Abstract

Tofu is one of the products produced mainly by small and medium industries (SMEs). Along with the production of tofu by SMEs, there are many environmental problems. The industry's main ecological problems are waste management, efficient use of materials, water, and energy, and emissions generated during production. One solution that can be done to solve these problems is through the application of the circular economy concept. This research aimed to characterize the tofu production process, identify problems and analyze the potential application of the circular economy concept for the sustainable development of the tofu industry. The research was conducted through field observation and literature study. The research data were processed, analyzed, and presented in a qualitative descriptive manner. The results of the study show that the circular economy concept that can be adopted in the tofu industry A, B, and C is the utilization of solid waste in the form of tofu dregs as food ingredients (nuggets, tempe gembus, shredded and soy sauce), semi-finished foodstuffs (in the form of dregs flour which can be used as raw material for food processing such as crackers, pastries, and brownies), and as animal feed. Circular economy alternatives are analyzed by considering economic, environmental and social feasibility. Alternatives that are feasible and applicable to the tofu industry A, B, and C are washing soybeans in stages to reduce water use, tofu dregs are processed into tempe gembus or other products, cooking soybean porridge with boiler heating and cooking with a steam system, and liquid waste (whey) can be utilized as raw material for nata de soya, biogas and liquid fertilizer. Abstract

Abstract

Abstract

Today's modern supply chain represents a complex and real-time, organization, resource, activity, information, and data source that is involved in the distribution of products and services ranging from upstream to downstream of the supply chain. In the past 4.0 supply chain technology was not just a linear business function, but as the center of the main process of ecosystems that are in a blind spot chained by value. With information as a foundation in the decision-making process so that information can create integrated and efficiently coordinated supply chains. So that it can show continuity from planning to production, inventory, quality, and price control in each chain. An inefficient distribution that results in mistrust among stakeholders, because it has an impact on the decline and loss of value chain in quality and quantity. Integrity problems from the data collected were found in this study. These findings include the identification of various stakeholders, including farmers, importers to customers, and regulators, as well as their needs, which will be described through the use case, and BPMN. The results obtained are that the main actors (stakeholders) of the system are divided into farmers, importers, processing factories, headquarters, hauling services, and markets (customers) in the distribution of product information flow systems. Suggests tracking and tracing based on real-time data flow of product information coming from each actor in the sugar supply chain that is equipped with an accurate data distribution information support system.

Abstract

Liquid waste management in the palm oil industry plays an essential role in minimizing environmental impacts and promoting the application of the circular economy concept. This research analyzed effective strategies for liquid waste management through a case study at two palm oil mills in Riau Province. Both mills implemented palm oil mill effluent (POME) treatment technology by converting it into renewable energy in the form of biogas, which was utilized either in biogas power plants (PLTBg) or directly as boiler fuel (co-firing). The results indicated that this technology was effective in reducing environmental impacts, particularly through lowering greenhouse gas emissions, while also improving energy use efficiency in both mills. The applied waste management strategy was based on the principles of reduce, reuse, recycle, and recovery, consistent with the circular economy framework. The environmental, financial, and social benefits derived from this approach are expected to encourage and serve as a reference for the broader adoption of this technology in other palm oil mills, thereby contributing to the realization of a circular economy in the palm oil industry. Keywords: Biogas power plant, circular economy, palm oil mill, POME, wastewater management
