Abstract

The growing demand for natural food colorants, driven by consumer awareness of the health risks associated with synthetic additives, has increased the exploration of plant-based pigments. Betacyanin, a red-violet pigment in the betalain group, has drawn attention for its color stability and antioxidant properties. This study aimed to analyze the betacyanin content in the peel of red dragon fruit (Hylocereus polyrhizus) from two cultivation areas in West Sumatra (Tanah Datar and Bukittinggi) as a potential natural food colorant. The dragon fruit peels were dried, ground into powder, and extracted using 10% citric acid solution. The extract was concentrated and analyzed using UV-Vis spectrophotometry. Results showed a significant difference in betacyanin levels between the two sources: Tanah Datar samples had an average of 28.48±0.19 mg/100g, while Bukittinggi samples had 3.52±0.07 mg/100g. These findings suggest that geographical and environmental factors significantly affect pigment accumulation. It is recommended that Tanah Datar dragon fruit peel be further developed as a natural colorant due to its high betacyanin content, supporting sustainable practices and waste reduction in food processing.

Abstract

Beetroot or known as Beta vulgaris L. is a plant from the Amaranthaceae family. One source of natural antioxidants for this plant is the leaves, fruit and tubers. The compounds in beet plants contain many free radical inhibitor molecules, such as active compounds in the form of flavonoids and tannins as well as nitrogen compounds in the form of betalains and terpenoids (carotenoids). Antioxidants can also help prevent various chronic diseases such as heart disease, cancer and diabetes. Apart from that, beets can also help metabolism in our body. The aim of this research is to gain insight into the latest research development trends regarding the antioxidant potential of beets. This research uses quantitative methods with Bibliometric analysis of national and international publication data sourced from the Scopus database. In the overlay visualization display section, a lot of research has been carried out on Beta vulgaris. Research on Beta vulgaris was mostly carried out in 2022 with 3 clusters and 21 keywords. The most researched keyword density is Beta vulgaris, antioxidant, and metabolism which are marked in yellow. This shows that there are still few researchers researching this topic so that the opportunities for further research regarding Beta vulgaris are very broad.

Abstract

Rivers are an important part of the ecosystem that plays a role in environmental control. Excessive utilization of rivers in economic and social aspects can reduce the function of rivers as environmental control which results in pollution that damages the environment. Pollution pressure on rivers basically requires special attention where there are 16,487 polluted rivers. The increase in human population is one of the triggers for river pollution because people will live and live and open production lands on the banks of the river. In addition, population growth also increases anthropogenic activities carried out by humans on the riverside. The Antokan River is located in Agam Regency that has a vital function to the local ecosystem. The fast population growth in Agam Regency basically also creates a threat of pollution to the Antokan River. This requires efforts to define the level of quality conditions of the Antokan river waters as a control effort. This control effort uses the pollution index method where this method is an approach used to evaluate overall water quality based on several specific water quality parameters. The findings of the study illustrate that the quality of the Antokan River at several sampling points has good quality standards and several other points are in a lightly polluted condition. Based on the established water quality status, recommendations for controlling the Antokan River using a domestic wastewater management system and water quality protection and management planning were developed. Abstract

Anemia is a global health problem affecting approximately 1.62 billion people, mainly in developing countries. Although iron supplementation is the main strategy, the use of biological agents as an alternative to traditional medicine has potential that has not been fully explored. This study aims to map the research landscape of biological agents as anti-anemia using bibliometric analysis. The study used a library research method by analyzing metadata from Scopus indexed articles for the period 2000-2024 using keywords related to anemia and traditional medicine. Data were analyzed using VOSViewer software to visualize the network and relationships between article citations. The analysis showed 208 relevant documents, with a significant increase in publications after 2010. China dominated with 55 publications, followed by India with 40 publications. The VOSViewer visualization identified three main clusters grouping different plant species, with some plants such as Curcuma longa, Aloe vera, and Hibiscus sabdariffa frequently associated with the treatment of anemia. The analysis also revealed many unexplored areas of research, especially in plant species that have not been commonly studied. This study concludes that of the more than 200 plant species with anti-anemia potential, many have not been comprehensively studied, opening up opportunities for further research especially in countries with high biodiversity such as Indonesia.

Abstract

The prevalence of type 2 diabetes continues to increase along with the consumption pattern of high glycemic index foods, such as white rice, which triggers a spike in blood glucose. Alternatives such as brown and black rice with a lower glycemic index and high fiber, resistant starch, and antioxidant content are considered better in controlling blood sugar. This study analyzes research trends related to glycemic index, rice types, and diabetes using the VOSviewer-based bibliometric method from Scopus data from 2017–2021. The results show an increase in research on this topic with four main clusters: risks of white rice, metabolic syndrome, benefits of brown and black rice, and nutritional approaches in diabetes prevention. This study confirms the potential of brown and black rice as alternative strategies for diabetes management and opens up opportunities for further research in this field.
