Abstract

Food colorant plays a vital role in the food industry by enhancing visual appeal and shaping consumer perception of product quality. Synthetic food dyes, though commonly used, have been linked to various health concerns such as allergies, hyperactivity in children, and potential carcinogenic risks when consumed above the Acceptable Daily Intake (ADI). Therefore, natural and safe alternatives are needed. This study investigates the potential use of red dragon fruit (Hylocereus sp.) peel extract as a natural food colorant and antioxidant source, using maceration extraction with varying concentrations of tartaric acid (0%, 2%, 4%, 6%, and 8%). Parameters evaluated include physical properties (yield and color intensity), chemical characteristics (pH and total anthocyanins), antioxidant activity, and food processing simulations (thermal stability, pH effects on color, and solvent solubility). The results showed that 4% tartaric acid yielded the highest extraction output, color intensity (absorbance 2.774), highest total anthocyanin, and antioxidant activity (84.06%), with optimal color stability at temperatures up to 40°C and at pH 3. The extract showed excellent solubility in water (97.41%) and 15% ethanol (96.40%), while being insoluble in oil. These results indicate that red dragon fruit peel extract has great potential as a natural dye that not only provides an attractive red color but also functions as a natural antioxidant that is safe and stable under various food processing conditions.

Abstract

Tabebuia aurea has been recognized for its traditional medicinal applications and promising antioxidant properties. The research addresses a gap in understanding the phytochemical and antioxidant characteristics of T. aurea in Indonesia. This study aims to conduct phytochemical screening and evaluate the antioxidant activity of T. aurea stem extracts. The stems of T. aurea were collected from the Botanical Garden of the Sumatra Institute of Technology and authenticated at the Bogoriense-BRIN Herbarium in Bogor to ensure the accuracy of the plant species. The samples were cleaned and dried indoors to prevent the degradation of active compounds before being ground into fine simplicia powder. The extraction process was carried out through maceration utilizing different solvents, including methanol, aquadest, ethyl acetate, and n-hexane. Phytochemical analysis revealed the presence of tannins in the methanol extract. The aquadest extract contains tannins, terpenoids, and flavonoids. Phytochemical screening indicated that the ethyl acetate extract comprises alkaloids and flavonoids, while the n-hexane extract contains alkaloids and saponins. An antioxidant assay using the DPPH method shows that T. aurea stem extracts exhibit a significant ability to scavenge free radicals. Methanol extract has IC50 value of 51.24 μg/mL (strong), aquadest extract has IC50 of 65.34 μg/mL (strong), ethyl acetate extract has IC50 of 79.88 μg/mL (strong), and n-hexane extract has IC50 of 256.73 μg/mL (very weak). For comparison, the vitamin C control has an IC50 of 43.95 μg/mL (very strong). The findings of this study demonstrate that the extract from the stem of Tabebuia aurea contains bioactive compounds with potential as a natural antioxidant source. This antioxidant property highlights the potential of T. aurea stem as a valuable raw material for developing health and cosmetic products that leverage its antioxidant capabilities.

Abstract

This study examines the effect of firm size, capital intensity, and inventory intensity on tax avoidance in food and beverage companies listed on the Indonesia Stock Exchange (IDX) during 2021–2024. Tax avoidance is considered a legal strategy to minimize tax burdens by exploiting regulatory loopholes. Using purposive sampling, 126 firm-year observations were obtained, and the data were analyzed using multiple linear regression via IBM SPSS 25. The results show that firm size and capital intensity have a positive and significant effect on tax avoidance, indicating that larger firms with greater fixed asset investment possess stronger capacity and flexibility in undertaking aggressive tax planning. Conversely, inventory intensity has no significant effect on tax avoidance, suggesting that inventory-based investment does not determine tax avoidance practices. These findings emphasize the need for stricter fiscal oversight on large and high-capital firms due to their higher propensity for tax avoidance.

Abstract

Tuberculosis (TB) is a contagious disease caused by Mycobacterium tuberculosis. Isoniazid, a synthetic antimicrobial agent, remains one of the most crucial first-line medications in TB therapy. Enhancing TB treatment strategies can be achieved through structural modifications of existing drugs. This study investigates the potential of isoniazid derivatives as anti-tuberculosis agents targeting the CYP3A4 protein complexed with a small-molecule inhibitor (PDB ID: 6MA8) and evaluates their toxicity profiles using in silico methods. The ligands analyzed include isoniazid derivatives 1–5, with isoniazid as a reference compound and protoporphyrin as the native ligand. The structure of ligands was prepared using Avogadro software and optimized with ORCA software. The crystal structures of 6MA8 were retrieved from the PDB database and further validated using YASARA. In silico methods such as molecular docking and ProTox prediction were employed to evaluate the potential of these isoniazid derivatives as anti-TB drugs. The interactions were visualized using Biovia Discovery to assess the interaction between the isoniazid derivatives and the receptor. The results showed derivative 4 exhibited the lowest binding affinity (-71.56 kcal/mol) compared to isoniazid (-65.90 kcal/mol), derivative 1 (-63.65 kcal/mol), derivative 2 (-67.01 kcal/mol), derivative 3 (-67.37 kcal/mol), derivative 5 (-69.02 kcal/mol), and native ligand (-182.68 kcal/mol). Biovia Discovery Studio simulations indicated that the isoniazid derivatives interacted with 6MA8 via conventional hydrogen bonds, carbon-hydrogen bonds, and other interactions. The toxicity analysis showed that the derivatives had safe LD50 values, supporting their safety profiles. These results suggest that isoniazid derivatives have promising potential as anti-tuberculosis agents targeting 6MA8.
