Abstract

Backgorund; Nutritional problems arise due to the problem of food security at the household level, namely the ability of households to obtain food for all household members. This reflects the lack of accessibility of households to obtain food, one of which is caused by poverty. Many factors can affect household food security. Aim; This study aims to analyze differences in socio-economic characteristics based on the level of food security of poor urban and rural households in South Sulawesi as measured by the HFIAS Method and the modified Maxwell Method. Method; This study used a cross sectional design. Sampling using purposive sampling with a sample size of 170 households. Data analysis performed was bivariate analysis with t-independent test and chi square test. Results; The results showed that the variables that had differences between food-security and food-insecurity household groups as measured by the HFIAS method were household size (p = 0,000), while variables that had differences between household groups were food-security and food-insecurity (0.029) and household size (p = 0.000). Conclusions; Household size variables have differences between food-security and food-insecurity household groups as measured by the HFIAS method and the modified Maxwell method. Household size is an important variable that affects the level of household food security.

Abstract

Eating habits refer to the behavior of a person or a group of people in satisfying the need for food, which involves attitude, beliefs, and choice of food. To understand eating habits, what ought to be considered are food consumption (quantity and quality), preference of certain food, beliefs, taboo, and attitude toward certain foods. This research aims to assess mother’s nutrition knowledge and food habits of the households. The study was conducted in a highland area of Bogor Regency and a coastal area of Indramayu Regency, West Java, Indonesia.  In Bogor, 375 samples and in Indramayu 376 samples were selected randomly, so the total samples are 751. The data was collected through questionnaires.  Mother’s nutrition knowledge is better in Indramayu than in Bogor. The eating frequency of 1-2 times daily is still dominant in the households of both locations of research. A food priority for the members (under five year old children) of households who are prone to nutritional problems is important to reduce the risk of malnutrition. The consumption of food from animal sources (meat and eggs) in both regions of research is generally still low, i.e. less than a piece of meat/week, and less than 1 egg/week, except for the consumption of fish in Indramayu, which is relatively high. The vegetable consumption in Bogor is relatively high, but fruit consumption is lower than that in Indramayu.

Abstract

The objective of this study was to analyze the effect of extension on nutrition-health and other factors on the growth of pre-school children.  The design of this study was a quasi experiment. The subjects of this study were pre-school children aged 3-6 year old with  some specified criteria, such as having no story of severe malnutrition and low birth weight, having a complete parents, literacy ability of the mother, stated in a health condition/undefect handicapped, and did not follow any programs of early-age children education. The subjects were divided into two groups, namely group of control and group of intervention. The primary data collected consisted of family’s characteristics, child’s characteristics, and children’s care and development environment. Generally, there was no significant difference between pre- and post-test of mother’s knowledge on nutrition-health, both of control and intervention groups; however, there was a slightly difference on child-care on nutrition-health for the two groups. There was a significant difference on mother’s knowledge on nutrition-health between pre- and post- extension on the both groups.  About 51.3% of child’s growth was determined by factors of family and children.  The factors which had a possitive significant influence were body lenght, and mother’s knowledge on nutrition-health.

Abstract

Milk is the best source of calcium and many studies suggest that adolescence who drink milk or eat other dairy foods have stronger bones and better nutritional status. The objectives of this study were to determine effect of high calcium and fresh milk on nutritional status and bone density. Variables measured in this study were body mass index and bone density of trunk. Samples were 55 adolescent boys aged 17 to 19 years old (students of TPB IPB). The study was conducted at TPB IPB dormitory during four months. The design of this study was nested randomized design with two factors. Two kinds of milk (fresh milk and high calcium milk) and 3 levels of volume (250 ml, 500 ml, and 750 ml) were used. Results of the study indicated that high calcium milk consumption was able to increase body mass index and bone density of trunk. It was found that high calcium consumption showed very highly significant effect (P<0.01) on bone density of trunk. Calcium from high calcium milk showed very highly significant effect (P<0.01) on body mass index. Based on general linear model equation, bone density of trunk can be estimated by high calcium milk consumption.

Abstract

The aim of this study were  to identify the in-vitro tolerance of pro-biotic bacteria to acid and bile salt condition; and  to prove a hypothesis that the supplementation of oxygenated water has a positive effect on the body weight of rat and on viability of pro-biotic bacteria.  The first study was carried out at PAU Laboratory of Bogor Agricultural University, while the second study was conducted at Department of Community Nutrition of Bogor Agricultural University and Microbiology Laboratory of Indonesia Institute of Technology. Forty five rats aged 6 weeks were divided into three groups, i.e., control group without probiotic (a0), Lactobacillus casei Shirota (a1), and Lactobacillus IS-7257 (a2).  Each group (consisting of 5 rats each) has three different treatments, namely, control without oxygenated water (b0), 50 ppm oxygenated water (b2), and 80 ppm oxygenated water (b2). Oxygenated water was administered to the rats twice a day in the morning (3.25 ml) and afternoon (3.00 ml). Observation was carried out on the body  weight of the rats, fecal lactic acid bacteria, coliform, and anaerob bacteria by plate counting, for 4 periods, i.e, prior to the treatment (C0), after three-day treatment (C1), after seven-day treatment (C2), and on the 10th day treatment or three days after washed out period. The results indicated that probiotic bacteria are resistant to acid and bile acid condition. Oxygen concentration in water has a significant positive influence on the body weight of rats towards viability of probiotic bacteria (p-level < 0.05).  The supplementation of  oxygenated water 50 ppm significantly increase the population of viable fecal lactic acid bacteria in L. casei Shirota and Lactobacillus IS-7257 groups after 3 and 7 days of treatment.  Lactobacillus IS-7257 gave better response than L. casei Shirota. The supplementation of oxygenated water 80 ppm significantly reduces the fecal coliform in-vivo in both L. casei Shirota and Lactobacillus IS-7257 groups (p-level < 0.05).

Abstract

Banten Province in Indonesia has a traditional tribe called Baduy.  Baduy tribe is still maintaining their traditions against modernization. The objectives of this research were to analyze socio-economic and demographic characteristics of Baduy people, socio-cultural and ecological aspects of Baduy community, and food availability of Baduy people. This research is an explorative and descriptive study on the socio-cultural aspects of food system. The data required to meet the research objectives were collected through a direct interview and discussion with respondents as well as a direct observation at the location of respondents. A sample size of 338 households was drawn from the population. The allocation of sample was 303 for Outer Baduy, 10 for Inner Baduy and 25 for Moslem Baduy.   To obtain the data on the cultural aspects, history and socio aspect of food, in-depth interviews was conducted with 19 key persons. The study was last for 12 months. The rice production of Baduy community to supply its basic need is generally insufficient; as a result, they have to purchase rice from outside. In addition, not all rice they produce can be consumed because some of it is for the needs of traditional ceremonies. As much as 25 % of the production is sold or given to their neighbors who are lack of rice, 25 % is sent for their neighbors’ feast and for traditional ceremonies (for the elderly people, Jaro, and Puun), and the 50 % is stored in the rice barn for their daily consumption. Only poor households use their rice for their daily consumption. Baduy community usually purchases their foodstuffs at the market, the shop, or from the vegetable vendor who sells from one village to another. If Baduy people need rice and other foodstuffs, they usually go to another village to fulfill their needs.
