT-0.209*CPSA. The increasing coverage of monitoring the growth of childs and proper sanitation was predicted to further reduce the prevalence of stunting in childs in Indonesia. There is a need to improve the coverage of monitoring the growth of childs and proper sanitation, especially in low-coverage areas through an integrative and comprehensive approach that involves the active participation of the government, communities, and other sectors.
