Abstract

The study aims is to identify the application of Good Manufacturing Practices (GMP) and SSOP for tofu products at industry tofu sumber reski, Sendang mulya sub-district, Konawe city and provide recommendations for the best improvements related to the problems of implementing Good Manufacturing Practices (GMP) at Sumber reskit. Every food producer must have quality according to standards so that the food produced is safe for consumption. Data collection comes from direct observations, interviews, evaluations carried out by observing all aspects of Good Manufacturing Practices (GMP) based on the regulation of the Ministry of Industry of the Republic of Indonesia No. 75 of 2010). Identification of the implementation of Good Manufacturing Practices (GMP) at Sumber Reski based on the Minister of Industry Regulation on Good Processed Food Production Methods (CPPOB) with a checklist gap getting a total of 63% of 18 parameters, which means Sumber Reski Industry still has to improve in order to meet the requirements of GMP standards according to Regulations The Minister of Industry of the Republic of Indonesia Number 75/M-IND/PER/7/2010 concerning guidelines for good processed food production.

Abstract

Proper business development analysis is essential so that micro businesses develop and become sustainable small industries. This research aims to determine the elements of actors, constraints, needs, and objectives that play a crucial role in supporting the development of tempeh products at Alfia Jaya in Baubau City and in finding out the recommended solutions by knowing the key factors in developing tempeh products using the Interpretative Structural Modeling (ISM) Method. This research uses the ISM method. ISM is useful as a decision-making system tool. The research results show that the factors are divided into four levels and are included in the autonomous, dependent, related, and independent sectors. The key influencing factors are all elements of actors, constraints, needs, and goals, one of which plays an important role, namely actors/stakeholders, namely suppliers, traders, consumers, cooperative and SME services, industry and trade services, agriculture and food security services, and institutions—financial results, as well as the percentage of consistency results obtained from each element.

Abstract

Penelitian ini bertujuan untuk menentukan formulasi cookies berbasis tepung ketan hitam dan tepung kecambah kacang tunggak sebagai pangan kaya protein dan antioksidan. Penelitian ini menggunakan Rancangan Acak Lengkap yang terdiri dari lima perlakuan yaitu P0 (100% Tepung Ketan Hitam : 0% Tepung Kecambah Kacang Tunggak), P1 (90% Tepung Ketan Hitam : 10% Tepung Kecambah Kacang Tunggak), P2 (80% Tepung Ketan Hitam : 20% Tepung Kecambah Kacang Tunggak), P3 (70% Tepung Ketan Hitam : 30% Tepung Kecambah Kacang Tunggak) dan P4 (60% Tepung Ketan Hitam : 40% Tepung Kecambah Kacang Tunggak). Data dianalisis menggunakan analysis of varian (ANOVA) dan dilanjutkan dengan uji Duncan’s multiple range test (DMRT) pada taraf kepercayaan 95%. Hasil penelitian menunjukkan bahwa perlakuan P4 (60% tepung ketan hitam : 40% tepung kecambah kacang tunggak) dengan skor penilaian kesukaan terhadap warna sebesar 3,80 (suka), aroma sebesar 3,77 (suka), tekstur 3,83 (suka) dan rasa sebesar 3,77 (suka). Nilai kandungan gizi dari produk cookies terpilih P4 meliputi kadar air (4,47%), kadar abu (2,75%), kadar protein (16,40%), kadar lemak (6,10%), kadar karbohidrat (70,30%), kadar serat kasar (6,22%) dan aktivitas antioksidan dengan nilai IC50 (599,17 ppm). Berdasarkan penelitian formulasi cookies berbasis tepung ketan hitam dan tepung kecambah kacang tunggak dapat diterima (disukai) oleh panelis dan memenuhi standar SNI (01-2973-1992) untuk komponen kadar air, kadar karbohidrat dan kadar protein

