Abstract

At present the world is required to realize sustainable development, as outlined in the Sustainable Development Goals (SDGs). SDGs are 17 goals determined by the United Nations as a world development agenda for the benefit of humans and planet earth and are expected to be achieved in 2030. The first three SDGs are: first (poverty), second (hunger), and third (healthy and prosperous life). To achieve the 3 first goals of SDGs, a study on the production of fish protein concentrate (KPI) made from dumbo rejected catfish was conducted, and added the KPI catfish rejected concentrate to improve the quality of destitute crackers. The results of the study were: (1) the best KPI was made by extraction using 75% isopropyl alcohol (IPA) solvent, with 4 repetitions, the highest protein content was 78,71%, the lowest fat content was 0,69%, and the organoleptic value highest (4,37); and (2) the best destitute crackers are crackers with the addition of 10% KPI with quality: 12,41% protein content, 28,5% florality, organoleptic value crispy texture, very weak savory taste, bright cream cracker color. The addition of KPIs derived from dumbo reject catfish in destitute crackers is expected to be used to achieve the objectives of the first SDGs up to the third, but further research is needed in the production scale with an analysis focus on economic aspects. Saat ini dunia dituntut untuk mewujudkan pembangunan berkelanjutan, yang dituangkan dalam Sustainable Development Goals (SDGs). SDGs merupakan 17 tujuan yang ditentukan oleh PBB sebagai agenda dunia pembangunan untuk kemaslahatan manusia dan planet bumi dan diharapkan dapat dicapai pada tahun 2030. Tiga tujuan pertama SDGs adalah: pertama (kemiskinan), kedua (kelaparan), dan ketiga (Kehidupan sehat dan sejahtera). Untuk mecapai 3 tujuan SDGs ini dilakukan penelitian pembuatan konsentrat protein ikan (KPI) berbahan baku ikan lele dumbo afkir, dan menambahkan KPI lele dumbo afkir untuk meningkatkan kualitas kerupuk melarat. Hasil penelitian adalah: (1) KPI terbaik dibuat dengan ekstraksi menggunakan pelarut isopropil alkohol (IPA) konsentrasi 75%, dengan 4 kali pengulangan, memiliki kadar protein yang paling tinggi 78,71 %, kadar lemak terendah 0,69%, dan nilai organoleptik tertinggi (4,37); dan (2) Kerupuk melarat terbaik adalah kerupuk dengan penambahan KPI 10% dengan kualitas: kadar protein 12,41%, tingkat kemekaran 28,5%, nilai organoleptik tekstur renyah, rasa gurih sangat lemah, warna kerupuk krem keputihan cemerlang. Penambahan KPI yang berasal dari lele dumbo afkir pada kerupuk melarat diharapkan dapat digunakan untuk mencapai tujuan SDGs pertama sampai dengan ketiga, namun diperlukan penelitian lebih lanjut dalam skala produksi dengan fokus analisis pada aspek ekonomi.

Abstract

Penelitian ini bertujuan untuk mempelajari karakterisik karaginan yang digunakan dalam pembuatan biofilm. Karaginan yang diekstraksi menggunakan KOH 0,5% selama 1 jam memberikan hasil terbaik dengan karakteristik rendemen 45,64%, viskositas 18 cP, kadar air 16,26%, kadar abu 35,90%, kadar abu tak larut asam 0,32%, kadar sulfat 5,04%, dan kekuatan gel 385,63 gf. Penggunaan karaginan pada konsentrasi 1,5% menghasilkan biofilm terbaik dengan sifat-sifat ketebalan 0,070 mm, kuat tarik 5516,67 kgf/cm2, persen pemanjangan 43,05% dan laju transmisi uap air 0,0060 g/m2/hari.  Biofilm terbaik juga mempunyai struktur mikroskopis internal polimer lebih kompak dan padat.

Abstract

High fat content in dark fleshed fish can affect on gel forming ability and high content of urea inelasmobranchii can arise ammonia odors in surimi product.Since surimi is an intermediate product, therefore storage of surimi in chill or frozen condition is usually performed. This experiment was carried out to study the effects of leaching, compositioning and chill storaging of stingray, mackerel and both combination surimi on the changes of physicochemical and microbiological properties. Three times leaching of minced-stingray could reduce the urea contents up to 95% and increased salt soluble protein (SSP) content 7.28%. Two times leaching of minced-mackerel could increase SSP content 8.24%. Surimi compositioning of stingray and mackerel in proportion 75%:25% gave the highest gel strength value 267.01 g cm. During 9 days chill storaging of surimi, the values of TVBN, and numbers of total microbes increased significantly. In opposite, the values of gel strength, WHC, whiteness, and SSP of surimi decreased continuously with the increasing time of chill storaging. Those indicated that physico-chemical and microbiologycal characteristics changes of surimi still occurred during 9 days of chill storaging.

