Abstract

Abstract

Abstract

Panakkukang Village is located in Pallangga District, Gowa Regency, South Sulawesi. The village is approximately 13.2 km from the Department of Agricultural Technology, Faculty of Engineering, Makassar State University, with a travel time of approximately 26 minutes. The abundant natural resources in this area are rice and seasonal tropical fruits. Generally, tropical fruits are obtained only for personal consumption or some of the harvest is directly sold in the market as fresh. A farmer said that in Panakkukang Village, training on fruit processing has not been conducted. Generally, training is provided for farmers in cultivating rice fields to produce high rice yields. Raja bananas are one of the tropical fruits in this village. However, the utilization of raja bananas for processed products has not yet achieved optimal results. The purpose of this community service activity is to provide training to the community on the correct and good method of making raja banana dodol. The activity begins with the stages of observation, interviews, and discussions. Next, the delivery of material and counseling, demonstrations, mentoring, and assessment (evaluation). The ingredients used in this training consisted of plantains, coconut milk, glutinous rice flour, brown sugar, milk, and vanilla. These ingredients were then cooked over medium heat, stopping after the plantain dodol (rice cake) had been produced, characterized by a soft, non-sticky texture due to the oily surface from the coconut milk. Evaluation results indicated that participants had successfully produced plantain dodol independently. The plantain dodol they made was highly appreciated for its excellent sensory qualities.

Abstract

This research aims to increase the catch of traditional fishermen in Sambuli Village, Kendari City, by introducing and utilizing fishing aids such as coconut shell fish aggregating devices and artificial bait (jigs). The service method used is participatory action research (PAR) with the stages of socialization, training, field practice, and evaluation and mentoring. The results of the service show that coconut shell fish shelters are effective in concentrating fish, thus increasing catch productivity, while artificial bait helps to extend fishing time and location. Fishermen successfully adopted this technology independently, resulting in reduced operational costs and increased revenue. The participatory approach has proven effective in empowering fishing communities while also preserving aquatic resources. This research provides an innovative model that can be replicated for the sustainable development of traditional fisheries in other coastal regions.

Abstract

This study aims to determine isolate yeast spontaneously fermented Robusta coffee beans which are amylolytic and to determine the effect of incubation time, optimum pH and temperature on amylase activity. This study used RAL (Completely Randomized Design). The yeast isolates used were selected using 1% starch + 2% agar media to determine their amylolytic abilities. The isolate that produces the highest clear zone will proceed to the optimum incubation time determination stage which is divided into 6 levels, namely 24, 48, 72, 96, 120 and 144 hours with 3 repetitions. Every 24 hours the total yeast count was carried out. The optimum incubation time is used as one of the conditions in the characterization of the optimum pH and temperature of the amylase enzyme. The selected samples were then characterized at pH (4,5,6,7 and 8) and at temperature (30℃, 40℃, 50℃ and 60℃) to determine the optimum pH and temperature. The data analysis technique used was analysis of variance (ANOVA) followed by Duncan's test using SPSS Version 22. The results of this study indicated that 4 of the 7 yeast isolates involved in the spontaneous fermentation of Robusta coffee beans had amylolytic properties, namely isolates K24I3, K24I4, K24I6 and K24I7. The selection results showed that the yeast isolate K24I6 produced the highest clear zone with a diameter of 7.83 mm. The optimum incubation time for amylase enzyme from yeast isolate K24I6 was 24 hours with enzyme activity of 19.91 U/ml. The optimum yeast isolate amylase enzyme at pH 6 is 20.00 U/ml and the optimum temperature is 40℃ with enzyme activity of 19.98 U/ml.
