Abstract

Nine species of Indonesian green, brown and red seaweeds were used in this experiment to study the distribution and contents of minerals and dietary fibers. The contents of macro and micro minerals were detected by atomic absorption spectrophotometer and inductively coupled argon plasma emission spectrometer, respectively; whereas dietary fibers were determined according to modified enzymaticgravimetric method. The contents of macro mineral were dominated by Ca, K, Na and Mg, with values range were 11.95 – 28.31, 0.30 – 27.92, 0.66 – 25.74, 2.31 – 21.52 mg/g dry weight, respectively; whereas microminerals Cu, Fe and Zn were found in low concentration. The highest and smallest content of soluble dietary fiber were found in Kappaphycus alvarezii and Halimeda macroloba, respectively. K. alvarezii also had the highest content of total dietary fiber and percent soluble dietary fiber against total dietary fiber, whereas Ulva reticulata had highest content of insoluble dietary fiber.Keywords: dietary fiber, Indonesia, mineral, seaweed

Abstract

Jelly is a dessert that requires gelling agent on the making process. Besides kappa carrageenan originated from Eucheuma cottonii, the gelatin obtained from  catfish skin was also  used as the alternative source of gelling agent The purpose of this research  was to obtain the best concentration and  ratio of patin fish gelatin and kappa carrageenan in jelly formulation, and to study the physical and sensory characteristics of the modified jelly.. The formulation of jellies were combination of  concentration and gelling agent ratio (gelatin:kappa  carrageenan), which are 1%, 1:1; 1%, 2:1; 1%, 1:2; 2%, 1:1; 2%, 2:1; 2%, 1:2; 3%, 1:1; 3%, 2:1; and 3%, 1:2 respectively. The best combination was determined based on the best score obtained from each test parameters on physical and sensory analyses. The result showed that concentration and gelling agent ratio affect physical and sensory characterstics of the jelly. Jelly with 2% gelling agent and gelatin : kappa carrageenan ratio of 2:1 was the best formula which possessed the closest physical characteristic to the commercial jelly (not significantly different) on gel strength parameter (123.29 g cm) and viscosity (79.90 cPs); although gelling point (32.83 °C), melting point (45.83 °C), pH (5.20), and syneresis degree (0.07%) were significantly different. The best jelly had better syneresis degree compared to the commercial one (lower numeric score). For the sensory characteristic, the best jelly was still less in (chewiness), color (clarity), and overall acceptance.Key words: Eucheuma cottonii, gelatin, jelly, kappa carragenan, patin fish

Abstract

Biscuits are classified as cereal-based food products made from wheat flour or other flours. Addition of Fish Protein Concentrate (FPC) in biscuits was expected to produce biscuits with higher protein content and better characteristics. The objective of this research was to determine the concentration of FPC of patin fish in biscuit making. FPC concentration was added at 10-25% (w/w) of the total formula of biscuits. Determination of the best concentration of KPI based on the biscuit parameters of organoleptic and physical tests. Biscuits with 20% FPC had color and aroma similar to control biscuit. The control biscuits taste, crispiness, and hardness were similar to biscuits with 15% FPC. The best concentration of KPI added in biscuit was 15% of the total of formula biscuits. Biscuit with 15% KPI had higher levels of protein and the digestibility of proteins in vitro was higher than the control.Keywords: biscuit, fish protein concentrate, patin fish, crispiness

Abstract

Ikan lele (Clarias gariepinus) memiliki kandungan lemak dan protein sarkoplasmik yang tinggi, berakibatpada rendahnya kemampuan pembentukan gel ikan lele. Perlakuan pencucian bertujuan meningkatkankualitas gel ikan lele. Hasil percobaan menunjukkan bahwa pencucian satu tahap memberikan kekuatangel 1.560,23 g.cm; daya ikat air 81,30%; dan derajat keputihan 59,00%. Surimi ikan lele kemudian dibuatmenjadi sosis ikan dengan tepung tapioka sebagai bahan pengisi dan tepung rumput laut G. gigas sebagaigelling agent. G. gigas dapat meningkatkan kualitas gel sosis ikan karena kandungan hidrokoloid agaryang dikandungnya. Tepung G. gigas meningkatkan kekuatan gel (1.831,32 g.cm), daya ikat air (88,19%)dari sosis ikan lele tanpa memberi perubahan terhadap kualitas sensori (aroma, flavor, bau asing, warna)sosis ikan. Sosis ikan lele yang diberi penambahan tepung G. gigas (0,50%) memiliki kualitas gel (kekuatangel, hasil uji lipat, dan uji gigit), daya ikat air, dan kualitas sensori sebanding dengan sosis ikan komersialIndonesia. Sosis ikan lele dengan tepung rumput laut juga memiliki kandungan serat pangan yang lebihtinggi dibandingkan dengan sosis ikan komersial.Kata kunci: Gracilaria gigas, ikan lele, sosis ikan, tepung rumput laut