Abstract

Penelitian ini dilakukan untuk mempelajari pengaruh frekuensi pencucian, pengkomposisian dan penyimpanan dingin surimi yang dibuat dari ikan air tawar.  Satu kali pencucian dari masing-masing daging lumat ikan mas, nila dan lele, menghasilkan kekuatan gel tertinggi dengan nilai masing-masing 912, 792 dan 540 gcm. Komposisi surimi antara ikan mas dengan nila, mas dengan lele, nila dengan mas dengan proporsi 1 : 1 (b/b) memberikan nilai kekuatan gel tertinggi dengan nilai berturut-turut sebesar 1368, 792 dan 612 gcm. Selama penyimpanan dingin surimi  hasil pengkomposisian, nilai total basa menguap (TVBN) meningkat secara nyata, sedangkan  nilai kekuatan gel, daya ikat air (WHC) dan kandungan protein larut garam turun secara nyata. Abstract

Red macroalgae have the potential to be processed into bioethanol due to their high carbohydrate and low lignin content. Gelidium latifolium and Gracilaria verrucosa are red macroalgae commonly found in Indonesian seas. Sometimes an over-supply of red macroalgae is rejected by the food industry, which opens up opportunities for others uses, e.g. for producing bioethanol. The objectives of this research were to analyze the influence of sulfuric acid concentration on hydrolysis of G. latifolium and G. verrucosa and to calculate the optimum fermentation process to produce bioethanol. G. latifolium and G. verrucosa were hydrolyzed using H2SO4 at concentrations of 1%, 2%, 3%, and 4%, at a temperature of 121 °C and a pressure of 1.5 bar for 45 minutes. The process of fermentation was done using Saccharomyces cerevisiae in anaerobic conditions for 4, 5, 6 and 7 days. The results show that the optimum H2SO4 concentrations to hydrolyze G. latifolium and G. verrucosa were 1% and 2% respectively. The number of S. cerevisiae cells in hydrolysate G. latifolium and G. verrucosa increased in the third adaptation. S. cerevisiae can convert sugar from G. latifolium and G. verrucosa into bioethanol through fermentation. The highest bioethanol yields were achieved on days five and six. Therefore, red macroalgae can be seen as a potential raw material for bioethanol production.

Abstract

The proximate composition, dietary fiber, and total phenol contents as well as antioxidant activity of tropical brown alga Padina australis collected from the Pramuka Island, District of Seribu Island, Indonesia during the rainy season of 2011 were determined in order to evaluate their potential nutritional value and activity of natural antioxidant compound. The content of ash, protein, and fat were 22.26, 10.76, and 4.17 g/100 g dry matter, respectively; whereas the amounts of soluble, insoluble, and total dietary fibers were 8.4, 5.4, and 13.8 g/100 g, respectively. Methanol extract of P. australis contained the highest total phenol of 246.1 mg GAE/1000 g dry sample. The extract also had the highest activity on DPPH radical scavenging, measured by IC50 of 267.1 ppm. Both the total phenol and IC50 value extracts decreased in the following order: methanol > ethyl acetate > n-hexane.Keywords: antioxidant, dietary fiber, DPPH-scavenging, Padina australis, proximate composition

Abstract

By product that rich in protein such as fish roes are potential as raw material for protein concentrate. This research aimed to utilize skipjack roes to produce protein concentrate and to characterize its functional properties. The method used to extract protein was defatting method using isopropyl alcohol and ethanol with extraction times of 1, 2, and 3 hours.  The results showed that skipjack roes contained 19.81% of protein, 3.41% of fat, 71.32% of moisture, 2.04% of ash, and 1.53% of carbohydrate (by difference). Defatting method using isopropyl alcohol for 3 hours produced the best roe protein concentrate (RPC).  The product meets to the quality requirements of fish protein concentrate type B, contained protein and fat of 71.79% and 2.78%, respectively. This product also had functional properties as follows: water absorption capacity (1.57 ml/g), oil absorption capacity (1.82 g/g), emulsion capacity (81.65%), bulk density (0.51 g/ml), foaming capacity (1.90 ml), foaming stability (0.22 ml) and protein digestibility (95.86%).  Lysine and leucine became the major essential amino acid of RPC, with values were 70.76 and 64.91 mg/g protein, respectively. The composition of amino acids of RPC skipjack consisted of 8 essentials amino acids, 5 non-essentials amino acids and 2 semi-essentials amino acids. Abstract

High fat content in a dark fleshed fish can affect on nutritional value because it can lead to odors in fish meal products. Effort Immersion (deffating) is one way to reduce fat content in fish meal products in order to reduce the products from odor. Research on methods and durations of immersion effects were conducted from October to November 2011. This study aimed to determine the best method to get quality materials skipjact tuna fish meal based on methods and durations of immersion.  Fish sampling were taken from the village of Latuhalat, Ambon-Maluku waters. Deffating process used water, 3% acetic acid, and 0.8% sodium bicarbonate. Immersion durations were 2, 4, and 6 hours. Deffating method using 0.8% sodium bicarbonate with 6 hours immersion time exhibited the best quality fish meal with protein content of 82.86% and 1.10% fat content.