Abstract

Penelitian ini bertujuan untuk mengetahui pengaruh tepung beras merah kultivar Wangkariri termodifikasi Crude Enzyme Amilase kapang tempe, BAL SBM.3D dan BAL SBM.4A terhadap karakteristik organoleptik cookies sehingga memperoleh cookies terpilih yang berbeda nyata terhadap perbaikan karakteristik fisikokimia cookies. Penelitian ini dilakukan menggunakan rancangan acak lengkap (RAL) dengan 4 perlakuan yaitu M1 (kontrol), M2 (crude enzyme amylase), M3 (BAL SBM.3D) dan M4 (SBM.4A). Masing-masing perlakuan diulang sebanyak 4 kali sehingga secara keseluruhan terdapat 16 unit perlakuan. Karakteristik cookies tepung beras merah termodifikasi yang diamati analisis organoleptik secara hedonik dan deskriptif yang melibatkan 40 panelis dan analisis fisikokimia meliputi daya pengembangan, densitas kamba, porositas dan kandungan proksimat. Hasil penelitian diperoleh karakteristik cookies tepung beras merah terpilih menghasilkan nilai hasil uji organoleptik terhadap parameter warna 3,95 (suka), aroma 3,93 (suka), tekstur 3,85 (suka) dan rasa 3,65 (suka). Serta nilai daya pengembangan 17,69%, densitas kamba 0,25 g/mL porositas 0,27 cm, kadar air 2,05 (%bb), kadar abu 1,67 (%bb), kadar protein 16,73 (%bb), kadar lemak 14,15 (%bb) dan kadar karbohidrat 63,97 (%bb).

Abstract

Penelitian ini bertujuan untuk mempelajari pengaruh penambahan gula stevia (Stevia rebaudiana) terhadap sifat organoleptik, umur simpan, dan sifat kimiawi selai mentimun. Penelitian ini menggunakan rancangan acak lengkap (RAL), dengan 1 faktor yaitu penambahan gula stevia pada pembuatan selai mentimun, yaitu sebanyak S1=60g, S2=70g, S3=80g, S4=90g, dan S5=100g. Hasil pengujian organoleptik hedonik menunjukkan bahwa penambahan gula stevia memengaruhi warna dan tesktur secara signifikan. Sampel dengan penambahan gula stevia (S1) adalah sampel yang memiliki kategori kesukaan tertinggi untuk semua atribut sensorik yaitu suka. Penambahan gula stevia pada selai mentimun memberikan pengaruh sangat nyata pada penilaian organoleptik hedonik warna, berpengaruh nyata untuk tekstur dan berpengaruh tidak nyata untuk aroma dan rasa. Sedangkan pada penilaian organoleptik deskriptif warna penambahan gula stevia tidak berpengaruh nyata, berpengaruh sangat nyata untuk daya oles dan tidak berpengaruh nyata untuk tingkat kemanisan.Perlakuan terbaik ini kemudian dianalisis umur simpan dan sifat kimiawi serta dibandingkan dengan selai yang dibuat dari penambahan gula pasir. Umur simpan dari sampel penambahan gula stevia 7 hari lebih lama dari penambahan gula pasir. Pada uji karakteristik kimia kadar serat kasar, padatan terlarut, dan pH dari sampel yang menggunakan gula stevia yaitu 2,44%, 80%, dan 5,22, sedangkan sampel dengan penambahan gula pasir yaitu 1,61%, 66,67%, dan 5,9

Abstract

The aim of the study was to find out whether there is a correlation between compensation and the performance of teachers and staff at MTs Syekh Maulana Qori. This study uses a quantitative approach with a type of correlational. The population in this study were all teachers and staff at MTs Syekh Maulana Qori, with a total of 15 people. The sampling technique used was purposive sampling technique so the sample used in this study was the entire MTs Syekh Maulana Qori staff, totaling 15 people. The main research data were obtained from respondents' questionnaire answers which were constructed from each indicator of the two research variables. After the data is declared normal and homogeneous then the research is continued. In order to answer the research hypothesis, a T-test was carried out by considering the value of T count and the value of sig. The results of the analysis showed that the t count value was 3.332 > t table 2.131 and the sig. 0.47 < 0.05, which means that H0 is rejected and Ha is accepted, which also means that there is a positive and significant effect of compensation on the performance of teachers and staff of MTS Syekh Maulana Qori. The results of the study also obtained an R square value of 0.795 or 79.6% compensation can contribute to the performance of teachers and staff of MTs Syekh Maulana Qori. So that compensation is highly recommended to be considered and carried out in order to provide a sense of justice for teachers and staff who have dedicated themselves to MTs Syekh Maulana Qori. Of course, their performance will have a direct, both positive and negative impact on student achievement.

