Abstract

The objectives of the research were to analyze saturated and unsaturated fatty acids of vegetable oil; total cholesterol, LDL cholesterol, HDL cholesterol, and triglyceride in blood serum of rat fed by various vegetable oil. Wistar strain rats were grouped into 6 group oil rations i.e. : corn, sorbean, coconut, palm oil 1, palm oil 2, and palm oil 3. Chromatography gas was used to analyze fatty acid content. The result showed that palm oil 1, 2, and 3 contained 47.20%, 43.80%, and 38.80% unsaturated fatty acid. While corn oil, soybean opil, and coconut oil contained 67.30%, 61.64%, and 6.77%. The total cholesterol ranged between 83.99-98.43 mg/100 ml (no difference among groups). The HDL cholesterol of rat with corn oil ration was the lowest. Abstract

ABSTRACT. The aim of this research was to produce cincau copper-derivative chlorophyll powder and to observe its phYSico-chemical properties and the effect on blood lipid profile of5 month male New Zealand White rabbits. The blood lipid profile observed were total cholesterol, triglyceride, HDL (high-denSity lipoprotein) cholesterol, and LDL (low-density lipoprotein) cholesterol. A two months treatment was conducted A randomblock design was applied with the following treatment on each experimental unit: PO (basal diet, negative control), PI (basal diet with cholesterol 0.1% (wlw) added, positive control), P2 (basal diet with cholesterol 0.1% (wlw) and 16.7 mglkg-body weight/d natural chlorophyll powder added), P3 (basal diet with cholesterol 0.1% (wlw) and 16.7 mglkgbody weight/d copper-derivative of chlorophyll powder added), P4 (basal diet withcholesterol 0.1% (wlw) and 50.1 mglkg-body weightld copper-derivative of chlorophyll powder added}, P5 (basal diet with cholesterol 0.1% (wlw), and 16.7 mglkg-body weight/dcommercial chlorophyll powder added The results of study showed that cincau leaves chlorophyll extract solution with Cu1+ 100 mglL level produce the cincau copper-derivate chlorophyll powder with highest pH, solubility, and greenness compared to other copper levels. Feeding with copper-derivative of chlorophyll cincau powder (P3) most likely decreased total cholesterol, triglycerides, LDL cholesterol increased the HDL cholesterol,and decreased atherosclerosis risk after 2 month as compare to feeding contain of natural chlorophyll (P2). Abstract

ABSTRACT. Iodine Deficiency Disorders (IDD) prevalence ofpregnant women is 16% and this would have consequence of risk during delivery and  nutritional status of the children. The aims ofthis study was to measure the effect ofiodized oil and beta carotene on the nutritional, iodine and thyroid stimulating hormone (TSH) status of pregnant women and to determine nutrition, iodine and cyanide intakes from food consumed by pregnant women. Research design ofthe study was quasi experiment. Pregnant women on the first trimester were chosen and divided into three groups. The first group was given iodized oil at 200mg iodine, the second group was treated with iodized oil at 30mg iodine every month for 6 months, and the third group was given as group 2 plus beta-carotene at 30mg each month for six months. Data collected were nutrients, iodine, and cyanide intake from food consumed and the parameter measured were serum TSH, urine iodine excretion (UIE), body weight and upper arm circumference. Chi Square, ANOVA and Kruskall Wallis were applied for statistical analysis. Iodine consumed by pregnant women was closed to the recommended daily allowance (RDA). iodized oil supplement could increase the UIE for 2 times at trimester 3 ofthe pregnancy. Furthermore, the treatment could redure the TSH value during pregnancy. The supplement could supply iodine during pregnancy. Keywords: iodine, hipothyroid, beta caroten, nutritional status