Abstract

The skin of swangi fish is a potential fish skin to be produced for fish oil. The objectives of this research were aimed to determine the yield and the best quality of fish oil and also to compare fatty acid profile of the fish according to different extraction methods. Fish oil extractions were used by wet rendering method with extraction temperatures of 60, 70, 80, 90, 100°C for 20, 30, and 40 minutes. Fish oil quality was determined by the chemical oil characteristics i.e. PV, FFA, AV, anisidin, and TOTOX. Fatty acid profile was analyzed using gas chromatography (Shimadzu). The results of the study showed that the highest fish oil yield in each treatment was obtained extraction temperature of 60°C for 30 minutes with percentage of 0.33, (70°C for 30 minutes) 0.46, (80°C for 30 minutes) 1.23, (90°C for 20 minutes) 1.14 and (100°C for 20 minutes) 0.84. These values were lower compare to Bligh & Dyer and Soxhlet methods. Then, the best fish oil quality was resulted on temperature extraction of 60°C for 30 minutes with PV, FFA, anisidin, AV, and TOTOX were 9.17 meq/kg, 6.92%, 13,77 mg KOH/g, 0.86 meq/kg and 19.19 meq/kg, respectively. FUFA fatty acid compositions of swangi skin fish oil especially EPA and DHA in wet rendering method were gained 0.73% and 2.53%, respectively. These results were lower than Bligh & Dyer method which was consisted of 3.66% (EPA), and 13.29% (DHA) and also Soxhlet extraction method with value of EPA was 2.78% and DHA was 9.62%.Keywords: EPA, extraction temperature, DHA, fish oil quality, fish skin

Abstract

Handling in fishing vessel is urgent to maintaining the quality of tuna products, while the existenceof waste components can bother the performance of fishing operations. The aims of this research are toevaluate the handling system of tuna products in fishing vessel and to analyze the influences of fishingoperation to the existence of waste components. This research methods are no control chart and regressionmodel approach. Research result shows that the handling system in the fishing operation of tuna in Bitungis not optimum. But the quality of tuna products which landed is still in controlled as shown by amountof rejecting products in UCL-LCL range (0 – 3,63 reject products/processing). The influence of amount oftuna caught per setting (X) to existence of bait waste (Y) formulated with model Y = - 1,176X+37.794, theinfluence of amount of tuna products (X) to the existence of ices remained Y) formulated with model Y =- 0,002X + 62,226, and also the influences of fishing operation which deputized by the amount of ABK (X1)and number of operating days (X2) to the existence of freshwater remained (Y) formulated with model Y= 50,000X1-23,704X2+288,889. The significant impacts are only the influence of amount of tuna productsin existence of ices remained (sigh = 0,036) and number of operating days of the existence of freshwaterremained (sigh = 0,037).Keywords: Bitung, waste components, handling system, tuna

Abstract

AbstractThe catfish viscera fat, is cathfish processing by-products, has potential to be used as a source of rawmaterial for production of fish oil. This study aimed to analyze the value of proximate, heavy metal contentand fatty acid profile of catfish viscera fat (Pangasius hypopthalmus) and characterized fish oil extracted bydry rendering in various temperature and time than compared it to fish oil extracted by stove heating toobtain the best treatment. Proximate, heavy metal residue, and the fatty acid profile analysis were conductedfor characterizing catfish viscera fat. Fish oil extraction was conducted by dry rendering in varioustemperatures of 50, 60, 70, 80 °C for 1, 2, and 3 hours. Fish oil quality was determined by the chemicalcharacteristics i.e. PV, FFA, anisidin and TOTOX. The results of the study showed that fat content of catfishfat viscera was 88.19 %, the heavy metals content was below SNI standart to be consumed, and fatty acidprofile composition was SFA>MUFA>PUFA. The highest fatty acid content was oleic acid. The best fish oilquality was resulted on temperature extraction of 50°C for 2 hours with yield value, PV, FFA, anisidin, andTOTOX were 45.17 %, 2.77 meq/kg, 0.83 %, 2.86 meq/kg, 8.39 meq/kg respectively. This result was notsignificantly different with fish oil extracted by the stove heating expect for yield and PV were 80.11% and6.52 meq/kg, respectively.