Abstract

This study aims to determine the effect of transformational leadership on teacher performance mediated by teacher satisfaction on Tahfidzil Quran Lebay Yasin Boarding School. A quantitative approach and explanatory research will be used in this research. Primary data comes from questionnaires of variables, while secondary data comes from school data, textbooks, and journals. The population were 41. The sample was used through non-probability sampling purposive sampling, were 41. The data analysis techniques used SEM PLS by SmartPLS 3. The results of this study indicate that there was significant direct effect of transformational leadership on teacher performance t-statistic 2.444 > 1.96 p-value 0.015 or (p < 0.05), transformational leadership on teacher satisfaction t- statistic 10.319 > 1.96 p-value 0.00 or (p < 0.05), teacher satisfaction on teacher performance t-statistic t-statistic 21.404 > 1.96 p-value 0.00 or (p < 0.05), The result also discovered that there was significant indirect effect of transformational leadership on teacher performance mediated by teacher satisfaction t-statistic 8.232 > 1.96 p-value 0.00 or (p < 0.05). So, the school leader was recommended to empower and develop peer relationships in order to achieve teacher performance effectively.

Abstract

The purpose of the research is to find out the direct and indirect impact of the crew’s personal experience and safety training on preventing the accidental risk in compliance with shipping safety regulation of Abu Dhabi Maridive and Oil Services. Several problems found; the lack of ships’ crew awareness in compliance with the use of safety equipment when carrying out safety training and the lack of ships’ crew knowledge of the safe keeping and maintenance of the safety equipment. The study used a Path analysis with 60 samples of the Maridive and Oil Services Abu Dhabi crew. The study used linear regression analysis technique, simple correlation, partial and path analysis. The results state that the variable in compliance with safety regulations could mediate the safety training to prevent the accidental risk on board. It shows that good safety training could increase the prevention of on board accidental risk mediated by compliance of the safety regulation

Abstract

The fisheries sector has enormous potential to be developed. One of them is aquaculture. The government in handling this matter established a Fish Seed Center in each region under the auspices of the Directorate General of Aquaculture. Bontang City has a fish seed center located in Tanjung Laut Indah Village. The seeds produced are tilapia, catfish and tiger shrimp. The purpose of this study is to analyze the financial feasibility of commodities in the Fish Seed Center. The sampling method is a case study while the data analysis methods used are Net Present Value, Net Benefit Cost Ratio (Net B/C), Internal Rate of Return (IRR), and Payback Period. The research results obtained based on the financial feasibility analysis are NPV (Net Present Value) of Rp. 157,414. 504, IRR (Internal Rate of Return) of 8%, Net Benefit Cost Ratio 1 and Payback Period for 13 years and 4 months. The conclusion obtained in this study is that the cultivation of tilapia, catfish and tiger shrimp seeds at the Fish Seed Center of Bontang City is financially feasible and profitable

Abstract

This study aims to analyze the competitiveness and impact of government policies on honey bee farming using the Policy Analysis Matrix approach. The research was carried out at the Madu Mas Forest Farmers Group (KTH) in South Konawe Regency in April 2022. The study population was all members of the Madu Mas KTH in South Konawe Regency, totaling 15 people, all of whom were used as research samples using the census method. The research variables include tradable and non-tradable input costs, private and social prices, production, and revenues. Analysis of research data using the Policy Analysis Matrix (PAM) approach. The results showed that the honey bee farming business at KTH Madu Mas in South Konawe Regency had competitiveness based on indicators of competitive advantage as measured by the PCR value, which was 0.72. However, it does not have competitiveness based on comparative advantage indicators as measured by the DRCR value, which is equal to 2.46. Meanwhile, the impact of government policies on the output of beekeeping businesses at KTH Madu Masa in Konawe Selatan Regency causes the output value at private prices to be greater than the output value at social prices. Then, the impact of government policies on the inputs of the honey bee cultivation business at KTH Madu Mas in Konawe Selatan Regency causes the profits received to be smaller than without the policy.