Abstract

Peran asam urat dalam meningkatkan penyakit ginjal dan kardiovaskuler dalam beberapa tahun terakhir ini sering menjadi perdebatan para ahli. Penyakit kardiovaskuler dan infark miokard dilaporkan dipengaruhioleh tingginya asam urat dalam darah dalam beberapa penelitian besar. Jenis penelitian menggunakan rancangan cross sectional study. Tujuan penelitian ini melihat perbedaan kadar asam urat antara suku Jawa dengan suku Serawai. Penarikan sampel menggunakan purposive sampling dengan 104 orang berusia 40-65 tahun. Data primer berupa data subjek termasuk umur, jenis kelamin, pendapatan, pendidikan, pekerjaan, kadar asam urat. Untuk menganalisis perbedaan dan kadar asam urat darah pada kedua suku dengan menggunakan uji t tidak berpasangan. Suku Serawai 55,8% mempunyai kadar asam urat tinggi dan Suku Jawa yang mempunyai kadar asam urat tinggi sebanyak 40,4%. Dari analisis uji beda kadar asam urat antara Suku Serawai dengan Suku Jawa diperoleh p=0,031 (p<0,005), terdapat perbedaan kadar asam urat antara Suku Jawa dengan Suku Serawai.

Abstract

Konsumsi ikan ibu hamil yang rendah menjadi faktor risiko yang kuat pada kejadian persalinan prematur dan bayi berat lahir rendah. Tujuan dari penelitian ini mengetahui faktor yang memengaruhi outcome kelahiran. Penelitian ini didanai oleh Neys-van Hoogstraten Foundation. Desain penelitian ini adalah cohort study dengan jumlah subjek sebanyak 41 di Kecamatan Lenteng dan 38 ibu hamil di Kecamtan Kalianget, Kabupaten Sumenep. Data usia, pendidikan, pendapatan, ukuran rumah tangga, berat badan pra-hamil, dan paritas ibu diperoleh dengan wawancara menggunakan kuesioner, tinggi badan ibu menggunakan microtoise, asupan energi menggunakan recall 2x24 jam, konsumsi ikan menggunakan semi-quantitative food frequency questionnaire. Berat, panjang, dan lingkar kepala lahir bayi berdasarkan catatan bidan. Analisis data menggunakan korelasi pearson dan regresi linier berganda. Hasil penelitian menunjukkan rata-rata konsumsi ikan ibu sebesar 61,8 gram. Rata-rata berat, panjang, dan lingkar kepala bayi lahir sebesar 3090,5 gram, 49,1 sentimeter, dan 33,3 sentimeter. Terdapat hubungan yang signifikan antara konsumsi ikan dan tinggi badan ibu dengan berat dan panjang lahir bayi. Terdapat hubungan yang signifikan antara konsumsi ikan ibu dengan lingkar kepala lahir bayi. Konsumsi ikan dan tinggi badan ibu menjadi faktor yang memengaruhi berat lahir bayi. Konsumsi ikan menjadi faktor yang memengaruhi panjang dan lingkar kepala lahir bayi.

Abstract

School age children are susceptible to experiencing nutritional problems, one of which is due to environmentalfactors, especially the physical environment which provides broad, affordable food, higher energy densityand lack of consumption of fruits and vegetables. The efforts to improve the habit of eating fruits and vegetables inschool children is the existence of school based intervention. This study aim to analyze the effect of school basedintervention program to increase of fruit and vegetable consumption of elementary school students. The studytook place from February to May 2017 in Nganjuk, East Java. This study used experimental design with pre-postintervention with the number of subjects is 50 students (10-13 years) given three types of interventions is schoolgardening, cooking class, and giving of fruit and vegetables in school. The results showed that the presence ofthese three interventions can increased fruit consumption 130 g/day and vegetable 100 g/day and the availabilityof fruit and vegetables at home increased 81 g/week and 182 g/week. The results from recall SQ-FFQ 2x24 hoursshowed the average consumption of energy density decreased from 1420 kcal to 1241 kcal. Based on these results,school based intervention can be used as a strategy to increase fruit and vegetable consumption and availabilityfruit and vegetable at home