Abstract

AbstractKappa carrageenan is polysaccharide that widely used in food, pharmaceutical, cosmetic, textile and printing industries as coagulate agent, stabilizer and gelling agent. Hydrogen peroxide (H2O2) is strong oxidator to degrade polysaccharide. Hydrogen peroxide has some advantades such as cheap, easy to get and savety environment. Degradation method using hydrogen peroxide is a technology based on establishment radical hydoxile reactive that attack the glycosidic of polysaccharides as a result reducing in molecular weight of polysaccharide. The aims of this study were to analyze the effect of hydrogen peroxide concentration, temperature and degradation time to molecular weight of refined kappa carrageenan. Structural changes on kappa carrageenan degradation were characterized by viscometer, SEM and FTIR. Hydrogen peroxide concentration, temperature and degradation time were significantly reducing molecular weight and changes in the structural function of refined kappa carrageenan. The lowest molecular weight of refined kappa carrageenan degraded was obtained from the treatment 3% of hydrogen peroxide at temperature 80°C and degradation time for 4 hours.

Abstract

AbstractLactic acid bacteria from bekasam has potential as an antimicrobial and enzyme producer, as well as probiotics. The purpose of this study were to get the selected formula of the jelly drink with the addition of carrageenan by organoleptic and determine the effect of adding wet biomass (WB) and dry biomass (DB) Lactobacillus plantarum (SK5) from bekasam against chemical and microbiological parameters jelly beverage probiotics during storage. This study consisted of two phases where a preliminary study to determine the best carrageenan concentration and primary research to determine the chemical and microbiological characteristics jelly drink probiotics during storage. Concentrations of carrageenan used were 0.67%; 1% and 1.34%. The best concentration obtained from the preliminary study was 0.67%. The pH of WB during storage decreased to 2.29; total microbial 0.91 log cfu/g; BAL total of 0.2 log cfu/g; dietary fiber 1.26% and 0.53% total sugars. Dry biomass characterization during storage decreased to pH of 2.54; Microbial total of 3.13 log cfu/g; LAB total of 2.22 log cfu/g, while the increase of the dietary fiber of 2.13% and total sugars 1.96%.

Abstract

Karaginan dengan bobot molekul lebih dari 100 kDa memiliki tingkat kelarutan yang kecil. Karaginan berbobot molekul rendah dapat diperoleh melalui depolimerisasi secara kimia, fisika, enzimatis dan radiasi. Tujuan penelitian ini adalah untuk menentukan kombinasi terbaik (H2O2) dan suhu ultrasonikasi untuk membuat karaginan berbobot molekul rendah dari karaginan murni, serta membandingkan karakteristik perlakuan terpilih dengan kontrol dan karaginan murni. Konsentrasi H2O2 yang digunakan untuk depolimerisasi adalah 2%, 4% atau 6% (b/v) dan suhu ultrasonikasi adalah 40°C atau 60ºC. Penggunaan konsentrasi dan suhu ultrasonikasi berpengaruh terhadap karakteristik deplimerisasi karaginan munrni yang dihasilkan. Perlakuan terpilih diperoleh dari karaginan yang di-depolimerisasi dengan H2O2 6% dan suhu ultrasonikasi 60ºC dengan hasil rendemen sebesar 78,83±0,79%; viskositas sebesar 1,75±0,10 cP dan bobot molekul sebesar 4,47±2,88 kDa. Perlakuan ini menghasilkan karaginan depolimerisasi dengan gugus fungsional yang sangat berbeda dengan perlakuan lainnya yang menunjukkan proses depolimerisasi telahterjadi.
