Abstract

Market modernization has brought significant changes to the traditional economic structure, including threatening the sustainability of porters' livelihoods. This study focuses on Sudimampir Market in Banjarmasin, South Kalimantan, which is known as the largest wholesale center in Kalimantan. At Sudimampir Market, workers use private transportation such as pedicabs, bajaj, and motorized vehicles. The results of the porter study at the market can be divided into three types bajaj porters, becak porters, and ojek porters. Most porters have worked at the market for a long time with years of experience. The harsh working conditions for porters include low daily income ranging from Rp. 50,000 to Rp. 150,000. This income is often unpredictable and insufficient to meet basic needs. Some workers even seek part-time or additional jobs when their primary income is insufficient. Additionally, the lack of adequate rest facilities and the health risks they face add to the challenges of porter work. Social interactions between porters, merchants, and buyers reveal cooperation and mutual dependence. Challenges faced by porters include tariffs and price negotiations that often do not align with the workload. Workers face challenges from thugs demanding security or kiosk fees. Bad weather, such as rain, increases the physical risk of falling for workers while transporting goods. The daily income of porters adds uncertainty to their lives. Although some porters try to find other jobs to supplement their income, they often return to their original work due to skill limitations.

Abstract

Jaring Acil Baluh products are processed foods that are commonly found in Pingaran Village, Astambul District, which are known for their unique blend of Jaring flavors and Tahilala sauce based on hereditary recipes. Although it has advantages in terms of taste and cultural value, this business still faces various challenges in its marketing strategy which is carried out conventionally, especially in the aspects of packaging, promotion, and distribution which limit market reach. This study aims to describe the marketing strategy applied by the Jaring Acil Baluh production house through a descriptive qualitative method with observation, interview, and documentation techniques, as well as data analysis which includes data reduction, presentation, and verification through triangulation. The results showed that the marketing strategy of this business includes four main aspects, namely products with distinctive flavors and simple packaging, pricing based on the size and quality of Jaring, distribution through production houses and two branch stalls on the strategic route of Jalan A. Yani, and promotions carried out directly to consumers without utilizing digital media, as a form of adaptation in maintaining business sustainability in the midst of limited resources.

Abstract

Randang porridge is a sago-based food product with high cultural value and potential as a local specialty product. Its production process requires skill and precision to achieve the desired taste and texture. However, information on the production process used is still very limited. The purpose of this study is to describe the production of randang porridge. This study uses a qualitative approach and descriptive method. Data collection techniques include observation, interviews, and documentation. For data analysis, the process involves data reduction, data presentation, and drawing conclusions. Data validity is confirmed through source triangulation, technique triangulation, and time triangulation. The research results show that one of the processed sago products produced in Pemakuan Village is randang porridge. The production process of sago porridge involves several stages, starting from sifting, granulation, roasting, and finally packaging. The tools used in the production process of bubur randang are still simple, such as gas stoves, pans, spatulas, sieves, cloth bags, and manual scales. Based on the research conducted, it was concluded that Pemakuan Village is known as one of the sago production areas in Sungai Tabuk Subdistrict, with many residents involved in sago processing as a livelihood. Sago-based products have high economic and nutritional potential, with sago being equivalent to or even higher in calories than other carbohydrates, making it a popular food and supporting increased local income. The processing process still employs simple and traditional technology, yet remains efficient and affordable.

Abstract

Honey is a natural product rich in bioactive compounds with various pharmacological and anti-inflammatory effects. Bee species and nectar sources influence the composition of bioactive compounds in honey. This study aimed to identify bioactive compounds and evaluate the anti-inflammatory activity of honey from Apis mellifera and Apis dorsata. Compound identification from both honey types was performed using Gas Chromatography-Mass Spectrometry (GC-MS). At the same time, anti-inflammatory activity was assessed through the human red blood cell (HRBC) membrane stabilization method and protein denaturation inhibition assay, with sodium diclofenac as a positive control. GC-MS analysis revealed various bioactive compounds, notably 2-Propenoic acid, 3-(4-methoxyphenyl)-2-ethylhexyl ester, consistently present in both honey types. In the HRBC assay, Apis mellifera honey showed the highest stabilization value of 94.14% at a concentration of 6.25 mg/L honey solution, surpassing sodium diclofenac (87.96%), while Apis dorsata honey reached 85.21%. All samples achieved over 95% stabilization at 100 mg/L. In the protein denaturation assay, Apis dorsata honey exhibited stronger anti-inflammatory potential with an IC₅₀ of 12.85 ± 1.477 mg/L compared to Apis mellifera (25.35 ± 0.024 mg/L). In conclusion, both types of honey possess promising natural anti-inflammatory potential through membrane stabilization and protein protection mechanisms.