Abstract

Fulfillment children’s nutritional needs is important to support growth and development. The dietary habitof school-age children which tends to prefer snacks at school rather than eating at homewill affect the nutritionalstatus of children. The purpose of this study was to analyze determinant factors of snacks choice, relationshipbetween snacks choice with frequency of snacks, and relationship of nutrition contribution of snacks with nutritionalstatus of children. This study was a cross-sectional study funded by the Neys-van Hoogstraten Foundation, theNetherlands and was conducted at three primary schools namely SDN Kedokan, SDN Pajajaran and SDN Cibogoin Cisauk Sub-District, Tangerang Regency with total subjects of this study were 109 students. Factor-analysisandRank Spearman relationship tests were used to analyze data. There are five main factors that determine thesnackschoice, namely familiarity factor, characteristics of snacks, environmental and social, nutritional content and variation,and health. Health factors and snack characteristics had significant relationships with frequency of snacks(p<0.05). The contribution of energy, protein, fat and carbohydrate had significant relationships with the nutritionalstatus of children (p<0.05). The study resultshows that snack choice played an important role in snackinghabits and nutrition contribution of snacks had an impact on nutritional status of children, therefore availability ofsnacks at school should consider the children’s snack choice and nutritioncontribution of snacks.

Abstract

Indonesia is faced with two nutritional problems, namely malnutrition and over nutrition while nutritionalproblems in adolescents tend to be more dominant for being overweight, this can be seen from the prevalenceof adolescent obesity in Cianjur district is 10.6%. Therefore consumption of vegetables and fruits is highlyrecommended to reduce the prevalence of overweight especially in adolescents. The government through theIndonesian Indonesian Balanced-Nutrition Guidelines (PGS) recommends consumption of vegetables and fruitsof 400 g per person per day consisting of 250 g of vegetables and 150 g of fruit. The purpose of this study wasto identify the availability of vegetables and fruits at home, the contribution of vegetables and fruit to vitamin,mineral and fiber intake and the relationship between the nutritional practices of students and mothers as parentsrelated to Indonesian Balanced-Nutrition Guidelines with the consumption of vegetables and fruit. This study wasa cross-sectional study funded by the Neys-van Hoogstraten Foundation, the Netherlands and conducted at SMPN1 Cianjur with a total of 72 students. Data were analyzed using Mann Whitney difference test and Rank Spearmanrelationship test. This research was funded by Neys-van Hoogstraten Foundation, the Netherlands. The amountof fruit and vegetable consumption of students has not been in accordance with Indonesian Balanced-NutritionGuidelines recommendations. The average of vegetable consumption of students was 36.9 ± 34.8 grams per day,while the average of fruit consumption of student was 203.2 ± 112.9 grams per day. There was a significantrelationship (p <0.05) between maternal nutritional practices and nutritional practices of students related to PGSwith consumption of vegetables and fruit of students. This study shows that the consumption of vegetables andfruit in students has not been implemented in accordance with the recommendations of PGS therefore it’s need tomake encouragement to parents which can motivate and familiarize students to consume vegetables and fruit athome

Abstract

Anemia is known as a public health problem for many years, based on the results of Riskesdas 2018 it isknown that the prevalence of anemia is 48.9%. This research aims to analyze the risk factors that influence anemiain female tea pickers in Pangalengan, Bandung, West Java. The research method was cross-sectional with 148subjects of the so-called Wanita Usia Subur (WUS). They are women of childbearing age, between 18-45 yearsold who were married and not pregnant. They were selected purposively in the plantation areas Purbasari, TalunSantosa and Sedep. This research was part of a research funded by Neys-van Hoogstraten Foundation (NHF).The data obtained are the characteristics of the subjects (age, family size, length and level of education), monthlyfamily expenses for food and non-food, status of nutrition and body composition, and anemia status. The resultsshowed that most of the female tea pickers are 40-44 years old, having family size up to 4 people and 72.3% ofthem are low level educated (89.9% has maximum the elementary school education). The average expenses fornon-food are greater than those for food. Based on various body composition indicators, the female tea pickerswere in general overweight (56.8%), normal upper arm circumference (98.6%). The average total of body fat isgreater than 32,1%, normal visceral fat (≤9%), waist circumference at risk ≥80 cm, and RPP ≥0.8 cm at 81.1%.The prevalence of anemia in tea picking women was 42.6%. Overweight is the most risk factor for anemia becausefat accumulation can reduce iron absorption so that the amount of hemoglobin goes down and erythrocytesdecreases. The age as a protective factor. Anemia can be prevented through nutrition education, healthy lifestyles,and controlling the causes and predisposing factors.

