Abstract

This study aims to analyze the effect of arrowroot flour (Maranta arundinacea L.) substitution on the physical properties and sensory quality of peanut rempeyek. The research was conducted at the Food Processing Laboratory, Culinary Education Study Program, Universitas Negeri Jakarta, from April 2025 to October 2025. The method used in this study was an experimental method. The research samples were peanut rempeyek with arrowroot flour substitution at levels of 20%, 35%, and 50%. The physical test included oil absorption measurement using oil paper, carried out in three replications for each sample. The hypothesis testing for physical properties was analyzed using ANOVA followed by Duncan’s test. The results showed that arrowroot flour substitution at 20%, 35%, and 50% significantly affected oil absorption, with the lowest oil absorption found in the 50% substitution treatment. The sensory evaluation was conducted with 45 semi-trained panelists. Based on the Kruskal-Wallis test, the results indicated that arrowroot flour substitution at 20%, 35%, and 50% did not significantly affect the sensory attributes of peanut rempeyek across all evaluated aspects. Sensory quality assessment revealed that all three products had comparable quality. The conclusion of this study is that the 50% substitution sample was the best treatment in terms of oil absorption. Therefore, peanut rempeyek with 50% arrowroot flour substitution is recommended to optimize the utilization of arrowroot flour as an alternative to rice flour.

Abstract

This study applies a semi-Markov model to assess earthquake occurrence in the South Java coastal region. The main objective is to forecast earthquakes in this area, considering three key factors: geographic location, timing, and seismic magnitude. The South Java coastal region is chosen for this study due to its proximity to the island of Java, the economic hub of Indonesia. The study divides the South Java coastal region into five distinct zones and categorizes earthquakes into three magnitude groups. The results predict that earthquakes will occur in the South Coast regions of East Java, Central Java, or West Java between December 26, 2022, and November 20, 2023. Additionally, projections suggest that earthquakes are likely to occur in East Java, West Java, or Banten between November 21, 2023, and December 31, 2030. The estimated magnitudes range from 5 to 6 Mw. The findings also indicate that no tsunamis are expected along the South Java coast until 2030. Model validation using the Mean Absolute Percentage Error (MAPE) results in a value of 4.224\%. This confirms the high accuracy of the predictions. Although no tsunamis are forecasted, the public must remain alert and prepared for the anticipated earthquakes. These findings provide important insights for disaster mitigation and emphasize the need for ongoing monitoring, early warning systems, and community preparedness to minimize potential risks

Abstract

Micro, Small, and Medium Enterprises (MSMEs) play a strategic role in Indonesia’s economic development; however, many food-based MSMEs face competitiveness challenges due to limited product differentiation, weak brand identity, and inadequate marketing strategies. This community service program aimed to enhance the competitiveness of a peanut chip MSME through integrated product innovation, logo rebranding, marketable packaging design, and digital marketing optimization under the brand “PICA” (Rich-Flavored Peanut Chips). The program was implemented through several stages, including field observation and problem analysis, product formulation and processing trials, visual identity redesign, packaging development, digital promotional media creation, and monitoring and evaluation. Product innovation focused on transforming conventional fried peanuts into thin, crispy peanut chips with multiple flavor variants to increase sensory appeal and market differentiation. Rebranding activities involved redesigning the logo, selecting appropriate color schemes and typography, and creating a consistent brand identity aligned with modern consumer preferences. Packaging was upgraded from simple transparent plastic to premium standing pouches with informative and visually attractive labels to improve product perception and shelf competitiveness. In addition, digital marketing was strengthened through the use of Instagram and WhatsApp Business to expand market reach and enhance consumer engagement. The results demonstrated improvements in product quality, visual attractiveness, brand recognition, and promotional effectiveness. Overall, the integration of product innovation, rebranding, marketable packaging, and digital marketing proved effective in increasing the competitiveness and growth potential of peanut chip MSMEs. This program highlights the importance of comprehensive innovation strategies in supporting sustainable MSME development in the increasingly competitive food industry.

Abstract

This study aims to examine the concept of the Islamic education curriculum from the perspective of the Qur’an and Hadith as fundamental guidelines for shaping the religious character of learners. The curriculum in Islamic education functions not only as a tool for organizing learning activities but also as an instrument for instilling the values of faith, worship, and morality in a balanced manner between worldly and spiritual needs. Using a qualitative research method with a library research approach, this study analyzes primary and secondary literature through processes of identification, classification, interpretation, and synthesis. The findings indicate that the Islamic education curriculum is built upon three fundamental concepts—ta’lim, tarbiyah, and ta’dib—each encompassing cognitive, affective, and psychomotor dimensions. In addition, the characteristics of the Islamic curriculum must reflect a balance between intellectuality, spirituality, morality, and the social needs of learners. The Qur’an and Hadith provide a strong foundation for curriculum components such as the teaching of monotheism (tauhid), the integration of Islam–Faith–Excellence (Islam–Iman–Ihsan), morality, as well as the inclusion of social sciences and natural sciences. This study affirms that a curriculum grounded in revealed values is capable of shaping individuals who possess Islamic character, noble morality, and comprehensive intellectual abilities. Therefore, the Islamic education curriculum must be designed systematically to remain responsive to contemporary developments without departing from the principles of the Sharia.

Abstract

Mastering writing skills is a fundamental yet challenging aspect of beginner-level Arabic language acquisition, particularly in applying complex grammatical constructs such as adad–ma‘dūd (numeral-noun agreement). Conventional teacher-centered correction methods often fail to facilitate the deep processing required for rule internalization. This classroom action research (CAR) proposes the PEEC (Peer Editing and Error Correction) technique, a novel collaborative strategy integrating peer discussion with immediate corrective feedback to address this pedagogical gap. Conducted over two cycles with 36 first-year students in an intensive Arabic program at a state Islamic university in Malang, the study employed observation, writing tests, and document analysis of student drafts. Results demonstrated significant improvement in writing accuracy. The number of students achieving the mastery criterion rose from 12 (33.33%; average score: 61) in the pre-cycle, to 23 (63.89%; average: 73) in cycle I, and to 32 (88.89%; average: 84) in cycle II. This represents a 55.56% increase in completion rate and a 23-point average score gain, with marked enhancement in adad–ma‘dūd application. The findings confirm PEEC as an effective intervention for developing beginner Arabic writing proficiency, warranting further exploration in diverse instructional contexts.

Abstract

Risky dieting is an unbalanced eating pattern increasingly practiced by adolescent girls and has the potential to impact cognitive function and academic achievement. However, previous research has focused more on the impact of risky dieting on nutritional status and physical health, while empirical evidence regarding its relationship with academic achievement in adolescent girls is still limited, particularly in the context of higher education. This study aimed to analyze the relationship between risky dieting and academic achievement in adolescent girls. The study used a quantitative design involving 70 adolescent girls. Data were collected through a peer counselor-based questionnaire to measure risky dietary habits and academic achievement. Data analysis was performed using Fisher's exact test. The results showed p-values of 0.05 and 0.023, respectively, indicating a significant relationship between risky dieting and academic achievement. Adolescent girls who engaged in risky dieting tended to have lower semester GPAs (11%) and cumulative GPAs (4%). The study concluded that risky dieting contributes to decreased academic achievement. This study contributes by expanding empirical evidence regarding the impact of risky dieting on academic achievement and emphasizes the importance of integrating nutrition interventions and health education in strategies to improve academic achievement in adolescent girls.