Abstract

This research aimed to evaluate the bioavailability of fortificant, protein digestibility, and nutrition contribution of biscuits supplemented with snakehead fish flour and fortified with Zn and Fe. Randomized complete design was used in this research which consisted of two steps, namely: 1) Zn and Fe microencapsulation, 2) formulation of biscuit supplemented with fish flour 15% which fortified with Zn and Fe. Level of Zn and Fe per servingsize were to meet 25%, 50% and 100% of RDA. Based on ANOVA showed that there were no significantly difference on bioavailability of Zn and Fe on various fortification level (p>0.05). Biscuits fortified with Zn and Fe to meet 50% RDA per serving size had the highest bioavailability of 76.32% and 41.80%, respectively. This biscuits was chosen for further analysis namely physical and chemical characteristics and protein digestibility. Result of analysis showed that the chosen biscuits more crunchy than those the commercial biscuits. Each a hundred grams of biscuits contained moisture, ash, protein, fat, carbohydrate, energy, Fe and Zn of about 2.73 g, 2.80 g, 13.34 g, 24.53 g, 57.32 g , 503 kcal, 11.7 % and 8.83%, respectively and had protein digestibility of 78.45%. This biscuits was in range of quality standards for biscuits SNI 01-2973-1992. The contribution of the chosen biscuits on RDA of energy, protein, Fe and Zn were 19,48%; 20,51%; 74,44%; 54.44%, respectively.ABSTRAKPenelitian ini bertujuan untuk mempelajari bioavailabilitas fortifikan, daya cerna protein, dan kontribusi gizi biskuit ikan gabus yang ditambahkan tepung ikan gabus dan difortifikasi dengan Zn dan Fe. Rancangan percobaan yang digunakan adalah RAL. Penelitian terdiri atas dua tahap, yaitu pertama adalah melakukan mikroenkapsulasi mineral Zn dan Fe, kedua formulasi biskuit berbasis 15% tepung ikan gabus yang difortifikasi dengan mineral Zn dan Fe dengan taraf fortifikasi, yaitu sebesar 25%, 50%, dan 100% AKG per serving size. Terhadap biskuit yang dihasilkan dilakukan analisis bioavailabilitas Zn dan Fe. Hasil sidik ragam menunjukkan bahwa bioavailabilitas Zn dan Fe tidak berbeda nyata pada berbagai taraf fortifikasi (p>0.05). Biskuit hasil fortifikasi Zn dan Fe sebesar 50% AKG memiliki bioavailabilitas tertinggi, yaitu masing-masing 76,32% dan 41,80%. Formula biskuit ini dipilih untuk dianalisis lebih lanjut, yang meliputi analisis sifat fisik, kimia, dan daya cerna protein. Hasil analisis menunjukkan bahwa biskuit terpilih tersebut lebih renyah daripada biskuit komersial. Dalam 100 g biskuit tersebut terkandung air, abu, protein, lemak, dan karbohidrat berturut-turut sebesar 2,73 g; 2,08 g; 13,34 g; 24,53 g; 57,32 g; serta energi sebesar 503 kkal. Kadar Fe dan Zn biskuit terpilih tersebut adalah 11,7 mg dan 8,83 mg/100 g; dengan daya cerna protein sebesar 78,45%. Biskuit berbasis tepung ikan gabus 15% yang difortifikasi Zn dan Fe sebesar 50% AKG memenuhi standar kualitas biskuit SNI 01-2973-1992. Kontribusi biskuit terpilih terhadap AKG energi, protein, Fe dan Zn berturut-turut adalah 19,48%; 20,51%; 74,44%; 54.44%.
